Studies on Processing Techniques in Barley I. Effect of Polishing Conditions of Hulled Barley on Grain Shape and Polishing Properties (보리의 가공기술 개선연구 I. 겉보리의 도정조건에 따른 곡립특성 및 도정수율)

  • These studies were conducted to find out the polishing methods that improve yield and quality of the polished barley. Four varieties of hulled barley, Dongbori 1. Bunong, Kangbori and Suwon 182 which were produced in Suwon, Korea in 1979, were subjected to this experiment. The polishing machine, manufactured by Satake Co, was used as test mill. Increasing the roller speed of polishing machine causes more polished barley in a unit period. The speed influenced more in length than thickness or width of grain. Therefore the shape of grain became bold type as the speed increased. The optimum roller speed was 1,300rpm in ideal shape of polished barley. The lowest hardness was observed in the husk layer and the hardness was found in the decreasing order of the aleurone, testa, peri carp and the endosperm layer. The thickness of bran layer, weight of 1,000 kernel and hardness of polished barley were greatly different according to barley varieties. Also the length, thickness, width and the ratio of length to width of barley grain were significantly different in barley varieties. The ratio of length to width of the polished barley was 1.59 in Suwon 182, 1.53 in Bunong, 1.51 in Kangbori and 1.26 in Dongbori 1.

Kinetic Studies on Cooking of Naked and Covered Barley (쌀 보리 및 겉 보리 취반에 대한 역학적 연구)

  • The mechanism of cooking barlay (naked and covered barley) was investigated. Cooking properties of both naked and covered barley were similar. At higher cooking temperature of above $110^{\circ}C$, a browning reaction occurred and no terminal point of cooking was observed. The cooking rate followed the equation of a first-order reaction. The activation energies of cooking temperatures below $100^{\circ}C$ and above $100^{\circ}C$ were about 19,500 and 9,500 cal/mole, respectively. The cooking process of barley comprised two mechanisms: At temperatures below $100^{\circ}C$ the cooking rate is controlled by the reaction rate of barley constituents with water, and at temperatures above $100^{\circ}C$, it is controlled by the rate of diffusion of water through the cooked portion toward the interface of uncooked core in which the reaction is occurring.

Study of the Limitation Standards Setting of Sterilization Processing to Vagetable Juice Contain Barley Sprout (보리새싹 함유 녹즙의 살균공정 한계기준 설정에 관한 연구)

  • This study was performed to set a limitation rule to the UV sterilization process for green vegetable juice containing barley sprouts. The main constituents of the green vegetable juice, viz. barley sprouts, organic Angelica keiskei, carrots, organic dandelion, kale, wild parsley, Angelica keiskei and cabbage, were provided by the CSJ company located in Jincheon, Chungbuk, from December 1st, 2015 to March 1st, 2016. Our manufacturing process followed the general manufacturing process of a general green vegetable juice manufacturer. Table 1 shows the mixing ratio for the green vegetable juice. This green vegetable juice includes 18% vegetable sprouts, 3% barley sprouts, 18% angelica utilis makino, 1% orange concentrate, 4% apple concentrate, 6% fructooligosaccharide, 10% vegetable fermentation juice, 0.4% lemon concentrate and 39.6% purified water. We conducted UV sterilization at levels 10, 8 and 5 with powers of 230W, 320W and 320W, respectively. The UV sterilization was conducted twice at 25Hz and then once at 40Hz. In the bacterial tests after sterilization, the number of bacteria in the dandelions decreased from $2.56{\times}10^8CFU/mL$ to $5.96{\times}10^3CFU/mL$. In addition, no food poisoning or coliform bacteria were detected. Thus, this study provides the information required for setting a limitation rule using bacteria tests in the UV sterilization process for green vegetable juice.

Physicochemical Properties of Starches from Waxy and Non-waxy Hull-less Barleysㅜ (찰성과 메성 쌀보리 전분의 이화학적 특성)

  • The starches were isolated from normal (Mudeung) and waxy (Chalssal) hull-less barleys which contained similar contents of ${\beta}-glucan$ and amylose. Their water binding capacity, swelling power and solubility were analyzed. Scanning electron microscopy showed most starch granules had predominant lense shape granules. The particle size of starch granules was in the range of $0.1{\sim}30\;{\mu}m$. The higher pasting temperature was found for $Mudeung(84^{\circ}C)$ than for $Chalssal(61.5^{\circ}C)$. However, Mudeung barley had a lower peak viscosity(535 BU) than that of Chalssal(1,510 BU). Differential scanning calorymetry analysis showed that To and Tp for two starches were 57.0, $60.6^{\circ}C$ for Mudeung, and were 57.0 and $62.2^{\circ}C$ for Chalssal, respectively. Enthalpy changes were 7.9 and 13.2 J/g for Mudeung and Chalssal, respectively.

