녹차의 첨가방법에 따른 김치의 발효특성 비교

  • 관능성과 기능성이 증진된 김치를 제조하기 위해 polyphenol 성분의 함량이 높은 녹차를 부재료로 첨가하는 방법에 따른 김치의 발효특성을 조사하였다. 김치의 발효특성을 비교 조사하기 위하여 1%의 녹차 물추출물를 함유하는 소금물로 절인 후 담근 김치(I), 절임배추를 1% 녹차 물추출물에 일정시간 침지 후 제조한 김치(II), 녹차 물추출물 1%를 양념과 혼합하여 담근 김치(III)의 3가지 방법으로 김치를 제조한 후 1$0^{\circ}C$에서 숙성시키면서 pH, 산도, 균수, 총 페놀함량 및 관능적 품질을 조사하였다. 대조구의 pH는 숙성중 I~III의 경우보다 낮았고, 산도의 경우도 pH와 역으로 pH의 결과와 일치하였다. 그러나 녹차처리방법에 따른 큰 차이는 보이지 않았다. 대조구의 총균수와 젖산균수는 각각 6.27~9.22 및 4.50~8.28 log cfu/mL로 I~III의 5.46~8.47 및 4.55~8.00 log cfu/mL보다 높았다. 총 폴리페놀 함량은 김치의 적숙기에 높게 나타났으며 control

  • 물김치는 발효 중 국물에 생성된 젖산을 비롯한 각종 유기산과 이산화탄소가 주는 독특한 신선미와 상쾌한 탄산미 그리고 배추나 무의 아삭아삭한 조직감 때문에 즐겨 먹는 김치의 종류이다. 일반 배추로 담근 물김치가 무색인데 비해, 안토시아닌 색소를 함유한 자색 양배추를 주재료로 물김치를 담그면 발효됨에 따라 유기산이 생성되어 pH가 낮아짐에 따라 색소가 안정화되어 시각적으로 아름다운 색을 띌 것으로 생각된다. 따라서 본 실험에서는 배추, 흰양배추, 적색양배추로 물김치를 담그어 숙성되는 동안의 이화학적, 관능적 특성을 분석하였다. Retardation of Kimchi Fermentation by the Extracts of Allium tuberosum and Growth Inhibition of Related Microorganisms (부추추출물의 김치발효 지연 및 관련 미생물 증식억제)

  • The effect of retarding the fermentation of Kimchi by the extract of leek(Allium tuberosum) were tested by measuring the changes in pH, acidity and total cell number as well as number of microorganisms involved in Kimchi fermentation such as Lactobacillus, Leuconostoc, Pediococcus, Streptococcus and yeasts. The changes of pH and acidity of Kimchi stored at $25^{\circ}C$ indicated that the shelf-life of Kimchi with leek extract was retarded by 1.5 days compared with Kimchi without leek extract. Growth of Lactobacillus, Leuconostoc, Pediococcus and yeasts in Kimchi were remarkably inhibited by adding the leek extract at the initial and the 1st day of fermentation. This result suggested the methanol extract of leek can be sucessfully used for the extension of shelf-life of Kimchi.

Effects of Kimchi Extracts on the Growth of Sarcoma-180 Cells and Phagocytic Activity of Mice (김치추출물이 Sarcoma-180 세포의 성장과 마우스 식균활성에 미치는 효과)

  • Effects of kimchi extracts on the immune response related to its antitumor activity in vitro and in vivo were investigated. The extracts of kimchi fermented for 0(fresh) and 3 weeks at $5^{\circ}C$ showed a direct cytotoxic effect on sarcoma-180 cells, tumor cells in vitro. Methanol extract(4mg/ml), MSF(methanol soluble fraction : 3mg/ml) and hexane extract(fresh : 2.0mg/ml, 3 weeks : 0.3mg/ml) of the kimchi(3 weeks, $5^{\circ}C$) markedly decreased the total numbers of sarcoma-180 cells, but not their viability. The phagocytic activity of peritoneal macrophage of mice was significantly augmented by these extracts of the kimchi compared with that of control in vitro and in vivo. These extracts also raised the phagocytic index, indicating that the number of phagocytized microbes per macrophage increased. Thus, kimchi might show a anti-tumor activity by enhancing the phagocytic cell activities.

Microbiological Characteristics of Low Salt Mul-kimchi (저염 물김치의 미생물균총 특성)

