Effect of Soybeans, Chungkukjang, and Doenjang on Blood Glucose and Serum Lipid Profile in Streptozotocin-induced Diabetic Rats (대두, 청국장 및 된장 분말의 급여가 Streptozotocin 유발 당뇨쥐의 혈당 및 혈청지질 성상에 미치는 영향)

  • This study investigated the effect of soybeans, $chungkukjang$, and $doenjang$ on blood glucose and serum lipid profile in streptozotocin (STZ)-induced diabetic rats. Male Sprague-Dawley rats weighing 205 g were divided into non-diabetic and diabetic groups. The diabetic groups were further subdivided into four experimental groups: a normal group (N), a diabetic control group (STZ-C), a diabetic group fed autoclaved soybean powder (STZ-S), a diabetic group fed $chungkukjang$ powder (STZ-CKJ) and a diabetic group fed $deonjang$ powder (STZ-DJ). Food and water intakes were higher in the diabetic groups than in the N group. The body weight gain and food efficiency ratios were higher in the STZ-S, STZ-CKJ, and STZ-DJ groups than in the STZ-C group, but created no significant changes between the diabetic groups on food intake and body weight gain. The whole blood level at 4 weeks of the STZ-CKJ group was significantly lower than the STZ-C group. Serum glucose levels of the STZ-S, STZ-CKJ, and STZ-DJ groups were significantly lower than the STZ-C group, but there was no significant change in serum insulin levels. The AST and ALP activities in serum were markedly higher in the STZ-C group, but these decreases in relation to diabetes increased in the STZ-S, STZ-CKJ, and STZ-DJ groups. The level of serum triglycerides was lower in the STZ-CKJ and STZ-DJ groups than in the STZ-C group, whereas level of serum HDL-cholesterol was higher in the STZ-CKJ and STZ-DJ groups. Levels of total serum and LDL-cholesterol were higher in the diabetic groups compared with the N group, but significantly decreased in the STZ-S, STZ-CKJ, and STZ-DJ groups compared to the STZ-C group. These results indicate that dietary supplements of soybean, $chungkukjang$ and $doenjang$ may improve blood glucose and lipid metabolism and help prevent or attenuate the progression of diabetes in STZ-induced diabetic rats.

Effect of Crab Shell Supplementation in Feeds on Taurine Content of Cow s Milk (게껍질의 급여가 우유내 타우린함량에 미치는 영향)

  • 본 논문에서는 게껍질분말 급여에 의한 천연 타우린 강화우유의 생산 가능성을 평가하고자 25두의 젖소를 5군으로 나누고, 각기 대조사료, 1%(1%CS), 3%(3%CS) 및 5% 게껍질분말사료(5%CS), 그리고 formaldehyde로 처리되 3% 게껍질분말사료 (3%FCS)를 30일간 급여하였다. 게껍질분말 단백질의 아미노산조성은 phenylalanine이 가장 높았고, glutamate, aspartate, glycine, serine histidine, arginine의 순으로 나타났으며, 다른 동물조직의 단백질과는 달리 branched-chain 아미노산의 함량이 비교적 낮았다. 게껍질에 함유된 유리아미노산 중 타우린은 가장 고농도로 존재하였으며, 특히 집게다리껍질에 509$\mu$mol/100 g이 함유되어 등뚜껑(319$\mu$mol/100g) 및 게껍질분말(296 $\mu$mol/100 g)에 비해 월등히 그 함량이 높았다. 게껍질분말의 급여가 우유의 타우린농도에 미치는 영향을 평가한 결과 p<0.01 수준에서 유의성이 관찰되었다. 1%CS군의 원유에는 5.84$\pm$0.73 $\mu$mole/100mL의 타우린이 함유되어 대조구 (4.84$\pm$0.29 $\mu$mol/100mL)에 비해 20%정도 더 높았으며, 3%CS군의 원유에는 7.21$\pm$0.77$\mu$mole/100 mL의 타우린이 함유되어 대조구에 비해 49%정도 유의적으로 증가하였다.(p<0.01). 한편, 3%FCS군의 경우 원유의 타우린농도가 3%CS군에 비해 유?거으로 감소하였고, 따라서 게껍질의 formaldehyde 처리는 반추위내에서 타우린을 보호하는데 효과적이지 못한 것으로 나타났다. 본 논문은 게껍질 급여에 의해 우유의 타우린농도가 증가하였음을 밝히는 최초의 보고이며, 본 연구의 결과는 앞으로 기타 축산제품의 타우린함량을 증가시키는데 폭넓게 응용되어질 수 있을 것이다.

