Some Components Analysis for Chinese Water Chestnut Processing (올방개(Eleocharis tuberosa Roem. et Shult) 가공을 위한 몇가지 성분 분석)

  • Some physico-chemical components of Chinese water chestnut were analysed to provide fundamental data for water chestnut processing and products development. The contents of moisture, crude protein, crude lipid, crude ash, crude fiber and carbohydrate of Chinese water chestnut were 79.40%, 1.74%, 0.06%, 1.10%, 0.60% and 17.71% respectively. Free sugars identified in Chinese water chestnut juice were sucrose 8.58%, glucose 1.64% and fructose 1.58% as major component and maltose as trace component. The proportion of major free sugars to total soluble solid content of juice was about 66.0%. Potassium content in Chinese water chestnut was 408.57 mg% as major mineral, iron and manganese content were 0.21 mg% and 0.08 mg% as minor mineral. $Vitamin\;B_1$ and C content were $31.2\;{\mu}g/100\;g$ and trace respectively. Organoleptic properties of Chinese water chestnut were fresh fruit odor and sweet taste as main flavor. Though water chestnut was boiled for 20 min, crunchy texture of flesh was almost maintained.

A Survey of Japanese Preference for Kimchi and Kimchi Use Foods (김치 및 김치이용음식에 대한 일본대학생의 기호도 조사)

  • This survey compared the results of sensory evaluation on several types of chinese cabbage Kimchies; homemade Kimchies and commercially produced Kimchies. This also analyzed the preference of some Kimchi use foods on the ten students of Kyoto Prefectural University in Japan. The results of this survey can be summarized as follows. The most preferred Kimchi by Japanese students turned out to be 100 percent seasoning Kimchi and the fresh prepared Kimchi in the first day of fermentation. And female students more preferred Kimchi than male students. Also Kimchi ramyun was one of the most favorite food among the Kimchi use foods. Generally the pH and salt concentration of Kimchi decreased during fermentation, but the change of total vitamin C amounts were rather stable.

  • This study was carried out to investigate the chemical composition and the inorganic constituents of the green tea at the 3 picking periods (Ujeon, Sejag, Jungjag) in Hadong. The results as follows ; The contents of chlorophyll, tannin, vitamin-c and total catechin were increased as picking periods increased but the contents of total nitrogen, total free amino acids, theanine and caffeine were decreased on the reverse. The inorganic constituents Mg, Ca and Mn were increased as picking periods getting late but the Na, K, B contents were decreased on the reverse. The contents of the total nitrogen, chlorophyll, total free amino acid, theanine, caffeine and total catechin and Na, Mg, Ca, B and Se were insignificant differences between Ujeon and Sejag.

  • This study was carried out to analyze the physical peroperties and components according to kinds and harvesting season for the Quality improvement and arangement of e99plants exporting in Japan. The size and weight of chukyang eggplants were larger than those of shikibu, and those of eggplants harvested in winter were smaller than those of eggplants in summer. The pH and brix were not different between cultivar of eggplants and were small different between harvesting seasons. The contents of glucose and fructose was 115.4∼155.4, 64.2∼102.1mg/100g-fr.wt., respectively. And total contents of free sugars was 211.4∼351.1mg/100g-fr.wt. and those of chukyang was higher than those of sikibu. Total contents of free amino acids were from 73.4mg/100g-fr.wt. to 111.8mg/100g-fr.wt and was higher in chukyang than shikibu. The contents of ascorbic acid and dehydroascorbic acid was 90.0∼118.3, 28.3∼32.3mg/100g-fr.wt., respectively. And total contents of ascorbic acids were 149.4, 119.9mg/100g-fr.wt., in eggplants harvested at summer. The content of potassium and sodium was 229.97∼233.59, 135.98∼156.28mg/100g-fr.wt., respectively. The total contents of minerals was 89.35∼420.2mg/100g-fr.wt., and those of chukyang was higher than those of shikibu.

