닭고기의 발골포장과 구매 방법 - 닭고기의 포장방법 -

  • 브로일러의 소비신장이 눈에 띠게 증가하고 있다. 금년상반기에 육용계 배합사료 생산량은 약 30만톤으로 작년 같은 기간에 비해서 37.25$\%$나 증가되었다. 정부에서도 육류소비구조 개선사업으로 닭고기의 소비증대를 위해 수입쇠고기 포장육을 20$\%$ 의무화 하였다. 우리는 아직도 포장이나 부분육에 대한 기준이 없어 규격과 품질이 다양해 불편하며 하루속히 그 기준을 정하는 것이 필요하다. 본지는 일본의 도계품기준을 이미 소개한 바 있으며 이번 호에서는 미국 BNC (National Broiler Council)자료를 입수하여 미국의 포장방법과 부분별 용도를 소개하고 최근 TV, 라디오, 신문$\cdot$잡지 등에서 닭고기구매방법에 대한 문의가 많아지고 있으나 아직 국내에서는 요리법이나 부분육제품이 이에 맞게 생산되지 않고 있다. 그러나 앞으로를 위해서 소개하고 그동안 가정에서 주부가 할 수 있는 방법을 소개한다. 중량단위가 우리와 달라 이해에 어려운 점도 있는데 이는 우리 현실에 맞게 앞으로 조정될 것으로 믿는다.

Studies on the Carcass Rates, Natrient Contents and Optimum Prices of Broilers and Old Layers as Related to Body Weight (육계의 종류 및 체중별 도체율과 영양성분 및 적정가격에 관한 조사연구)

  • This study was conducted to determine the carcass rates, partcarcass production percentages, nutrient contents and optimum prices of broilers and old layers as related to the body weight. Total 240 birds were used and results obtained are summarized as follows. 1.The carcass rates were 61.41% in young chickens (0.6-0.8kg), 65.07% in semi-bros(1.2-1.4kg) and 66.39% in high- bros (1.7-2.1kg), showing a trend of increased carcass rate as the body weight increased. The carcass rates of old layers were lower than those of broilers, being 62.68% in white old lavers (1.8-2.0kg) and 63.07% in colored old layers (2.1- 2.4 kg) 2. Although there was little difference in part-carcass production percentages between breeds or body weights of broilers, most of the part-carcass was produced from legs, breast, back, wings and neck in order. 3. As the body weight increased, the moisture content of deboned carcass of broilers decreased (71.27% in young chickens, 62.66% in semi-bros and 60.39% in high-bros), while the fat content increased (11.47% in young chickens, 17.60% in semi-bros and 19.87% in high-bros). The protein content of semi-bros (17.21%) was higher than that of young chickens (14.75%) or high-bros (16.93%), but no difference was noted in old layers whether they were white or colored. 4. When compared on the basis of protein or Protein plus fat content in grams per kilogram body weight, the market price of semi-bros per kilogram body weight was more expensive and that of old layers was cheaper than that of high- bros.

Influence of Dietary Natural and Synthetic figments on Growth Performances, Skin Pigmentation and Color Difference in Broiler Chicks (천연 및 합성 착색제의 첨가가 브로일러의 육성성적, 착색도 및 육색 변화에 미치는 영향)

  • This experiment was conducted to investigate the effects of natural and synthetic commercial pigments on the growth performances, skin pigmentation and color difference of broiler chicks. Experimental diet was formulated to have isocalories and isonitrogen for experimental period, and xanthophyll concentration in the diet was 8.45g/1on. The experiment was conducted for six weeks with 450 broiler chicks. The birds were assigned to 10 treatment groups and each group had 15 chicks with three replications. Results showed that the types of pigments did not have any effect on body weight, feed intake and feed efficiency. The mortality was lower with higher pigment supplementation and greater in the natural pigment groups than in the synthetic ones. Dressed carcass, abdominal fat pad and gizzard weight were not significantly different among treatments. The pigmentation of shank skin was increased with high pigment supplementations, and the pigmentation effect was greater with synthetic pigments than in natural pigments. In the shank meat or skin, the color difference(L*, a*, b*, c* and h*) was not consistently related to pigmentation.

Effect of Dietary Lutein and Apocarotenoic Acid Ethyl Ester Supplementation on the Lipid Oxidation of Broiler Meat during Storage (Lutein과 Apocarotenoic Acid Ethyl Ester 급여가 계육의 저장중 지질 산화에 미치는 영향)

  • This study was carried out to investigate the influence of dietary xanthophylls(lutein and apocarotenoic acid ethyl ester) supplementation on the antioxidation of broiler meat. The broilers fed with 10 ppm or 20 ppm xanthophylls were raised for 6 weeks and then slaughtered. The broiler meats were stored at 3$^{\circ}C$ for 9 days and frozen at -18$^{\circ}C$ for 4 months until analysis, respectively. The pH of all treatments significantly(p<0.05) increased during the storage periods. The pH of the thigh was higher than that of the breast. TBARS (thiobarbituric acid reactive substance) and POV(peroxide value) were higher in thigh than breast. All meats from broiler fed with lutein and apocarotenoic acid ethyl ester(apo-ester) had greater antioxidant properties during the storage period than control meat(p<0.05). Antioxidant activity of dietary xanthophylls supplementation was more effective in thigh than breast, and in broiler meats during frozen storage than chilled storage. The higher concentration of xanthophylls in feed, the more inhibition of lipid oxidation in meat during storage. The meat from broiler fed with 20 ppm of lutein showed the highest antioxidant property during both refrigerated and frozen storage although there was no significant difference between lutein and apo-ester(p>0.05). Consequently, this results indicated that the antioxidant activity of dietary xanthophylls(lutein and apocarotenoic acid ethyl ester) supplementation was more effective.