Changes of pH, Meat Color, Cooking Loss, Shear Force and Sensory Evaluation on Hanwoo Meat Fed with Supplemental Fig Fermentation during Storage Period (무화과 발효물을 급여한 한우고기의 저장기간 중 pH, 육색, 가열감량, 전단력 및 관능평가의 변화)

  • This study was conducted to investigate changes of pH, meat color, cooking loss, shear force and sensory evaluation on Hanwoo meat fed with supplemental fig fermentation(SFF) during storage period. A total of 10 Hanwoo bulls were subjected to one of two treatment diets (control and 10% SFF) from live weight of 400kg far 6 months. After slaughter, longissimus muscles were removed, zipper-wrapped and stored at 4$\^{C}$ for 21 days. The pH, meat color, cooking loss, shear force and sensory evaluation of the samples were measured at 1, 3, 9, 15, 21 days of storage. There were no differences in pH, meat objective color(Hunter L, a and b) and cooking loss (%) of longissimus muscles between control and SFF treatment during storage. Shear force values of longissimus muscle from SFF treatment showed lower level in 1, 3 and 9 days and tended to decrease during storage. No differences in odor and appearance of sensory evaluation were observed between control and SFF treatment during storage. The taste induced by SFF was increased(f<0.05) at 1, 3 and 9 days of storage. These results indicate that the SFF may improve meat quality of Hanwoo during storage.

Effects of Feeding Mugwort Pelleted Diet on the Meat Quality in Pigs (쑥 펠렛사료 급여가 돼지의 육질에 미치는 영향)

  • To investigate the effect of dietary mugwort pellet on the growing performance and meat quality barrow (T1) and boar (T2) were alloted into six treatments : 1) commercial feed, 2) T1-1 and T2-1 (commercial feed supplemented with 3.0% mugwort pellet), 3) T1-2 and T2-2 (commercial feed supplemented with 5.0% mugwort pellet). They were fed experimental diets for 60 days before slaughtered. Meat samples were taken in wrap package and stored at 4$\pm$1$^{\circ}C$. Daily gain in both groups (T1 and T2) were higher than those of the control (p<0.05). Feed conversion tended to be lower in barrow group than boar group and tended to be decreased according to supplementation of mugwort pelleted diet in barrow group. In both barrow and boar groups, proximate compositions of pork were not sigificantly different, except for crude fat. Crude fat content was tended to be low in barrow when fed mugwort pelleted diet. Shear force value and sensory properties were siginificantly higher in barrow group than in boar group (p<0.05) and these results were also seemed due to great fed mugwort pelleted aiet(p<0.05). In the barrow group, values of tenderness and flavor were the highest in pigs fed diet supplemented with 3.0% mugwort. The catechin content of pork tended to be higher in boar group than in barrow group and catechin tended to increase with supplementation of mugwort in the diet.

Changes of Quality Characteristics of Manufactured Press Ham using Conjugated Linoleic Acid(CLA) Accumulated Pork during Storage Periods (CLA가 축적된 돈육으로 제조된 Press Ham의 저장기간중 품질변화)

  • To investigate the effects of conjugated linoleic acid added diet feeding on CLA accumulation and quality characteristics of manufactured press ham using CLA accwnulated pork loin meat. The CLA used to add in diet was chemically synthesized by alkaline isomerization method with com oil. Pigs were divided into 5 treatment groups(4 pigs/group) and subjected to one of five treatment diets(0, 1.25% CLA for 2weeks, 2.5% CLA for 2weeks, 1.25% CLA for 4weeks and 2.5% CLA for 4weeks, CLA diets; total fed diets) before slaughter. Pork loin were collected from the animals(110kg body weight) slaughtering at the commercial slaughter house. Manufacture press ham using CLA accumulated pork loin meat were vacuum packaged and then stored during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. Samples were analyzed for general compositions, physico-chemical properties(pH, color, shear force value), TBARS. pH value of CLA treatment(T4) was increased significantly than that of oontrol(P<0.05). pH of control and CLA treatments were increased significantly as the storage period passed(P< 0.05). Crude fat content of CLA treatment groups was significantly higher than the control pork (P<0.05). Meat color(CIE $L^*$, $a^*$$b^*$

