The History of Bibimbap (비빔밥의 역사)

  • The history of Bibimbap, Korea representative traditional foods, was distorted by some humanities scholars as follows : First literature on Bibimbap is Siujonseo(是議全書) in 1890 and origin word of Bibimbap is Koldongban(骨董飯). Such discussions are totally non-scientific and not true. Bibimbap was recorded as Hondonban(混沌飯) in Kijaejapki 500 years ago and Koldongban(骨董飯) in Sunghojeonjip(星湖全集) and Bubuiban, which mean the people in Korea had the Bibimbap often thousands years ago, i.e. around 500 years before literature. Hangul name of Bibimbap as '브뷔움' was written firstly in Mongyupyun(夢喩篇) in 1810, not Siujonseo(是議全書). Hangul names of Bibimbap were written as '부뷔음, 부빔밥, 부?밥, 부뷘밥, 부뷔엄밥, 부뷔음밥'. Koldongban is only the chinese character which write the real existent Bibimbap real name of Bibimbap is just bibimbap. People in 500 years called Bibimbap as Bibimbap, but wrote it as Koldongban, Hondonban and Bubiban because they had to write the things in Chinese character.

The Literary Investigation On Types and Cooking Method of Bap (Boiled Rice) During Joseon Dynasty($1400's{\sim}1900's$) (조선시대 밥류의 종류와 조리방법에 대한 문헌적 고찰(1400년대${\sim}1900$년대까지))

  • 1. For the types of boiled rice, there were 1 type of bap, 1 type of jebap cooked with glutinous rice, 13 types of boiled rice cooked by mixing grains and nuts such as daemakban, somakban, jobap, cheongryangmiban, jobap, gijangbap, yulmubap, hyeonmibap, boribap and patmulbap as well as patbap, congbap, byeolbap and bambap etc as ogokbap. Also, there were 12 types of bap cooked by mixing herb medicinal ingredients such as cheongjeong, oban, boksungabap, gumeunsaekbap, hwanggukgamchobap, yeongeunbap, okjeongbap, gogumabap, dububap, samssibap, dorajibap, gamjabap, songibap and jukshilbap. There were 7 types bap cooked as unique one bowl dish at the present as bapby mixing fish, meat, shellfish and milk as ingredients are hwangtang, gyejanggukbap, janggukbap, gulbap, kimchibap, chusaban and bibimbap, etc and the types of bap that have been analyzed are 34 total. 2. For the food ingredients used in bap types 23 types of miscellaneous grains, 5 types of nuts and 11 types of meat, 6 types of fish, 35 types of vegetables, 2 types of fruit including pears or peaches were used. Garlic wasn't used perhaps because of it being boiled rice 3. Types of Sap by Cooking Methods. (1) The ssalbap was cooked by first boiling water, putting in rice grains and boiling hard to be cooked as overcooked bap (rice). (2) The japgokbap (boiled cereals) has used buckwheat, barley job's tear, etc to be boiled down by soaking the ones with large grains (beans) first in advance to be boiled down or cooked by crushing into fine pieces. The red bean, etc was boiled down in advance or placed at the bottom of pot by cutting into two pieces while jujube or nut was cut into three pieces to cook the bap by pouring a lot of water and mixing other ingredients. (3) The gukbap (soup boiled rice), etc were cooked by squeezing out the yellow chrysanthemum that has dried chrysanthemum to cook the boiled rice by putting in rice and gukbap, meat or bones, etc were boiled down for a long time and decorated with meat or wild greens by mixing the bap in the meat juice. For gulbap (oyster boiled rice), etc, it was cooked as ingredients were stir fried in advance or washed and put in when the bap was about half cooked. (4) For bibimbap (mixed boiled rice), after the bap was overcooked first with rice, the wild greens were mixed lightly with bap beforehand, then the wild greens, decorations and garnishings were laid above rice and red pepper powder was sprinkled. (5) Namchok leaves, etc were boiled to cook the boiled rice with rice after being cooled while namchok stem and leaves were pounded to make juice and cooked the bap with rice. The peach, lotus root and yams were cut into fine pieces to be put in together when rice was about half done. The bellflower was soaked in water to be boiled down for a long time while potatoes and pine mushrooms, etc were cut into fine pieces to cook the bap (boiled rice) with rice.

Optimizing Cooking Condition of Short Grain Rice Containing Sea-tangle Patch (다시마밥 제조조건의 최적화)

  • Response surface methodology on sensory evaluation was used to optimize cooking condition of cooked short grain rice (CSR) and cooked short grain rice containing grainy sea-tangle patch (CSTR). Texture profile analysis and nutritional evaluation were also performed. For maximizing overall acceptability, it can be predicted sea-tangle patch 14%, added water 1.67 times of rice and sea-tangle amount and steeping time 47 min as optimum cooking conditions from sensory evaluation conducted by the forties panelist. Hardness of pressure cooked short grain rice containing grainy sea-tangle patch (CSTR) were lower than cooked short grain rice (CSR), but it showed similar as CSR in adhesiveness, chewiness and higher in springiness and cohesiveness. In addition CSTR was delayed retrogradation compared with CSR. The nutritional Quality of CSTR showed higher level in total dietary fiber, protein, ash than CSR, but lower in protein digestibility, C-PER, gelatinization degree compared with CSR.