고감도 형광판을 이용한 실시간 IMRT 선량 분석 가능성 연구

  • 목적 : 고감도 형광판과 필름을 이용하여 실시간으로 선량을 측정하여 IMRT 선량분포를 검증하는데 사용하는 가능성을 알아보고자 하였다. 대상 및 방법 : 본 연구에서 개발한 물팬텀은 지름 25cm 아크릴 원통과 원통의 중앙부분에 삽입되는 고감도 형광판으로 구성되어 있다. 이를 사용하여 dose linearity correction factor를 구하기 위해 dmax 지점에서 6MV x-ray를 고감도형광판에 조사하여 blurring correction factor를 구하였다. CCD를 이용하여 고감도 형광판에서 나오는 영상을 수집하였다. 고감도 형광판에서 수집한 영상의 x축 profile은 RTP에서 얻은 profile과 비교하였고, 이온전리함으로 scanning한 데이터를 이용하여 고감도 형광판과 물에서 빛에 의한 산란선 때문에 발생하는 blurring effect를 교정하였다. 여기서 계산된 blurring effect factor를 고감도 형광판에서 수집된 영상에 적용하였다. 결과 : CCD 카메라는 형광판의 전 영역을 감지할 수 있고, 조사시간은 형광판의 중첩된 영상의 선량에 비례하였다. 물팬텀에서 형광판의 blurring effect 는 가우시안 분포로 표현할 수 있었다. 또한 Deconvolution kernel은 원통 팬텀에서 지름 $\pm$5cm 이내의 범위에 위치하였고, 따라서 형광판 영상으로부터의 실제 선량분 포를 뽑아낼 수 있었다. RTP 에서 계산된 선량분포와 blurring correction factor로 교정한 후 중첩시켜 얻은 고감도 형광판 영상의 선량분포는 일치하였다. 결론 : 정기적인 IMRT 선량 검증에 대한 실시간 선량측정 방법이 개발되었다. 고감도 형광판 영상과 CCD 카메라를 사용한 물팬텀으로, IMRT 치료계획에 대한 선량분포를 검증할 수 있는 가능성을 보였다.비의 회전에 의한 오차 보정, 필름의 광학적 밀도에 관한 보정 등 여러 가지 계통적 오차들에 대한 보정들이 선량분포 확인과정의 이해와 그 기준마련에 도움이 되겠지만 우리가 다룬 원점 불일치에 비해서 상대적으로 무시할 수 있었다. 마지막으로 선량분포 확인의 최종목표인 3 차원 선량분포 확인의 실제 적용을 위한 연구가 최적화 알고리듬을 이용하여 실험 중에 있다.\times$5cm, 10$\times$10cm, 15$\times$l5cm, 20$\times$20cm인 경우, 측정하여 얻은 PSF가 0.8%, 0.2%, 0.4%, 0.2%로 약간 높지만, 두 값은 매우 유사한 것으로 나타났다. 그리고, 기존의 BSF를 이용해 구한 TAR과 BJR 25에서 권고하는 PSF를 이용해 구한 TAR을 비교한 결과 field size 에 따라 약 1%-1.5% 정도로 BSF를 이용하여 구한 TAR보다 PSF를 이용하여 구한 TAR이 1.3% 정도 높게 나타났지만, 이것은 두 값의 절대적인 차이일 뿐, 실제로는 PSF를 이용하여 구한 TAR이 측정해서 구한 TAR과는 매우 유사한 값을 보여주고 있다. 결론 : 기존의 BSF를 이용해 구한 TAR과 PSF를 이용해 구한 TAR을 비교하였을 때, 약 1.3% 정도 높게 내고 있지만, 기존의 TAR보다는 PSF를 이용해 구한 TAR이 BJR 25와 잘 일치하고 있으므로 Co-60 원격치료용 방사선 조사장치를 사용할 경우 BSF보다는 PSF를 사용하는 것이 타당한 것으로 사료된다.tokines의 변화는 비록 통계학적인 차이는 없지만 비타민 C를 사용한 환자의 cytokines이 모두 사용하지 않은 환자에 비해 감소하였음을 보였다. 비타민 C는 부작용이 거의 없는 안전한 약으로서 말기 암 환자에서 비타민 C사용은 임상 증상을 호전시키는 데 도움

