Effect of kneading and fermentation conditions on the quality of gluten-free rice bread (반죽 및 발효 조건이 글루텐 프리 쌀 빵의 품질에 미치는 영향)

  • In recent years, there has been an increasing interest in research on gluten-free bread. Most studies have focused on substituting or imitating the gluten network. However, less attention has been paid to technological approaches to improve the quality of gluten-free rice bread (GFRB). This study analyzed the influence of the temperature of water used for kneading and fermentation time on the quality of GFRB. Water at various amounts and different temperatures was added for kneading, and fermentation was performed for 0, 2, and 4 h. GFRB produced by kneading using water at 95℃ showed the highest specific volume and the lowest hardness among test groups, regardless of other factors. In conclusion, mixing equal volumes of water at 95℃ and rice flour, followed by a 2 h fermentation process, produced the best-quality GFRB in terms of cross-sectional area, hardness, and appearance.

Effect of Substituting Coal Fly Ash of Sawdust as a Bulking Agent for Swine Waste Composting (석탄회(石炭灰)(Coal fly ash)의 양돈분뇨처리(養豚糞尿處理) 부자재(副資材) 대체이용(代替利用)에 관(關)한 연구(硏究))

  • This study was carried out to investigate how much coal fly ash could be substituted for sawdust as a bulking agent for livestock waste composting. The mixtures of coal fly ash and sawdust in the weight ratio of 8 to 2, 7 to 3, 6 to 4, 5 to 5, 4 to 6, 3 to 7 and 2 to 8 were added to livestock waste as the bulking agent. The same amount of the bulking agents and livestock waste was mixed and composted during 21 days. Following effects were analyzed during composting experiment : the variation of temperature, pH and various compound contents. The results were summarized as follows: The more the sawdust was added, the higher the maximum temperature in slurry type livestock farm but faster it reached in scrapper type. Water content was maintained under good condition by adding the bulking agent mixed of the same amount of coal fly ash and sawdust. pH was in the range of 7~10 by adding the bulking agent mixed of the same amount of coal fly ash and sawdust. The more the sawdust was added, the higher organic matter content was measured. Nitrogen content with increasing the amount of sawdust added but it was higher did not showed any tendency Organic matter/Nitrogen ratio reduced during the composting period in scrapper type but it showed contrary tendency in slurry type with that of scrapper type.

  • Retention behaviors of aliphatic and aromatic compounds were investigated with Van der Waals volume which represented the molecular size. The organic solvents, methanol, acetonitrile and tetrahydrofuran, were mixed with water at various ratio, respectively. The selectivity of organic solvents were tested by change of column temperature. The capacity factor was increased linearly according to the enlargement of molecular size.   • 실험실 규모의 유동층 반응기(0.8 m H $\times$ 0.08 m I.D.) 에서 반응온도(700 -80$0^{\circ}C$), 유동화속도(1.5 - 3 Umf)의 영향에 따른 생성물의 수율, 생성가스의 조성, 생성가스의 발열량의 변화를 질소 분위기하에서 조사하였다. 반응온도를 700 에서 850 $^{\circ}C$로 증가시킬 때 촤의 수율은 36% 정도로 온도에 따라 큰 차이를 보이지 않은 반면 가스의 수율은 온도가 증가함에 따라 22 %에서 800 $^{\circ}C$까지 30%가량 증가하다 그 이상의 온도에서는 증가하지 않았다. 또한 수소와 메탄은 온도가 증가함에 따라 그 생성량이 증가하는 반면 에탄과 프로펜은 감소하였으며 단위 부피당 가스의 발열량은 감소하였다.

CLSM Analysis of Change in Roughness and Physical Properties of Granite after Freeze-Thaw Experiments (CLSM을 이용한 동결/융해 실험 후 화강암 시료의 표면 및 물성변화 분석)

  • Freeze-thaw experiments were conducted to evaluate changes in surface roughness and physical properties in samples of granite from Ilgwang and Imki mines, Korea. The temperature range in the experiments was $-20^{\circ}C$ to $40^{\circ}C$, based on typical summer and winter temperatures in Korea, and the surface was observed every 20 cycles. One cycle comprised 1 hour of heating or cooling of the samples and 1 hour during which the target temperature was maintained. With increasing repetitions of the freeze-thaw experiment, porosity increased by 0.05%-0.15% in the two samples and the dry weight increased, whereas the volume of the soil and saturation weight decreased. Observations by confocal laser scanning microscope (CLSM) revealed that line and surface roughness parameters showed a tendency to increase and decrease, respectively, with elapsed time. Changes in surface roughness were apparent on the CLSM images.

  • Poly(N-isopropylacrylamide) (PNIPAM) hydrogel has been studied as an important drug delivery system due to its volume transition or temperature-responsive swelling properties, whose phase separation temperature is similar to the body temperature. However, because of hydrophilic PNIPAM, hydrophobic drugs are difficult to be uniformly loaded in the networks. Antioxidant alpha-lipoic acid (LA) can be prepared as a polymer(polylipoic acid, PLA) by ring opening polymerization, which is hardly developed as a material due to its low molecular weight and easy depolymerization. To overcome this limitation, a hydrophobic active ingredient, LA was reacted with NIPAM into stable hydrogels. Simple thermal radical reaction successfully resulted in a hydrogel (PNIPAM/PLA), which was confirmed by DSC, FTIR, and Raman spectroscopy. The PNIPAM/PLA showed temperature-responsive properties, and their volume swelling decreased with an increase in lipoic acid content. These hydrogels can carry hydrophobic drugs with PNIPAM and the hydrogels could be useful as final drug delivery systems having lipoic acid as an antioxidant.

