Literature Review on the Research and Developments of Korean Rural Living Science -Food & Nutrition- (한국 농촌 생활과학 연구동향 및 문헌고찰 -식생활 분야-)

  • 농촌주민들의 영양 섭취실태에 대한 동향을 요약해 보면 1. 총 섭취식품중 약 90% 정도를 식물성식품으로써 섭취하고 있으며, 곡류가 차지하는 비율은 점차 감소되는 반면 콩류, 채소류 및 과일류의 섭취 비율은 현저히 증가하고 있다. 2. 총 열량섭취는 감소하는 추세이고 총열량에 대한 탄수화물 :단백질 :지방의 비율이 74 : 12 : 12의 수준이다. 총 단백질 섭취에 대한 동물성 단백질 섭취율은 36%로써 질적으로 바람직하게 변화되고 있다. 칼슘의 섭취수준이 권장량의 90%정도로서 조금 부족한 듯 하지만 철분, 비타민 등 대체로 영양섭취상태는 많이 개선되었음을 알 수 있다. 3. 농촌 영아들의 경우는 모든 영양소가 권장량에 현저히 미달되는 상태이다. 이유식품 개발 및 이유 방법에 대한 상담 지도가 적극 필요한 실정이다. 4. 새마을 유아원의 설치 및 유아급식의 혜택으로 농촌 유아들의 영양 섭취 상태는 두드러지게 개선되었으나 철분섭취 상태는 권장량에 미달되는 실정이다. 취학전 아동의 영양향상을 위해서는 유아 교육시설 확충 및 간식의 중요성에 대한 농촌 주부 대상의 영양 교육 확대 실시가 요청된다. 5. 국민학교 아동들에게서는 빈혈의 발생 빈도가 높게 나타났다. 성장 발육기에 있는 이들의 심신발달에 필요한 영양공급 및 올바른 식습관 형성을 위해서는 학교에서 일정한 지도 목표를 설정하여 계획적으로 실시하는 학교 급식의 필요성이 강조된다 하겠다. 6. 청소년기 및 임신 수유부의 경우도 철분의 섭취상태가 부족하기는 하지만, 철 결핍성 빈혈증상이 나타날 정도는 아니고 영양섭취상태도 대체로 양호하다. 7. 노인들의 식품 영양 섭취실태는 권장량에 크게 미달되는 실정이기는 하지만 혈액검사의 수치들이 대체로 정상인 범위에 있고 건강상태도 양호한 편이다. 식품 개발 및 조리법에 관해서 요약해 보면 1. 식량수급의 안정을 기하고자 다수확 품종인 통일계통 쌀의 취반 및 가공적성에 대한 검토가 진행되었으며, 잡곡류 및 감자류의 효과적인 이용을 위해 복합분의 사용에 의한 식품가공 적성에 대한 연구들이 실시되었다. 2. 콩류에 대한 연구로는, 기름을 추출하고 남은 탈지대두박의 단백질 식품으로의 이용을 위해 추출법의 검토 및 탈지대두박을 이용하는 두부제조법 등 다각적으로 식품에의 적용에 관해 연구가 진행 되었다. 3. 발효식품 중 김치에 대해서는 농촌지역에서 제조되는 김치의 종류와 섭취실태에 관한 연구 및 김치의 저장성을 증진시키기 위한 일련의 검토가 있다. 간장, 고추장, 된장에 대해서는 Koji를 이용한 개량식 제조법 및 팽화시킨 곡분을 사용하는 간편 제조법, 비용 절감을 위한 대체원료 이용에 대한 연구 등이 진행되었다. 4. 이밖에도, 병조림 제조방법, 어린이를 위한 고영양 보충식 개발, 생선의 폐기 부분을 이용하여 칼슘 급원 식품으로서의 유용성에 관한 조리과학적 검토 등이 실시되었다. 식습관 및 식생활 관리 지도에 관한 연구에 의하면, 농촌여성의 농업역할이 가중되면서 자녀들의 식생활을 방임하기 쉬운 실정이므로 유아 교육시설 및 학교 급식 등을 통해서 바람직한 식습관 형성을 위한 프로그램이 개발되어져야 하며, 한편, 식생활 담당자인 농촌주부에 대한 규칙적이고 정확한 영양교육이 이루어져야 하리라 본다.

