Product Quality and Shelf-life Effect of Low-fat Functional Sausages Manufactured with Sodium Lactate and Chitosans During Storage at 15℃ (젖산나트륨과 키토산을 첨가한 저지방 기능성 소시지의 15℃에서 저장 중 품질 및 저장성 효과)

  • This study was performed to measure physicochemical and textural characteristics, and shelf-life effect of low-fat functional sausages(LFFSs) manufactured with sodium lactate(SL, 3.3%), lac pigment and various molecular weights(MWs) of chitosan (Low=1.5 kDa, Med=30-50 kDa and High=200 kDa) during storage at 15$^{\circ}C$ for 18 days. LFFSs had 73.7-76.0% moisture, lower than 3% fat and 14-15% protein, respectively. pH values were 6.05-6.44 and the control(150 ppm, $NaNO_2$) was the lowest among LFFSs (p<0.05). Increasing storage time decreased pH values, but no differences in pH values were observed up to 6 days of storage (p>0.05). LFFSs containing SL and low MW of chitosan improved water holding capacity (WHC) and different from those with SL and medium-MW chitosan. WHC was decreased with increased storage time and differences of WHC were observed from 18 days of storage. The addition of chitosan reduced both lightness and redness values, as compared to 150 ppm sodium nitrite(SN), and increased storage time decreased yellowness(p<0.05), especially at 12 days of storage. LFFSs with SL and medium-MW chitosan increased most textural properties compared to the control(p<0.05). The addition of SN of 150 ppm in LFFSs retarded microbial growth for E. coli 0157:H7, while those with SL tended to have an antimicrobial effect for Listeria monocytogenes(LM). The growth rate of LM was delayed by addition of various MW of chitosans in LFFSs, especially high MW chitosan, as compared to LFFSs containing SL alone. These results indicated that the functional, textural and antimicrobial effects of LFFSs were improved by addition SL and various MW of chitosan combinations. In addition, 0.05% lac pigment improved the cure color of LFFSs similar to those of 150 ppm SN.

Effects on Preservation and Quality of Bread with Coating High Molecular Weight Chitosan (고분자 키토산 표면처리에 의한 빵의 품질 및 저장성 향상효과)

  • Coating treatment with 120 kDa of chitosan on bread was decreased growth rate of bacteria and not detected growth of any fungi during storage period. Bread with coating by 1% and 2% of 120 kDa chitosan have had the high antioxidant. Change in the water content was lawered as the higher concentration of chitosan coating on bread. water activity has a low variance untill 2% of chitosan concentration and so there result are expected on inhibition effect of retrogradation in bread during storage period. The change of pH was not detected in bread. And the color of bread have not effected on treatment with below 2% of chitosan but had a little effect by 2% of chitosan coating.

Effects of Organic Acids on Textural Properties and Storage Stabilities of Long Life Noodles (유기산의 첨가에 따른 Long Life 면의 조직감과 저장 안정성)

  • The influence of organic acid dips on the quality properties, color, cooking quality, textural and sensory properties, and reducing microbial population of LL(Long Life) noodles was studied. The contents of organic acid used were 0.2% based on flour weight and LL noodles were treated by dipping in pH $2.5{\pm}0.1$ for $60{\sim}90sec$. The whiteness of LL noodles treated with dl-malic acid was higher than that of others. The shear extrusion force and hardness of LL noodles treated with dl-malic acid were shown much higher value than those of others except treated with dl-malic acid. acetic acid(=1:1). At cooking quality examination of LL noodles treated with organic acids, weight of cooked LL noodles treated with dl-malic acid was decrease but volume was appeared in vice versa. Extraction amounts of LL noodles treated with dl-malic acid, dl-malic acid : acetic acid(=1:1) during cooking were much smaller than those of others. Total counts of microorganism of LL noodles treated with dl-malic acid,dl-malic acid. acetic acid(=1:1) were disappeared during storage at $30^{\circ}C$ but treated with latic acid, acetic acid were increase during storage. Sensory properties of cooked LL noodles which was treated with dl-malic acid showed quite acceptable.

