Effects of Excess Vitamin E and Cholesterol Supplements on Levels of Vitamin E and Cholesterol in Rat Serum and Liver (과량의 비타민 E 및 Cholesterol 첨가식이가 흰쥐의 혈청과 간의 비타민 E 및 Cholesterol 농도에 미치는 영향)

  • The present study was undertaken to investigate the effects of excess vitamin E supple-mentation (0.5%) and cholesterol (0.5%) on levels of serum and liver vitamin E and cholesterol in two categories of rats, group A and group B. Rats in group A(45-65g) were fed experimental diets for 3 weeks ( I-C, II-E, III-Ch, IV-ECh). On the other hand rats in group B(45g-65g) were first fed control diet for 3 weeks and then fed experimental diets when they were 100-l20g for the subsequent 3 weeks ( I'-C, II'-E, III'-Ch, & IV'-ECh). The levels of serum vitamin E were higher in vitamin supplemented groups as expected. Dietary cholesterol showed a tendency to lower serum vitamin E levels of vitamin E supplemented groups. Serum cholesterol levels tended to stay in a narrow range showing resistancy to dietary cholesterol and were not affected by vitamin E status. Whereas vitamin E supplementation seemed to lower the levels of hepatic cholesterol in both groups A & B( I-C, I'-C vs II-E, II'-E ), simultaneous supplementation of vitamin E with 0.5% cholesterol appeared to increase further the hepatic cholesterol levels which were already increased by cholesterol feeding ( IV-ECh, IV'-ECh, vs III- Ch, III'-Ch). Hepatic vitamin A levels decreased as rats grew older during the experimental period. Even though vitamin A levels did not differ from each other significantly, excess amount of vitamin E supplementation in group B seemed to show a tendency to decrease the vitamin A storage in liver.

Changes in the quality characteristics and chemical compounds of garlic shoots for blanching (데치기 처리에 따른 마늘종의 이화학적 품질 특성 변화)

  • This study was performed to investigate changes in the quality characteristics and chemical compounds in garlic shoots by blanching for different time (0, 0.5, 1, 2, 3, and 4 min). The color (L, a, and b values), texture profile (hardness, springiness, chewiness, gumminess, and cohesiveness), total vitamin C, total sugar, total polyphenol and flavonoid, chlorophyll a and b contents, total pyruvate and thiosulfinate contents of the blanched garlic shoots were examined. As the blanching time increased, the L and b values decreased, while the a value increased. Hardness, chewiness, springiness and gumminess of the blanched shoots were significantly lowered with the increasing blanching time. Vitamin C content of raw garlic shoot was 1.62 mg/100 g while that of the blanched garlic shoots was 0.16~0.24 mg/100 g, implying vitamin C loss into blanching water and destruction by heat. The total sugar and polyphenol contents were fluctuated during blanching, but over 75% of their initial levels were retained under all blanching conditions. The total flavonoid contents increased as the blanching time increased. The chlorophyll a content did not show significant change with blanching time, but the chlorophyll b content significantly decreased. These results suggest that blanching for 2 min could be the best for retaining beneficial compounds and desirable quality of garlic shoot.

Effect of Perilla Seed paste on the Yulmoo Mul-kimchi during Fermentation (들깨풀 첨가가 열무 물김치의 발효에 미치는 영향)

  • An optional ingredient Perilla Seed paste was adopted to improve the quality of Yulmoo Mul-kimchi during fermentation. The final weight percentage of perilla seed paste in Yulmoo Mul-kimchi was adjusted to 0, 10, 20, 30, and 40% per water respectively. Chemical and sensory characteristics were determined during fermentation at 10$\^{C}$ for 25 days. The effect was varied depending on the amounts of perilla seed paste, but Yulmoo Mul-kimchi fermented with 20% perilla seed paste was most favored for color, smell, sour taste, carbonated taste, texture and overall acceptability in the sensory evaluation. The pH decreased with the increase of total acidity. The total vitamin C content increased initially to the certain level at a certain time of fermentation depending on the level of perilla seed paste, and then decreased later. In case of reducing sugar, the 20% treatment showed the highest content. Turbidity values were generally increased in all samples during fermentation, even though the extents were limited. Total plate count and the number of lactic acid bacteria were gradually increased and then decreased showing the maximum microbial counts during fermentation. The optimum levels of perilla seed paste in Yulmoo Mul-kimchi obtained through experiments were between 20 and 30% of added water content, preferably 20% for color, fermentation-retarding effect, and sensory taste of the product.

