Comparison of Active Ingredients between Field Grown and In Vitro Cultured Rhizome of Korean Native Ginger (Zingiber officinale Roscoe) (조직배양생강과 한국재래종 생강의 유효성분 비교)

  • This study was carried out to compare and analyze the active ingredients of Korean native ginger and rhizome derived from in vitro shoot-tip culture of Korean native ginger. Proximate compositions, mineral nutrients, free sugars, fatty acids, volatile components, 6-gingerol, and 6-shogaol were analysed and evaluated. Korean native ginger was proved to have a little more contents than in vitro rhizome in proximate compositions (crude ash, crude lipid, crude protein, carbohydrate). Mineral nutrient contents (Cu, Fe, Mn, Zn) of in vitro rhizome were higher than those of Korean native ginger. Among the mineral nutrients, the quantity of K was the highest, followed by P, Mg, Na, and Ca. Free sugar contents (fructose, glucose, sucrose) of in vitro rhizome were higher than those of Korean native ginger. Fatty acids containing less than C14 was the major among the fatty acids in ginger. Citral ingredient of the unique aromatic compound of Korean native ginger was stronger than that of the rhizome derived from in vitro shoot-tip culture. Gingerol concentration was increased by shoot-tip culture.

Dechlorination/Solidification of LiCl Waste by Using a Synthetic Inorganic Composite with Different Compositions (합성무기복합체 조성변화에 따른 모의 LiCl 염폐기물의 탈염소화/고형화)

  • Waste salt generated from a pyro-processing for the recovery of uranium and transuranic elements has high volatility at vitrification temperature and low compatibility in conventional waste glasses. For this reason, KAERI (Korea Atomic Energy Research Institute) suggested a new method to de-chlorinate waste salt by using an inorganic composite named SAP ($SiO_2-Al_2O_3-P_2O_5$). In this study, the de-chlorination behavior of waste salt and the microstructure of consolidated form were examined by adding $B_2O_3$ and $Fe_2O_3$ to the original SAP composition. De-chlorination behavior of metal chloride waste was slightly changed with given compositions, compared with that of original SAP. In the consolidated forms, the phase separation between Si-rich phase and P-rich phase decreases with the amount of $Al_2O_3$ or $B_2O_3$ as a connecting agent between Si and P-rich phase. The results of PCT (Product Consistency Test) indicated that the leach-resistance of consolidated forms out of reference composition was lowered, even though the leach-resistance was higher than that of EA (Environmental Assessment) glass. From these results, it could be inferred that the change in the content of Al or B in U-SAP affected the microstructure and leach-resistance of consolidated form. Further studies related with correlation between composition and characteristics of wasteform are required for a better understanding.

Antioxidant Activity and Component Analysis of Populus Tomentiglandulosa Extract (현사시나무 추출물의 항산화활성과 성분분석)

  • Populus Tomentiglandulosa (PT) is known for pharmacological effects against ischemia-injury and immune activity. This study aimed to investigate the nutritional components, total phenol and flavonoid contents, antioxidant activities of PT extract. Among the mineral contents, the K content (907.5 mg/100 g) was the highest in the PT extract. Vitamins C (6.1 mg/100 g) and nicotinic acid (3.1 mg/100 g) were also found in high amounts. Fructose (2.2%) and glucose (1.6%) were found as free sugars in the PT extract. The total phenolic and flavonoid contents of PT extract were 115.4±0.85 mg GAE/g and 20.9±1.14 mg QE/g, respectively. Results of HPLC analysis of PT extract identified catechin (9.1±0.27 mg/g), caffeic acid (4.1±0.57 mg/g), p-coumaric acid (2.1±0.49 mg/g), chlorogenic acid (1.6±1.86 mg/g), and gallic acid (1.4±0.35 mg/g), respectively. These results suggest that the PT extract possesses high nutritional component and antioxidant properties, which can be used as functional bioresources.

