Processing of Low Sugar Jams from Fig Pulp Treated with Pectinesterase (저당성 무화과 잼의 제조)

  • The change of pectinesterase (PE) activity and pectin substances in fig fruit were investigated and low sugar jams prepared by various methods from fig fruit were compared. Fig fruit PE, which began to show the activity at the harvest time, was not inactivated and had slight activity during frozen storage at $-25^{\circ}C$. The amount of alcohol insoluble solid (AIS) and the degree of esterification (DE) of AIS were reduced by its own PE activity. However the intrinsic PE of fig fruit was not enough to make low-methoxyl pectin below 50% of DE. Fig pulp treated by its own PE and combination of fig PE and orange PE could make low-methoxyl pectin. After PE treatments, fig pulp adjusted below pH 4.0 by addition of citric acid kept red colour. Fig Jams processed by various methods had lower soluble solid $(31{\sim}49^{\circ}Brix)$ compared with conventional fig jam. Five kinds of fig jams out of those showed higher score than others in the sensory evaluation. For preparation of the five jams, the fig pulps with or without 1% pectin were treated at $50^{\circ}C$ for 25 minutes with addition of orange PE (200 units/400 g pulp). The treated pulps were added with 0.25% citric acid, 0.7% calcium and 20% cane sugar. The mixed pulps were prepared for jams containing low sugar by hot plate or microwave or refrigeration (excepting the mixed pulp without pectin).

  • This study was performed to examine the possibility of Fig extracts for the natural product research. The Fig extracts method were wash, dry and extracted and prepared into two parts; fruit, leaf. The extracts were prepared using alcohol and their chemical structures were estimated by column chromatography, GC-mass spectroscopy, IR, $^1H$-nmr data-base. In order to apply the extracts to hair-care cosmetics, antimicrobial and antifungal ability of the extracts were accomplished using broth serial dilution method. and In order to customer's interest satisfy and test to Fig's industrial propriety of accompany with table luxuries change, The author suggested that to test Fig's industrial property for hand made of transparent and solid soap contained of Fig extracted materials

Quality of Accelerated Salt-fermented Anchovy Sauce Prepared with Fig (무화과를 이용한 속성발효 멸치액젓의 품질)

  • To facilitate fermentation of liquid anchovy sauce, 3% unripe figs, ripe figs, or fig leaves were added to the sauce and fermented at $25^{\circ}C$ for 60 days. The anchovy sauce prepared with ripe figs showed higher protease activity and better red-pupple color than others. Amino-nitrogen content in anchovy sauce treated with ripe figs was attained to 600 mg% within 10 days. Total free amino acid content in the product with fig addition showed about twice higher, 4543.21 mg%, than the control, 2255.29 mg%. Hypoxanthin was found as a major components of nucleotide and their related compounds in the fermented anchovy sauce. However, using the unripe figs and fig leaves impart greenish color and grass taste to the product.

First Report of the Exotic Fig Weevil, Aclees taiwanensis Kôno (Coleoptera: Curculionidae) in Korea (한국에서 외래종 무화과곰보바구미(신칭), Aclees taiwanensis Kôno 발생 보고)

  • During late July 2020, a species of weevil in the genus Aclees (Curculionidae, Molytinae) was found on several fig farms in the Haenam-gun district of Jeonnam Province, Korea. The weevil was subsequently identified as Aclees taiwanensis Kôno, 1933 (Coleoptera: Curculionidae), an exotic species, probably of subtropical and tropical Asian origin, that has also been introduced to Italy and France, where it is associated with severe damage to fig trees. This is the first report of an Aclees weevil in Korea.

Quality Characteristics of Muhwakwa-pyun with Various Starches (전분 종류를 달리한 무화과편의 품질 특성)

  • The effects of various kinds of starch (mungbean, potato, corn and a blend of potato and com starch) on the quality characteristics of muhwakwa-pyun were studied according to the storage duration. The sweetness, pH and total acidity of muhwakwa extract were analyzed, as were the Visco/Amylograph viscosity profile and DSC thermodynamic characteristics of starches. For quality characteristics, color difference, instrumental texture characteristics and sensory characteristics were compared. The sweetness of muhwakwa extract was satisfactory but the total acidity was low for Kwa-pyun manufacture. Therefore, its pH was adjusted to 3.4 by adding 10% citric acid with an amount of 1% of total liquid. From the Visco/Amylograph viscosity profile and DSC thermodynamic characteristics of starches, a blend of potato and com starch was found to be easy to cook and form a gel but a little more resistant than the other starches in terms of retrogradatin. Lightness (L) and yellowness (b) of Kwa-pyun increased while its redness (a) decreased by the storage. The color became whiter and the clarity decrease regardless of the kinds of starch, which became obvious after 3 days of storage. The hardness, springiness, adhesiveness and cohesiveness tended to decrease with storage, which was weak in a blend starch. The overall acceptability of Kwa-pyun made with a blend of potato and com starch was evaluated as being the best among the samples tested. Therefore, for traditional kwa-pyun manufacture manufacture mungbean starch might be replaced with a blend of potato and corn starch which is less expensive and easily available in the market nowadays.