Mechanical Properties and 3D CAD Images of the Appearance of Knitted Fabric with Acetate/Polyester Composite Yarn by Different Yarn Twisting Methods (연사방법에 따른 아세테이트/폴리에스터 복합사 편성물의 역학적 특성 및 3D CAD System에 의한 외관특성)

  • The purpose of this study was to eximine the effect of different yam twisting methods on mechanical properties and 3D CAD images of plain knitted fabrics made of composite yarns. Six yams were used in this study: four different composite yams of the six consist of acetate and functional polyester (Poly-m) with the ratio of 70:30, and the rest two are the original acetate $100\%$ yam and the poly-m $100\%$ yarn. The four kinds of composite yarns were processed in combinations of twisting processes such as interlacing, false twisting, two for one twisting, combined twisting and single covering, and the two original yams were knitted without any twisting process. Sixteen mechanical properties of all the six knitted fabrics, knitted under the same knitting conditions, were measured by KES-FB system with the outer knit condition. The results were as follows; 1) When the sample applied with the false twisting process at the temperature as high as $220^{\circ}C$, ENT, B, HB, G and RC values of samples increased which leads to increasing dimensional stability. 2) To gain the high bending and shear properties in the single covering process, selecting the core yarn with such properties is the most important factor. 3) Interlacing process effected to increase RC value. 4) False twisting process after interlacing process gave bulkiness and un-interlaced part in yam was increased SMD value. The SMD value of the kilted fabric of the composite yarn, which was put through the combined twist process, was higher than those of which simple process such as the two for one twist or the single covering process applied. In order to achieve the silk-like surface feel of knitted fabric, the sin91e covering process is recommended. 5) Examining the simulation images of the knifed fabrics of composite yarn, which were generated by the 3D CAD system based on the mechanical properties of the fabric, led that appearance could be changed as different twisting methods were applied.

Effects of Phosphate Complex on the Functional Properties of Fish Meat Paste (혼합 인산염의 첨가가 어류연육의 기능적 성질에 미치는 영향)

  • Effects of four kinds of phosphate complex on the water holding capacity (W.H.C) and protein solubility of yellow-corvenia (Pseudosciance manchurica) and hair tail (Tichurus lepturus) meat paste were investigated. The formulations of four kinds of phosphate complex employed to this experiment were made by mixing several phosphates such as sodium polyphosphate, sodium pyro-phosphate, sodium acid pyro-phosphate, potassium pyro-phosphate, sodium tetra meta-phosphate, sodium ultra meta-phosphate and sodium hexa meta-phosphate, and monoglyceride at different mixture ratios. Among the four kinds of phosphate complex, phosphate B complex which was formulated by mixing sodium poly-phosphate 50%, sodium pyrophosphate 20%, sodium tetra meta-phosphate 20%, sodium acid pyrophosphate 5% and sodium ultra meta-phosphate 5% was most effective on enhancing the W.H.C and protein solubility of yellow corvenia meat paste, and in case of hair tail meat paste, phosphate C complex which was formulated by mining sodium poly-phosphate 40%, sodium pyro-phosphate 30%, potassium pyro-phosphate 15%, sodium tetra meta-phosphate 10%, and sodium hexa meta-phosphate 5% was more effective than other phosphate complex, and their optimum addition level was 0.4% respectively in weight of fish meat paste. Texture characteristics such as hardness, cohesiveness, and springiness value of Kamaboko (fish meat paste product) were evaluated as best when 0.3% of phosphate B complex was added. The optimum cooking condition of Kamaboko to get good texture was heating for 45 mimutes at $85^{\circ}C$.

