매실을 이용한 발효주 제조 연구

  • 2002년 주류 소비량은 맥주 1,739,768㎘, 소주 793,854㎘, 청주 22,163㎘, 위스키 14,493㎘, 일반증류주 8,750㎘, 과실주 8,235㎘ 순으로 과실주의 소비량이 월등히 적다. 이와 같이 과실주의 소비량이 적은 이유는 여러 가지 원인이 있겠으나 과실주의 상품화가 미흡한 것도 하나의 원인이라 할 수 있다. 따라서 과실을 이용한 다양한 발효주를 제조 판매한다면 소비자의 선택의 폭도 넓힐 수 있고 소비량을 확대시키는 과실주 상품화에 기여하리라 본다. 매실은 우리나라의 전통과실로써 Ca와 K등 무기물의 함량이 매우 높은 알카리성 식품이고 구연산등 유기산 함량이 많아 피로회복에 매우 유용한 과실이다. 이러한 효능을 갖는 매실을 이용한 발효주를 제조하기 위하여 우수 균주를 선발하고 과즙제조방법 및 첨가량, 당 종류, 질소원 및 농도, 아황산 첨가 등 적정발효조건을 검토하였다. 우수 발효 균주는 알코올 생성량이 9.5% 이상이고 맛과 향이 우수한 SC 10과 SC 34를 선발하였다. 과육을 mixer로 파쇄한 과즙 전체를 첨가하는 방법이 알코을 발효에 좋았으며 적정 과즙첨가 농도는 50%이었다. 탄소원으로 꿀, 포도당, 설탕 중에서 설탕첨가가 알코올 생성량이 가장 많았다. 질소원은 (NH$_4$)$_2$SO$_4$이 가장 알코올 발효력이 우수하였으며 최적농도는 0.2%이었다. 아황산에 의한 살균효과는 인정되었으나 $Na_2$SO$_4$를 제외한 모든 처리에서 발효 효모까지 사멸되어 발효가 전혀 일어나지 않았고 $Na_2$SO$_4$ 처리는 열처리와 같은 알코올 발효력을 보였다. 상자에 담아 저장할 때 대비 저온저장고에서는 111일 동안에 11.7%의 중량감모가 발생하였으나, 신기술투입 저온저장고에서는 5.6%의 중량감모만이 발생하여 약 50%의 중량감모를 줄일 수 있었으며, 배의 색깔이나 경도도 대비구 보다 우수하였다. 4. 배를 비닐로 포장하여 대비 저온저장고에 저장한 경우와 비닐로 포장하지 않고 신기술투입 저온저장고에 저장한 경우를 비교할 때 11월~다음해 1월 까지는 중량감모, 과피색깔 및 경도에 큰 차이가 없었으나, 2월부터는 비닐로 포장하여 대비 저온저장고에 저장한 배의 품질변화가 급격히 증가되어 중량감모, 과피색깔 및 경도가 신기술 투입시 보다 급속하게 나빠졌다.를 저장 25일 경과시까지 유지하였다. 수확 시 높은 품온을 갖고 있는 과일을 산지에서 예냉 처리를 한 후 저온 냉장차를 이용하여 유통한다면 관행 유통 구조보다 고품질의 포도를 유통시킬 수 있는 것으로 사료되며 앞으로는 완숙된 고 당도(12.0~15.0Bx)$^{\circ}$ 포도를 수확 한 즉시 예냉 처리하고 저온 유통한다면 보다 신선한 과일을 소비자에게 전달 할 수 있을 것이다.갈변물질이 생성되었다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 농산물 식품원료에 적용하여 선도유지 기간을 연장할 수 있는 효과를 기대할 수 있었다. 과일 등의 포장제로서 이용할 가능성을 확인하였다.로 [-wh] 겹의문사는 복수 의미를 지닐 수 없 다. 그러면 단수 의미는 어떻게 생성되는가\ulcorner 본 논문에서는 표면적 형태에도 불구하고 [-wh]의미의 겹의문사는 병렬적 관계의 합성어가 아니라 내부구조를 지니지 않은 단순한 단어(minimal

Effects of Supplemental Synbiotics Composed of Anaerobic Bacteria, Yeast and Mold on the Aerobic Stability of Total Mixed Ration for Cattle (혐기성 박테리아, 효모 및 곰팡이로 제조된 synbiotics의 첨가가 축우용 완전혼합사료의 호기적 안전성에 미치는 영향)