Quality of 'Hayward' Kiwifruit by Low-Dose Gamma Irradiation (저전량 감마선 조사된 헤이워드 참다래의 품질 특성)

  • In order to control or kill insects and pests, control ripening, and delay spoilage, kiwifruits were irradiated with gamma rays at 0.1, 0.3, and 0.5 kGy. Vitamin C, hydrogen donating activity, sugar content, organic acid content, texture, chromaticity, and sensory qualities were examined in the fruits over 2 weeks of storage at 20$^{\circ}C$. Vitamin C content and hydrogen donating activity decreased during the storage period, but they were not reduced by the irradiation process. Total sugar and reducing sugar contents increased as the storage period increased; however, these were also unaffected by irradiation. Organic acid content significantly decreased as a result of irradiation, and all samples had decreases in organic acids over the storage period. Hardness decreased with the storage period as well as with increasing doses of irradiation. In terms of Hunter's color values, irradiation increased the $L^*-\;and\;a^*-$ values in the initial storage period, but it did not have any significant effect on these values during the 2 weeks of storage. When compared with control samples, the irradiated samples had lower color and overall acceptability scores just after irradiation (week 0). However, during the storage period, the irradiated samples had higher scores for smell, taste, texture, and overall acceptability than the control. In conclusion, based on the results, gamma irradiation up to 0.5 kGy is the recommended treatment to maintain the overall quality attributes kiwifruit.

Gaseous Chlorine Dioxide Treatment to Produce High Quality Paprika for Export (고품질 수출용 파프리카 생산을 위한 이산화염소 가스 훈증 처리)

  • To maintain high quality and microbiological safety of paprika during storage for export, paprika samples after harvest were treated with 75 ppmv chlorine dioxide ($ClO_2$) gas and stored at $8^{\circ}C$, which is the optimal storage temperature, for 30 days. $ClO_2$ gas treatment reduced initial populations of total aerobic bacteria in samples by 1.62 log CFU/g as well as yeast and molds by 1.45 log CFU/g compared to those of the control. During storage, weight loss of all samples increased, and samples treated with $ClO_2$ gas showed lower weight loss than the control. In addition, total soluble solid and total phenolic contents were not significantly different between the samples during storage, whereas vitamin C content and hardness of all samples decreased. Hunter L, a, and b values of paprika samples were not significantly different between the treatments. These results suggest that $ClO_2$ gas treatment can be effective for improving microbiological safety and maintaining high quality of paprika during storage.

Polyphenol Contents and Antioxidant Activity of Lepista nuda (민자주방망이버섯의 폴리페놀 함량과 항산화활성)

  • This study analyzed the contents of vitamin C, polyphenol compounds, and evaluated the inhibitory activities against xanthine oxidase and tyrosinase of Lepista nuda extract prepared by the reflux and microwave-assisted methods. The vitamin C content of the fresh L. nude was $9.92{\pm}0.02$ mg/100 g. The content of phenolic compounds in the fresh L. nuda was $1.87{\pm}0.02\;mg/g$. The ethanol extracts prepared by reflux method and microwave-assisted method showed the highest phenol contents of $12.06{\pm}0.12\;mg/g\;and\;11.84{\pm}0.17\;mg/g$, respectively. The inhibitory rates on xanthine oxidase and tyrosinase of ethanol extracts prepared by the microwave assisted method showed the highest value of 99.78% and 30.30% at the concentration of $3,000{\mu}g/mL$. The inhibitory activities on xanthine oxidase and tyrosinase were increased depending on the extract concentration.