Characteristics of Suspension Containing Single Cells from Watermelon and Muskmelon Treated with Cell Separating Enzymes (식물세포분리효소를 이용한 수박과 참외의 단세포 함유 반응물 특성)

  • Cell-separating enzymes were used to investigate enzymatic maceration of watermelon and muskmelon containing single cells. Watermelon and muskmelon were macerated with Macerozyme A and Sumyzyme MC for 30-120min. Changes in maceration properties such as yields, color, viscosity, total sugar, total pectin, total polyphenol, particle size distribution, minerals, and free amino acids of suspensions after enzymatic disintegration were investigated. Contents of biochemical components in the supernatant of suspensions increased with increasing treatment time. Suspensions containing single cells showed good thermal stability without affecting original qualities. Mineral content of single-cell suspension was higher than those of watermelon and muskmelon juices. Potassium contents of single-cell suspension and juice were 240.8 and 172.7 mg%, respectively. Results suggest single-cell suspensions of watermelon and muskmelon can he utilized as ingredients for new beverages.

Effects of Organic Acids on Mineral Contents and Composition of Fish Bone Extracts (유기산 첨가가 생선뼈 스프에 용출되는 무기질 함량에 미치는 영향)

  • 본 연구는 작은 생선은 뼈째로 먹을 수 있지만 큰 생선은 생선뼈를 거의 이용하지 못하여 생선의 맥에 포함되어 있는 무기질을 유효하게 이용할 목적으로 유기산을 첨가해서 생선뼈 스프를 만들었을 때, 유기산의 종류와 가열시간이 뼈로부터 용출되는 칼슘, 인 함량의 변화에 대하여 조사하였다. 생선뼈에 함유되어 있는 수분과 무기질 함량은 생선뼈의 종류에 따라 달랐고, 큰 생선의 맥일수록 수분 함량은 감소하는 경향이었다. 유기산을 첨가하여 12시간 가열했을 때 스프에 용출된 칼슘은 잿방어뼈에 구연산, 사과산을 첨가하였을 때가 $61.34\%$$60.50\%$로 가장 많았고, 인의 용출도 칼슘과 같은 경향이었다. 칼슘과 인의 용출량은 참치뼈에 $4\%$의 사과산을 첨가하여 12시간 가열했을 때에 573mg, 78mg으로 가장 높았다. 참치뼈 스프의 칼슘과 인의 비율은 대조군에서는 칼슘보다 인의 용출$(0.21\~0.35)$이 많았으나, 유기산을 첨가하였을 때는 칼슘의 용출$(0.98\~10.86)$이 많았다. 단백질과 총 유리아미노산의 용출은 대조군보다 유기산을 첨가하였을 때가 증가하였다.