  • This study was conducted to investigate the effects of supplementation of synbiotics manufactured with anaerobic bacteria, yeast and mold on preservation of total mixed ration (TMR) by exposing days. Eight treatments were composed of untreated synbiotics(US), bacterial synbiotics (BS), yeasty synbiotics (YS), moldy synbiotics (MS), bacterial and mouldy synbiotics (BMS), yeasty and moldy synbiotics (YMS), bacterial and yeasty synbiotics (BYS), and bacterial, yeasty and moldy synbiotics (BYMS). After 7 days of anaerobic fermentation, fermented-TMRs were exposed to the air during 1, 3, 5, 7, 14 and 21 days. One hundred forty four (8 treatments${\times}$6 days${\times}$3 replications) fermented-TMRs were manufactured by vinyl bag ($43\;cm{\times}58\;cm$). Although no significant differences in the activities of carboxymethylcellulase, xylanase and amylase were observed among treatments, theirs acivities were seemed to increase by treatment of BYS or YMS containing yeast. Total bacterial and mold counts also decreased in the treatments containing yeast. Potential pathogenic bacteria were less detected in BYS and BMYS for E. coli, BMYS and YS for Salmonella, and BMS and BMYS for Shigella than those of the other treatments, MS was, however, contaminated easier than US by pathogenic bacteria. From above results, synbiotics containing facultative anaerobic yeast have effects for preservation of TMR fermented anaerobically. Particularly, BMYS treatment having good results in nutrient contents, dry matter loss and pathogenic bacteria amounts was a resonable synbiotics for preservation of the fermented-TMR.

Effect on Fermentation and Storage of Yogurt Using Control System of Refrigerator (냉장고 제어시스템을 이용한 요구르트의 발효 및 저장효과)

  • Control system for both rapid fermentation and storage of yogurt in refrigerator was developed and its performance was investigated. Fermentation temperature for normal and Bifidus containing yogurt was maintained at maximum $40^{\circ}C$ for about 7 and 11 hours, respectively. The pH, acidity, total viable cell number of lactic acid bacteria and viscosity of both yogurts after completing the fermentation were $4.23{\sim}4.29$, $0.93{\sim}0.97%$, $4.8{\times}10^7{\sim}$2.54{\times}10^8\;cfu/ml$ and $1,700{\sim}1,810\;cp$, respectively. The rate of fermentation for normal yogurt was faster than that of Bifidus yogurt. The changes of pH, acidity, viable cell number and viscosity during storage time were $4.09{\sim}4.54$, $0.76{\sim}1.1%$, $9.4{\times}10^6{\sim}5.68{\times}10^8\;cfu/ml$ and $1,450{\sim}2,000\;cp$, respectively. Yeast and fungi were not nearly detected during storage time for both yogurts.

  • Studies were made to optimize the simultaneous hydrolysis-fermentation (SSF) process for the production of ethanol from rice straw. Trichoderma sp. KI 7-2 was selected to produced cellulase by solid culture for SSF. Ethanol production was highest when the SSF process utilized koji culture of the fungus grown on a medium of wheat bran-rice straw 3 : 2 mixture with moisture content of 50% adjusted to pH 4.5 for 7 days as the enzyme source. It was found that pretreatment of the substrate is not necessary. To ferment 1g of rice straw by SSF 2.47 units of cellulase were required, and the initial yeast concentration of 2.5$\times$10$^{7}$ cell/$m\ell$ was found to be sufficient. Optimum pH and temperature for the process were 4.5 and 4$0^{\circ}C$, respectively. It was also found that higher ethanol concentration in the broth can be obtained by the addition of substrate or substrate and enzyme to SSF broth.

Direct Alcohol Fermentation of Starch by Schwanniomyces castellii (Schwanniomyces castellii에 의한 전분의 직접 알콜발효)

  • Alcohol fermentations were carried out to confirm the capacity of ethanol production from glucose, starch and soluble starch(dextrin) by Schwanniomyces castellii NRRL Y-2477. Schw. castellii NRRL Y-2477 was able to produce the 63.9g/l ethanol using 94% subtrate from 150g/l-glucose medium. The direct alcohol fermentation of starch having the maximum solubility of 20g/1 at $30^{\circ}C$ yielded 9.1g/l ethanol upon complete depletion of starch, whereas 34.5g/1 ethanol was produced by utilizing 82% of 100g/1 soluble starch medium. The fermentation of 150g/1 soluble starch produced 52.1g/l ethanol using about 79% of substrate. Thus, it was found that the limiting step of direct alcohol fermentation of starch by Schwanniomyces castellii NRRL Y-2477 was a hydrolysis of starch.

