Effect of Non-Perforated Breathable Films on the Storability of 'Fuji' Apples in Modified Atmosphere Condition in the Different Storage Temperature (비천공 Breathable필름이 몇 가지 저장온도에서 '후지' 사과의 MA 저장성에 미치는 영향)

  • These studies were conducted to identify the effects of non-perforated breathable package film on storability at $1^{\circ}C$, $8^{\circ}C$, and $20^{\circ}C$ storage of 'Fuji' apples. The fresh weight loss rate was less than 2.0% in all non-perforated breathable films at three different storage periods and temperatures, $1^{\circ}C$; 210 days, $8^{\circ}C$; 75 days, and $20^{\circ}C$; 30 days except for the perforated film. 1,300 cc ($1^{\circ}C$), 5,000 cc ($8^{\circ}C$), and 10,000 cc ($20^{\circ}C$) films were closed at the optimum MA storage condition by carbon dioxide and oxygen concentration. Ethylene concentration was lowest at the 40,000 cc film in every temperatures during storage. The 1,300 cc film established higher result in soluble solid and vitamin C content than any other films at $1^{\circ}C$, also showed higher in visual quality by panel test. The 5,000 cc film had the best results on soluble solid and off-flavor in $8^{\circ}C$. In the $20^{\circ}C$ storage after 30 days of treatment the 10,000 cc film had highest firmness and visual quality. Following these results, it come to conclusion the suitable type of non-perforated breathable film such as 1,300 cc at $1^{\circ}C$, 5,000 cc at $8^{\circ}C$, and 10,000 cc at $20^{\circ}C$ for MA storage in 'Fuji' apples.

The Effects of Vit C Supplementation and Nutrition Education on Nutrition Knowledge, Food Habits and Antioxidative Enzyme Activity in Male Adolescent Smokers (비타민 C 보충 및 영양 교육이 흡연 남자 청소년의 영양지식, 식행동과 체내 일부 항산화 관련 효소체계에 미치는 영향)

  • The study evaluated the effectiveness of intervention for male adolescent smokers by making an assessment in terms of changes in food habits, nutrition knowledge, plasma catalase, superoxide dismutase(SOD), glutathione peroxidase peroxidase(GSH-px) activities and thiobarbituric acid reactive substance(TBARS) after Vit C supplementation and nutrition education. The subjects, male adolescent smokers, were assigned into four groups : Control group(19 students), education(Educ.) group(19 students), Vit C supplementation (suppl) group(19 students), and Educ. + Vit C suppl. group(19 students). The Educ. group and Educ. + Vit C suppl. group received nutrition education once a week for 2 weeks. The Vit C suppl. group Educ. + Vit C suppl. group received 500 mg ascorbic acid for 35 days. All data were collected before intervention and after intervention. Nutrition knowledge of those who received education increased, and the frequency of fruit and yellow-green vegetable consumption also increased. Plasma antioxidant enzyme activities were not different except for the SOD activity in the Educ. + Vit C suppl. group, which was significantly increased. The plasma ceruloplasmin level of groups that received Vit C supplementation was reduced more than any other groups, and the specific ceruloplasmin ferroxidase activity of groups that received Vit C supplementation was elevated more than other groups. These intervention programs had an impact on food habits, nutrition knowledge, plasma antioxidant enzyme activities, and plasma TBARS in male adolescent smokers. Various nutrition education programs must be implemented for adolescent smokers, and further studied are needed regarding sorts and amount of antioxidant nutrients and supplementation duration.

Quality Characteristics of Soybean Sprouts from Heat-Treated Soybean (열처리 대두로 재배한 콩나물 특성)

  • The effect of heat-shock treatment of soybean on the quality characteristics of soybean sprouts was investigated. Six groups of soybeans were heat-treated in 35, 40, 45$^{\circ}C$ for 60 and 120 min respectively and then cultivated by a standard method to measure growth parameters, rot ratio, color, vitamin C content and sensory characteristics. Soybean sprouts of 4$0^{\circ}C$/120 min treatment showed the higher weight, while 4$0^{\circ}C$/60 min sample showed thicker hypocotyl and longer cotyledon than the control. In both rot ratio and viable cell count, the lowest values were obtained in soybean sprouts of control and also in 4$0^{\circ}C$/60 min treated samples, while other heat-treated samples showed higher rot ratio and cell counts than the control. Heat treatment of soybean increased the lightness and decreased the yellowness of cotyledon of sprouts. Vitamin C contents of sprouts were increased by heat treatment. Sensory test showed that the heat treatment reduced benny odor and bitter taste but enhanced the nutty taste. Soybean sprouts of 4$0^{\circ}C$/60 min resulted in significantly higher scores in overall appearance and palatability than other samples.

