Quality Characteristics and Antioxidant Properties of Saccharified Banana Gruels (바나나 첨가량을 달리한 당화 바나나죽의 품질특성 및 항산화효과)

  • We conducted this study in order to investigate the quality and antioxidant properties of saccharifed banana gruel containing different levels (0, 15, 30, and 45%) of banana puree. Saccharified banana gruel with different ratios of banana was prepared and proximate composition, sweetness ($^{\circ}brix%$), pH, total acidity, Hunter's color value, viscosity, free sugar, sensory evaluation, and physiological activities of the sample were measured. With increasing banana content, proximate composition, sweetness, and acidity of banana gruel increased, and pH showed a significant decrease (P<0.05). Saccharified banana gruel prepared with 15~45% banana showed significantly lower viscosity. As the level of banana increased, L-value decreased, whereas the a-value, b-value increased. Free sugar content of fructose, glucose, maltose, and sucrose showed a significant increase (P<0.05). Saccharified banana gruel with 30% added banana was the most preferred for color, flavor, taste, mouth-feeling, texture, and overall acceptability. The total phenolic compound contents of saccharified banana gruel with banana puree ranged from 1.73 to 5.75 mg/g. DPPH and ABTS radical scavenging activities of saccharified banana gruel with banana puree were 8.67~31.26% and 6.02~55.16%, respectively. With increasing banana content, total polyphenol contents, DPPH and ABTS radical scavenging activity of banana gruel showed a significant increase (P<0.05). From these results, we found that addition of 30% banana was the best method for preparation of gruel with high sensory quality.

  • The banana insect pest species and their damages were surveyed from 9 vinyl hoses of Cheju Island on August in 18. A total of 5 pest species wre found ; banana root weevil (BRW) Cosmopolites sordidus Germar (Curculionidae) a wireworm Melonotus sp. (Elateridae), a spider mite teranychid sp. (Tetranychidae), mulberry mealybud Pseudococcus comstocki (Kuwana)(Pseudococcidae), and common cutworm Spodoptera litura (Fabricius)(Noctuidae). Among them, the BRW which attacked the rhizome of banana plant was newly recorded from Korea. It is assumed that the weevil would be introduced from Japan, Philippine or SriLan-Ka wiht the banana seedlings imported during early 1980's.

  • 식생활 및 사회 환경 변화에 따라 식품 폐기물이 많이 발생하고 있다. 이 폐기물을 처리하는 데 막대한 비용이 소요되고 환경오염도 심각한 상황이다. 이에 식품 폐기물의 자원화를 통해 자원의 부가가치를 높이고, 처리비용 절감과 함께 환경오염 방지, 새로운 유기소재의 확보 등의 효과를 볼 것으로 사료된다. 본 연구는 바나나 껍질로부터 추출한 물질의 다양한 기능성을 조사하고, 인디고의 환원제로서 유효성을 확인하여 천연염색 분야에 식품 폐기물의 활용 방안을 모색하는데 목적이 있다. 이를 위하여 바나나 껍질은 건조 후 증류수로 $100^{\circ}C$에서 1시간 동안 추출, 농축하여 분말로 만들어 사용하였다. 바나나 껍질 추출물의 기능성을 알아보기 위해 총당분석(Phenol- sulfuric method), 항산화(DPPH radicals 소거활성), 황색포도상구균에 대한 항균성 실험(Paper disc diffusion)을 하였다. 또한 인디고 염색시 화학환원제 대신 이 분말을 사용하였고, 그 환원력 측정은 환원 포텐셜과 염색 실험을 통해 평가하였다. 본 연구에서 제조한 바나나 껍질 추출물은 항산화능이 우수하였고, 높은 당 함량을 나타냈다. 황색 포도상구균에 대한 항균성을 지녀 향후 기능성 물질로서 응용가능성이 클 것으로 전망된다. 바나나껍질 추출물은 합성인디고 환원에 효과적이었다. 인디고 환원은 바나나껍질 추출물을 첨가하면서 바로 시작되고, 24시간 경과 후 최대 염착량과 최고 전압값을 나타냈다. 바나나 껍질 추출물의 농도가 높아질수록 인디고 환원력은 높아지고 염착량도 증가하는 것으로 나타났다. 따라서 바나나 껍질 추출물은 인디고 환원에서 화학물질인 하이드로설파이트를 대체하여 사용할 수 있는 효과적인 천연유기환원제로 사용할 수 있을 것으로 기대된다.