Wear Performance of Pesticide Protective Clothing in Vinyl Plastic Hothouse made with Water-Oil Repellent and Dual Functional Finished Nonwoven Fabrics (비닐하우스 내에서의 발수발유가공 부직포와 복합가공 부직포로 만든 농약 방호복의 착용성능)

  • The objectives of this study mere 1) to investigate whether the different nonwoven fabric types influenced on the objective and subjective wear performances of the experimental pesticide protective pants, 2) to detect whether the different finishes treated to the nonwoven fabrics influenced on the objective and subjective wear performances of the experimental pants, and 3) to detect the relationships between objective wear performances and subjective wear sensation. Three types of nonwoven fabrics (T (Tyvek$\textregistered$), 5 (Sontara$\textregistered$) and K (Kimlon$\textregistered$)) were used as test specimens. By pad-dry.cure method, each of the specimen was treated with fluorocarbon compound for water-oil repellent finish (Tw, Sw, Kw). And each of specimen was treated with organic silicon quarternary ammonium salts and then treated with fluorocabon compound for dual functional finish (76, 50, Kd). Using the three water-oil repellent finished fabrics and the three dual functional finished fabrics, six experimental protective pants (Cl (Tw), C2 (Sw), C3 (Kw), C4 (76), C5 (56), C6 (Kd)) were made according to the same pattern suggested by the Rual Guidance Office. The wear trials of experimental pesticide protective pants were performed in a conditioned vinyl plastic hothouse ($30\pm1^{\circ}C$, $70\pm5%$R.H., 0.25m/sec air velocity). The measurements of skin temperature, microclimate temperature and humidity on the subjects were obtained by the themohygromenter. The subjective wear sensations were measured using previously developed thermal, humidity and overall comfort scales. The results obtained from this study were as follows: 1) There were siginificant differences among nonwoven fabric types on the objective and subjective wear performances, therefore, the skin temperature, microclimate temperature and humidity of subjects who wore the experimental pants made with Sontara were siginificantly lower than those who wore the others. And, the experimental pants made with Sontara were assessed as more comfortable than the others in terms of the subjective thermal, humidity and overall wear sensations. 2) There were no significant differences between two finish types on the objective and subjective wear Performances. 3) The microclimate humidity on the thigh was highly correlated with the overall subjective comfort sensations and the next highly correlated one was the mean skin temperature. That is, the higher the microclimate humidity and the mean skin temperature, the higher the overall subjective comfort sensation ratings which mean the overall subjective sensation was very uncomfortable.

3D Visualization of Satellite Remote-Sensing Images Using an Array DBMS (Array DBMS을 이용한 위성원격탐사 영상의 3차원 시각화)

  • An array DBMS has been expected widely from scientists because it is convenient to store and analyze the data of array type. In this paper, we describe how to handle satellite remote-sensing images in the array DBMS. However, previous works in their visualization have two problems as follows. First, the images are visualized as a state of distorted by the curvature of the earth. Second, it is difficult to apply the results of visualization by pre-written queries to other analyses. Therefore, this paper proposes a three dimensional visualization method of satellite remote-sensing images, not traditional 2D visualization. Our research contents are as follows. First, we describe how to store, process, and analyze the satellite remote-sensing images in the array DBMS. Second, we propose a three-dimensional visualization method for their processed outputs. Lastly, our contributions can be summarized that we propose a method of handling satellite remote-sensing images in the array DBMS and their 3D visualization techniques. It is also expected that their use be available widely in many industrial areas.

  • The Marine Environment Observation Information System supplies oceanographic information elements such as water temperature, chlorophyll, float, etc. based on satellite images to consumers. The data produced by the Korean marine environmental observatories are located in the coastal areas of Korea. But if the range is too far from a particular area of interest, due to distance or spatial constraints, the accuracy and up-to-dateness of the data can not be relied upon. Therefore, it is necessary to perform fusion and complex operation to solve the difference between the field observation and the marine satellite image. In this study, we develop a system that can process marine environmental information in the user's area of interest in the form of layered character (numeric) information considering the readability and light weight rather than the satellite image. In order to intuitively understand satellite image information, we characterize (quantify) the marine environmental information of the area of interest and we process the satellite image band values into layered characters to minimize the absolute amount of transmitted / received data. Also we study modular location-based interest information service method to be able to flexibly extend and connect interested items that diversify various observation fields as well as application technology to serve this.

