Quality Characteristics and the Optimization Recipes of Chocolate Added with Bokbunja (Rubus coreanus Miquel) (복분자를 첨가한 초콜릿의 최적 배합비)

  • The purpose of this study was to find the optimal mixing condition of Rubus coreanus extracts, Rubus coreanus powder, and Rubus coreanus flavor for preparation of the Bokbunja chocolate. The physico-chemical characteristics of the Bokbunja chocolate were analyzed and evaluated. The sugar concentration of the Bokbunja chocolate had a tendency to increase as the addition of Rubus coreanus extracts decreased, but there was no significant differences. The hardness was increased with the decreasing Rubus coreanus extracts and increasing Rubus coreanus powder. The L (lightness) value increased with increasing Rubus coreanus extracts and decreasing Rubus coreanus powder, whereas a (redness) and b (yellowness) values increased by Rubus coreanus powder addition. The optimum mixing condition for the Bokbunja chocolate was decided by sensory evaluation. According to the results of sensory flavor, color, sweetness, texture and overall acceptability, the Bokbunja chocolate which was added Rubus coreanus extracts 30 g, Rubus coreanus powder 5 g, Rubus coreanus flavor 0.3 g obtained the best score overall.

Sensory Characteristics of Korean Wheat Noodles With Pine pollen and Antioxidant activities of Pine pollen Extracts (송화를 첨가한 우리밀 국수의 관능특성 및 송화추출물의 항산화성)

  • Sensory characteristics and antimicrobial activity of Korean wheat noodle with pine pollen powder and antioxidant activity of pine pollen extracts were investigated to develop the health promoting product. Pine pollen powder was extracted with water and 70% ethanol and extracts were tested electron donating ability (EDA) and nitrite scavenging ability (NSA). Sensory characteristics were evaluated by its color, flavor, moisture, softness, texture and taste. Microbiological quality was tested by total viable cells. EDA was highest in 1,000 ppm for both water extract (67% of EDA) and ethanol extract (74% of EDA). NSA was highest in pH 1.2 for both water extract(46% of NSA) and ethanol extract (48% of NSA). Antimicrobial activity of Korean wheat noodle with 3% pine pollen powder were 0.5 log $cycle{\sim}1$ log cycle lower than that of control at 5days of storage in total vival cells and at 4days of storage in total fungus. From sensory evaluation, Korean wheat noodle with 3% pine pollen powder had significantly higher of all scores.

Effect of Tumbling Time on Quality Characteristics of Ham From Retail Cuts of Hind Leg (텀블링 시간이 돈육 뒷다리 소분할부위로 제조된 햄 품질에 미치는 영향)

  • The effect of tumbling time(0, 1, and 2hr) on quality characteristics of cured-smoked pork retail cuts (Bolgi, Seolgit, Boseop, Dogani, Satae) of hind leg was investigated. Quality analyses indicated the retail cuts of pork hind leg are variable except for proximate composition. The Satae ham had the lowest (P<0.05) lightness (L) and highest redness (a). The Bolgi and Seolgit ham had higher hardness than the other hams. Tumbling time(0, 1, and 2hr) had no significant(P>0.05) effect on proximate composition, pH, color, texture properties, and sensory properties of ham. However tumbling decreased cooking loss for Satae ham tumbled for 2hr(P<0.05). Tumbling time was required for more than 2hr to improve quality and obtain maximum yield of retail cut hams. Further study is necessary to improve quality and obtain maximum yield of pork retail cuts of hind leg.

