Quality Characteristics of Mulberry Fruit Seolgidduk Added with Citric Acid (구연산을 첨가한 오디 설기떡의 품질 특성)

  • This study was carried out to investigate the characteristics of mulberry fruit seolgidduk. Four percent additions of mulberry were evaluated as the most suitable concentration for seolgidduk, in order to improve the color of gum metal gray and sour smell. Therefore, in order to improve the preference, citric acid was added. The acidity of mulberry fruit seolgidduk increased and its pH decreased significantly by increasing the amount of citric acid. The moisture content of mulberry fruit seolgidduk showed no significant difference between the groups with added citric acid and the control group. The L value decreased as the citric acid concentration increased. Color a and b (Ed-define 'a' and 'b') values increased significantly by increasing the mont of citric acid. The hardness, cohesiveness, springiness, gumminess and brittleness decreased as the citric acid was added. From the sensory evaluation, mulberry fruit seolgidduk with 0.01% citric acid added was the most preferred in taste, chewiness and overall acceptability. These results indicated that mulberry fruit stolgidduk with 0.01% citric acid added showed the best quality.

Quality Characteristics of Brown Sauce with Added Apricot During Storage (살구 첨가 브라운 소스의 저장 기간에 따른 품질특성)

  • To evaluate the potential use of apricot as a sauce ingredient, the physicochemical and sensory characteristics of apricot brown sauce were compared. Various concentration (0%, 10%, 20%, 30%, 40%) of apricot were used to evaluate the quality characteristics of the sauce during storage for 12 days at $4^{\circ}C$. The pH value of the 5 types of brown sauce ranged from 3.8 to 4.6, and these pH levels were stable during the storage period. The L-values of the 0% apricot brown sauce were higher than those of the 10%, 20%, 30% and 40% apricot brown sauce. All the samples tended to have higher viscosities during storage, especially after three days after. In the sensory evaluation, softness, roasted flavor, texture, after taste, and overall taste were highest for the 10% and 20% apricot brown sauce. For the overall acceptability, the $10{\sim}20%$ apricot brown sauce attained the highest score.

Quality Characteristics of Madeleine with Peach(Prunus persica L. Batsch) Juice (복숭아즙 첨가 마들렌의 품질 특성)

  • In this study, we investigated the quality characteristics and the sensory evaluation for madeleine added with peach (Prunus persica L. Batsch) juice. The pH and specific volume of madeleine were decreased with increase of peach juice, whereas the moisture and loss rate were increased. In the color of madeleine crust, L and b value were decreased with increase of peach juice, and these results showed significant differences compared to control(p<0.05). The other hand, the colors of madeleine crumb showed less significant changes compared to the control. On texture of madeleine with increase of peach juice, the hardness, chewiness, gumminess and cohesiveness were increased, whereas the adhesiveness was decreased. In the sensory evaluation with taste, color, flavor and overall preference, the madeleine with 20%(w/w) peach juice showed the highest value. Consequently, these results should provide the possibile use of peach processing in bakery industry because the addition of peach juice enhanced the quality and sensory characteristics of madeleine.

Improvement of Hygienic Quality of Panax Ginseng Leaf Tea (고려인삼 엽록차의 위생적 품질개선 연구)

  • The microbial populations of exportable ginseng leaf tea were $3.6{\times}10^{5}/g$ in mesophilic aerobic bacteria, $2.1{\times}10^{3}/g$ in mesophilic aerobic spores, $1.6{\times}10^{4}/g$ in yeast, $1.9{\times}10^{4}/g$ in molds and $1.2{\times}10^{4}/g$ in coliforms, respectively, which are higher levels than the legaJIy permissible loads of microorganisms for ginseng powders in Korea. In a comparative study of the decontaminating effects on microorganisms, ethylene oxide fumigation and 5 kGy irradiation could decrease microorganisms below the detectable level. And there is no growth of microorgllnisms after three months of storage at $30{\pm}1^{circ}C$. The decimal reduction doses (Dw value) for microorganisms contaminated were 0.70 kGy in coliforms, 0.75 kGy in total bacteria, 0.85 kGy in molds. and 0.95 kGy in yeast, respectively. In the organoleptic test for ginseng leaf tea, the irradiated samples showed no significant difference from the control group in overall flavor, taste, color and acceptability. However the extracts of ethylene oxide fumigated sample were significantly different in color and taste from other groups even after three months storage.

Quality Characteristics of Paeksulgi with Added Barley Powder (보리 가루 첨가 설기떡의 품질 특성)

  • The principal objective of this study was to assess the sensory quality, degree of gelatinization, color, texture and moisture content of Paeksulgis to which barley was added. The results were as follows: The moisture contents were approximately $35{\sim}39%$. In terms of the Hunter's color values of Paeksulgis of the control, the lightness (L) was 87.63, redness (a) was -1.07, and yellowness (b) was 5.06. The L-value of the control group was high, at 87.63; the L-values of the A1, A2, and A3 groups were 85.97, 83.74, and 83.56, respectively. As the quantity of barley increased, the L-value of the Paeksulgis decreased. The gelatinization of Paeksulgis to which barley was added decreased most profoundly in the A3 group. In terms of sensory quality, Paeksulgis with 10% added barley evidenced the most favorable sensory qualities. In terms of the mechanical characteristics of Paeksulgis, cohesiveness was the highest in the control group, while springiness, gumminess, and brittleness were the lowest. Springiness, and brittleness were decreased reduced with increases in the amount of added barley powder. Brittleness was increased by increases in the amount of added barley powder.