Shelf Life Extension of White Rice Cake and Wet Noodle by the Treatment with Chitosan (키토산 처리에 의한 흰떡과 생면의 저장성 연장)

  • The effect of treatments with alcohol, chitosan, or with both alcohol and chitosan for extending the shelf-life of Korean white rice cake and wet noodle was investigated by measuring quality changes such as total microbial count, pH, and sensory qualities. Total microbial counts for control, alcohol-treated, and 1% lactic acid-treated white rice cakes exceeded the initial putrefactive criterion level of $1{\times}10^{6}\;CFU/g$ at 6, 27 and 20 days of storage, respectively. However, total microbial count of the white rice cake treated with chitosan was still less than the criterion level even at 76 days of storage. In the case of wet noodle, total microbial counts of control and alcohol-treated groups exceeded the criterion level within 7 days of storage, while that of chitosan-treated group was far less than the criterion level even at the end of storage of 82 days. Chitosan treatment extended the shelf-lives of both white rice cake and wet noodle appreciably.

마이크로 크기 상업용 Fe$^{\circ}$의 반응성 향상에 관한 연구

  • 마이크로 크기 상업용 칠 분말의 반응성 향상을 위한 변수로 포기 반응 조건인 pH 조절과 산 세척을 통한 철 분말의 표면처리를 선정하고 질산성 질소를 처리대상오염 물질로 선택하여 철 분말에 의한 질산성 질소 처리 실험을 수행하였다. 산을 이용한 초기 pH조절에 의한 반응성 향상 실험에서 가장 좋은 pH 조절제는 염산이었으며 critical pH는 2 였고 산 세척에 의한 반응성 향상 실험에서는 산 세척한 철 분말의 반응성이 그렇지 않은 철 분말보다 현저하게 좋았으며 황산의 세척능이 염산보다 더 뛰어남을 알 수 있었다. 본 연구를 통하여 초기 반응조건의 조절과 철 분말의 산 세 척을 통한 전처리로 기존의 마이크로 크기 상업용 철 분말이 지닌 반응성의 향상을 꾀하였으며 수중의 질산성 질소 처리실험을 통하여 최적의 반응조건을 확립하였다.

키토산 및 칼슘 처리가 월동온주밀감의 저장기간에 따른 품질변화

  • 온주밀감의 당도를 높이고 신선도를 유지하기 위하여 무가온 비닐하우스에서 이듬해 2-4월에 수확하는 월동감귤은 부피과의 발생이 쉽고 저장성이 나빠 수확시기에 바로 출하하는 감귤을 제외하고는 저온저장이 필수적이다. 2월 하순에 수확한 월동감귤(궁천조생)을 저장 전에 키토산과 칼슘처리를 하고 저장에 미치는 영향을 검토하였다. 부패과 발생은 저장 30일부터 나타났고, 무처리에서는 그 이후 부패가 빠르게 진행되었다. 그러나 베푸란 또는 키토산과 칼슘 처리에서는 저장 60일까지 부패과의 발생을 억제할 수 있어서, 이 기간까지가 저장이 가능한 기간으로 보인다. 중량감소는 11월 하순에 수확한 궁천조생에 비하여 모든 처리에서 중량감소가 빠르게 진행되었다. 유리당은 11월에 수확한 궁천조생과 비교하였을 때 glucose은 비슷하였으나, sucrose, fructose은 다소 많은 양이 검출되었다. 유기산은 citric acid과 malic acid 2종류가 검출되었으며, 그 함량도 관행수확기에 수확한 감귤보다 citric acid는 1/2 이하로 낮게 나타났고, malic acid는 비슷한 함량이 나타났다. 저장기간이 경과함에 따라 유기산 함량은 서서히 감소하였으나, malic acid은 초기에 감소되었으나 3월 중순이후에는 일정한 수준을 나타났다. 유리아미노산의 함량은 11월에 수확한 궁천조생에 비하여 D,L-$\alpha$-aminoadipic acid, $\alpha$-amino- $\beta$-guanidinopropionic acid 등 2종을 제외한 27종이 검출되었다.

Changes of Quality Characteristics of Salt-Fermented Shrimp Prepared with Various Salts (소금 종류에 따른 새우젓의 품질 특성 변화)

  • We has been researched physicochemical, sensory and microbiological characteristics of salt-fermented shrimps after making them with different kinds of salts such as domestic or imported and purified or solar salt. Physicochemical characteristics of salt-fermented shrimps on color, salinity and pH which was made by 6 kinds of salt did not show any difference in the overall processing. However, in case of amino-N content, it showed the higher level of its contents at the process of Korean solar salt comparing to other. In case of microbiological, the total viable cells was detected most from the Australian solar salt during the initial stage of fermentation, but after 12-week of fermentation, the Chinese solar salt showed the largest number of total viable cells. Also, it found the Korean solar salt contained the lowest level of coliforms, while it found the highest level of coliforms contents in Chinese solar salt. However, there were no significant differences of microbiological characteristics from the salt-fermented shrimp made with 6 kinds of salt(p<0.05). As a result of sensory quality on salt-fermented shrimps, domestic salts was higher than imported. But there were no significant difference of sensory quality from the salt-fermented shrimps made with 6 different kinds of salt(p<0.05).