Effect of Protease and Disulfide Bond Reducing Agent Treatment on the Texture of Cooked Rice (단백질 가수분해 효소 및 이황화 결합 환원제 처리가 밥의 텍스처에 미치는 영향)

  • Effect of protease and 2-mercaptoethanol treatment on the texture of cooked rice was investigated. Hardness, chewiness and gumminess of cooked rice were decreased by reducing the disulfide bonds of protein using 2-mercaptoethanol. Protease-treated rice grains, when cooked, showed more favorable results in stickiness measured by Instron, hardness measured by rheometer and sensory acceptability of cooked rice. Water content and volume expansion of cooked rice were increased by protease or 2-mercaptoethanol treatment. This results suggested that the textural characteristics of cooked rice may be influenced by surrounding or closely associated protein.

  • 본 연구는 한국과 일본의 즉석밥 패키지 디자인을 비교분석하는 연구로써 한국, 일본의 즉석밥 상위브랜드 4개를 선정하여 패키지 디자인의 구조적 요소와 시각적 요소로 나누어 분석하였다. 그 결과 한국의 경우 현대적인 즉석밥의 이미지를 보여주는 것과 달리 일본의 경우 전통적인 즉석밥의 이미지를 보여주며 관용색상을 많이 사용하는 것으로 나타났다. 이러한 연구의 결과가 일본 즉석밥 시장의 진출을 위한 자료로 활용 될 수 있음을 기대해 본다.

  • 한식은 최근 한식세계화에 대한 관심이 높아지고 있는 가운데 웰빙을 지향하는 세계 식품소비의 트랜드에 부합하는 만큼 세계인이 함께 즐길 수 있는 음식으로 관심을 받고 있다. 외국인 대상으로 한식에 대한 인식을 살펴보면, 비빔밥은 불고기, 갈비와 함께 인지도 및 선호도가 높은 한국을 대표하는 전통음식이다. 이 중에서 한식의 주식에 해당하는 밥류의 비빔밥은 밥 위에 여러나물과 고기를 볶아서 한데 어울려 먹는 밥으로, 여러 가지 재료가 한 그릇에 고루 들어 있어 이것만으로도 충분히 영양적으로 균형 잡힌 한 끼의 식사로도 손색이 없다. 본 연구에서는 한식을 대표하는 비빔밥과 관련된 기존 연구를 통해 연구의 흐름을 파악하고 연구의 유형을 나누어 분석하였다. 이는 한식세계화를 지향하는 오늘날 세계로 뻗어나갈 비빔밥 연구에 기초자료로 활용될 것으로 판단된다.

  • 어느 외국인이 우리가 매일 먹는 '집 밥' 사진을 커뮤니티 게시판에 올린 것이 화제가 된 적이 있다. 밥, 김치, 국, 나물 등이 차려진 일상적인 '집 밥' 사진이었는데 외국인들은 이 사진에 감탄하며 "저렇게 먹으면 건강해지겠다." "나도 저렇게 먹어보고 싶다."는 글로 도배를 했다. 일상적으로 먹는 우리의 '집 밥'이 외국인들 눈에는 건강식으로 보인 것이다.

  • 쌀은 우리나라에서 오래 전부터 주식으로 사용되어 온 중요한 식량자원으로, 우리 식생활에서 밥이 차지하는 비중은 상당히 크며 매식사 마다 취반하는 것이 보편적 형태이다. 하지만, 취반 직후의 밥은 시간이 지남에 따라 물성이 변화하므로 이에 따라, 밥을 냉동 보존하여 적절한 방법으로 해동하면 갓 지은 밥의 조직감으로 복원이 가능하다. 또한, 건조 처리하여 열수복원 후 즉석으로 섭취할 수 있어 장기 보존 시의 품질유지를 위한 가공기술 적용이 필요할 것으로 사료된다. 이에 따라, 쌀알을 이용하여 HMR(Home meal replacement) 편의식 개발을 위한 가공적성 연구를 수행중에 있으며, 건조, 냉동, 열처리 방법과 같은 가공변수에 따라 냉동밥, 건조밥, 편의식 죽 등의 적용 특성을 분석함으로써 다양한 원료쌀 을 선택할 수 있는 기틀을 마련하여 국내 쌀 소비확대에 기여할 것으로 생각된다.

Effect of Surfactants on the Characteristics of Cooked Rice During Storage (계면활성제가 저장 중의 밥의 특성에 미치는 영향)

  • The effects of three surfactants (SSL, Dimodan, and SE1670) on the properties of cooked nonwaxy and waxy rice during storage were investigated by sensory evaluation, instrumental test, and measurement of retrogradation degree. The results of sensory evaluation revealed that the overall quality of cooked rice was affected by textural characteristics. The addition of surfactant decreased the roughness and hardness of cooked rice, however, increased the stickiness and moistness during the storage in the order of SE, SSL, and Dimodan. In instron test, the hardness of surfactant-added cooked rice was significant lower than that of control. The addition of surfactant decreased the degree of retrogradation both in cooked nonwaxy and waxy rices.

Relationship of Properties of Rice and Texture of Japonica and J/Indica Cooked Rice (일반계 및 다수계 쌀의 성질 및 밥의 텍스쳐 특성)

  • The correlations of rice properties and the texture characteristics of hot($70^{\circ}C$) and cold($20^{\circ}C$) cooked rice were investigated with Japonica and J/Indica rice each of 6 varieties. No significant differences in textural properties between Japonica and J/Indica cooked rices were observed. The hardness of cold cooked rice was positively correlated with setback(r=0.613) of rice flour but not correlated with amylose content and the other chemical properties of starch or rice flour.
