Manufacturing Characteristics and Physicochemical Component Analysis of Bokbunja (Rubus coreanus Miquel) Jam (복분자잼의 제조특성 및 이화학적 성분분석)

  • The manufacturing characteristics and physicochemical component analysis of Bokbunja jam made with different additions of materials (Bokbunja, Bokbunja extract, sugar, and pectin) were investigated. There were no changes in the pH, total acidity, and sugar content of all Bokbunja jams that were prepared with different amounts of materials. L-value of color in the jam from the Bokbunja extract was the highest. a-value increased, but b-value decreased with the addition of pectin in jam. Spreadmeter value decreased while hardness increased in the jam added by pectin. The highest overall acceptability values in the sensory test for color, sweetness, adhesiveness, and overall favorite were 4.07, 5.33, 4.33, and 6.00, respectively, with the addition of 0.5% pectin.

  • Molecularly imprinted polymers were prepared in particle forms by crosslinking methacrylic acid (MAA)) using all trans-retinoic acid as a template. The HPLC column packed with the prepared molecular imprinted polymers showed high capability in separation of retinoid derivatives. The column capacity factor and selectivity increased with increasing MAA to template ratio when the incorporated template amount was fixed, as it statistically generated more binding sites between host molecules and template. Molecularly imprinted polymer particles prepared via an emulsion polymerization method were round-shaped and their sizes were more uniformly distributed, but their separation capability was inferior to those obtained by solution polymerization method. It was presumably because the loss of interaction strength between MAA and the template due to hydrogen bonding either between MAA and water or between template and water during the synthesis of molecularly imprinted polymers.

Quality Characteristics of Bread with Rubi Fructus(Rubus coreanus Miquel) Juice (복분자 착즙액을 첨가한 식빵의 품질 특성)

  • Bread were prepared by adding 0%, 5%, 10%, 15%, 20% of rubi fructus(Rubus coreanus Miquel) juice to wheat flour, and the effects of added rubi fructus Juice on dough rheology and bread qualities were examined. The peak and final viscosities in rapid visco analyzer increased with the increase in addition of rubi fructus juice. The water absorption and mechanical tolerance index(MTI) increased, but dough development time and dough stability decreased in farinograph with the increase in addition of rubi fructus juice. The hardness, gumminess and chewiness of bread increased significantly with the increase in addition of tubi fructus juice. From the result of sensory evaluation, bread containing 20% rubi fructus juice were rated as higher quality bread than the others.

세라믹막의 분획분자량 (Molecular Weight Cut-Off) 특성화

  • 슬립캐스팅법으로 제조한 튜브형 $\alpha$-알루미나 담체 (평균기공크기 = $0.1 \mum$)에 졸-겔 침지코팅(dipcoating) 또는 가압코팅 (pressurized coating) 법에 의하여 극미세입자 $\gamma$-AlOOH, $TiO_2, SiO_2$, 및 aluminosilicate diphasic 졸을 코팅한 후 300 ~ 500$\circ$C 에서 열처리하여 세라믹 복합막을 제조하였다. 복합막 전체에 대한 균열유무는 $N_2$ 기체투과율의 평균압력에 대한 의존성으로부터 평가하였으며, 한외여과 (ultrafiltration)에의 응용성을 규명하기 위하여 막의 재질 및 제조조건에 따른 polyethylene glycol (PEG) 수용액의 분획분자량 변화를 측정하였다. 합성 세라믹 복합막의 분획분자량 측정 결과 $SiO_2$의 경우 2,000 정도로 매우 우수하였으며 $\gamma-Al_2O_3, TiO_2$, 그리고 aluminosilcate 막들은 6,000 ~ 10,000 범위 값을 갖고 있었다. 또한 막의 기공크기 및 분획분자량을 제어하기 위한 방법으로서 $TiO_2$ 복합막을 300 ~ 700$\circ$C 에서 열처리하였으며 이들에 대한 분획분자량 변화를 비교 분석하였다.

