  • A 15-week growth trial was conducted in flow-through aquarium system to develop practical feeds for growing Korean rockfish. Two replicate groups of the fish averaging 114 g were fed one of nine diets containing $45\~50\%$ crude protein from various practical ingredients such as fish meal, meat meal, feather meal, blood meal, soybean meal, corn gluten meal, and wheat flour with or without supplemental essential amino acids (EAA) or enzyme mixture. The dietary EAA were adjusted by considering EAA composition of each dietary protein source, A/E ratio (each essential amino $acid\times1000/total$ essential amino arid including Cys and Tyr) calculated using Ah composition of the Korean rockfish whole body and the EAA requirement of other fish. Results indicate that animal and plant protein sources could substitute for fish meal up to $50\%$ in the diets, and the supplementation of amino acids and enzyme mixture have no beneficial effects on fish performance. Fish growth, body composition, nutrient utilization, and cost of fish production are discussed in relation to nutritional values of the protein sources used in diets.

  • Four different silages were prepared out of citrus peel with or without supplementation with wheat bran and/or urea. Proximate nutrients and volatile fatty acids were analysed on the silages, both fresh and dried. All silages were dried and ground, and were compared with dried citrus peel (not ensiled) and wheat bran in a folding trial. A total of 360 male chicks of Maniker broiler strain was divided into and assigned to 6 treatments with 5 replications. Each experimental diet included each of 6 test material at the level of 6% and the feeding trial lasted 8 weeks, after which a metabolism trial was conducted. Results obtained were summarized as follows. 1. Ensiling increased protein content of the citrus peel on the dry matter basis and supplementing the silage material with wheat bran and/or urea further increased protein contents of the silages. 2. Adding wheat bran and/or urea to silage material also increased volatile fatty acid contents of the silages. After drying organic acid contents of the silages were reduced and there were no differences in organic acid contents of the dried citrus peel silages, differently treated, 3, Broilers fed dried citrus peel and those fed dried citrus peel silages gained numerically less weight than those fed wheat bran. But there were no significant differences in body weight gain, feed intake and feed efficiency among different treatments 4. There were no significant differences in nutrient utilizability, nitrogen retention and metabnlizable energy contents among treatments. It could be concluded that ensiling is an effective way of storing citrus peel and dried citrus peel silage could be used in broiler diets up to 6% without adverse effects.

  • A total of 40 pigs were used to investigate the feeding effects of supplementary wild grape wine by-product on pork quality of American Berkshire breed in the swine farm of Hamyang area. Treatments were C that was basal diet, and T that was treated by dietary wild grape wine by-product(5%) were added in feed. About 70 kg pigs were bred a period of 88 days, and slaughtered. The pork quality characteristic were measured in pork loin. In chemical composition, moisture and crude fat were not significantly different between C and T, but T were lower(p<0.05) than C. There were no difference in crude protein and crude ash(p<0.05). pH and water holding capacity(WHC) were not significantly different between C and T, whereas the cholesterol and fat shear force of T were lower(p<0.05) than C. There were no different in the meat color, but the Hunter’s L* and W value of T were higher(p<0.05) than C. Oleic acid(C18:1), linoleic acid(C18:2, n-6), arachidonic acid(C20:4, n-6), Essential fatty acid(EFA), and EFA/unsaturated fatty acid were significantly(p<0.05) different between C and T, in the fatty acid compositions of loins. Also, the total amino acid composition of pork were not significantly different between C and T, but essential fatty acid of T was significantly higher(p<0.05) than that of C. This observation suggests that wild grape wine by-product supplements may have some beneficial effects on improving backfat color, shear force, cholesterol and essential fatty acid content of pork loin.

