Chemical Characteristics in Fermented Cordycepin-enriched Cordyceps militaris (발효 동충하초의 이화학적 특성)

  • The comparative effects of fibrinolytic, antioxidative activity and electrophoretical protein patterns with Cordyceps militaris powder (CM) and cordycepin-enriched Cordyceps militaris JLM0636 powder (CCM) and fermented cordycepin-enriched Cordyceps militaris JLM0636 powder by several microscopic organisms were investigated. In addition, nutritional materials such as mineral, protein, and fatty acids were also measured. The protein concentration was higher in CCM than that in CM. The protein concentration in fermented CCM was the highest in CCM treated by Aspergillus kawachii among the various samples. When total protein patterns of CM, CCM, and both fermented CCMs were analyzed by native- and SDS-PAGE, there were slightly varietal differences in electrophoretical protein patterns. Major minerals were K, Ca, Mg, and Zn. Major fatty acids were palmitic acid, stearic acid, oleic acid, linoleic acid, and linolenic acid. Fibrinolytic activity was the highest in the fermented CCM by Bs treatment among the various samples. The ${\alpha},{\alpha}^{\prime}$-diphenyl-${\beta}$-picrylhydrazyl (DPPH) radical scavenging activity was slightly stronger in the CCM treated with Aspergillus kawachii among the various samples; however, these samples all exhibited relatively low levels of activity compared with the butylated hydroxytoluene (BHT). These results may provide the basic data necessary to understand the biological activities and chemical characteristics of Cordyceps militaris JLM0636 powder fermented by several microscopic organisms to develop functional foods.

The Basic Study of Cheong-song Mineral Water for Tofu Coagulant (청송약수를 이용한 두부응고에 관한 기초연구)

  • This is the basic study of Cheong-song mineral waters(Dalgi and Sinchon) for a coagulant of Tofu. For comparison, $CaCl_2,\;CaSO_4,\;MgCl_2\;and\;MgSO_4$ are used as reference coagulants. The coagulability test was conducted by measuring the percentage transmittancy of filtered whey solution at 600 nm wavelength, in $80\;{^{\circ}C}$ and 10 mL of solution volume which composed of 2 mL of soy milk and coagulants. The coagulability test of mineral waters require more than an aliquot of 8 mL. Good result obtained by adding 0.4, 1, 0.8, 0.8 mL of reference coagulants and this is equivalent to the amount of 66.14, 232.83, 95.68, 78.88 mg of Ca and Mg respectively. The percentage transmittancy of filtered whey solution with added 8 mL of Dalgi and Sinchon mineral waters showed 50.74 and 58.52 respectively and the amount of mineral content of Ca and Mg equivalent to 2.41 and 2.48 mg respectively which is very lower value than the reference coagulants. This means mineral water has coagulation ability even in the low concentration.

Biological Activity and Chemical Characteristics of Fermented Acanthopanax senticosus by Mold (곰팡이 발효 가시오가피의 이화학적 특성과 생리활성)

  • Three mold strains, Aspergillus oryzae (A. oryzae), Aspergillus kawachii (A. kawachii), and Monascus purpureus (M. purpureus), were tested for fermentation of Acanthopanax senticosus (A. senticosus) leaf, root, stem, and fruit powders. The fermented A. senticosus materials were then tested for bioactive materials (phenolic compounds, flavonoids, mineral and fatty acid) and biological activities (DPPH free radical scavenging activity, reducing power, and tyrosinase inhibition activity). The highest concentrations of phenolic compounds and flavonoids were NFASL at 4.11% and MPASL at 2.30%, respectively. Major minerals were Ca, K, Mg and Mn. Major fatty acids in fermented A. senticosus powders were palmitic, linolenic, and stearic acids. DPPH radical scavenging activity was slightly stronger in non-fermented than in fermented A. senticosus. Tyrosinase inhibition activity was stronger in fermented A. senticosus than in NFAG. The Fe/Cu reducing powers were stronger in non-fermented A. senticosus than in any of the fermented A. senticosus materials. Overall, the study provides basic data for understanding the biological activities and chemical characteristics of A. senticosus fermented by molds for the development of functional foods.