Effect of Feeding Probiotics on Physico-chemical Properties and Sensory Evaluation of Pork (생균제의 급여가 돈육의 이화학적 성상 및 관능에 미치는 영향)

  • A total of 120 pigs were used to investigate the effect of feeding probiotics on physico-chemical properties and sensory evaluation of pork loin. About 50kg pigs were randomly alloted into one of six experimental diet groups (C1:commercial diet feed the gilt; C2:commercial diet feed the barrow; T1:$0.5\%$ YC2000 feed the gilt T2:$0.5\%$ YC2000 feed the barrow; T3:$0.1\%$ YC2000 + $0.3\%$ KBC1121 feed the gilt; T4:$0.1\%$ YC2000 + $0.3\%$ KBC1121 feed the barrow). Pigs were slaughtered at approximately 110kg live weight. Crude fat and crude ash were not difference among the treatments. However, water content was higher in T1 and T2 compared to other treatment and the protein level of T3 was higher than those of other treatments. All of dietary probiotic groups showed higher pH compared to control. Especially, pH of T1 and T2 were higher among the dietary probiotic groups. Cholesterol level of dietary probiotic groups were lower compared to control. In meat color, $a^{*}$ was higher in T1 and $b^{*}$ was lower in T2 compared to other treatments. In sensory evaluation of cooked meat, aroma, flavor, tenderness, juiciness and overall palatability were higher in control, whereas T3 and T4 showed higher score in tenderness, juiciness and overall palatability. T3 had higher myristic acid. palmitoleic acid and oleic acid, whereas arachidonic acid was lower in T3. In conclusion, dietary probiotic groups were much better than other treatments in cholesterol, color, tenderness and juiciness. But drip loss of dietary probiotic groups showed higher due to lower pH compared to control.

Feeding Effect of Ginseng by-product on Characteristics of Pork Carcass and Meat Quality (인삼 부산물 급여 돼지의 도체 및 육질 특성)

  • This study was carried out to investigate the feeding effect of by-products such as ginseng loaves(GL) and stem (GS) which had about 8% of crude saponin on pork carcass and meat quality characteristics when they were fed for 40 days. The ginseng leaves and stem were added in feed and the pigs were slaughtered at 10, 20, 30 and 40 days. The chilled carcass weight and trimmed fat contents were higher(86.50 kg) in the pork fed for 40 days. The yields of fore legs were higher in pork fed for 10 days(P<0.05) and there was no different in the yields of the other portion cuts such as shoulder, rib, loin, belly, hind legs and tenderlons. The incidence of percentages for grade A and B decreased as the feeding periods increased up to 40 days. The backfat thickness was lowest in carcasses from pigs fed up to 20 days(P<0.05). The L values were highest in pork fed up to 30 days(50.22) and lowest(46.91) for pork fed 10 days. The incidence of PSE pork was low in pork fed for 20 days when compared to other feeding days. Cooking loss was lowest and water holding capacity(WHC) was highest in pork fed GL and GS stem, respectively. However, the analysis for accumulation contents of saponin and functionality in pork fed GL and GS is needed in the future research.

Effect of Conjugated Linoleic Acid(CLA) Feeding Levels and Periods on Textural Property and Fatty Acid Composition of Pork (Conjugated Linoleic Acid(CLA) 급여수준과 급여기간이 돈육의 조직감과 지방산 조성에 미치는영향)

Pigs were divided into 5 treatment groups(4 pigs/group) and subjected to one of five treatment diets(0, 1.25% CLA for 2 weeks, 2.5% CLA for 2 weeks, 1.25% CLA for 4 weeks and 2.5% CLA for 4 weeks, CLA diets; total fed diets) before slaughter. Pork loin were collected from the animals(110 kg body weight) slaughtering at the commercial slaughter house. Pork loin meat were aerobic packaged and then stored during 2, 5, 8, 11 and 14 days at 4$^{\circ}C$. Samples were analyzed for shear force value, texture, TBARS, fatty acid composition, cholesterol and CLA content. CLA treatment groups showed significantly(p〈0.05) higher shear force value compared to those of control group at 11, 14 days of cold storage. All treatments were decreased significantly as the storage period passed. There was a not significantly difference in texture between control and CLA treatment groups. All CLA treatment groups showed significantly(p〈0.05) lower TBARS value than the control. TBARS value was increased significantly during storage in all treatment. CLA treatment groups showed significantly(p〈0.05) lower cholesterol content compared to those of control group. As dietary CLA was increased in feed, the content of CLA was increased, but the control was almost not detected. The contents of CLA were not significantly changed during chilled storage for 14 days. In the change of fatty acid composition, the contents of oleic, linoleic and arachidonic were decreased by dietary CLA-supplementation, whereas the increase level of CLA-supplementation resulted in the higher palmitic and stearic acid. In all results, CLA could be accumulated in pork meat and its antioxidant capability has been indicated. It was suggested that dietary CLA-supplementation could be produced high quality pork.

