필리핀 일리한 복합화력 프로젝트

  • 유리알 같은 푸른 바다의 잔물결 아래로 형형색색의 물고기가 떼지어 다니고 산호초가 금방 잡힐 것 같이 아름다운 필리핀 루손섬 남부의 바탄가스 해안을 따라 코코넛과 바나나 나무가 울창한 비포장 해안도로를 1시간 이상 달려가면 필리핀 근세기에 길이 남을 만한 역사의 현장이 나타난다. 그 역사의 주인공인 일리한 프로젝트에 대해 소개한다. 필리핀은 7,109개의 섬으로 이루어진 섬나라이며 국토는 한반도의 약 1.3 배인 30만$km^2$, 인구는 약 7500만명(2000년 5월 기준)이며 말레이계와 중국계, 스페인 혼혈계가 대부분이다. 언어는 타갈로그어와 영어를 공용으로 사용하고 있으며 아열대성 기후에 연평균 기온은 약 27$^{\circ}C$인 무더운 나라이다. 필리핀의 전력사정은 1999년말 기준 전력설비 용량이 12,686MW로 우리 나라 전력설비 용량의 약 28$\%$에 해당하며 전력수요는 지속적으로 증가하는 추세에 있다.

  • 저항전분(RS)은 건강한 사람의 소장에서 소화되지 않는 전분이나 전분질 식품의 부분이다. 저항전분은 4가지 형태로 구분하는데 RS 1은 물리적으로 효소와 만나지 않는 부분, RS 2는 생전분으로 감자, 바나나와 고아밀로오스 옥수수전분, RS 3는 노화된 전분 그리고 RS 4는 화학적으로 변성시킨 전분이다. RS 함량은 열에 안정한 $\alpha$ -아밀라아제나 pancreatin, pancreatic $\alpha$ -아밀라아제와 미생물에서 분리된 아밀라아제 등을 이용한 몇 가지 방법에 의해 분석되고 있다. RS는 대장에서 미생물에 의해 발효되어 단쇄지방산을 생성하는데 특히 부티릭산이 생성된다. 아세트산이나 프로피온산은 간의 대사에 영향을 주며 부티릭산은 항 종양(항 대장암) 특성이 있다. RS는 소화가 되지 않아 저열량원이므로 당뇨병 환자나 운동에 의한 혈당 조절이 필요할 때 조절능력을 갖는다. RS가 건강에 중요한 인자임이 알려지면, 건강을 위해 매일 섭취량의 증가를 권장해야 할 것이다.

  • 식품에서의 갈변현상은, 외관을 손상시킴으로 인해 상품가치를 저하시킬 뿐만 아니라 경우에 따라서는 독성물질을 생성하는 등의 문제를 일으킨다. 대표적인 것으로 사과ㆍ바나나의 껍질을 벗긴 후에 진행되는 갈색화 또는 수산물에서의 새우ㆍ가재류의 흑변 현상이 잘 알려져 있다. 이러한 현상은, polyphenoloxidase(PPO, EC 1.14.18.1)에 의해 유리 tyrosine등의 phenol성 화합물이 quinone체로 산화하고, 생성 된 quinone 또는 유도체들은 중합되어 melanine색소를 형성하는 것이 원인으로 알려져 있다. 현재, 화학적 합성품인 4-hexylresorcinol의 침가가 흑변 현상의 방지책으로서 인정되어 있으나, 최근 소비자들의 사고를 고려할 때, 안전성이 높은 천연물 유래의 유효한 첨가물의 개발이 요망되고 있다.   • The purpose of this study is for researching consumptions of the Korean and Japanese's consumers and qualities on the bananas which rank first in market share of the fruits market. The survey was conducted from the 180 Korean women living in Gangnam and Bundang. It was also compared and analyzed on the basis of data from the Japanese's R company. This analysis was done using SPSS 12.0 Vir. and analyzed according to its purposes. First, the difference between Korea and Japan in terms of bananas intake was studied. Second, consumption situations and types of Korean and Japanese's women were compared and analyzed. Therefore, this is the basic analytic study for finding out Korean consumers' recognitions and purchase behaviors on the bananas compared those of Japan. This will be utilized as useful material to understand the domestic consumers' consumption behaviors of the bananas which are one of the imported agricultural products.

  • 한국환경포장진흥원(원장 전명화)이 친환경 포장기술 및 녹색 포장디자인 개발을 촉진하기 위해 매년 개최하고 있는 제8회 그린패키징 공모전 시상식을 지난해 12월 7일 여의도 FKI타워에서 개최했다. 친환경 포장을 통한 자원 절약과 녹색성장, 녹색소비 생활에 기여하는 것을 목적으로 하는 이번 그린패키징 공모전에는 일반 부문은 17개 기업에서 22점, 학생 부문은 8개교에서 134점 등 총 156점의 작품이 출품됐다. 일반부문에서는 대상인 환경부 장관상은 Lion코리아의 '액체세제용 뚜껑'과 소프트팩(주)의 '고차단성 생분해 소재 커피 & 차 봉투'가 수상했고, 최우수상인 한국환경포장진흥원 이사장상은 신세계푸드의 '100% 생분해필름으로 구성된 바나나포장'과 오리온의 '수제초코파이용 종이 트레이'가 수상했다. 학생부문에서는 연세대학교 허채윤 학생의 '조립식 피자박스'가 대상을 수상하는 등 총 33점의 작품이 수상을 했다. 다음에 제8회 그린패키징 공모전의 수상작들을 살펴본다.