Treatment of Postburn Facial Hyperpigmentation with Vitamin C Iontophoresis (비타민 C 이온 영동법을 이용한 안면부 화상 후 과색소 침착의 치료)

  • Purpose: Many facial burn patients suffer from hyperpigmentation and its treatment has been challenging. Vitamin C (ascorbic acid) has important physiologic effects on skin, including inhibition of melanogenesis, promotion of collagen biosynthesis, prevention of free radical formation, and acceleration on wound healing. The purpose of this study is to evaluate the effectiveness of Vitamin C iontophoresis for the treatment of postburn hyperpigmentation. Methods: The authors performed a retrospective analysis of 93 patients who were admitted for the treatment of facial burn from February 2008 through February 2010. Among them, 51 patients were treated with Vitamin C iontophoresis to control postburn hyperpigmentation and 42 patients were not. Experimental group was chosen 20 of 51 patients who had been treated with Vitamin C iontophoresis and had normal facial skin on the comparable contralateral aesthetic unit. Control group was chosen 20 of 42 patients who were not treated with Vitamin C iontophoresis and had also contralateral normal aesthetic unit. The resulting color of 20 patients who were treated with Vitamin C iontophoresis was compared with the color of the contralateral normal facial skin using a digital scale color analysis. Results were analyzed with Wilcoxon signed rank test. Results: The analysis revealed significant improvement of hyperpigmentation in the experimental group compared to control group. The difference of intial value and the value in 6 months showed significant change. Mean (${\Delta}^{initial}$-${\Delta}^{6month}$) of experimental group was 11.61 and control group was 7.23. Thus, the difference between the experimental group and the control group was 4.38. Therefore, Vitamin C iontophoresis revealed significant improvement of hyperpigmentation in the experimental group compared with control group. Conclusion: Vitamin C iontophoresis is an effective treatment modality for postburn hyperpigmentation.

Change in Chemical Components of Green Powder Tea during Storage Period at $-5^{\circ}C$ Storage Temperature (가루녹차의 저온저장($-5^{\circ}C$) 중 품질 변화)

  • The effect of storage methods on green tea powder were investigated by examining quality changes of the tea during storage at $-5^{\circ}C$. aluminium-packing without any treatment showed the green powder tea quality of unchanged for 120 days storage, after which significant decrease in the green powder tea constituents connected quality such as total nitrogen, total amino acid, tannin, caffeine, chlorophyll, vitamin C, and fatty acid were observed. The changes in the green color indexes(a value) of green powder tea at $-5^{\circ}C$ were resulted in the of -16.69, -16.20, and 13.69 for 30, 60, and 120 days with the storage period respectively. A sensuous examination for quality assay of the green powder tea demonstrated 93, 91, 88 and 73 points as a storage period 0, 30, 60 and 120 day, respectively. This study suggested that storage method at $-5^{\circ}C$ was a successful method for storage of green powder tea.

Effects on Quality of Strawberry Fruit by Dipping of Calcium Solution and MA Packaging (칼슘처리와 MA포장이 딸기의 품질에 미치는 영향)

  • The strawberry was dipped into $1\%\;CaCl_2$ solution at $20^{\circ}C\;and\;45^{\circ}C$ for 15min. respectively, and then packaged with or without PE film (thickness: 0.011mm) before putting into the cold storage at $5^{\circ}C$. The results showed the lowest rate of rot incidence and the highest firmness with higher Vitamin C content and the best superficial appearance in the treatment of $CaCl_2$ dipping at $45^{\circ}C$ with packaging. It also showed lower pH and higher titratable acidity in the treatment However, no significant difference of SSC was found among various treatments. The results suggested that the combination of postharvest calcium dipping and packaging could result in more effective preservation for strawberry compared with the individual treatment.