Preparation and quality characteristics of low molecular weight collagen treated with hydrolytic enzymes from Korean native chicken feet (효소를 이용한 저분자 토종 닭발 콜라겐의 제조 및 품질 특성)

  • The purpose of this study was to prepare low-molecular weight collagen using a commercial proteolytic enzyme (Protamex) from collagen extracted from feet of Korean native chicken and to investigate the quality characteristics of this collagen. The collagen content of Korean native chicken feet was 13.9 g/100 g, which was higher than the 6.21 g/100 g of general broilers. It was found that the content of low molecular weight collagen increased as the concentration of proteolytic enzymes and reaction time increased. In particular, reaction with 1% Protamex for 7 h resulted in 55.6% of low molecular weight (1,000-5,000 Da) collagen content, and the average molecular weight was 5,390 Da. Regarding the texture of the enzyme-treated collagen, the collagen with high molecular weight peptides decomposed into low molecular weight peptides, and the gel type could not be formed, whereas the sol type was maintained.

Preparation and Characterization of Pamidronate-loaded PLGA Wafer for the Treatment of Bone Resorption (골 재흡수 치료를 위한 파미드로네이트를 함유한 이식형 생분해성 PLGA 웨이퍼의 제조와 특성결정)

  • Implantable biodegradable wafers were prepared with pamidronate -loaded poly (L-lactide-co-glycolide) (PLGA, 75 : 25 mole ratio by lactide to glycolide, molecular weight : 20000 and 90000 g/mole) by direct compression method for the sustained release of pamidronate to investigate the possibility for the treatment of bone resorption. Pamidronate-loaded PLGA powders were prepared by means of physical mixing and spray drying with the control of formulation factors and characterized by scanning electron microscope and X-ray diffractometer. The pamidronate-loaded PLGA powders fabricated into wafers by direct compression under the constant pressure and time at room temperature. These wafers were also observed for their structural characteristic, release pattern, and degradation pattern. The release rate of pamidronate increased with increasing their initial loading ratio as well as increasing wafer thickness. The molecular weight of PLGA affects the release pattern : the higher molecular weight of PLGA, the faster release rate. It can be explained that the higher viscosity of high molecular PLGA solution at same concentration tends to aggregate PLGA and pamidronate resulting in unstable pharmaceutical dosage form. This system had advantages in terms of simplicity in design and obviousness of drug release rate and nay be useful as an implantable dosage form for the treatment of aural cholesteatoma.

  • 한천 올리고당은 효소인 아가라제에 의하여 제조하였으며 제조에 있어서 효소의 농도, 반응 온도 등에 따른 최적 제조조건을 규명하였으며 한천 올리고당을 GPC로 분자량을 측정하였을 때 분자량이 약 4,200 Da이었다. 또한 한천올리고당의 항산화 작용 및 아질산 소거능을 측정한 결과 항산화 효과가 비타민 C보다는 약간 낮지만 68%정도의 비교적 높은 항산화 활성을 나타내었으며 한천 올리고당이 이산화질소의 과잉생성을 억제하여 정상레벨로 유지하는 것을 알 수 있었다.