  • Physicochemical and organoleptic characteristics of omija wines made by traditional method, adding grape juice and sugar solution periodically, and with dry omija were compared. The pH values of all omija wines were ranged $2{\sim}3$ during fermentation. The acidity value of omija wine made by traditional method was 2.5%, that of omija wine made by adding grape juice and sugar solution periodically decreased from 3.3% to 0.8%, and that of omija wine made with dry omija increased from 0.2% to 3.9%. Sucrose and alcohol contents were $6.5{\sim}34.5^{\circ}Brix$ and 12% at the end of fermentation, respectively. The viable cell numbers of yeast decreased from $5.7{\sim}6.9\;\log\;CFU/mL$ to $4.3{\sim}4.6\;\log\;CFU/mL$. Omija wine made by adding grape juice and sugar solution periodically had the highest sensory scores for color, taste, flavor, swallowing, and overall acceptability, and was significantly different from the both omija wines made by traditional method and with dry omija. Because omija is rarely fermented due to the little fermentative sugar content, omija wine made by adding grape juice and sugar solution periodically was shown to be the most appropriate.

  • Optimum conditions of PEG treatment for the intergeneric fusion of yeast protoplasts were investigated. Fusants were selected by nutritional complementation on minimal medium. The intergeneric fusion frequency between pro-toplasts of S. cerevisiae and C. tropicalis was distributed 10$^{-4}$ to 10$^{-6}$, depending on the combination of parental strains. PEG 4000 or 6000 are equally effective. 30%(w/v) PEG 4000 was found to be optimum and below 20% its stabilizing effect was lost, resulting in protoplast lysis, and optimum pH was 8.0. The efficiency of PEG was enhanced by higher temperature of the PEG solution, and by the addition of Ca ions. The stimulating effect of Ca ions in the range of 1 mM to 100 mM proved similar.

  • The fermentation characteristics of ice wines made from freeze-dried Muscat Bailey A grapes were determined. Muscat Bailey A grapes were concentrated to 34.8 and $40.8^{\circ}Bx$ by freeze drying and were then fermented. The content of reducing sugar was 0.3% in conventional wine after fermentation, but was 21.5 and 23.9% in ice wines at 34 and $40^{\circ}Bx$, respectively. The content of alcohol was 9.6% in conventional wine but was 10.3 and 10.6% in ice wines at 34 and $40^{\circ}Bx$, respectively. It was observed that the red and violet colors of ice wines at 34 and $40^{\circ}Bx$ became dominant compared to the controls. In sensory evaluation studies, ice wines at 34 and $40^{\circ}Bx$ showed higher intensities in color, flavor, and overall preference.

Effects of Fermentation Pine Needle Extract on the Quality of Plain Bread (솔잎 발효액이 식빵의 품질에 미치는 영향)

  • In efforts to use pine needle extract as a substitute for sugar, fermented pine needle extract syrup was added to the wheat flour nea in the manufacture of white bread The extract was added to levels of 8.3%, 11% and 18% of total weight based on the Brix degree of the dough The cohesion of each dough was checked, and the physical properties and storage stabilities of the baked breads were analyzed during storage at mom temperature. Analysis of the cohesion of each dough by farinogram showed that dough with pine needle extract was better than dough with sugar, in terms of both stability and durability of mixing. The pH of dough with syrup was steady during storage at pH 5.4 5.8, which is favorable for yeast activity. The dough with syrup also showed low firmness and good extensibility, both of which would favorably affect gas retention on fermentation. Increases in syrup addition resulted in higher product volumes. Bread with syrup was slow to increase in hardness during storage, suggesting that higher syrup concentrations inhibited development of staleness. The addition of syrup also inhibited the growth of aerobic bacteria and mold on the bread surface. The addition of syn did not cause any negative effect. The use of pine none extract syrup may thus contribute to improvements the physical properties, the storage stability, and the hygienic quality of bread.

Manufacture and Characteristics of Functional Drink Using Pear-Strawberry Fermentative Concentrates from Fermentation by Saccharomyces cerevisiae C-2 (Saccharomyces cerevisiae C-2로 발효시킨 배-딸기 발효 농축물을 이용한 기능성 음료의 제조 및 특성)

  • Mixed juice of pear and strawberry was fermented by commercial Saccharomyces cerevisiae C-2 at $25^{\circ}C$ for 7 days and obtained the pear-strawberry fermentative concentrates (PSFC). The PSFC showed high ACE inhibitory activity of 70.8%. The PSFC drink was prepared by using PSFC and by-materials including amylopeptide, and determined changes of quality and ACE inhibitory activity during storage of $20^{\circ}C$ and $40^{\circ}C$. PSFC drink was very stable at storage of $20^{\circ}C$ for 8 weeks without any quality and ACE inhibitory activity.