Effects of Edible Coating on the Quality Change in 'Hongro' Apples during Storage (가식성 코팅이 '홍로' 사과 저장 중 품질변화에 미치는 영향)

  • As an edible coating, carnauba shellac wax (CSW) and lemongrass oil (LO) solution was prepared to extend the shelf life of 'Hongro' apples. During storage, there were significant differences in the populations of total aerobic bacteria, yeast, and molds between the coated apples and the control samples. The weight loss and vitamin C loss of apples coated with the CSW-LO solution were lower than those of the control. These results suggest that CSW-LO coating can be an effective method for improving quality of 'Hongro' apples.

Determination of Antioxidant Vitamins in Horticultural foods (한국 원예식품의 항산화 비타민 함량 분석)

  • This study examines the effects of the Korean horticultural foods which are, by traditional wisdom, supposed to contain anti-aging substance. All twenty three kinds of plants are chosen as a sample for the experiment in which the content of three main anti-aging nutrients, -carotene, Vitamin C, and Vitamin E are respectively measured by Nilis, Colorimetric, and AOAC method. The result shows: among the samples, top six plants that contain the most -carotene content are high quality tea(Camellia sinensis), thistle(Cirsium japonicum Var.), Angelica keiskei, mulberry leaves(Morus alba l.), field horsetail(Equisetum arvensa), and carrot(Daucus carota), in order; top four for a Vitamin C contents are low quality tea, mulberry leaves, pine leaves(Pinus densiflora), and high quality tea, in order; top four for a Vitamin E contents are persimmon leaves(Diospyros mongolicum) tea, high quality tea, low quality tea, and pine leaves, in order. Drying or boiling process increases the content of -carotene and Vitamin E in high quality tea, dropwort(Oenanthe javanica), field horsetail, and wild aster(Ligularia stenocephala Marsumum et Koldzumi), while, in case of mulberry leaves, drying process lowers them. Vitamin C content strikingly decreases in heating and drying process.

  • To investigate the effect of functional MA film packaging on tomatoes produced in Egypt packed 7 kg corrugated paperboard box during 7 days of storage at room temperature, the weight loss, titratable acidity, soluble solid content(SSC, $^oBrix$), vitamin C and the rate of decay were measured. The weight loss in 0.06 mm functional MA film was 1.5%, but was 3% in non-packed tomatoes after 7 days of storage. The titratable acidity and SSC in functional MA film was kept higher than that of non-packed tomatoes and vitamin C and the rate of decay in functional MA film was changed lower than the others.

Comparison of the Protective Effect of Antioxidant Vitamins and Fruits or Vegetable Juices on DNA Damage in Human Lymphocyte Cells Using the Comet Assay (Comet Assay를 이용한 항산화 비타민과 과일.야채즙의 인체 임파구 세포 DNA 손상 감소 효과 비교)

  • In this study the in vitro protective effects of several antioxidant vitamins (vitamin C, $\alpha$-tocopherol, $\beta$-carotene), fruits and vegetables (strawberry, tangerine, orange and 100% orange juice, carrot juice), on the levels of isolated human lymphocyte DNA damage was measured using Comet assay. Comet assay has been used widely to assess the level of the DNA damage in the individual cells. Lymphocytes were pre-treated for 30 minutes with antioxidant vitamins (10, 50, 100, 500 $\mu$M) or fruits$.$vegetables (10, 100, 500, 1000 $\mu$g/ml), an4 then oxidatively challenged with 100 $\mu$M $H_2O$$_2$ for 5 min at 4$^{\circ}C$. The protective effect of antioxidant vitamins against DNA damage at a concentration of 50 $\mu$M were 50% in vitamin C, 32% in $\alpha$-tocopherol, whereas, fJ-carotene showed a 55% protection at a dose as low as 10 $\mu$M. The inhibitory effects of DNA damage by strawberry, tangerine, orange, orange juices, carrot juices were 50 - 60% with wide ranges of doses. The results of the present study indicate that most the antioxidant vitamins and fruits$.$vegetables juices produced a significant reduction in oxidative DNA damage.
