Relationship Between Hot Water Solubles of Rice and Texture of Cooked Rice (쌀의 열수 가용성 물질과 밥의 텍스처와의 관계)

  • The relationships between the textural properties of cooked rice and hot water-solubles of rice or rice flour were studied. The amounts of solubles or soluble amylose among japonica varieties were similar, but those among Tongil type varieties were different. At the same heating conditions, japonica varieties showed higher contents of solubles as well as soluble amylose than Tongil varieties. The solubles and soluble amylose from rice or rice flour showed a negative correlation with hardness but a positive correlation with adhesivess of rice cooked with optimum water.

  • The correlations of rice properties and the texture characteristics of hot($70^{\circ}C$) and cold($20^{\circ}C$) cooked rice were investigated with Japonica and J/Indica rice each of 6 varieties. No significant differences in textural properties between Japonica and J/Indica cooked rices were observed. The hardness of cold cooked rice was positively correlated with setback(r=0.613) of rice flour but not correlated with amylose content and the other chemical properties of starch or rice flour.

A Correlation between the Perceived Symptom of Musculoskeletal Diseases and Psychosocial Factors of Dental Professionals in C Region (C지역 치과종사자의 근골격계 질환 자각증상과 사회심리적 특성과의 관계)

  • To investigate the correlation between the perceived symptom of musculoskeletal diseases and psychosocial factors in dental professionals in Chungcheong province, a self-administered survey was conducted on 206 dental professionals in Chungcheong province from March 9th, 2009 to March 28th, 2009. SPSS WIN 12.0 software was used to analyze the data and the following results were obtained. 1. As for the perceived symptom degree of musculoskeletal diseases based on measured body parts, the frequency of 'high' was the highest in all the parts of the body. 2. As for gender, females showed higher interest in musculoskeletal diseases than males (p=.000). As for age, subjects ranged 26~30 years showed the highest interest in musculoskeletal diseases, which was statistically significant (p=.000). 3. Work satisfaction showed a positive correlation with the perceived symptom of musculoskeletal diseases in lumbar group and lower extremity group. Work stress showed a weak negative correlation with the perceived symptom of musculoskeletal diseases in lumbar group and lower extremity group. Coworker satisfaction showed a positive correlations with the perceived symptom in upper extremity group and lower extremity group. Hospital satisfaction showed a positive correlations with the perceived symptom in upper extremity group, lumbar group and lower extremity group. Working environment satisfaction showed a positive correlations with the perceived symptom in neck group, shoulder group, upper extremity group and lower extremity group. This study showed a correlation between psychosocial factors and the perceived symptom of musculoskeletal diseases based on body parts. Therefore, psychosocial factors should be considered when the prevention and management program of musculoskeletal diseases are developed.

Relationship between Molecular Structure of Rice Amylopectin and Texture of Cooked Rice (쌀의 아밀로펙틴 분자구조와 밥의 텍스쳐)

  • The relationship betwwen the molecular structure of amylopectin and the texture of cooked rice was investigated using Korean rice [3 varieties of Japonica type and 3 varieties of Tongil type(Japonica-Indica breeding type)]. The molecular structure of rice amylopectin was polymodal and distributed A chain of $\overline{DP}$ 12.4, short B chain of $\overline{DP}$ 20.6, B chain of $\overline{DP}$ 26.3, long B chain of $\overline{DP}$ 45 and super long chain of above $\overline{DP}$ 55. The super long chain of amylopectin was composed of long linear chain with poorly branched chain. Also, the super long chain of amylopectin showed positive correlated with average chain length, inherent viscosity and ${\beta}-amyloysis$ limit$({\%})$, but negative correlated with ${\lambda}max$ of iodine reaction of amylopectin. The structural properties of amylopectin in Japonica type were different from those of amylopectin in Tongil type. In relationship between molecular structure of amylopectin and texture of cooked rice, the average chain length, inherent viscosity, ${\beta}-amyloysis$ limit and super long chain of amylopectin was showed a positive correlation with hardness, but a negative correlation with adhesiveness of cooked rice. The long chain of rice amylopectin is the less, the eating quality of cooled rice was the better. These results suggest that the molecular structure of rice amylopectin could be responsible for the texture of cooked rice.

  • This paper have derived an expression(the fringe modle is used) for the photocurrelation-correlation function for a cross-beam laser velocimeter, taking into account the effects of atmospheric turbulence on the amplitude and phase of the incident beams. the result, as long as the atmospheric disturbances do not greatly damp out sinusoidal variations of the photocurrent-correlation function in the time it takes a particle to travel the fringe-separation distance, the disturbances do not hinder the determination of the velocity of the partides from the correlation funtion.(the scattering particles are assumed to have a well-defined V).

  • 최근 기계구조물로부터 발생되는 소음. 진동의 수준을 평가하고 그 대책을 수립하는데 스펙트 럼분석(spectral analysis)과 상관기술(correlation technique)의 이용도가 점증하고 있다. 전자계 산기에 의한 데이터처리기술의 진보에 따라 불규칙한 입력을 받는 기계구조물의 고유진동수추정 및 진동모우드해석, 많은 소음. 진동원을 갖는 플랜트. 선박. 차량기기등의 발생원검출 및 기여 량파악, 그리고 acoustic emission 및 bispectrum에 의한 기기이상진단기술에 적용함으로써 공 학분야에서 한층 중요한 위치를 점하고 있다. 따라서 본 강좌에서는 먼저 상관해석에 의한 스 펙트럼의 정의에 대해서 기술하고 샘플링이론에 만족하는 시간간격으로 샘플링함으로써 얻어지는 시계열데이타를 Fourier 변환하여 주파수영역에서 계의 특성을 해석하는 원리 및 기여함수에 대해 설명하고자 한다. 그리고 입력원간에 상관이 존재하는 경우에 있어서 소음. 진동원을 검 출하고 기여량을 추정할 수 있는 방법으로서의 다차원스펙트럼해석법에 대해 간단하게 기술하 고자 한다.

  • Interrelationship between. certain physicochemical properties of milled rice was investigated. Grain hardness and milling time were correlated with grain dimension. Equilibrium moisture content of rice upon soaking at room temperature showed a high negative correlation with the amylose content. The contents of protein, fat and ash had no relationship with hardness, milling time and equilibrium moisture content.

  • Generally, the flow hunting is observed in almost all of the orifice meters but the intensity of the flow hunting is different at each metering system. In order to investigate the relations between pipe diameter and the flow instability or the flow hunting in a real metering system, a one-dimensional pipeline network model was built and analyzed for the examination of flow characteristics and relations to the flow hunting, changing diameters of the meter and the pipes before and after the meter. Finally, the effects of pressuredifference variation and flow hunting following to the variations of the diameters of the meter and the pipes before and after the meter were investigated and the relations were examined as well.

  • In order to intuitively grasp the earth pressure direction acting on the structure and displacement state, displacement data in the horizontal and vertical directions were processed using the sigmoid function. A displacement coordinate system was set up for each axis. The system can intuitively check the current displacement and assess the management stage of each point. A displacement path can be compiled from continuously recorded points, allowing trends in the displacement's history and stress direction to be known. Analysis of data measured for excavated ground, found that displacement occurred in the direction of destressing at all points, and that the points' management state steady. Similar behavior trends were found among measurement points with high spatial correlation, whereas differing behavior trends occurred among measurement points with low spatial correlation. If the correlation analysis of the precursor and behavior area is performed using the continuously distributed surface settlement data and displacement coordinate system, it will be possible to predict the failure time and area.