Analysis of General Components and Vitamin and Mineral Contents of the Mushroom Agrocybe chaxingu (차신고버섯(Agrocybe chaxingu)의 일반성분, 비타민 및 미네랄 함량분석)

  • The mushroom Agrocybe chaxingu was analyzed to evaluate the nutritional value of this potential food. The moisture content was 88.9% in the fruiting body of A. chaxingu, and the proportions of ash, crude fiber, carbohydrate, crude protein, and crude fat were 0.9%, 1.4%, 7.2%, 2.5% and 0.4% by weight, respectively. A. chaxingu contained 1.29 mg/100 g edible weight of vitamin $B_1$, and the contents of vitamin $B_2$, vitamin $B_3$, and vitamin C were 0.15 mg, 0.32 mg, and 18.4 mg per 100 g of wet mushroom. Potassium (3,318 mg/100 g, dry basis) was found at the highest concentration in A. chaxingu. In addition, the mushroom contained many other minerals (all figures are mg per 100 g of dried mushroom) such as phosphorus (909.7), magnesium (141.3), sodium (12.7), zinc (7.4), iron (6.5), copper (2.8), manganese (0.8), and nickel (0.1). The results indicate that A. chaxingu is a valuable nutrient source.

Effects of calcium and magnesium-balanced deep sea water on antioxidation in kidney cells (칼슘과 마그네슘이 조절된 해양심층수가 신장세포에서 항산화에 미치는 영향)

  • In this study, the antioxidant effects of mineral-containing deep sea water (DSW) on kidney function was confirmed using a cell model. DSW samples were prepared with different mineral concentrations including calcium and magnesium-the main minerals found in DSW-to derive the following sample groups: trace minerals (TM), high magnesium (HM), high magnesium, low salt (HMLS) and high magnesium, high calcium (HMHC). The purpose of this preparation was to determine the optimal calcium/magnesium ratio in DSW. Human embryonic kidney (HEK293) cells were exposed to sodium chloride (NaCl) for 2 h to induce release of reactive oxygen species (ROS). Thereafter, the cells were treated with the respective DSW samples before ROS concentrations, as well as antioxidant enzyme activity and protein levels, were measured. Among the water samples, HMLS showed the most protective effect against ROS, whereas the intracellular glutathione content was highest in cells from the HMLS- and HMHC-treated groups. However, TM- and HMHC-treated cells showed similar tendencies to the control group, in terms of mRNA expression of antioxidant genes. These results suggested that DSW may aid in preventing renal oxidative stress caused by excessive sodium intake. Furthermore, it was determined that HMLS and HMHC water samples displayed good antioxidant effects in the kidney cell model, based on the combined results of ROS concentration and antioxidant marker measurements.

  • 발효유 시장의 판도가 재편될 조짐을 보이고 있다. 오는 96년 유제품 시장의 완전 개방으로 신제품 개발과 기술 경쟁이 불가피한 실정에 놓이게 되자 유가공업체는 앞 다퉈 고부가 가치 상품을 직접 공략하는 추세다. 이에 따라 각 업체는 단순가공처리로 부가가치가 낮은 일반 시유나 조제분유 등의 생산 비중을 점차 낮추고 최근 매출이 급신장하는 요구르트 제품 및 치즈 등 고부가 가치성 제품 개발에 주력하고 있다. 가장 눈에 띄는 것은 90년대 초 정통요구르트로 각광받았던 떠먹는 요구르트(호상요구르트)의 퇴조 대신 떠먹는 불편함을 없앤 드링크요구르트[D/Y]가 급격한 신장세를 보이면서 발효유 시장을 휩쓸고 있다. 차세대 요구르트로 불리는 드링크요구르트가 요구르트 시장을 주도하고 있는 가운데 요구르트에 칼슘 · 미네랄 · 비타민 등을 강화한 고기능성 제품도 속속 개발되고 있다.

  • 이번호에는 충남 연기군의 유일한 육용종계장으로 40년간 오로지 양계산업에 종사한 조은농장을 소개하고자 한다. 이곳은 다양한 효모제와 첨가제를 사용하면서 일체 항생제를 쓰지 않는 농장이다. 최근 추세가 무항생제를 선호하기 때문에 따라간다? 그렇지 않다! 조은농장 사장인 박순종 씨는 30년 전부터 이런저런 첨가제를 사용하면서 최소한 몇 년간 사육해보고 생산성에 효과가 있는 것으로 결과를 얻어 오로지 무항생제 축산업만을 고수하고 있다. 특히나 3년 전부터는 장기능 발달로 생체 활성화 효과가 있는 비타민 미네랄 활성화제제를 첨가 급이하면서 배부율이 크게 향상되는 등 높은 부화성적으로 농가 수익창출을 보고 있는 농장이다. 조은농장 박순종 사장을 만나 인터뷰한 내용을 정리했다.