  • 저압 기상 영역에서 Anhydrous HF 가스와 Methanol vapor를 사용하는 산화막 식각공정을 수행하기 위하여 (1) 반응기 부피의 최소화, (B) 공정압력의 최소화, (3) 고순도 알루미나 Reactor 적용, (4) Cluster화의 개념을 적용한 VPC 장치를 제작하였다. Wafer의 온도, HF의 분압 및 Working Pressure 등의 공정변수에 따른 Oxide Wafer의 식각특성의 변화를 확인하였다. 또한 Etch Uniformity를 향상시키기 위하여 Shower Head 구조를 변경시켜서 실험하였으며, CFD Simulation을 이용하여 Reactor내에서의 HF gas 및 Methanol vapor의 분율을 예측하였다.

액막의 유동 및 온도계산 모델에 의한 PCCS 열전달 현상 해석

  • 범용 전산유체 해석코드인 CFX 4.1을 사용하여 철재격납용기 표면을 전열면으로 이용하는 피동격납용기냉각계통에 대한 열전달 현상해석을 수행하였다. 철재격납용기 내부와 외부 채널에서 발생하는 열전달 현상을 모사하기 위하여 액막의 유동 및 온도계산 모델을 범용 전산유체해석코드인 CFX4.1에 적용하여 철재격납용기 내.외부의 표면을 흐르는 액막의 높이, 액막내 온도분포, 철재격납용기 내.외부의 온도, 유속 및 부피분율 등을 계산하는 복합 열전달 해석 방법론을 개발하였다. 해석결과는 향후 실험 둥을 통한 검증이 필요하나 피동형 격납용기템각계통에서 발생하는 물리적 현상들의 복합적인 거동 분석에 사용될 수 있는 것으로 평가되었다.

  • 고온의 증기가 과냉각 상태의 물과 직접접촉에 의해 발생하는 응축현상(DCC Direct Contact Condensation)을 실험적으로 고찰하였다. 본 연구는 두단계로 나누어 수행하였다. 1단계 연구에서는 간단한 원형관 형태의 수평 노즐을 통하여 증기제트가 대기압 상태의 과냉각수로 분출될 때 증기제트 및 주위의 거동을 측정·분석하였다. 수조의 온도와 증기유량의 변화에 따른 증기제트의 축방향과 반경방향 온도분포와 수조 벽면에서의 동압을 측정하였으며, 고속 비디오 카메라를 사용하여 각각의 경우에 대하여 증기제트의 분출이미지를 촬영하였다. 벽면에서의 동압은 노즐의 분출구직경과 응축수의 온도에 비례하여 증가하였다. 2단계 연구에서는 몇가지 형태의 증기분사기 축소 모형에 대한 응축성능을 비교하였다. 이때에는 수조의 온도상승으로 인해 수조가 가압되는 정도를 알아보기 위해 수조를 밀봉한 상태로 실험을 수행하였다. 실험시 수조의 압력은 시간의 경과에 따라 계속적으로 증가하였으나, 이는 방출된 증기의 불완전한 응축에 의한 것은 아니고 증기의 분출과 응축으로 인한 응축수의 부피팽창과 수조 온도의 상승으로 인한 증기압의 상승 때문인 것으로 판단된다.

Effect of Hydrocolloids on Physicochemical Properties of Bread Flour Dough with Rice Flour (Hydrocolloids가 쌀을 첨가한 빵용 밀가루 반죽의 물성학적 특성에 미치는 영향)

  • This study was carried out to investigate the effect of hydrocolloids [hydroxypropylmethyl cellulose (HPMC), xanthan gum (XG), guar gum (GG), and glucomannan (GM)] on the physicochemical properties of bread flour dough containing rice flour. In amylograph analysis, the significantly lowest gelatinization temperature was obtained in dough with XG (P<0.05). XG revealed the highest maximum viscosity while GM revealed the lowest. In viscograph test, the lowest gelatinization temperature and maximum viscosity showed the same result as in the amylograph. Breakdown value was also highest in dough containing XG, but lowest in the control and dough containing HPMC. Setback value was highest in dough containing HPMC, but lowest in dough containing XG. In farinograph analysis, consistency was greatest in dough with HPMC and XG. Hydrocolloids affected water absorption, which was highest in dough containing GM. Development times of dough containing HPMC and XG were low. Stability was lowest in dough with XG. Degree of softening was reduced in dough containing HPMC and GG compared to the control but increased in dough containing XG and GM. Dough containing HPMC and GG showed the largest volume at 3 h of fermentation. Dough with HPMC showed the lowest pH value. Hydrocolloids in this study affected physicochemical properties of dough.