  • Process development and standardization are necessary in maintaining high hygienicquality of side dishes. Seasoned perilla leaves are a typical side dish needing process development. In this study the optimum condition for preparing seasoned perilla leaves was investigated experimentally. The best sensory quality was established by response surface methodology. The rinsing and washing method of preparing fresh perilla leaves was optimized to decontaminate the raw material and preserve the product in chilled storage. Washing and rising with 3% salt water reduced the aerobic bacterial count of perilla leaves to 0.55 (log CFU/g), while rinsing reduced the load from 8.08 to 4.27 (log CFU/g). The effect of rinsing method was maintained during subsequent storage of the prepared seasoned leaves at $10^{\circ}C$. There was no significant quality change in the product during chilled storage at $10^{\circ}C$. Soaking in 3% salt water for 1 min, followed by rinsing with tap water, contributed positively to the microbial quality, and is proposed as the optimal preparation method.

  • This research was conducted to evaluate the safety of the herbicide-resistant rice, a genetically modified organism (GMO) developed by the Rural Development Administration by exposing it to 12 months old Sprague-Dawley rats for 8 weeks. The composition of herbicide-resistant brown rice with/without heating treatment was compared with those of conventional Ilpum brown rice with/without heating treatment to assess composition equivalence. Compositional analysis was performed to measure proximates, fiber, and minerals. The nutritional components of herbicide-resistant rice were similar to those of the nontransgenic control or were within the normal range of nontransgenic rice. Four groups of experimental male rats were fed one of the following diets for eight weeks: Ilpum brown rice (I) and its heated rice (IH) as non-GMO, and herbicide-resistant brown rice (G) and its heated rice (GH) as GMO- We checked clinical symptoms (anorexia, salivation, diarrhea, polyuria, anuria, fecal change), food intake, and water consumption every day, change of body weight once a week, and serum biochemistry and organ weights after 8 weeks of experimental feeding We did not find any significant differences in the above-mentioned items. These results suggested that genetically modified herbicide-resistant rice was compositionally equivalent to conventional Ilpum rice, and nutritional characteristics and safety of herbicide-resistant rice in old male rats treated for 8 weeks were not different from those of Ilpum rice, non-GMO.

  • High salt content in food waste limit use as the potential source of compost. Since sodium chloride content should be lower than one percent to meet requirement for agricultural use of compost, we attempted use of three kinds of co-composting material for food wastes compost, which were fermented, dried, and fresh types of amendments which included pig manure, sawdust and puffed rice hull. Food wastes were composted well and stabilized after around the 40th days of composting. Little difference were found between composts amended sawdust and puffed rice hull. The result indicated that puffed rice hull could be used as a good alternative of sawdust. Because sawdust or puffed rice hull were mixed as amendments to control water contents and to dilute high NaCl content of compost material, the C/N ratios of the final products were significantly high over 40. However, NaCl contents of final products were dropped to less than percent on the fresh weight basis by mixing food wastes and the above amendments with the optimum rates.

  • In this study, the engineering properties including bearing capacity of subgrades stabilized with a binder are analyzed by laboratory and field experiments. The main components of the binder are CaO and $SO_3$. After the binder was mixed with a low plasticity clay, the passing rates were relatively decreased as the sieve mesh size increased. Not only did the soil type change to silty sand, but engineering properties, such as the plasticity index and modified California bearing ratio (CBR), were improved for the subgrade. A comparison of the compaction curves of the stabilized subgrade and field soil compacted with the same energy demonstrated an increase of approximately 6% in the maximum dry unit weight, slight decrease in optimum moisture content, and considerable increase improvement in grain size. In the modified CBR test, the effect of unit weight and strength increase of the modified soil (with a specific amount of binder) was remarkably improved. As the proportion of granulated material increased after the addition of binder, the swelling was reduced by 3.3 times or more during initial compaction and 6.5 times by final compaction. The unconfined compressive strength of the specimens was maintained at the homogeneous value with a constant design strength. The stabilized subgrade was validated by applying it in the field under the same conditions; this test demonstrated that the bearing capacity coefficients at all six sites after one day of compaction exceeded the target value and exhibited good variability.
