  • This study evaluated the antifungal activity of varying concentrations of water-soluble extracts from native plants (Vitex rotundifolia, Tetragonia tetragonoides, Artemisia capillaris, Hibiscus hamabo and Ficus carica) against Stemphylium vesicarium, Penicillium italicum, Sclerotinia sclerotiorum, Pythium ultimum, Botrytis cinerea, Rhizoctonia solani and Colletotrichum gloeosporioides. Mycelium growth of pathogenic bacteria generally decreased in a concentration-dependent manner following treatment with the water extracts from donor plants. Closer analyses indicate varying inhibitory capacities depending on the type of donor plant and pathogenic bacteria. Specifically, mycelium growth of S. vesicarium varied depending on the concentration of the water extracts from T. tetragonoides (r = -0.857, p<0.01) and A. capillarys (r = -0.868, p<0.01). Also, P. italicum and V. rotundifolia (r = -0.833, p<0.01), S. sclerotiorum and V. rotundifolia (r = -0.862, p<0.01), A. capillaris (r = -0.902, p<0.01), B. cinerea and T. tetragonoides (r = -0.896, p<0.01) showed an inverse relationship. The rate of mycelial growth inhibition of pathogenic bacteria analysed are as follows: P. ultimum 94%, B. cinerea 50%, C. gloeosporioides 80% in 100% treatment of T. teragonoides. A. capillaris inhibited S. vesicarium by 43%, P. ultimum by 90%; H. hamabo inhibited P. italicum by 50%, S. sclerotiorum by 26%, and F. carica inhibited R. solani by 74%. Total phenol content with antifungal activities are as follows: A. capillaris 16.15 mg/g, F. carica 7.81 mg/g, V. rotundifolia 6.18 mg/g, H. hamabo 5.25 mg/g, T. tetragonoides 4.41 mg/g, and total flavonoid content is as follows: A. capillaris 27.57 mg/g, V. rotundifolia 12.49 mg/g, F. carica 11.45 mg/g, H. hamabo 5.77 mg/g, T. tetragonoides 5.08 mg/g.

  • The effect of soil salinity and soil-wetting by rise of water table on the growth of fruit trees was studied to obtain information for orchard establishment in the Saemangeum reclaimed tidal land. Survival ratio of trees was 85%for grape, 31%for fig, 15%for apple and pear, and near zero for peach and blueberry. Wet injury induced by water-logged or flooded condition, rather than salt injury(soil EC was lower than 3.0dS $m^{-1}$ during growing period) is thought to be more responsible for low survival ratio of fruit trees transplanted in Saemangeum area. During the summer raining season in the reclaimed areas, the soil salinity tends to be decreased by natural rainfall effect, and the rainfall acceptable capacity(RAC) of soils dramatically is reduced(10-24 mm) as rainfall is continued to occur. In spite of high hydraulic conductivity(121 cm $day^{-1}$) of soils across the area, low RAC of soils might be due to high soil saturation and elevated water table during summer raining season. Therefore, the installation of effective drainage system should be the primary factor determining successful establishment of orchard in the Saemangeum reclaimed tidal land.

  • Among various health functional foods, probiotics constitute the largest market. The interest in probiotics is increasing continuously according to the research results that gut health can control the immune function of the body, prevent diseases, and assist in treatment. In this study, dairy products and dressing sauces were developed using Ficus carica vinegar (FV), and their effects on colon cells were analyzed. When 5% FV was added to regular milk, the satisfaction with the resulting yogurt and ricotta cheese was high. The dairy product was Leuconostoc lactis, and the number of bacteria was more than 1.0×107~1.0×108 CFU/mL. The product satisfied the health food standards as probiotics. An examination of the cell viability of Caco-2 cells, which proliferate similarly to human intestinal epithelial cells, revealed an approximately 19% increase in the proliferation rate when treated with whey at 10%. An antioxidant activity of up to 58% was recorded when the cells were treated with whey at various concentrations. In addition, excellent adhesion was observed for L.latis isolated from whey. This study confirmed that dairy products made using traditionally fermented FV assist intestinal health effectively as the microbiome.