Polyphenol Contents and Physiological Activity of the Lespedeza bicolor Extracts (싸리 추출물의 폴리페놀 함량과 생리활성)

  • This study was intended to analyze the contents of polyphenol compounds and vitamin C, and the inhibitory activities of xanthine oxidase and tyrosinase to measure physiological efface of various extract of Lespedeza bicolor. The vitamin C content was $26.42{\pm}0.08mg/100g$. The content of phenolic compounds included in the flesh L bicolor was $1.14{\pm}0.02mg/g$. The ethanol extract by reflux method and water extracts by the microwave-assisted method showed the highest content as 154.95 mg/g and 145.17 mg/g, respectively. The xanthine oxidase inhibitory tate of water extracts was the highest value of 87.85% at the concentration of 1,000 ug/mL. All kinds of extracts showed the highest inhibitory activity for the xanthine oxidase at the concentration of 1,000 ug/mL and a decreasing pattern of the inhibitory race over the concentration of 1,000 ug/mL. The tyrosinase inhibitory rate was increased with an increment of the extract concentrations, and the activity of ethanol extracts was the highest as 55.22% at the concentration of 3,000 ug/mL.

Changes in Quality Characteristics of Garlic Jam during Storage (마늘 잼의 저장과정 중 성상변화)

  • In order to make a functional jam containing garlic, sugar, acid and pectin were mixed with garlic and concentrated by heating the mixture under atmosphere or vacuum conditions. And changes of some physico-chemical properties of the garlic jam(i.e., color, textural properties, vitamin C) were investigated during storage at $30^{\circ}C$. It was found that lightness(L) was higher in sample of vacuum concentration than that in atmosphere concentration and redness(a) and yellowness(b) were higher in sample of atmosphere concentration. During the storage lightness was found to decrease for all samples with more drastic decrease in sample of atmosphere concentration where browning was more severely observed after 8 weeks of storage. In terms of textural properties, hardness, chewiness and gumminess were higher in sample of atmosphere concentration than that in vacuum concentration. And springiness and cohesiveness were higher in sample of vacuum concentration. Although sensory score for garlic jam found to be lower than that for the existing strawberry jam, the present garlic jam might have high marketability if considering its physiological value.

Effects of Polyacrylamide (PAM) and Potassium-Carboxymethylcellulose (K-CMC) on Soil and Yield of Cabbage (Brassica oleracea L. cv. Empire) (PAM과 K-CMC처리가 토양의 이화학성 및 양배추의 수량에 미치는 영향)

  • The objective of this study was to observe the effects of potassium-carboxymethyl cellulose (K-CMC), which is a natural polymer derivative, and polyacrylamide (PAM), which is a commercial synthetic polymer, on soil physicochemical properties and yields of the cabbage. To increase water absorbing capacity (WAC), hydrophilic carboxymethyl group was introduced to cellulose chain and it was confirmed by FT-IR. WAC was tested by tea-bag method in distilled water and 3% NaCl solution. PAM is slightly more absorptive than K-CMC in distilled water, but in NaCl solution, K-CMC is more absorptive than PAM. Soil particle sizes above $1_{mm}$ were immediately increased from 9.6 to approximately 16.6% by the application of K-CMC and PAM, respectively. Infiltration rates of soil were approximately twice as great as those of the control when conditioned with the K-CMC and PAM treatment. K content of soil treated with K-CMC was significantly higher than those of PAM and control, but the other components of soil chemical properties were not different. The early growth and vegetative production of cabbage in the K-CMC and PAM treatments were significantly higher than the control. The contents of vitamin C were increased with the treatment of K-CMC. It was proposed that K-CMC treatment influence K component of the soil and vitamin C content of the cabbage, therefore, it improved the yields as well as crop quality.

Physicochemical Characteristics of Cabbage Kimchi during Fermentation (양배추 김치의 숙성과정 중에 나타나는 이화학적 특성에 관한 연구)

  • The purpose of this study was to investigate the physicochemical characteristics of Cabbage Kimchi with different kinds of jeot-kal. The Cabbage Kimchis were stored at 4${\pm}$1$^{\circ}C$ for 49 days. The pH of all samples of Cabbage Kimchis decreased during fermentation. The total acidity of Cabbage Kimchis increased gradually during fermentation and that of Cabbage Kimchis with different kinds of jeot-kal was higher than that of control. Redox potentials and reducing sugar content decreased gradually during fermentation. Total vitamin C content of Cabbage Kimchis with different kinds of jeot-kal was much higher than that of control. In color measurement, the lightness value decreased gradually, whereas the redness and yellowness values increased gradually during fermentation. The content of hot water soluble pectin (HWSP) decreased as the fermentation proceeded, but that of hydrochloric acid soluble pectin (HCISP) and sodium hexametaphosphate soluble pectin (NaSP) increased.