Comparison of the Meat Quality Characteristics among Commercial Broiler, Korean Hanhyup 3 and Organic Chicken (상업용 일반육계, 국내 토종닭, 유기농 육계의 닭고기 육질 비교 분석)

  • This study was conducted to compare the meat quality characteristics of organic chicken and conventional chicken meat based on traditional meat products such as broilers and Korean native chickens. There were a total of 3 treatment groups: commercial broilers, Korean hanhyup-3 broiler (HH3), Korean organic chickens (KOC), consisting of chicken breast and thigh meat. For the comparison of chicken meat quality, proximate composition (moisture, crude protein, crude fat, crude ash), pH, water holding capacity (WHC), cooking loss (CL), drip loss, shear force and color were analyzed, and sensory evaluation was conducted. KOC showed higher moisture content compared to broilers and lower crude protein content compared to HH3 (P<0.05). KOC exhibited the highest pH among the three breeds, resulting in higher WHC and lower CL (P<0.05). In terms of shear force, higher values were observed in HH3 and KOC compared to broilers (P<0.05). KOC showed higher redness, while lower lightness and yellowness were observed in chicken thigh meat (P<0.05). Sensory evaluation revealed HH3 thigh meat had the highest overall preference.

  • Chicken patties and frankfurters were manufactured by varying the relative proportion of MDM to HDM as raw materials, and their palatability, shelf-life and textural properties were evaluated. The obtained results were as follows: 1. Chicken patty containing MDM slowed gradual increase in TBA value during frozen storage, but its storage up to g weeks presented no problems in flavor stability. 2. Color score and total palatability of chicken patty were best for the product containing 30% MDM. It was also concluded that MDM can be included in the patties up to 50% of total meat with good results, but more than 70% was not recommended. 3. The formulation of MDM up to 50% in frankfurter gave a quite satisfactory acceptability and textural properties compararable to frankfurter made of 100% HDM, but the inclusion of more than 70% MDM was not recommended. 4. The TBA value of frankfurter containg MDM did not increase to any great extent until 4 weeks of storage at $4^{\circ}C$, indicating no unique problems in flavor instability compared to regular frankfurter. 5. It was concluded that processed meat products such as patties and frankfurters containing MDM up to $30{\sim}35%$ of total meat ingredients gave satisfactory results in color, texture and palatability, comparable to regular products.

Sanitizing Agent Effect and Antibiotic Resistance of Salmonella spp. Isolated from Raw Chicken Carcasses in Food Service (집단급식용 생계육에서 분리된 Salmonella의 항생체 내성과 위생 처리제의 영향)

  • To control the growth of Salmonella on raw chicken supplied in food service, they were isolated and analysed for their physiological characteristics. Total viable microbe counts under the skin of the chicken amounted to 10% of numbers on their skin. Fifty one of Salmonella were isolated and identified from 75 chicken carcass samples. About 70% of the isolates showed resistance to more than four antibiotics, which indicated very high resistance among the strains ever reported in Korea. Lactic acid and trisodium phosphate(TSP) as sanitizing agent were applied to the Salmonella spp. isolates by agar diffusion method. The resistance by isolates to those sanitizing agents was compared with type strains of S. typhimurium ATCC 14028, S. typhimurium ATCC 12023, S. heidelberg and S. enteritidis. The isolates showed similar or less resistance to the type strains as for the lactic acid. However, as for trisodium phosphate known recently as a good sanitizer, 50% of the isolates showed more resistant compared with the type strains. Also, the treatment time and regeneration medium affected significantly the resistance of the isolates, which indicates that more careful test might be needed for TSP's practical application to raw chicken. Therefore, From the results, it is suggested that antibiotic treatment during breeding broiler and contamination after slaughtering should be minimized along with careful use of sanitizing agent in order to ensure more safe raw chicken supply.

