Effects of NaCl and Temperature on the Sensory Characteristics of Natural Flavor Enhancers (NaCl 첨가 및 평가 온도에 따른 천연조미소재의 감각적 특성)

  • The objectives of this study were to evaluate the sensory properties of various natural flavor enhancers (NFEs) and to understand the effects of NaCl and temperature on the sensory characteristics of these NFEs. Descriptive analysis was conducted to evaluate six types of NFEs: yeast extract-based NFE, three; fish sauce-based NFE, one; soy sauce-based NFE, one; and hydrolyzed peptide NFE-based, one. The effects of NaCl (no addition vs. addition) and temperature ($20^{\circ}C$ vs. $55^{\circ}C$) were also evaluated. The results showed that the overall flavor intensity and sensory properties of the NFEs differed greatly depending on the NFE source. Two of the yeast extract-based NFEs elicited higher umami intensity than the other NFEs. Addition of NaCl increased some of the savory-related flavors and the perceived viscosity of the sample. Aroma intensities, in general, were enhanced at the higher temperature, whereas flavor, aftertaste, and mouthfeel attributes were perceived to be stronger at the lower temperature.

  • 본 연구는 내항상선에 승선하는 외국인 선원을 대상으로 한 표준 해사한국어 교육과정의 설계를 위한 기초 연구이다. 현재 국내선원의 부족으로 외국인 선원이 증가함에 따라 의사소통 문제를 둘러싼 여러 논의가 진행 중이다. 본 연구의 최종 목표는 혼승 선박에서의 보다 원활한 의사소통을 위해 일상 업무의 수행에 필요한 주요 대화를 선정하여 이것을 외국인 선원을 위한 표준 해사한국어 교육과정에 반영하고자 하는 것이다. 이를 위해 여기에서는 문헌 연구와 설문 조사를 실시하여 부원의 일상 업무를 목록화하고 이들 업무의 중요도와 빈도를 조사하였다. 먼저 각국 대학에서 사용 중인 해사영어 교재와 내항상선의 외국인 선원을 교육하기 위한 교육 자료를 살펴봄으로써 1차적으로 공통되는 업무를 추출하였다. 다음으로 승선 유경험자로 구성된 전문가 위원회의 자문을 통해 업무의 범주를 설정하고 세부 업무 내용을 선정하였다. 마지막으로 설문조사를 실시하여 이들 업무의 중요도와 빈도를 조사하였다. 본 연구의 결과를 바탕으로 추후 연구에서 주요 대화를 선정하기로 한다.

다겹 판지의 탈수 및 건조효율 개선을 위한 연구

  • 현재의 세계 제지업계는 고지의 사용량과 용수의 재홀용률을 높이기 위해 노력하고있다. 특히 한국의 고지 재활용률은 세계 최고수준으로 보고된 바 있으며, 이를 사용하는 재생용지 생산업채는 고지의 높은 재활용률에 기인하는 여러 가지문제점에 당면하고 있다. 국산 고지는 반복적인 재활용으로인하여 섬유장이 짧고 매우각질화된 상태이며, 펄프 내 미세분 함량이 50%이상에 달하고 있다. 또한 섬유의 표면이 인쇄잉크, stickies 및 각종 이물질로 오염됨에 따라, 섬유자체가 보유하고 있는 섬유간 결합 능력이 저하된 상태이다. 이는 초지시, 탈수성을 악화시켜 생산성을 저하시키며, 탈수성 악화에 기인하여 충분한 고해 과정을 거치지 못하여 생산된 종이의 물리적 성질에 악영향을 미치고 있다. KOCC를 주원료로 사용하는 다겹 판지의 제조공정 또한 재활용 원료의 열악함에 기인한 초지계 내의 과다한 미세분 축적과 이로 인한 탈수성의 저하 및 건조효율의 저하를 막기 힘들었다. 이러한 탈수성 및 건조속도의 저하로 종이 생산 효율의 개선 및 각 물성의 상승을 기대하기 어려웠으며, 이를 개선하기 위하여 다양한 Polyelectrolyte를 첨가하였으나 현저한 효과를 보기 힘들었다. 이에 본 연구에서는 새로운 목질계 부원료인 Lignocell을 사용하여 초지시 탈수성 향상과 건조 촉진, 생산된 종이의 bulk 향상으로 인한 stiffness 등 물리적 성질의 향상효과를 평가하고자 하였다.

  • This study is of manufacturing artificial lightweight aggregates using industrial wastes. The ingredients for manufacturing lightweight aggregate were stone sludge and bottom ash for main materials, and steel slag(SS), glass abrasive sludge(GS) and blast furnace slag(BS) respectively for accessory material. Their precursors were sintered in the range of $1,050{\sim}1,150^{\circ}C$ for 5 min. The sintered results show that the lightweight aggregate with SS had low water absorption ratio and density at $1,150^{\circ}C$. There's a possibility that if GS is used more than the range of this study, GS can be manufactured lightweight aggregate. But it is judged that BS are incongruent to be used for a raw material of lightweight aggregate.

  • Animal feedstuff handling is one of the major fugitive dust sources in the port of Incheon. For the effective control of fugitive dusts emitting from the port of Incheon, dust control facilities with bag filter systems should be designed properly considering the characteristic of the fugitive dusts including those from animal feedstuffs. The ultimate goal of this study is thus to develop the optimum fugitive dust control system which will be applicable for the renovation of the port. As the first step to achieve this longstanding goal, filtration characteristics of soybean shell, the largest dust sources in the port, were investigated with the specially designed filter testing apparatus for this study. The variables tested for the experiments included filter materials, dust concentrations, relative humidities, and filtration velocities. Also, the filtration characteristics of the other animal feedstuffs such as sunflower seed shell, tapioca, and palm shell were investigated to determine $K_2$ as a function of filtration velocity. The information on $K_2$ will be used to design the optimum bag filter systems for animal feedstuffs handling in the port.