The Effects of Fig Fermented Product Supplementation on Animal Performance, Serum Profile and Meat Quality in Hanwoo Bulls (무화과 발효물의 급여가 한우의 생산성, 혈액성상 및 육질에 미치는 영향)

  • We investigated the effect of fig fermented product(FFP) supplementation on growth performance, serum profile, carcass performance, meat performance and meat quality in 10 bulls of Korean cattle. Concentrates diet was supplemented with substrate fermented from fig fruit and leaves at 10% of the diet. The feed intake of FFP were slightly higher than the control, but the final weight showed no sifnificant difference between the two. Daily weight gain and feed intake were increased in FFP. The serum profile had no significant difference in the treatment. In carcass performance, the meat quantity grade of the treatment had no significant difference, but in meat quality grade the marbling score of FFP was significantly(P<0.05) increased therefore it showed a positive effect on meat quality grade. Also there was no significant(P<0.05) difference of meat cut performance in the treatment. Due to the proximate characteristics of longissimuss muscles the crude fat content of the FFP was significantly(P<0.05) increased. There was no significant difference(P<0.05) in physical characteristics ; pH level, meat color and heat loss of the treatment, but the shear force value and the cholesterol content of FFP significantly(P<0.05) decreased. Crude fat was increased(P<0.05) and cooking loss, shear force and cholesterol concentration were decreased. In fatty acids composition of the FFP, the linoleic acid from the longissimus increased significantly(P<0.05). In subcutaneous fat of longissimus of the FFP, C16:0(palmitic acid) significantly(P<0.05) decreased, but C18:1 significantly (P<0.05) increased. Therefore in FFP, the concentration of saturated fatty acid significantly decreased (P<0.05), but on the other hand the concentration of unsaturated fatty acids significantly (P<0.05) increased. In sensory evaluation of the FFP, the evaluation of odor increased slightly in a positive manner, also the appearance and the taste increased significantly(P<0.05). In conclusion when annexing additional fig fermented product to Hanwoo bulls, the carcass grade improves and the livestock production increases. Also the shear force, lower cholesterol, improved appearance and taste will open the doors to high quality meat production.

  • 무화과의 성숙정도에 따른 항균활성을 검색하고자 메탄올과 용매계통분획물에 대하여 8종의 식중독균(Listeria monocytogenes, Staphylococcus aureus, Escherichia coli O157:H7, Yersinia enterocolitica, Salmonella enteritidis, Vibrio parahaemolyticus, Salmonella typhimurium, Escherichia coli)에 대한 성장억제 효과를 검색하였다. 미숙, I, II기 및 성숙 무화과의 메탄올추출물은 10mg/mLshd도에서 L. monocytogenes, V. parahaemolyticus, E. coli O157:H7과 E. coli에 대해 강한 저해활성을 나타내었다. Effect of Nutrient Solution Concentration on Growth, Yield and Fruit Quality of Fig Plant (Ficus carica L.) (배양액의 농도가 무화과(Ficus carica L.)의 생육, 수량 및 과실의 품질에 미치는 영향)

  • This experiment has investigated the effect of growth, yield and fruit quality of fig plant by different concentration of nutrient solution. Nutrient solution for pig plant were three concentrations of the balanced nutrient formula development by Japanese Horticultural Experiment Station. Plant height, number of leaves, stem diameter and number of fruit per plant were the best at 1/2 concentration. However, leaf length and leaf width did not show any difference in other treatment. Fruit length, fruit diameter and soluble solids did not differ from the different concentration of nutrient solutions. However, the fruit weight of fig plant was heavier by hydroponics than by soil culture in 2nd experiment. Early stage growth of fig plant was better at low concentration of nutrient solution and yield was better at high concentration. The result of this experiment will be utilized in the new application for fig plant hydroponics.

Insecticidal Potential of Methanol Extract and Its Fractions from Fig (Ficus carica L.) Leaves (무화과(Ficus carica L.) 잎의 메탄올 추출물과 그 분획물의 살충활성)

  • The present research was conducted to determine insecticidal activity of methanol extract and its fractions from the fig (Ficus carica L.) leaves grown under different cropping conditions, glasshouse, plastic house, and outdoor. Methanol extracts from fig loaves grown at outdoor showed higher insecticidal activity (80 to 89%) against Tetranychus urticae than those at plastic house or glass house. Especially ethylacetate and hexane fractions from methanol extracts of fig leaves grown at outdoor exhibited the highest insecticidal activity against Tetranychus urticae, showing 92% and 90% control, respectively. The results suggest that methanol extract and its fractions from outdoor-grown fig leaves had the potent insecticidal activity as a plant-based insect control mean.