Chemical and Functional Characteristics of Mechanically Deboned Chicken meat and its Utilization in Processed Meat (기계발골가금육의 특성 및 이용에 관한 연구)

  • Hand deboned and mechanically deboned chicken meat were produced from domestic broilers and spent layers. Meat yield, chemical composition, functional characteristics, stability during storage, and microbiological properties were investigated Chicken patties and frankfurters were also manufactured by varying the relative proportion of MDCM to HDCM as raw materials, ana their palatability, shelf-life and textural properties were evaluated. The obtained results were as follows: 1) 35% of carcass wt was recovered as HDCM and 45% as MDCM, total meat yield reaching 80% of carcass wt. 2) Moisture, protein, fat, ash and Ca content of MDCM were 65, 12, 20, 1.7 and 0.2-0.4%,respectively. MDCM was higher in fat, ash and Ca, but significantly lower in moisture and protein. Total pigment content of MDCM was 2.5 times higher than that of HDCD such high content being attributed to the increased inclusion of hemoglobin. 3) The emulsifying capacity (ES) of MOCM per g meat was only 70% that of HDCM. but when ES was expressed on unit g of protein basis MDCM showed even higher ES than HDCM primarily due to tile higher proportion of salt soluble protein fraction. 4) Since the TBA values of MDCM increased rapidly after 4 weeks of frozen storage at -20$^{\circ}C$, the maximum possible storage period of MDCM is estimated to be about 4 weeks. 5) Total microbial counts of MDCM was approximately 1.8${\times}$10$\^$6/g/, showing no great difference from HDCM or red meat. 6) Chicken patty containing MDCM showed gradual increase in TBA value during frozen storage, but its storage up to 8 weeks presented no problems in flavor stability. 7) Color score an4 total palatability of chicken Patty were best for the product containing 30% MDCM. Comparisons of the Carcass Characteristics of Male White Mini Broilers, Ross Broilers and Hy-Line Brown Chicks under the Identical Rearing Condition (동일 조건에서 사육한 수컷 백세미, 브로일러 및 산란종 병아리에 있어서 도체 특성의 비교)

  • The present study was conducted to compare the carcass yields and meat characteristics of three types of commercial male chicks White mini broilers, Ross broilers and Hy-Line brown chicks under the identical feeding condition. One-hundred 1-d chicks of each type were randomly placed into four pens per group (25 chicks per pen) and fed corn-soybean meal based commercial diets for 35d, 18d or 49d, respectively. At the end of the feeding trial, the birds were sacrificed and subjected to carcass measurements. The dressing percentages of White mini broilers and Ross broilers were significantly higher (P<0.05) than that of Hy-Line brown cockerels. The rate of breast meat of Hy-Line brown cockerels was significantly lower (P<0.05) than those of White mini broilers and Ross broilers. However, Hy-Line brown cockerels showed higher (P<0.05) leg meats than the others. There were no significant differences in serum total cholesterol and the activities of glutamic-oxaloacetic transaminase and glutamic-pyruvic transaminase among the groups. The breast meats of White mini broilers presented highest lightness value. The yellowness of breast and redness of leg meats of White mini broilers and Ross broilers were significantly higher (P<0.05) than those of Hy-Line brown cockerels. There were no significant differences in the SOD-like activity and change of pH in edible meats among the groups. The meat color in White mini broilers was significantly higher than that of Hy-Line brown cockerels. No significant differences were observed in term of flavor, tenderness and overall acceptability. In conclusion, the physico-chemical properties and sensory characteristics of edible meats were not greatly affected by genotype if they were similar body weights and kept under the identical feeding condition. But the Hy-Line brown cockerels were less desirable as a meat-type strain due to lower carcass yields and inferior growth and feed conversion ratio.

Effects of Dietary Ground, Crumble and Pellet of Physico-chemical Properites on Broiler Meat (가루, 크럼블 및 펠렛사료 급여가 브로일러육의 이화학적특성에 미치는 영향)

  • This study was conducted to investigate the effect of nutrient level (metabolizable energy and crude protein, 2,843kcal/kg and 19.46% at 2 to 3 week, 3,072kcal/kg and 18.38% at 4 to 6 week, 3,109 kcal/kg and 17.26% at 7 to 8week, respectively, and feeding form was ground $\longrightarrow$ crumble $\longrightarrow$ pellet in control, ground $\longrightarrow$ crumble $\longrightarrow$ pellet in treatment 1, crumble $\longrightarrow$ crumble $\longrightarrow$ pellet in treatment 2, pellet $\longrightarrow$ pellet $\longrightarrow$ pellet in treatment 3 for broiler during 8 weeks. Also the effects of supplemented with charcoal(1%) in total mixed treatment feed was investigated. The crude protein, crude fat in broiler meat ranged from 22.22${\sim}$23.40%, and 0.30${\sim}$0.45%, respectively. Especially, treatment 2 was lower than other treatment (P<0.05). The heating loss tend to be increased at control. Shear force and pH tend to be decreased at T3(1.21kg, 5.89). Control and T2 were significantly lighter in color (‘L’) than the T1 and the ‘a’ ranged from 0.19${\sim}$0.85 and T1 was the lowest ‘b’ among other treatment. The panel test, texture, Aroma were not significantly among the an experimental group (P<0.05). Myristic acid and arachidonic acid of T1 was significantly higher than that other treatment and oleic acid, U/S(unsaturated/ saturated) rate T2 was significantly higher than other experimental group(P<0.05). Among amino acid, cystine, glutamic acid, valine, iso-leucine, leucine, lysine, arginine in T1 and T2 was higher than control and T3.