Effects of Dietary Barley on the Growth Performance and Carcass Characteristics in Hanwoo Steers (보리의 사료가치평가와 한우 거세우 급여에 의한 발육 및 육질개선효과 구명)

  • This study was carried out to determine the effects of processing methods of barley as a proper source of grain in diets of Hanwoo on fermentation pattern in the rumen fluid and digestibility of the diets, the growth performance and carcass characteristics of Hanwoo. The degree of ruminal pH change in the cows fed diets of the Corn(corn basis) and GDRB(ground and dry-rolled barley) tended to be greater than those in the cows fed other two diets (ground barley, GB and dry-rolled barley, DRB). The diet of GDRB showed the lowest ruminal pH(5.5), indicating the rapid degradation of the diet in the rumen. Although ammonia concentration was not affected by diet, the GR and DBR diets maintained the low concentrations of ruminal ammonia compared with other two treatments. And the effects of feeding processed barley grain on body weight gain and meat quality of Hanwoo steers were as follows. Steers fed DRB diet had the highest body weight, 683.0kg at 28 months old, while those fed the GDRB showed the lowest body weight, 653.3kg. The average daily gain(ADG) was similar between the steers fed Corn and GR throughout the whole period, but the GDRB showed the lowest ADG. The steers fed the DRB showed the significant increase in ADG(0.89kg/d from 19 to 23 months old and 0.43kg/d from 24 to 28 months old) compared with those fed other diets. Feeding diets containing corn and/or barley did not influence live body weight, cold carcass weight, carcass yield, back-fat thickness and carcass grade of Hanwoo steers.

Effects of Feeding Whole-Crop Barley Silage and Corn Silage on Nutrients Availability, Growth Performance and Blood Parameters in Korean Black Goats (청보리사일리지 및 옥수수사일리지 급여가 육성기 재래 흑염소의 영양소 이용률, 성장 및 혈액성상에 미치는 영향)

  • This study examined the effects of feeding whole-crop barley silage (BS), corn silage (CS) and the mixture of BS and CS (CB) on feed consumption, daily gain, nutrients apparent digestibilities and blood parameters in order to investigate the feed evaluation in Korean black goats. BS, CS, and CB were fed to twelve Korean black goats, which were allocated into three groups in metabolic cages according to the latin-square design. As a result, dry and organic matter intakes for goats per day have shown a tendency to decrease in the order of CS, CB and BS, but there were no significant differences. We also found a similar tendency when the intakes of crude protein, crude fat, and non-fiber carbohydrates (NFC) were examined. However, ADF and NDF consumptions showed a decreasing tendency in the order of CB, BS and CS. Dry matter intakes per metabolic body weight showed the decreasing tendency in the order of CS (57.6g), CB (53.8g) and BS (52.7g), however with no statistical differences. Average daily gain of 64.2 g in CB was significantly higher than the other groups (42.0g to 46.0g). Nitrogen intakes and nitrogen retention showed a decreasing tendency in the order of CS, CB and BC. Nevertheless, nitrogen retention in CS group was higher by 30% than that of the BC group with p<0.05. Apparant digestibilities of dry and organic matters were 72.6 and 72.8% for the CS group respectively, which were significantly higher than those of the BS group (67.5 and 69.0%) and the CB group (66.0 and 67.1%). In conclusion, the results of this study demonstrated that the CS group showed more positive feed consumption, digestibility, and nitrogen retention in Korean black goats than those of BS group. The CB group, however, showed similar results to the results of the CS group.