Positive Effect of Musa paradisiaca Peel Ethanolic Extract on Antioxidant Activity and Melanin Synthesis (바나나 껍질 에탄올 추출물이 멜라닌 합성에 미치는 영향)

  • Aging is accompanied by changes in the body, such as graying hair, wrinkles, and black spots composed of lipid peroxides and proteins. Melanin is a polymer substance produced by an oxidation polymerization reaction from tyrosine, and it determines the color of hair and skin. It has been reported that melanin is synthesized by melanocyte, and its excessive production by reactive oxygen species is associated with aging. The purpose of this study was to determine the direct effects of Musa paradisiaca peel ethanolic extract (MPEE) on antioxidative activity and melanin synthesis. It was observed that the antioxidant activity of MPEE was similar to that of vitamin C, a positive control, in both DPPH radical scavenging assay and reducing power assay. In order to examine cytotoxicity prior to cell experimentation, 3-(4,5-dimethythiazol-2-yl)-2,5-diphenyltetrazolium bromide (MTT) assay was performed for B16F1 cells. MPEE was not cytotoxic at $32{\mu}g/ml$ or less. In addition, MPEE increased melanin synthesis in live cells in addition to tyrosinase activity and melanin synthesis in dihydroxyphenylalanine (DOPA)-oxidation assay in vitro. Moreover, MPEE increased melanin synthesis in cells aged by pretreatment with $H_2O_2$. The expression levels of tyrosinase-related protein (TRP)-1, TRP-2, and superoxide dismutase (SOD)-2 by western blot analysis were increased in the presence of MPEE. These results suggest that MPEE could promote the melanin synthesis as an antioxidative substance.

Analysis of Nitrate Contents of Agricultural Products by HPLC-UV (HPLC-UV를 이용한 농산물의 질산염 함량분석)

  • A total of 550 samples were analysed for nitrate contents using HPLC-UV. Nitrate contents of leaf vegetables were higher than those of root vegetables and fruit vegetables. The average nitrate content of the radish leaves (4875.8 mg/kg) was the highest, followed by marsh mallow (4711.7 mg/kg), crown daisy (4546.9 mg/kg) and vitamins (4239.5 mg/kg). The nitrate content in fruits of strawberry and banana averaged at 24.0 mg/kg and 438.5 mg/kg, respectively. Nitrate was not detected in other fruits. In fruiting vegetables nitrate contents were less than 1000 mg/kg. In onion, lotus root and radish, nitrate contents were 253.7mg/kg, 352.4mg/kg and 2849.0 mg/kg, respectively, with no detection in garlic. Nitrate contents in mushrooms were less than 100 mg/kg.

Studies in Quantitative Analysis of Inulin-type and Levan-type Fructan in some Korean Foods (국산 식품에서 이눌린타입과 레반타입 플럭탄 정량분석 연구)

  • Fructan, a fructose homopolymer, is found in various foods, including onion, garlic, chicory, Jerusalem artichoke, banana, and Cheonggukjang. This study aimed to quantitatively analyze both levan-type and insulin-type fructan using acid analysis and enzyme treatment. In order to analyze fructan contents, we applied optimized conditions to various fructan-rich foods using products from 2017. In the case of oxalic acid hydrolysis, fructose concentrations increased as oxalic acid concentration increased. Inulinase treatment was better than invertase treatment in terms of fructose liberation from fructan. We applied three different methods to fructan-rich foods, including onion, garlic, banana, and Cheonggukjang and found that fructose released from fructan-rich foods was the highest in oxalic acid hydrolysis among three different methods. Except for Cheonggukjang, inulinase treatment produced better results in terms of fructose contents than invertase treatment. From our study, estimated daily fructan intakes by Koreans were 1,172~3,402 mg from onion and garlic. In conclusion, we believe that information on fructan-rich foods may be helpful to understand their roles in the human digestive system.

Effects of ripeness degree on the physicochemical properties and antioxidative activity of banana (바나나 숙도에 따른 이화학적 특성 및 항산화 활성)

  • This study was performed in order to compare the changes in fruit quality and antioxidant activity depending on the ripeness degree of the banana flesh and peel (unripe, ripe, and over ripe) when stored at room temperature for 6 days. The moisture contents showed differences such as the significantly lower maturity in the over ripe fruit peel and the moisture content increase in the fruit flesh during ripening. During the maturity stage, the L and b values decreased, while the a value increased. During ripening, the titratable acidity (TA) decreased, while the soluble solids contents (SS), sugar acid ratio (SS/TA), total sugar, and reducing sugar contents increased, respectively. Also during ripening, the glucose and the fructose contents increased considerably, thus resulting in the decrease of the sucrose content. In addition, this study revealed that the phenolic substance, which was part of the fruit skin, showed more favorable reaction to radical ability than the fruit flesh. Furthermore, the DPPH, ABTS radical scavenging ability, and reducing power showed better reaction for the fruit skin than for the fruit flesh, and there was a significant increase in the antioxidative activity as a result of the higher levels of phenolic substance. Therefore, maturity played an important role in changing the chemical composition and physiological activity of a banana. The unripe peels could be used as antioxidant ingredients and they could also enhance the biological activity in the utilization of by-products.