Quality Characteristics of Sponge Cake added with Banana Powder (바나나 분말을 첨가한 스펀지케이크의 품질 특성)

  • In this study, sponge cakes were prepared with substitution of 5, 10, 15, and 20% banana powder. The specific gravity and viscosity tended to increase as the ratio of banana powder increased. The foaming stability was highest at the 10% substitution level. The control group had significantly higher moisture content and volume index than the banana powder samples. The crust color values (a, b) decreased significantly with increased content of banana powder, but the a value increased. Crumb colors values (L, b) decreased as banana powder content increased while the a value increased. In terms of textural characteristics, the samples containing 5, 15, and 20% banana powder had significantly higher hardness than the 0 and 10% samples. Fracturability and resilience were maximal with 15% and 5%, respectively. Adhesiveness and chewiness were not significantly different among the samples. In the sensory evaluation, scores for banana flavor, coarseness, color, flavor, softness, and overall acceptability increased as the level of banana powder content increased. Sweetness was not significantly different among the samples. The control group had significantly higher egg-flavor as compared to the samples containing banana powder. The results indicated that substituting 10% banana powder to sponge cake is optimal for quality and provides a product with reasonably high overall acceptability.

Whitening Effect of Banana Leaf Extract (바나나잎 추출물의 미백 개선 효과)

  • This research was carried out to identify the whitening effect of Banana leaf extract. B16F10 cells were used to measure cell viability, mRNA expression, and tyrosinase activity inhibition assay from B16F10 cell. We also carried out clinical test of the cream product containing banana leaf extract. In this study, we elucidated the effects of banana leaf extract on TRP1 / TRP2 / Tyr mRNA expression and tyrosinase activity inhibition. Quantitative real-time PCR showed that banana leaf extract decreased mRNA level of TRP1, TRP2 and Tyr gene and tyrosinase activity inhibition assay also revealed that banana leaf extract 65% decreased melanin production in B16F10 cell. Banana leaf extract cream can whiten the skin darkness induced by ultraviolet. Therefore, we successfully identified the whitening effect of banana leaf extract, and this finding suggested the banana leaf extract is a considerable potent cosmetic ingredient for skin whitening. Based on this, we anticipated further researches about banana leaf extract for mechanism to develop not only cosmetics but healthcare food or medicines.

Quality Characteristics of White Pan Bread with Banana (바나나를 이용한 식빵의 품질특성)

  • This study investigated the quality characteristics of white pan bread with banana addition. This analysis was through mixograph and stickiness of dough, fermentation rate, TPA, crumbScan image analysis, color, moisture contents and acceptance test. Mixograph peak time presented 4~5 minutes on every sample. However, CON, B10 and B20 sample presented more than 60%, and B30, B40 presented less than 60% at peak value (%). The result indicated that banana addition increased as the stickiness decreased. The fermentation rate generally increased, but the sample B40 decreased after 75 minutes. The result of crust and inside color, CON was the highest on lightness L value, B40 was the highest on both red a value and yellow b value. The result of pH showed that B40 was the lowest, and more banana addition made pH decreased. Thus, adding banana influences negatively on volume and cost of the product. The image analysis through crumbScan did not show any significant difference on crust thickness and distortion of crumb fineness. On the other hand, CON value was 774.33 that was the lowest, and B40 value was 927.66 which is the highest on the density of crumb fineness. Hardness showed a significant difference; B40 was the lowest, and Control was the highest. Moisture contents generally had a noticeable difference; CON value was the highest, and banana addition increased as the value decreased. At the result of acceptance test, one of the sensory tests, B20 showed the highest grade, and B40 showed the worst. Based on the above results of characteristic difference, banana addition could influence volume of the bread negatively.