  • Poly-lactic acid (PLA) is the most promising polymer in additive manufacturing as an alternative to acrylonitrile butadiene styrene (ABS). Since it is produced from renewable resources such as corn starch and sugar beets, it is also biocompatible and biodegradable. However, PLA has a couple of issues that limit its use. First, it has a comparatively low glass transition temperature of around 60 ℃, such that it exhibits low thermal resistance. Second, PLA has low impact strength because it is brittle. Due to these problems, scientists have found methods to improve the crystallinity and ductility of PLA. Polyethylene glycol (PEG) is one of the most studied plasticizers for PLA to give it chain mobility. However, the blend of PLA and PEG becomes unstable, and phase separation occurs even at room temperature as PEG is self-crystallized. Thus, it is necessary to investigate the optimal mixing ratio of PLA-PEG at the molecular scale. In this study, molecular dynamics will be conducted with various ratios of L-type PLA (PLLA) or DL-type PLA-PEG (PDLA-PEG) systems by using BIOVIA Materials Studio.

High Quality Green Tea Extract Production from Enzyme Treated Fresh Green Tea Leaves (효소를 이용한 녹차 생엽에서 고품질 녹차 추출물 생산)

  • Fresh green tea leaf extracts were prepared by different enzyme treatment conditions, such as concentration, treating time and treating temperature using complex enzyme, Rapidase TF, and then extracted for 30 min at $80^{\circ}C$ to investigate their physicochemical properties. The results showed that free sugar content in every sample tended to increase, especially glucose content was increased up to 7.25 times compared to the control. Total amino acid was barely affected by the enzyme treatment and caffeine content was increased with reaction temperature. Total polyphenol and total catechin content was increased according to the amount of enzyme added and reaction temperature. Regardless of enzyme treatment conditions, composition of catechins were epigallocatechin, epicatechin, epicatechin gallate and epigallocatechin gallate by descending order of the content. Gallic acid content increased up to 0.04% and $45^{\circ}C$ with no further significant changes thereafter. From the results above, we could conclude that a simple and new method to extract green tea materials directly from fresh green tea leaves with improved extract ratio may be introduced by adding $0.08{\sim}0.1%$ of Rapidase TF to heat treated fresh green tea leaves and keeping temperature at $37{\sim}45^{\circ}C$ for $180{\sim}240\;min$ in order to skip existing complicated procedures.

Characteristics of Eggshell Powder as Carriers of Probiotics (생균제의 부형제(운반체)로서의 난각분말의 특성)

  • Eggshell (ES) is a by-product of table eggs with high content of calcium carbonate which can be used as a calcium source in feed. In this study, we have first illuminated the potential application of ES as a novel carrier for probiotics. The carriers used in the study include a SBM (Soybean meal), ESL (Eggshell powder with large particles), ESF (Eggshell powder with fine particles), and the complex carriers (SBM+ESL, SBM+ESF). The structure of carriers absorbed by L. plantarum was confirmed by SEM image. Among these carriers, the complex carrier SBM+ESF showed the highest viability of L. plantarum with pH 7~8 during four weeks storage at room temperature. The SBM+ESF was further tested as a carrier for various probiotic strains at $4^{\circ}C$ or $30^{\circ}C$. All the probiotic strains showed high viability at $4^{\circ}C$ storage. However, a significant reduction of Lactobacillus cells was observed at $30^{\circ}C$ storage. B. lichenifomis maintained high viability whereas B. subtilis, B. amyloliquefaciens, and S. cerevisiae showed the reduction of $2{\log}_{10}$ (CFU/g). These results suggest that if the ESF as a calcium source in feed was mixed with SBM, it can be used as an effective complex carrier for improving the viability of some probiotics including B. licheniformis.
