A seaweed Ecklonia cava from Jeju island was irradiated with $0.1{\sim}6\;Mrad$ of gamma-rays and the yield and viscosity characteristics of alginates from it were examined. Irradiation below 1 Mrad dose brought about a 70% increase in the yield while higher doses caused slight decreases. Viscosity behavior of alginates below 0.5 Mrad dose was not altered while the viscosity decreased markedly above 1 Mrad dose, likely due to the depolymerization.
Present work was conducted to investigate the combined effects of gamma-radiation and chemical treatment on the inhibition of sprouting and decay of potato tubers. Irish Cobbler, Apollo and Shimabara potato tubers were immersed in 1000, 2000 and 3000 ppm solution of salicylic acid for 2 minutes, and then irradiated at doses of 5, 10, and 15 krad using an indoor gamma room of approximately 10,000 Ci of $^{60}Co$. Treated tubers were stored for 8 months at room temperature. The results of this work are summarized as follows: 1. Moisture content of irradiated potato tubers was changed less than the control, and decreased gradually along with an extended storage period. Ascorbic acid content was remarkably decreased by gamma-radiation and an extended storage period. 2. Reducing sugar content of irradiated potato tubers tended to increase greatly compared with unirradiated potato tubers, however, starch content of irradiated potato tubers decreased compared with the control. Reducing sugar and starch content of all groups also decreased gradually along with an extended storage period. 3. The storageability of Irish Cobbler variety was best among three varieties and Shimabara variety was worst among them when gamma-radiation is treated singly or in combination with the chemical. Sprouting of potato tubers was more suppressed in combination treatment than single treatment. 4. Decay of potato tubers was more reduced in combination treatment than single treatment. Chemical treatment or gamma-radiation followed by chemical treatment had no influence on decay or spronting of potato tubers. 5. Weight loss of potato tubers was considerably increased as storage period became extended. Shrinkage was, more serious in Shimabara than in rish Cobbler.
Effects of irradiation on microbiological, physicochemical aspects and quality of onion powder were investigated during three months storage. Total bacteria and coliform were sterilized by irradiation of 7 and 5 kGy, respectively and no microorganisms were grown after three months storage at $30{\pm}1^{\circ}C$. $D_{10}$ value of total bacteria was 1.64 kGy. Proximate composition of onion powder was not remarkably changed during storage except the slight decrease of pyruvic acid content. Color difference could not be distinguished by naked eye but was slightly changed by the mechanical measurement.
The quality properties of freeze-dried apples, pears, strawberries and pineapples gamma-irradiated at 0, 1, 2, 3, 4, and 5 kGy were evaluated to develop germ-free products for immuno-compromised patients. The initial count of total aerobic bacteria in non-irradiated apples, pears, strawberries and pineapple was 2.5, 3.1, 2.6, and $3.2{\log}\;CFU{\cdot}g^{-1}$, respectively. Microorganisms were not observed in apples after 1 kGy, in pears and strawberries after 4 kGy, and in pineapples at 5 kGy within a detection limit of $10{\log}\;CFU{\cdot}g^{-1}$. In addition, the sterilization of each sample was confirmed at the same dose. The score for the overall acceptance of freeze-dried fruit irradiated at a sterilization dose was 5.5 for apples, 4.1 for pineapples, and 4.0 for the other fruits, whereas that of non-irradiated control sample was 5.6 for apples, 5.2 for pears, and 5.8 for strawberries and pineapples with a 7-point scale. As a result, gamma irradiation of 1 kGy for apples, 4 kGy for strawberries and pears, and 5 kGy for pineapples is sufficient to sterilize each freeze-dried fruit with acceptable sensory properties.
Rice bran, treated with heat or ${\gamma}-radiation$, was stored at $-15^{\circ}C,\;4^{\circ}C,\;37^{\circ}C$ and room temperature to determine its lipid stability by monitoring the changes in moisture, free fatty acids (FFA) and peroxide value (POV). Initial moisture content of rice bran was 14% and decreased with time. The higher storage temperature, the more moisture loss. The moisture content became 9% after 80 days of storage at $37^{\circ}C$. The initial FFA of rice bran was 2.5% which increased with time except the samples stored at $-15^{\circ}C$. The higher storage temperature, the more FFA was produced, by 9 times the initial FAA after 80 days of storage at $37^{\circ}C$. POV increased about twice the initial value after 80 days of storage at $-15^{\circ}C,\;4^{\circ}C$, and room temperature, and 5 times at $37^{\circ}C$. Rice bran was treated with heat at $70^{\circ}C,\;90^{\circ}C\;or\;105^{\circ}C$ and stored for 2 weeks at $30^{\circ}C$: The higher the heat treatment temperature and the longer the heat treatment time, the more moisture was lost. The not show any significant changes. Irradiation at $1{\sim}30\;kGy$ and subsequent storage for 4 weeks at $5^{\circ}C\;or\;30^{\circ}C$ caused negligible changes in moisture content. The FFA contents of rice bran irradiated up to 10 kGy were almost similar to these of nonirradiated one when measured just after irradiation. The samples irradiated at 30 kGy were 1.5 times higher in the FFA contents than nonirradiated ones. But there was little influence of irradiation doses on the FFA contents during storage. Irradiation caused the increase in POV of rice bran. resulting in 4 times increase in case of 30 kGy irradiated sample. During the storage, however, the POV of irradiated rice bran decreased significantly.