백년초 유색미의 취반 특성

  • 손바닥 선인장 (Opuntia ficus-indica)은 백년초라고도 불리어지는 다년생 식물로 멕시코가 그 원산지이며, 우리나라에는 약 200년 전에 들어와 제주도 월령마을과 마라도 남쪽해변 산지에 자연상태로 착생되어 제주도 지방 기념물 제 35호로 지정되어 있다. 현재는 북제주군의 월평리를 중심으로 노지에서 재배되고 있으며, 열매는 서양배 모양을 하고 점질물과 함께 다량의 적색계 색소를 함유하고 있다. 열매는 공복에 갈아 마시면 변비치료, 이뇨효과, 장운동 활성화 및 식욕증진에 효과가 있으며, 당뇨, 고혈압, 천식에도 효능이 있다고 하여 민간요법으로 사용되어 왔다. 또한 라디칼 소거, tyrosinase 활성 억제, 항알레르기 활성, 항산화 및 항균활성, 스트레스 항위궤양 효과 등 다양한 기능성이 보고되고 있다. 색소성분은 함질소 anthocyanin의 일종인 betalaines로 적색의 betacyanines과 황색의 betaxanthines 로 구성되어 있으며 75~95%가 betacyanines에 속하는 것으로 알려져 있다. 지금까지 손바닥 선인장에 관한 연구로는 색소의 안정성, 품종별 아미노산 조성, 성분 특성, 추출물을 첨가한 면류의 품질 특성 등으로 상당히 단편적인 연구에 그치고 있다. 본 연구는 최근 식생활의 서구화로 쌀 위주의 식생활에 많은 변화를 가져와 쌀 소비량은 해마다 줄어들고 있는 반면 기능성을 가미한 쌀의 소비가 늘고 있음을 감안하여, 손바닥 선인장 물추출물로 코팅한 유색미의 취반특성을 조사하였다. 그 결과 유색미는 자청색을 띠었으나 그 취반은 연한 황색을 띠었다. 손바닥 선장의 유리아미노산은 $\alpha$-aminoadipic acid가 83.22 mg%, tyrosine이 75.61 mg%로 주 아미노산을 이루었다. 유색미 취반에는 백미 취반에는 검출되지 않는 $\alpha$-aminoadipic acid가 1.66 mg% 함유되었으며, 백미 취반에 비하여 arginine과 leucine은 2배, histidine과 Iysine은 각각 2.3배 및 4.2배, tyrosine은 3.4배가 함유되었다. 손바닥 선인장의 주요 무기질은 Ca, K및 Mg으로 전체 무기질 함량의 약 95%를 차지하였으며 이들 무기질의 함량은 유색미 취반이 백미취반에 비하여 10~45%가 높았다. 밥알의 견고성, 점착성 및 깨짐성은 유색미 취반에서 낮았으나 응집성은 높았다. 단맛은 유색미 취반과 백미 취반 간의 뚜렷한 차이가 없었으나 구수한 맛과 쫄깃한 맛은 유색미 취반에서 높았다. 취반의 종합적인 기호도 및 색상에 대한 기호도는 유의적인 차이가 없었다.

The Effect of Organic Acids on Mineral Extraction from Chicken Thigh Bone Stock (유기산 첨가가 닭뼈(대퇴골) 스톡(stock)에 용출되는 무기질량에 미치는 영향)

  • The focus of this study was the influence of organic acids such as acetic, citric and malic acid on the dissolution of calcium (Ca), magnesium (Mg), and phosphorus (P) on chicken thigh bone. As the concentration (0, 0.5, 1, 2, 4%) of acetic, citric, and malic acid increased, the resultant contents of calcium, magnesium, and phosphorus were higher than that of the control. When the boiling time (2, 4, 6, 8, 12 hours) was increased, dissolved amounts of several minerals from the chicken thigh bone increased. Calcium dissolved the most when chicken stock was boiled for 12 hours with 4% of malic acid added. In addition to minerals, amino acids and proteins were further extracted by adding organic acids. The soup stock which contains minerals such as calcium, can be obtained by boiling the chicken thigh bone for 12 hours with an organic acid.