Changes of Free Sugars, Lipoxygenase Activity and Effects of Chitosan Treatment during Cultivation of Soybean Sprouts (콩나물 재배중 유리당과 Lipoxygenase Activity의 변화 및 이들에 미치는 키토산 처리의 영향)

  • Changes of free sugars, lipoxygenase activity and effects of chitosan treatment were analyzed during cultivation of soybean sprout. Free sugars(sucrose, raffinose and stachyose) were more rapidly decomposed in the cotyledon of soybean sprout. Contents of sucrose and raffinose in control group were decreased more rapidly than those of chitosan treated soybean sprouts (CTSS). But the decreasing rate of stachyose was higher in the CTSS. In the hypocotyl, 82% of L-2/3 activity were decreased, whereas 42% of the activity were decreased in the cotyledon after 132 hours of germination. The effect of chitosan treatment on the lipoxygenase activity was more effective on L-2/3 isozyme than L-1. After the germination period of 132 hours, L-2/3 activity of control group was 82.7unit/mg and that of CTSS was 56unit/mg.

Effects of Chitosan, Grain Amino Acid and Wood Vinegar Foliar Spray on the Quality and Storability of Grapes(Campbell Early) (키토산, 곡물아미노산, 목초액의 엽면살포가 포도(Campbell Early)의 품질 및 저장성에 미치는 영향)

  • Sprays containing chitosan, grain amino acids, or wood vinegar, were applied to vine leaves of the Campbell Early grape variety, and effects on the quality and storability of grapes were investigated. Weights of grape clusters and individual bemies did not differ significantly from the values seen when traditional agnicultural chemical treatment was used. The percentage of clusters over 300g in weight was, however, higher after spraying with chitosan, grain amino acids, or wood vinegar, than after agricultural chemical treatment, Grape moisture contents, levels of soluble solids, and reducing sugar concentrations, did not differ when the traditional treatment and the newer sparys were compared. Among minerals, the levels of potassium, iron and zinc measured in fresh grapes were increased by the clitosan, grain amino acids, and wood vinegar spray. After 8 weeks of MA storage, reducing sugar levels decreased, and titratable acidities increased, compared to levels measured at the beginning of storage. This was true regardless of the method of vine treatment the hardness of berries decreased slightly over 4-6 weeks of storage, and increased thereafter. The weight losses of grapes were relatively low(0.28-0.35%) on storage after any vine treatment tested. Grapes from vines sprayed with chitosan or grain amino acids showed a lower decay rate than did fruit from vines that had received a traditional agricultural chemical treatment. Sensory evaluation results indicated that the marketability of grapes from vines treated with traditional agricultural chemicals was better than that of grapes from vines sprayed with chitosan, grain amino acids, or wood vinegar.

Physical and Chemical Evaluations of Refregerated Flatfish Treated with Organic Acids (유기산으로 처리한 냉장 광어의 이화학적 평가)

  • Flatfish strips were treated with 0.5%(v/v) acetic acid(AA), 0.5%(v/v) lactic acid(LA), or 0.5%(v/w) citric acid(CA) for 5 min. All strips were individually placed in Whirl-Pak sample bags and stored at 4 or 10$^{\circ}C$. pH, TBA, color, and sensory quality of strips were evaluated after 0, 3, 6, 9, and 12 days of storage time. The pH of samples treated with AA for 5 min ranged from 5.39 to 6.64 for 12 days at 4$^{\circ}C$, which had a significantly (P<0.05) lower level compared to the controls during storage time. Acid treatments had a significantly (P<0.05) higher levels of TBA values compared to the controls for 12 days at 4$^{\circ}C$. All acid treatments had lower Hunter a and b color scores compared to the controls. Acid treatments were liked less by sensory panels than the fresh control due to acidic odor and flesh discoloration.