Estimating Road Design Hourly Volume via Inflection Point Identification (변곡점 탐색을 통한 도로설계시간계수 산정)

  • Design hourly volume and the K-factor, first proposed by FHWA in the 1950s, is based on the 30th hourly traffic volume during a year (out of 8,760 hours). It was used when surveying the traffic volume was laborious in the past and is still being used now although it leaves some to be desired for practical applications. More reasonable K-factor for better design, based on theoretical evidence, is needed. This paper proposes the knee searching method based on simple linear regression to find out the inflection point of the volume ranking curve that describe the annual 8,760 hourly traffic volumes. The method was applied to the Chungcheong province's national highway, and the results were compared to the existing guidelines' values of K-factors. Identified design hourly traffic volumes ranked between 43rd to 694th, which is much lower than the 30th volume, meaning that some overdesign examples are inevitable if the conventional $30^{th}$ volume is used.

Characterization of Extracellular Proteolytic Enzyme of Isolated Psychrotrophic Bacteria from Cheddar Cheese (체다치즈에서 분리한 내냉성미생물의 단백질분해효소의 특성)

  • Psychrotrophs producing protease were isolated during ripening periods of Cheddar cheese and one of them containing the highest protease activity was identified as Pseudomonas fluorescens 65. The extracelluar proteolytic enzyme was partially purified from P. fluorescens 65 through the Sephadex G-100 gel filtration. The protease was eluted between 190 ml and 230 ml of elution volume of sodium phosphate buffer. The purified protease showed a single band in SDS-PAGE and its molecular weight was 47,000. The composition of amino acid for the protease was determined and the most abundant amino acids were glutamic acid (14.96%) and serine (13.86%). The optimum temperature and pH for the activity was $45{\sim}50^{\circ}C$ and 6.0, respectively.

  • This study was carried out to introduce current status and development strategy for an environmental restoration of stream side in Japan, and to consider a methodology which could be effectively applied for the environmental restoration of stream side in Korea. Since the end of 20th century, the native ecology and landscape of Japan remained only a limited areas such as stream side, water side and forest areas. Therefore, recently the works of forest conservation and erosion control of environmental restoration on stream side tended to increased. The strategic prospects of environmental restoration in Japan were summarized as follows : 1. From the ecological point of view, we have to develop a certain method and technology in construction of forest conservation and erosion control to prevent environmental problem from erosion control works. 2. We have to restore not only a continuity of stream side forest from a primitive area to an estuary but also the stream side forest to preserve and restore a stream side vegetation on a primitive watershed areas. 3. We have to improve a method of construction or removal of a structure which were constructed in the stream to restore a water side environment and an interaction system for an integration on a forest land, stream, and erosion control. Additionally, we have to establish an integrated evaluation method and an enforcement system after investigation of influences on natural environment, stream, and forest etc. 4. We have to conduct an integrated research to investigate the ecosystem of stream side, and construct environmentally friendly water park and erosion control park which considered natural environment and its landscape. Additionally, we need to introduce and adopt a natural style stream construction method to restore a water side areas.

Development of the Red Pepper Auto-tedding Machine for the Production of Taeyangcho in Greenhouse (비닐하우스 내 태양초 생산을 위한 고추 자동 교반장치 개발)

  • This study was carried out to test a red pepper tedding factors which is needed for design and development of an auto-tedding machine and a performance. According to this test, the results can be summarized as follows: The results of the tedding factors test according to shape of rotary blade, which is the 0.4 to 0.5 mm brush type, was found to be the most appropriate. As a result of tedding ratio which includes brush diameters, driving velocities and rotation velocities, there was generally no significance difference, but the red pepper tedding efficiency was found to be 39.7%. The moisture drying rate of red pepper was found to be 0.9 %w.b./h in prototype auto-tedding machine and 0.4 %w.b./h in traditional practice. The drying time was found to be 3 days in prototype auto-tedding machine and the traditional practice was 6 days. The average variable coefficient of the red pepper moisture content was found to be 16.8% in prototype auto-tedding machine in comparing with the traditional practice of 35.0%. This test showed a difference around two times, and this difference was evaluated to be the reason for irregular drying and different drying times.

A Survey on the Prevalence of Cumulative Trauma Disorders and Related Factors among Seafares (선원들의 누적외상성질환 발생과 관련요인)

  • The purpose of this study is to provide basic data for the prevention and management of Cumulative Trauma Disorders in Korea seamen. 569 seamen's questionnaire had been acquired at Korea Marine Training and Research Institute. The prevalence in Cumulative Trauma Disorders within recent 12 months was 68.5%. The more working hours(p<0.01), services on the vessel(p<0.01), and the less job satisfaction(p<0.05), the higher prevalence of Cumulative Trauma Disorders. The distribution of Cumulative Trauma Disorders by the part of the body was turned out as Back ; 43.6%, knee ; 23.9%, shoulder ; 19.3%. The officers had more frequency of symptom around the neck than the ratings(p<0.01) and the seamen who work at the engine room were more frequent in elbow than those at deck department(p<0.05). In the duration of pain, 55.4% were less than one week, 20.6% less than 30 days, and 24.0% 30 days and more. the cause of symptom was turned out as 34.5% by excessive hard work and 30.1 % was unknown.