GaN를 기반으로 하는 고분자 MDMO-PPV의 두께 변화와 온도에 따른 Photovoltaics의 효율 측정

  • 태양전지는 무기태양전지와 유기태양전지 등이 연구 되고 있는데 [1] 그 중 유기물질의 장점(높은 수율, solution phase processing, 저비용으로 전력 생산)과 무기재료의 장점(높은 전자 이동도, 넓은 흡수 범위, 우수한 환경 및 열 안정성)을 융합함으로써 장기적 구조안정성의 확보와 광전변환의 고 효율화를 동시에 달성하기 위한 유기무기 하이브리드 태양전지가 최근 큰 관심을 끌고 있다[2]. 본 연구에서는 hybrid photovoltaics에 유기물 MDMO-PPV와 전도성 고분자 PEDOT:PSS를 무기물 GaN 위에 spin coating 하여 두께에 다른 효율을 측정하였다. 유기물 MDMO-PPV는 p-형으로 클로로벤젠, 톨루엔과 같은 유기 용매에 잘 녹으며 HOMO 5.33eV, LUMO 2.97eV, energy band gap 2.4eV이며 99.5%의 순도 물질을 사용하였다. 또한 정공 수송층(hole transport layer, HTL)으로 PEDOT:PSS를 사용하였으며, HOMO 5.0eV, LUMO 3.6eV, energy band gap 1.4eV를 가지며 증류수나 에탄올과 같은 수용성 용매에 잘 녹는 특성을 가지고 있다. 무기물은 III-V 족 물질 n-GaN(002)을 사용하였고 valence band energy 1.9eV, conduction band energy 6.3eV, energy band gap 3.4eV, 높은 전자 이동도와 높은 포화 속도, 광전자 소자에 유리한 광 전기적 특성을 가지고 있다. 기판으로는 GaN와 격자 부정합도와 열팽창계수 부정합도가 큰 Sapphire (Al2O3) 이종 기판을 사용하였다. 전극으로 Au를 사용하였으며 E-beam증착하였다. Reflector로서 Al를 thermal evaporator로 증착하였다 [3]. 실험 과정은 두께에 따른 효율을 알아보기 위해 MDMO-PPV를 900~1,500 rpm으로 spin coating 하였고, 열처리에 따른 효율을 알아보기 위해 열처리 온도 조건을 $110{\sim}170^{\circ}C$의 변화를 주었다. FE-SEM으로 표면과 단면을 관찰하였으며 J-V 특성을 알아보기 위해 각 샘플마다 solar simulator를 사용하여 측정하였고 그 결과를 논의하였다.

Experimental Study on the Development of Electromagnetic Pulse Shielding Inorganic Paint Using Carbon Materials (탄소 재료를 사용한 전자파 차폐 무기계 도료 개발에 관한 실험적 연구)

  • The electromagnetic pulse(EMP) is a general term for high-output electromagnetic waves, and is classified into EMP generated from nuclear weapons, non-nuclear EMP, and EMP generated by natural phenomena. Electromagnetic pulses are means that can cause fatal damage to all electronic devices with electromagnetic elements, such as communication devices, mobile phones, computers, TVs, and means of transportation. In this study, the electromagnetic pulse(EMP) shielding effectiveness evaluation of paints according to the type and amount of carbon material was conducted to develop EMP shielding inorganic paint using carbon materials. In order to analyze the improvement of compatibility and dispersibility between materials, experiments were conducted two times with about 27 types of mixture proportions, and the electromagnetic pulse shielding effectiveness was evaluated by the electrical resistance measurement method. As a result of applying the EMP shielding paint developed through this study to shielding concrete, it was confirmed that the shielding performance was improved from about 25 dB to a maximum of 40 dB.

Nutrient Composition and Sensory Characteristics of Seokbakji Supplemented with Seafood (수산물을 첨가한 섞박지의 영양성분 분석 및 관능적 특성)

  • We investigated changes in the nutrient compositions of seokbakji supplemented with seafood during storage at $5^{\circ}C$ for 14 days. We added the seafood at a concentration of 10% (w/w) to salted radish and prepared seokbakji samples. Our results showed that the levels of moisture, crude lipids, crude ash, carbohydrates, and crude fibers did not differ markedly among the samples. However, the level of crude protein in seokbakji with added seafood was greater than that in control seokbakji. The highest level of Ca and P was determined in seokbakji supplemented with gizzard shad; the highest level of vitamin $B_2$ was determined in seokbakji supplemented with sandfish, and the highest vitamin C content was determined in seokbakji supplemented with small octopus. Glutamic acid showed the highest content in seokbakji with seafood; further, hydroxyproline was the most abundant free amino acid. The results of sensory evaluation showed higher scores in the overall acceptability of seokbakji with seafood than in control seokbakji.