The Antioxidant Activities of the Some Commercial Teas (국내 시판되는 일부 다류 제품의 항산화 효과)

  • The antioxidant activities and their antioxidant compounds of a group of teas obtained in local markets were investigated. A total of 18 teas were tested for their antioxidant activities based on their ability to scavenge ABTS (2,2'-Azino-bis-3-ethylbenzothiazoline-6-sulfonic acid) cation radical and DPPH (1,1-diphenyl-2-picrylhydrazyl) free radical. The former was expressed as mg of ascorbic acid equivalents per 1 tea bag (L-ascorbic acid equivalent antioxidant capacity, AEAC) and the latter was expressed as percentage of electron donating activity (EDA%). A good correlation of AEAC and EDA was observed between the two methods. The concentrations of total polyphenolics and flavonoids in tea extracts were measured by spectrophotometric methods. Total ascorbic acid was determined via the 2,6-dicholoroindophenol titrimetric method. According to the AEAC value and EDA, black tea, brown rice green tea, green tea, herb tea and malva tea showed relatively high antioxidant activities. Polyphenolic compounds were the major naturally occurring antioxidant compounds found in teas and the high concentrations of polyphenolic compounds were observed in black tea, green tea and herb tea. Overall, six teas out of 18 teas tested in the study showed better antioxidant activities and higher amounts of total polyphenolic compounds.

  • Effects of vitamins, metabolic intermediates and several inorganic mineral salts on the biomass and lipid accumulation of Mucor plumbeus were investigated after 15 days of incubation at $37^{\circ}C$ under static culture condition. The optimum concentrations of various vitamins were ${\gamma}/l$ for biotin, and 0.01 g/l for nicotinic acid, pyridoxine, thiamine and riboflavin. Among them pyridoxine was the most stimulatory. The maximum felt weight and lipid content per 50ml medium were $2.82{\pm}0.14\;g$ and 62.8%. Triglyceride content of neutral lipid produced under this condition was 64.9%. The major fatty acids were oleic acid (50.0%), linoleic (23.8%) and palmitic acid (13.9%). Malonic acid was considered not to be desirable even though it stimulated the biomass and lipid accumulation because triglyceride content was lowered considerably comparing with control. $MgSO_4{\cdot}7H_2O$ was the most stimulatory among the various magnesium salts and its optimum concentration was 5 g/l. Mucor plumbeus did not require $NaH_2PO_4$ for the stimulation of felt and lipid production. However, the addition of $MnCl_2$ at the concentration of 2 g/l was stimulatory to show $2.76{\pm}0.28\;g$ of felt/50 ml and 56.4% lipid content, and 73.9% triglyceride in the neutral lipid.

Attenuation of Ischemia-Reperfusion Injury by Antioxidant Vitamins in a Pig Model of Renal Auto-Transplantation (돼지의 신장 자가이식에서 Ascorbic Acid와 Alpha-tocoperol 의한 허혈 및 재관류 손상의 감소)