  • Microbiological characteristics of low salt Mul-kimchi was examined. Mul-kimchi was prepared by mixing of radish (25%), green onion (2.4%), red pepper (1.9%), garlic (1.9%) and salt (0, 0.2, 0.5, 1.0, 1.5, 2.0, 2.5, 2.5, 3.0%) in water and fermented at 4, 15 and $25^{\circ}C$ for 10 days, respectively. During fermentation period, total cell, Leuconostoc sp., Lactobacillus sp., Streptococcus sp., Pediococcus sp., coliform bacteria, gram (-) bacteria and yeast cell number were counted on their selection media. The microbes in Mul-kimchi were isolated and identified. Total cell number increased as salt concentration decreased and fermentation temperature increased. Lactic acid bacteria showed the highest number in 1.0% salt concentration. Yeast cell number increased with increase of salt concentration. Lactobacillus sp. were identified Lactobacillus plantarum and L. pentosus in Mul-kimchi containing $0.2{\sim}1.0%$ salt while those of Mul-kimchi containing 3.0% salt were Lactobacillus plantarum and L. brevis. The other lactic acid bacteria were identified Leuconostoc citrum, Leu.mes.ssp.mesenteroides/dextranicum and streptococcus facium in Mul-kimchi containing $0{\sim}3.0%$ salt while Pediococcus sp. was not detected. Gram-negative Aeromonas hydrophila, Pseudomonas fluorescens, Pseu. aureofaciens and yeast Candida pelliculosa, Cryptococcus laurentii were identified in the Mul-kimchi.

Changes of Quality Characteristics and Nitrate Contents in Ulgari-Baechu Kimchi, Yulmoo Kimchi and Yulmoo Mul-Kimchi during Storage Period (얼갈이배추김치, 열무김치 및 열무물김치의 저장 중 품질특성 및 질산염 함량 변화)

  • Nitrate contents and quality characteristics of Ulgari-Baechu Kimchi, Yulmoo Kimchi, and Yulmoo Mul-Kimchi were investigated during a storage period. In case of Ulgari-Baechu Kimchi and Yulmoo Kimchi, an increase of pH and decrease of acidity were distinguished by the 4th day of the storage after fermentation. In Yulmoo Mul-Kimchi, pH value decreased and total acidity increased through the whole storage period. Total microbial and lactic acid bacterial counts of Yulmoo Kimchi and Ulgari-Baechu Kimchi reached the peak at the 4th day of storage and slowly decreased after the 18th day. Total microbial and lactic acid bacterial counts of Yulmoo Mul-Kimchi were also the highest at the 4th day of fermentation but showed gradual decreases from the same day. Nitrate contents of Ulgari-Baechu Kimchi significantly decreased by fermentation at room temperature, which continued during the whole store period to down by 11%. Showing the similar pattern in the nitrate content change, Yulmoo Kimchi and Yulmoo Mul-Kimchi recorded 12% and 5% decrease, respectively.

Effect of NaCl Concentration and Fermentation Temperature on the Quality of Mul-kimchi (염농도 및 발효 온도가 물김치의 품질 특성에 미치는 영향)

  • This study was conducted to examine the quality of low-salt Mul-kimchi which was prepared by mixing of radish (25%), green onion (2.4%), red pepper (1.9%), garlic (1.9%) and salt (0, 0.2, 0.5, 1.0, 1.5, 2.0, 2.5, 3.0%) in water and followed by fermentation at 4, 15 and $25^{\circ}C$ for 10 days, respectively. The pH was lowest and acidity was highest in the Mul-kimchi containing 1.0% salt. The total vitamin C contents in Mul-kimchi containing $0{\sim}0.2%$ salt were high at the early stage of fermentation while those of Mul-kimchi containing 3.0% salt were higher than the low-salt samples after the optimal ripening time. The hardness of the radish increased with the salt concentration. Overall palatability of Mul-kimchi showed the highest score in 1.0% salt sample.

Quality characteristics of kimchi with Artemisia annua extracts (개똥쑥 추출물을 첨가한 김치의 품질특성)

  • The quality characteristics of kimchi with Artemisia annua extracts (1~2%; extracted with water or 70% ethanol), including the pH, acidity, reducing sugar content, total viable cell and lactic acid bacteria cell count, and sensory parameters, were investigated at 10 and $15^{\circ}C$ for 20 days during aging. The pH, acidity, reducing sugar content, and lactic acid bacteria count of kimchi with Artemisia annua extract rapidly increased upto the 4~6th day, increasing slowly thereafter. The quality characteristics did not vary between kimchi with and without the extract. The optimal aging time for kimchi with the extract was 10 days at $10^{\circ}C$. The results of the sensory evaluation showed that kimchi with 1% Artemisia annua extract was superior to kimchi with 2% Artemisia annua extract; in particular, the color and taste of the latter were found to be black and bitter, respectively.

Effects of prunus mume Sie. extract on growth of lactic acid bacteria isolated from kimchi and preservation of kimchi (매실 추출물이 김치 유산균의 성장과 김치의 저장성에 미치는 효과)

  • This studies were carried out to investigate the effect of Prunus mume Sie. extract on growth of lactic acid bacteria isolated from kimchi and preservation of kimchi. Prunus mums Sie. extract inhibited the growth of homofermentative lactic acid bacteria and heterofermentative lactic acid bacteria isolated from kimchi. In early storage stage, the pH of Prunus mume Sie. extract added kimchi(PEAK) was lower than that of control. The pH of PEAK was higher than that of control after 25 days of fermentation. Titratable acidity, viable cell of total bacteria and lactic acid bacteria of the PEAK were lower than that of control during fermentation. The sensory quality of 1% PEAK was similar to control at 10 days of fermentation But overall acceptability of 3% PEAK decreased compare with l% PEAK.