Effect of Dietary Copper Levels on Performance and Carcass Characteristics in Hanwoo Steers (사료중의 Cu 수준이 한우 거세우의 성장 및 도체특성에 미치는 영향)

  • This experiment was conducted to determine the effects of dietary copper levels on performance, carcass characteristics, and economical analysis in Hanwoo steers. Fifteen Hanwoo steers weighing about 300kg were randomly allotted into one of three treatments. The three treatments consisted of Control(7mg Cu/kg feed), TI(12mg Cu/kg feed) and TII(17mg Cu/kg feed). Copper was formulated with concentrate from copper sulfate($CuSO_4$) and animals were fed the diets supplemented with copper from 300kg untill about 630 kg of body weight. Dietary copper levels did not affect daily weight gain, feed intake and feed efficiency during the whole feeding period. Dressing percentage, rib eye area and backfat thickness were not different between animals fed the diets supplemented with copper. Animals fed the diets supplemented with copper received the same B grade in yield grade. Animals fed the diets supplemented with copper received same marbling score. Beef color, fat color, texture and maturity were not affected by Cu supplementation in diet. Animals received the same first grade between treatments in quality grade. Animals fed the diet supplemented with 12mg of copper per kg diet was higher in profit by 13.3% than animals fed the control diet. According to these results, it may be concluded that performance, yield and quality grade were not affected by the Cu levels of 7 to 17mg per kg feed but crude income was enhanced when Hanwoo steers were fed the diet containing 12mg Cu/kg feed.

Effect of Pimpinella brachycarpa Extract on Lipid Metabolism in Rats Fed High Cholesterol Diet (참나물이 고콜레스테롤식이를 섭취한 흰쥐의 지질대사에 미치는 영향)

  • This study was performed to investigate the effect of ethanol extract of Pimpinella brachycarpa (PB) on serum and liver lipid metabolism in rats. Male Sprague Dawley rats were administered 1% cholesterol and 0.25% sodium cholate to induce hypercholesterolemia. PB ethanol extract (200 mg/kg/day or 400 mg/kg/day) was also administered orally to rats with high cholesterol diet for 6 weeks. We divided 40 rats into five groups; normal diet group (NC), high cholesterol diet group (HC), normal diet and PB ethanol extract (200 mg/kg) administered group (NC-PB), high cholesterol diet and PB ethanol extract (200 mg/kg) administered group (HC-PBL), and high cholesterol diet and PB ethanol extract (400 mg/kg) administered group (HC-PBH). The growth rate and liver weight of the high cholesterol diet group was higher than those of the normal diet group, whereas those of the groups administered PB ethanol extract were gradually decreased. There was a signigicant increase in the activities of serum alanine aminotransferase (ALT), asparate aminotransferase (AST) and alkaline phosphatase (ALP) in the high cholesterol diet group. The administration of PB ethanol extract decreased serum ALT, AST and ALP activities in a dose-dependent manners. The high cholesterol diet group showed increased serum triglyceride, total cholesterol, free cholesterol and LDL-cholesterol levels, and decreased atherogenic index, HDL-cholesterol and phospholipid levels as compared with the normal diet group. PB ethanol extract administrated groups showed increased HDL-C/T-C, HDL-cholesterol and phospholipid levels, and decreased serum triglyceride, total cholesterol, free cholesterol, and LDL-cholesterol levels as compared with the high cholesterol diet group. There were no differences in the concentrations of serum triglyceride, phopholipid, LDL-cholesterol, HDL-cholesterol and free cholesterol between normal diet groups. The hepatic concentrations of total cholesterol and triglyceride were also lower in PB ethanol extract administrated groups than in the high cholesterol diet group. These results suggest that ethanol extract of PB exerts hypocholesterolemic effect by reducing serum and liver cholesterol contents.