Mycelial growth of oyster mushroom by substrates of water-hyacinth and banana leaf and stalk (부레옥잠과 바나나 잎, 줄기를 사용한 배지에서의 느타리버섯 균사생장)

  • This research was carried out to clarify the feasibility of using the banana leaf and stalk and water hyacinth by substrate of oyster mushroom. The 100% cotton, water hyacinth, banana leaf and stalk was used as a mushroom media respectively. The growth of fungi was observed after 15 days and showed 115mm in the cottonseed hull, 80mm in the water hyacinth, and 72mm in the banana leaf and stalk. In the mixed substrate that added water hyacinth to cottonseed hull with the rate of 20, 50, 80% the growth was observed with 115, 103, 62mm respectively. In case of the banana mixed substrate the results was appeared with 106, 89, 78mm respectively. In the pure substrate the cottonseed hull's mycelial growth was the fastest and in the case of mixed substrate with water hyacinth 20% and cotton 80% was the fastest growth.

  • Banana is the eighth most important crop in the world designated by the United Nations Food and Agriculture Organization (FAO). In terms of production, it is the fourth most harvested crop following wheat, rice, and corn, considered to be a promising food source for mankind as it is not only scrumptious but also rich in nutrients. However, abnormal cultivation methods that mankind has invented to breed bananas is currently pushing them to the state of extinction. The aim of this study is to develop information-rich digital contents that can easily and intriguingly convey information about steadily but certainly increasing risk of banana extinction. The end-users are middle and high school students who are assumed to be aware of the agricultural revolution through their school curriculum. The linear storytelling method was meant to encourage the end-users to be interested in the causes and processes in which banana has become endangered. For generating a natural interaction between the content and the end-users, a parallel, upper-lower structure was used, in which the relationship between the stories comprising several stages and the information graphic supporting each story is represented. This paper can support an information campaign about the endangered species.

Residual characteristics of pesticide in banana from international pesticide residue monitoring data (각국의 잔류농약 모니터링 자료를 활용한 바나나 중 농약 잔류 실태 조사)

  • This study was designed to use the safety management data for residual pesticides in imported banana based on the investigation of pesticide residue detection of agricultural products with different origins in the Republic of Korea. From the USA, EU, UK, Japan and Korea from 2007 to 2018, the results of banana residue pesticides were summarized into detected pesticides, number of inspections, number of pesticide detection cases, and the amount of detected pesticide residue. A total of 109 pesticides were detected for the pesticide residue and pesticide detection rate was 4.58% in 206,894 cases. The detection rate was ranged within 10.62-24.62% for chlorpyrifos, imazalil, methyl-bromide, azoxystrobin, carbendazim, pretilachlor and thiabendazole. Among them, chlorpyrifos was detected most often followed by imazalil, azoxystrobin, thiabendazole, bifenthrin and carbendazim. According to the results of monitoring data for bananas in EU, Japan, USA, UK and Korea, the kinds of detected pesticides were 85, 57, 23, 18 and 8, respectively. Azoxystrobin, bifenthrin and chloropyrifos were found in monitoring data of all countries. Fourteen and twelve pesticides were detected in bananas from Costa Rica and Ecuador, respectively. Imazalil and thiabendazole were detected in 16 and 11 origins, respectively. Myclobutanil and iprodione were detected in four and two countries, respectively. In bananas from Costa Rica, azoxystrobin and bifenthrin were detected 11.8 and 9.8%, respectively, and the detection rate of azoxystrobin was 19% in bananas from Colombia. Chlorpyrifos was detected 22.7, 13.3 and 10.8% in bananas from Belize, Colombia and Costa Rica respectively. Myclobutanil was detected in bananas from Colombia and Costa Rica with the rate of 17.9 and 10.4%, respectively.