This study evaluated the effects of gamma ray and electron beam (E-beam) to improve the safety of spices for meat processing. The spices (garlic powder, curry powder, turmeric powder, black pepper, white pepper, oregano, parsley, laurel leaf powder, basil, and rosemary) were irradiated by gamma ray and E-beam at 0, 2, 4, 6, 8, and 10 kGy. Total bacterial populations were then enumerated on total plate count agar, and bacteria isolated from the samples were identified by polymerase chain reaction (PCR). In addition, $D_{10}$ values for Bacillus cereus and Staphylococcus aureus inoculated in spices was determined, and the Ames test was conducted for genotoxicity analysis. The contaminated total bacterial populations in spices ranged from 1.5 to 3.8 Log CFU/g, and most of identified bacteria were Bacillus spp., and Staphylococcus spp. However, the bacterial populations decreased below the detection limit (2 Log CFU/g) after irradiation at 4 kGy except for parsley, which required 6 kGy in gamma ray and 8 kGy in E-beam to decrease total bacterial populations below detection limit. $D_{10}$ values were also higher (p<0.05) in E-beam treated samples than gamma-ray treated samples. No genotoxicity was observed in both conditions with and without metabolic activation. These results indicate that gamma ray (>4 kGy and <6 kGy) could be more useful to improve food safety of meat processing spices compared to E-beam.

Kochujang prepared by liquid and solid koji using isolated bacteria(Sunchang 1 and Park 2) showing excellent enzyme activities were gamma irradiated at $15{\pm}1.5\;kGy$ to investigate their qualities from the physicochemical, microbiological and enzymatic points of view during fermentaion at $25^{\circ}C$ for 90 days. The amino type nitrogen contents were $0.6{\sim}0.7%$ after 30 days of fermentation. Irradiation completly stopped gas production which is one of biggest problem of kochujang distribution. Enzyme activities were some different according to koji and irradiation treatment. Amino type nitrogen content as one the most important quality indice was higher in kochujang fermented by isolated bacteria (Park 2) than non inoculated traditional kochujang. But sensory quality was not significantly different.
A study was carried out to establish the detection method of irradiated agricultural products cultivated in Korea by Thermoluminscece(TL). Samples were irradiated using Co-60 gamma rays at various doses(0.05, 0.1, 0.2, 0.3 and 0.5 kGy). After irradiation, separated minerals of the samples measured by TL. TL intensity increased with increasing doses and the irradiated samples were higher than the non-irradiated samples. TL first and second glow curves showed maximum TL temperature point at $176.16{\sim}190.08^{\circ}C$ and $143.84{\sim}146.56^{\circ}C$, respectively. All the irradiated samples can be classified correctly by the shape of the glow curve and the glow curve ratio. Correlation coefficients of ginger, carrot, potato and sweet potato were 0.9968, 0.8522, 0.9612 and 0.9071, respectively, that showed very high correlation between irradiation dose and TL intensity. Therefore, these results suggest that TL measurement is an useful detection method for irradiated agricultural products.
This experiment was conducted to investigate the combined effects of radiation and antiseptics on the keeping qualities of pork sausage, which was treated with potassium sorbate and AF-2(2-(-2-furyl)-3-(5-nitro-2-furyl)-acrylamide), and then followed by gamma radiation of 0.25, 0.5, and 0.75 Mrad. Amounts of treated antiseptics were a quarter, half, and full levels of their maximum permissible concentration. Irradiated and unirradiated sausages were stored for 50 days at $5^{\circ}C\;and\;25^{\circ}C$, and their changes in rancidity, volatile basic nitrogen, bacterial counts, pH, and sensory analysis were examined during the storage period. The results obtained are as follows: 1) Preservative effects of antiseptics were manifested at cold storage; antiseptics treatment of a quarter-level and unirradiation following low-temperature storage showed the same good keeping qualities as the combined treatment of full-level antiseptics and radiation of 0.25 Mrad following high-temperature storage. 2) There did not appear to recognize irradiation-odor, while color and odor were deteriorated intensively by storage temperature. Sausage irradiated with 0.75 Mrad has shown slightly noticeable off-odor at the end of storage at $25^{\circ}C$. 3) The most suitable radiation dose was considered to be 0.5 Mrad, which could extend the storage life about $2{\sim}3$ times longer than untreated.
We performed this study to determine the effect of Baizhu (Atractylodes japonica), Chuanxiong (Cnidium officinale), Shanyao (Discorea japonica) and Shengma (Cimicifuga heracleifolia), as Oriental rhizomata herbs, on jejunal crypt survival, endogenous spleen colony formation and apoptosis in jejunal crypt cells of mice irradiated with high and low dose of ${\gamma}$-radiation. Shengma was effective in intestinal crypt survival(p<0.05). The frequency of radiation induced apoptosis was also reduced by pretreatment with Chuanxiong and Shengma(p<0.05). Although the mechanisms of this effort remain to be elucidated, these results indicated that Shengma might be a useful radioprotector, especially since it is a relatively nontoxic natural product.