Lane Detection in Complex Environment Using Grid-Based Morphology and Directional Edge-link Pairs (복잡한 환경에서 Grid기반 모폴리지와 방향성 에지 연결을 이용한 차선 검출 기법)

  • This paper presents a real-time lane detection method which can accurately find the lane-mark boundaries in complex road environment. Unlike many existing methods that pay much attention on the post-processing stage to fit lane-mark position among a great deal of outliers, the proposed method aims at removing those outliers as much as possible at feature extraction stage, so that the searching space at post-processing stage can be greatly reduced. To achieve this goal, a grid-based morphology operation is firstly used to generate the regions of interest (ROI) dynamically, in which a directional edge-linking algorithm with directional edge-gap closing is proposed to link edge-pixels into edge-links which lie in the valid directions, these directional edge-links are then grouped into pairs by checking the valid lane-mark width at certain height of the image. Finally, lane-mark colors are checked inside edge-link pairs in the YUV color space, and lane-mark types are estimated employing a Bayesian probability model. Experimental results show that the proposed method is effective in identifying lane-mark edges among heavy clutter edges in complex road environment, and the whole algorithm can achieve an accuracy rate around 92% at an average speed of 10ms/frame at the image size of $320{\times}240$.

Quality Characteristics of Bread Prepared by the Addition of Black Soybean Powder (검정콩 분말첨가 식빵의 품질 특성)

  • The quality characteristics of the bread prepared with black soybean powder(BSP) were evaluated. Breads were prepared by the addition of 0, 5, 10, 15, and 20% of BSP to the basic formulation. The pH's of dough with BSP were ranged from 5.13 to 5.77 and that of the control was 5.43. The volume of dough, loaf volume and loaf volume index of the bread with 5%-BSP was the highest. The peak viscosity of the doughs with BSP (200~545 BU) measured by the Amylograph were lower than that of the control (1077 BU). Color $L^{*}$ value of the bread crust and crumb with BSP decreased, and color $a^{*}$ values of the bread crumb with BSP increased, but $a^{*}$ and $b^{*}$ values of the crust with BSP decreased. The hardness, cohesiveness, springiness, and gumminess increased as the concentration of BSP increased. Degree of retrogradations(2.60~4.07) of the bread with BSP was lower than that(6.00) of the control after 48 hrs. From the result of the sensory evaluation, the overall quality score of the bread with 5%-BSP, 4.37, was the highest among samples compared with.ith.ith.

  • This study was performed to investigate the effects of mixing methods, storage period, and dilution ratio of Dangyuja-sugar mixture on the customer preferences for Dangyuja-tea. Most sensory characteristics such as bitterness, flavor, and taste are influenced more by mixing methods of Dangyuja-sugar mixtiue than by storage period. The Dangyuja-sugar mixture prepared by slice cutting is preferred to those prepared by operating electric mixer, The preference test showed that the appearance is not influenced by storage period but by mixing methods, whereas the tne and texture is more affected by storage period in which the 24 month storage is preferred to 12 month storage. therefore, the overall preference fer Dangyuja-tea is the on that prepared with 20% contents of Dangyuja-sugar mixture which is slice-cut and 24 month stored.

Quality Characteristics of Jelly added with Peach(Prunus persica L. Batsch) Powder (복숭아 분말 첨가 젤리의 품질특성)

  • This study investigated the quality characteristics of jelly containing peach powder, which is well known for its various functions and biological activity. The feasibility of incorporating peach powder as a value-added food ingredient, using a model food system of jelly, was investigated. Peach powder was incorporated into jelly at 0, 5, 10, 15, and 20% levels. To analyze quality characteristics, pH of the jelly, spread factor, moisture content, color(L, a, b), hardness, DPPH radical scavenging activity, and sensory properties were measured. Qualities, such as pH content, color, hardness, and consumer preferences were determined. Lightness decreased, but redness and yellowness increased significantly (p<0.001). The antioxidative activity measured by DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity of the jelly increased as the concentrations of peach powder increased. Lastly, the consumer acceptance test indicated that the highest level of incorporation (15%) had a considerable adverse effect on consumer preferences in all attributes. The jelly with 15% peach powder is recommended (with respect to overall preference score) for taking advantage of the functional properties of peach powder without sacrificing consumer acceptability.

Quality Characteristics of Jelly Incorporated with Sweet Pumpkin Powder (단호박 분말을 첨가한 젤리의 품질특성)

  • The feasibility of incorporating sweet pumpkin powder as a value-added food ingredient, using a model food system of jelly, was investigated. Sweet pumpkin powder was incorporated into jelly at 0, 2, 4, 6, and 8% (w/w) levels. Qualities, such as moisture content, pH, soluble solids content, color, hardness, and consumer preferences were determined. The moisture content of jelly decreased, but pH and soluble solids content increased significantly with increasing levels of sweet pumpkin powder (p<0.05). Lightness decreased but redness and yellowness increased significantly (p<0.05). Hardness also increased significantly with higher amounts of sweet pumpkin powder in the formulation (p<0.05). Finally, the consumer acceptance test indicated that the highest level of incorporation (8%, w/w) had a considerable adverse effect on consumer preferences in all attributes. The jellies with 2% sweet pumpkin powder are recommended (with respect to overall preference score) for taking advantage of the functional properties of sweet pumpkin powder without sacrificing consumer acceptability.