Quality Characteristics of Paeksulgi with Added Barley Powder (보리 가루 첨가 설기떡의 품질 특성)

  • The principal objective of this study was to assess the sensory quality, degree of gelatinization, color, texture and moisture content of Paeksulgis to which barley was added. The results were as follows: The moisture contents were approximately $35{\sim}39%$. In terms of the Hunter's color values of Paeksulgis of the control, the lightness (L) was 87.63, redness (a) was -1.07, and yellowness (b) was 5.06. The L-value of the control group was high, at 87.63; the L-values of the A1, A2, and A3 groups were 85.97, 83.74, and 83.56, respectively. As the quantity of barley increased, the L-value of the Paeksulgis decreased. The gelatinization of Paeksulgis to which barley was added decreased most profoundly in the A3 group. In terms of sensory quality, Paeksulgis with 10% added barley evidenced the most favorable sensory qualities. In terms of the mechanical characteristics of Paeksulgis, cohesiveness was the highest in the control group, while springiness, gumminess, and brittleness were the lowest. Springiness, and brittleness were decreased reduced with increases in the amount of added barley powder. Brittleness was increased by increases in the amount of added barley powder.

Effects of Feeding Levels of Barley Grains on Growth Performance and Carcass Characteristics of Hanwoo Bulls (한우 육성 비육 시 보리 급여수준이 증체와 육질에 미치는 효과)

  • The present study was carried out to determine the effects of feeding levels of barley grain in diets of Hanwoo on the growth performance and carcass characteristics of Hanwoo. Twenty Hanwoo bull calves (initial mean body wt. 99kg) were randomly divided to examine the effects of 5 feeding levels of barley grains(addition levels: 0, 0 and 40% for FII40; 0, 0 and 60% for FII60; 0, 20 and 40% for F2040; and 0, 20 and 60% for F2060 during the growing, early fattening and late fattening periods, respectively) on growth performance and meat quality. Body weight was not affected by the feeding level of barley grains through the whole experimental period, although the body weight of Hanwoo bulls fed FII40 diet at 24 months old of age tended to be lower(591.5kg) than that of other animals(606.2~614.6kg). However, body weight gain in the bulls of the FII60 diet was slightly increased(P<.19). The feeding levels of barley grains did not influence on fasting body weight, carcass weight, carcass rate, lean meat, retailed cut, KPH fat and bone yield. The lean meat yield(89.82%) and fat yield(20.28%) tended to increase in Hanwoo bulls fed the F2060 compared with other treatments. Feeding of the diets of FII40 resulted in the higher marbling scores as 3.75, respectively than other diets.

  • Total protein from 4 barley varieties(Olbori, Young San-bori, Sacheon 6, and Suwon 228) was separated into albumin, globulin hordein and glutelin fractions by the Osborne method and tile modified Osborne method in a previous report. Sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE) for the protein fractions revealed that there was a little difference in the polypeptide composition of each fraction among four varieties. The comparision of hordeins and hordein-Is by polyacrylamide gel electrophoresis at pH 3.0 showed a marked difference among the varieties. Hordein-I contained a high level of glutamic acid and proline and low level of lysine. And (here was little difference in amino acid composition of hordein-Is which were extracted from the 4 varieties.

An Exploratory Study on the Effects of Barley Sprout Powder Intake on Blood Lipids in Women in Their 50s: One Case Report (보리 새싹 분말 섭취가 50대 여성의 혈중지질에 미치는 효과 탐색 연구: one case 보고)

  • Purpose: This study aimed to study barley sprout powder's effect on blood lipids in women in their 50s. Methods: For 18 months of ingesting 3 grams of barley sprout powder daily, and the changes were investigated before and after the blood tests every six months. Results: The systolic blood pressure decreased from 107 mmHg for the first test to 91 for the fourth test. Diastolic blood pressure dropped from 69 mmHg to 49 mmHg at the first test. Abdominal circumference decreased from 84 cm at the first measurement to 78 cm at the fourth round. Fasting glucose and HDL were not affected. Total cholesterol was significantly refused from 264 mg/dl in the first measurement to 172 mg/dl in the fourth measurement. The first measurement of triglycerides in 2018 was 179 mg/dl, and it was highly reduced at the fourth measurements to 80 mg/dl. The first measurement of LDL was 182 mg/dl, and the fourth was a high decrease to 97 mg/ dl. Conclusions: After the women in the 50s ingesting sprout barley for 18 months, the overall improvements were shown by reducing significantly with fasting blood sugar, blood pressure, blood triglyceride, and LDL concentrations.