  • 미국 내에서 첨단 농업과 관련한 학문 연구 및 기술개발 활동이 가장 활발하며, 농산물의 수확 후 관리기술 등의 분야에서 세계적으로 명성이 높은 University of California, Davis에서 지난 2000년 10월 9일부터 200 1년 10월 7일까지 1년간 해외연수를 수행하였다. 연수 지도교수였던 식품공학과(Food Sci. & Technol.) 및 생물.농공학과(Bio. & Agric. Engin.) 소속의 Dr. John M. Krochta는 천연소재의 환경친화성 생고분자 (biopolymer ) 필름/ 피막의 제조 기술과 특성 평가에 관한 연구분야에서 이미 수많은 탁월한 연구성과를 축적한 저명 과학자로서, 실제 연수를 수행한 식품공학과 내의 Packaging & Biopolymer Film Lab.에서는 최근 10년 동안 주로 유가공 부산물인 유청 단백질(whey proteins )을 원료로 한 생고분자 필름/ 피막을 개발하여 각종 신선 농산물 및 가공식품에 대한 적용 가능성 연구를 수행하면서 다수의 연구논문과 저서, 특허를 배출하고 있었다. 필자는 연수기간동안 whey protein films의 산소 차단특성을 활용하여 기존 합성 고분자 재질의 산소 차단재를 대체할 수 있는 새로운 생고분자 포장재로서 whey protein coating의 제조 및 성능 평가에 관한 연구를 수행한바, 이에 간략히 그 내용과 결과를 소개하고자 한다.

복분자주의 품질 비교

  • 생약재로 사용되고 있는 복분자를 식품가공소재로 활용하고자 최적 추출조건에서 얻은 추출물로 복분자 리큐르를 제조하여 시판되고 있는 복분자주(A, B, C)와 성분을 비교하였다. 그 결과, 알콜함량은 복분자 리큐르와 B 제품이 15.6%로 나타났으며 A와 C 제품은 각각 13.2%와 14.0%로 분석되었다. 복분자 리큐르의 당도와 가용성 고형분 함량은 12.1 。 Brix와 6.18%로 B 제품과 유사하였으며 A 제품은 각각 18.2 。Brix와 14.93%로 가장 높게 나타났다. 총 페놀성 화합물은 143.77mg%인 B 제품이 가장 높게 분석되었으며 복분자 리큐르는 93.03mg%로 나타났고 전자공여능은 복분자 리큐르가 77%로 다른 제품(A, B, C)보다 가장 높게 분석되었다. 유리당 분석에서 복분자 리큐르와 A 제품은 glucose가 가장 높게 분석되었으며 fructose함량은 A와 B제품이 높게 나타났으며 galactose는 41.5mg%로 B 제품에서만 분석되었다. 알콜성분 비교 분석결과, acetaldehyde은 A 제품을 제외한 모든 복분자주에서 나타났으며 methanol은 C 제품이 47.25ppm으로 가장 낮게 분석되었고 iso-propanol은 복분자 리큐르와 B 제품만 나타났으며 n-propanol은 복분자 리큐르에서만 검출되었고 iso-amylalcohol은 복분자 리큐르를 제외한 A, B 및 C제품에서 모두 분석되었다. 이상과 같은 차이는 원료, 주류의 제조방법에 따른 것으로 나타났다.

Study of Diffraction Efficiency Values for Photopolymer Films Added TiO2 Nanoparticles (TiO2 나노 입자를 첨가한 광고분자 필름의 회절효율 값에 대한 연구)

  • In order to improve the diffraction efficiency of the photopolymer, we prepared a $TiO_2$ added photopolymer and investigated the optical properties. Prepared photopolymer films are based on polyvinyl alcohol (PVA) as a polymer binder, acryl amide (AA) as a photo-polymerizable monomer, triethanolamine (TEOA) as an initiator, and eosin Y as a sensitizer at 532 nm. To prepare the photopolymer films with the uniform thickness, the constant amount (2.5 ml) of the photopolymer solution was dropped on the glass and spread using a spin coater. Then films were dried for 72 hrs in a darkroom ($20^{\circ}C$, 40% RH) prior to the optical measurement. Then, the diffraction efficiencies of both the photopolymer films containing $TiO_2$ and non-contained films were measured with the various incident angles ($20{\sim}70^{\circ}$). Therefore, $TiO_2$ added photopolymer showed 5% higher diffraction efficiency than neat photopolymer without $TiO_2$ addition. The addition of $TiO_2$ into the photopolymer showed the high diffraction efficiency (over 70%) at broad range ($20{\sim}70^{\circ}C$) of the incident angle.