  • This study was to determine the effects of ascorbic acid and alpha-tocopherol on the attenuation of an ischemia-reperfusion injury (IRI) after renal auto-transplantation in a pig model. In the treatment group, three pigs were subjected to a renal auto-transplantation followed by the administration of ascorbic acid and alpha-tocopherol and the flushing of ascorbic acid plus hepa-saline solution. Otherwise, the control group used only flushing of hepa-saline solution. Blood samples were collected from these pigs for measurement of serum blood urea nitrogen (BUN) and creatinine values on the day before surgery and day 1, 3, 5 and 7 after surgery. The kidneys were taken for histopathological evaluation following euthanasia on day 14 after surgery. Serum creatinine and BUN values showed a significantly difference between control and treatment group on day 1, 3 and 5 (P<0.05). In histopathologic findings, treatment group showed less damage than that of the control group on the basis of renal tubular damage. As a result, this study suggests that the exogenous ascorbic acid and alpha-tocopherol pretreatment therapy with ascorbic acid irrigation-aspiration has a role of attenuation of renal I/R injury and recovery of renal function in a pig transplantation model.

Effects of ascorbic acid, citric acid and silver nitrate on the growth of in vitro lily plantlets and reduction of browning (Ascorbic acid, citric acid 및 AgNO3가 나리 기내식물체 생장촉진 및 갈변화 감소에 미치는 영향)

  • Lily is an important cut-flower in Korea and world as well due to it's a variety of flower colors and various sizes of flowers. To develop elite lily cultivars, conventional breeding techniques have been used so far. However, an introduction of tissue culture system in mass propagation of bulbs and regeneration of shoots with a high efficiency is prerequisite at this moment. Especially, growth of bulbs and shoots as well as reduction of browning is critical factor to proliferate bulbs with shoots of superior lines or cultivar in lily. For this purpose, we tried to test whether ascorbic acid, citric acid and silver nitrate in medium to facilitate growth of bulbs and shoots as well as reduction of browning of bulb scales in lily. As a result, ascorbic acid and silver nitrate showed no significant differences compared to control plants in the growth of bulbs and shoots. When bulb scales were treated with $150mg{\cdot}l^{-1}$ of citric acid, formations of shoots and bulbs showed best result. While, bulb scale treated with $100mg{\cdot}l^{-1}$ of citric acid showed the growth of shoot and root as well as increasing of fresh weight compared to other treatments. Regarding the reduction of browning, $150mg{\cdot}l^{-1}$ of ascorbic acid showed the best result with the less than 2%. Although more experiments with several commercial varieties are needed in the future to establish mass propagation of bulbs of lily, results obtained in this study are supposed to provide the basic knowledge and contribution in tissue culture system of lily.

Comparison of Physiological Activities of Rubus coreanus Miquel during Maturation (복분자딸기의 성숙 단계별 생리활성 비교)

  • Total polyphenolic compounds, DPPH radical scavenging activity, superoxide dismutase (SOD), vitamin A, C, E, flavonoid and anthocyanin of Rubus coreanus Miquel during maturation were investigated to expand the utilization of Rubus coreanus Miquel as functional food material. Physiological activities of unripened, middle-ripened and ripened fruit of Rubus coreanus Miquel were examined. The ripened fruit included higher contents of total polyphenolic compound compared with those of the other sample groups, unripened and middle-ripened fruit. SOD of unripened, middle-ripened and ripened fruit were 59.15, 80.05 and 95.03%, respectively. Scavenging concentration ($SC_{50}$) of unripened and middle-ripened fruit for 0.4 mM DPPH (1,1-diphenyl 2-picryl hydrazyl) was 2.3 mg/mL by weight, but only 1.6 mg/mL for ripened fruit. The vitamin A content of the Rubus coreanus Miquel was found to be lower as the fruit ripened; however, vitamin E showed the reverse pattern. In addition Rubus coreanus Miquel is a fruit which has a high vitamin C content regardless of maturity. The flavonoid contents of Rubus coreanus Miquel were in order of ripened fruit ($49{\mu}m/mg$)>middle-ripened fruit ($16.4{\mu}m/mg)$>unripened fruit ($15.4{\mu}m/mg$). Also, the contents of anthocyanin in ripened fruit were $394.50{\mu}m/mg$, which were higher than those of middle-ripened ($12.43{\mu}m/mg)$ and unripened fruit ($7.89{\mu}m/mg$).