  • Fig(Ficus carica L.) which belongs to Moraceae family has been used as digestion promoter, cure for ulcerative inflammation and eruption in Korea. Figs have very short preservation period and can be kept only 1 week even in the refrigeration system. The possibility of wine-making from Korean figs was tested by analyzing the fermentation characteristics, proximate analysis and free sugar contents of wine made of slices with 20% sugar addition. Ethanol fermentation of the figs by Saccharomyces cerevisiae was done rapidly. The ethanol contents, pH, total acidity and sugar content were 12.1%, 3.91, 0.42% and 9.9 °Brix, respectively. The results from the sensory evaluation were as follows. The wine made from the sliced figs were better than that from fig juices in their sensory scores. The wine made with frozen figs was not different from that made with fresh ones. To improve the quality of wine, the addition of dried leaf powder in the concentration of 100 ppm were tried and found it was superior to the one made without leaf.

  • In order to study the tenderizing effect of the proteolytic enzyme, ficin, from fig fruit (Ficus carica L), the enzyme was purified from fig latex by precipitation and chromatography. The ficin separated from Bongraesi showed single band on SDS-PAGE. However, the ficin from Masui showed tow bands. The specific activity of ficin purified from Bongraesi species was 2.8 unit/mg protein and that from Masui species was 6.5 unit / mg protein. The amounts of ficin purified from 50 mL of crude latex of Bongraesi and Masui were 1,760 mg and 657 mg, respectively. the water holding capacity of beef decreased to the large extent, when sugar Bongraesi latex and Masui latex were added. The hardness of beef showed decreasing tendency with the time, however, after 60 min, it decreased and thereafter increased a little after 120 min. the hardness of beef decreased sharply with addition of the latex of Bongraesi and Masui. The Masui has more tenderizing effect than the Bongraesi. When meat was mixed with tenderizing agent(ficin) and not heated, the change of color showed significant difference (p<0.01). when meat was mixed with tenderizing agent(ficin) and heated, the toughness showed significant difference (p<0.01) and the softness showed significant difference (p<0.001).

  • To prevent the denaturation of ficin(EC 3.4.22.3) that is a proteolytic enzyme in fig(Ficus carica L.), fig conserve was heated to 55oC. The fig conserve was added as a tenderizer to native Korean cattle beef(KCB), dairy cattle beef(DCB), castrated dairy cattle beef(CDCB), and imported beef(IB). The composition of free amino acids, hydroxyproline content, shear force, cooking loss, morphological changes and sensory evaluation were then investigated to observe the effect of tenderizing beef with fig conserve. Free amino acids and cooking loss of treated beef were higher than those of control, whereas hydroxyproline and shear force were lower. Glutamine in treated beef decreased relatively but asparagine increased. Hydroxyproline was found, in increasing order of abundance, in DCB, CDCB, IB and KCB. By portion, loin was higher than tenderloin in free amino acids, hydroxyproline and shear force but was lower in cooking loss. Observation with a light microgram revealed a surprising loss of muscle fiber in treated beef. In sensory evaluation of uncooked beef, the control was redder than the treated beef(p<0.01~p<0.05). Treatment with fig conserve increased the juiciness of both cooked CDCB and IB(p<0.001) and decreased their hardness(p<0.01~p<0.001).

  • Sebum is an oily substance produced by sebaceous glands in human skin. The differentiation of the sebaceous gland is remarkably species-specific and sebocytes may play crucial parts in the pathophysiologic processes and disorders of pilosebaceous unit. In this study, we investigated the inhibitory effect of Ficis folium on the lipid production using the human sebocyte cell line 5195. Our results showed that Ficis folium significantly inhibits synthesis of sebaceous lipids such as cholesterol esters, triglycerides, and total lipid. And Ficis folium supressed cytoplasmic lipid droplets. On the other hand, Ficis folium didn't effect on cell proliferation. These results suggest treatment with Ficis folium resulted in a lower lipid synthesis in SZ95 cells without cytotoxicity.