냉동 생지로 제조한 식빵에서 첨가제에 따른 냉동변성 억제 효과

  • 다품종 소량 생산에 적합하고 소비자들에게 신선한 제품을 제공할 수 있을 뿐 아니라 노동력을 절감할 수 있는 등 여러 가지 이점으로 인해 냉동 반죽의 사용이 증가되고 있다. 하지만 냉동 중에 효모와 글루텐이 손상되어 냉동 반죽으로 제조한 빵은 부피가 작고 노화가 빠르게 진행되는 단점을 보인다. 따라서 이러한 단점을 보완하기 위한 다양한 방법이 요구되며 그 중 하나로 보수성과 빙결정 생성 억제능력을 가지는 다당류와 단백질을 첨가하여 그 효과를 살펴보고자 한다. 사용된 첨가물은 다당류로 carrageenan(C)과 sodium alginate(A), 단백질로 whey(W)와 casein(C)이었는데 다당류와 단백질을 각각 1:1로 혼합해서 첨가하였다. 정해진 배합비 대로 반죽을 하고 급속 동결시킨 후 일주일 동안 저장하면서 5차례 냉동-해동을 반복한 반죽을 시료로 사용하였다. 냉동 반죽을 해동시킨 후 발효정도를 측정하기 위해 발효팽창력을 측정하였다. 냉동 반죽으로 식빵을 제조하고 빵의 비용적, 색도를 측정하였고 관능적 특성으로 crumb부분의 색, 대칭성, 균일성, crust의 색, 터짐성을 측정하고 맛, 향, 조직감, 전반적 기호도를 측정하여 냉동 반죽의 제빵 특성을 조사하였다. 또한 3일간 냉장저장하면서 texture와 수분함량을 측정하여 시료에 따른 노화도를 측정하였다. 냉동생지의 발효팽창력에서 WK 첨가구가 23.5, WA 첨가구가 24.75로 CK, CA 첨가구에 비해 3∼4정도 큰 값을 보였으며, 모든 첨가구가 대조구 18.5보다 큰 발효력을 보였다. 식빵의 비용적은 WK 첨가구 3.539, WA 첨가구 3.506, CA 첨가구 3.377, CK 첨가구 3.247, 대조구 3.064 순으로 큰 값을 보였는데 비용적은 발효력과 정의 관계를 보임을 알 수 있었다. 제조당일과 냉장고에 3일간 저장한 빵의 수분함량, 경도를 비교해 보면 수분함량 의 경우, 대조구가 43.63%에서 42.31%로 1.32% 줄어 가장 큰 감소율을 보였으면 CK 첨가구가 45.12% 에서 44.30%로 0.815% 줄어 가장 작은 감소율을 보였다. 그 외 첨가구의 경우 변화율은 1.26∼l.3%로 유의적인 차이를 보이지 않았다. 대체적으로 수분함량의 감소가 대조구보다 첨가구에서 작은 것은 첨가제의 보수성에 기인하는 것으로 사료된다. 경도의 경우, CK 첨가구가 0.244kg에서 0.558kg로 0.334 kg증가하였으며 대조구는 0.212kg에서 0.530kg으로 0.318kg증가하여 다른 첨가구에 비해 높은 경도를 나타내었다. CK 첨가구의 경우, 저장 중 수분함량의 감소율이 가장 작은 것과 달리 경도에 있어서 가장 큰 값과 증가 경향을 나타냈는데 이는 CK 첨가구의 빵이 다른 첨가구의 빵의 비용적보다 작은 것과 관련이 있다고 판단된다. 빵 내부의 색도를 측정했을 때 명도 L값은 CA 첨가구가 76.162로 가장 컸고 WA 첨가구가 12.822로 가장 작은 값을 나타냈으며 다른 첨가구와 대조구의 L값은 73∼74의 범위로 유의적인 차이가 없었다. 적색도 a값과 황색도 b값에서 모든 첨가구가 대조구에 비해 낮은 값을 보였다. 색도의 결과와 관능적 특성 중 내부 색의 선호도를 비교해 보면 큰 차이는 없지만 대조구보다 높은 명도값과 낮은 적·황색도값을 가지는 첨가구의 선호도가조금 높음이 확인되었다. 그 외 관능적 특성들에서도 대조구와 첨가구의 빵의 선호도 차이는 크게 군별되지 않았다. 결론적으로 실험에 사용된 첨가제는 냉동변성을 억제시켜 반죽의 발효력과 빵의 비용적을 높이고 또한 노화도를 늦추는등 냉동반죽의 제빵성을 높이는데 기여할 수 있을 것으로 생각된다.

집중탐구 - 냉동과 해동 방식에 따른 오리고기의 이화학적 성상 조사

  • 본 시험은 냉동 및 해동 방식에 따른 토종오리 고기의 이화학적 특성을 조사하기 위해 수행하였다. 처리구는 8주령 오리육을 대조구(Control)로 하고 처리구는 냉동방식 2가지(급냉, $-50^{\circ}C$; 완냉, $-20^{\circ}C$)과 해동방식 2가지(완해동, $4^{\circ}C$ 냉장해동; 급해동, $13^{\circ}C$ 유수해동;의 $2{\times}2$ 복합요인으로 하여 총 5처리구, 처리구당 3반복, 반복당 3점(2수/점)으로 나누었다. 공시재료는 각 처리구에서 발생된 8주령 토종오리 수컷을 처리구당 18수씩 선별하여 도압하고 1개월간 저장 후 분석에 이용하였다. 명도는 완냉시키거나 완해동할 때에 대조구와 유의적인 차이가 있었으나(P<0.05), 적색도와 황색도는 처리구간 유의차가 없었다. 가열감량과 보수력은 급냉시키거나 급해동시킬 때 대조구에 비해 유의적으로 높게 나타났으나(P<0.05), 전단력은 대조구에 비해 낮게 나타났다(P<0.05). 가열감량, 전단력, 보수력은 냉동 처리구 사이에서는 유의적인 차이를 보이지 않았으나, 가열감량은 급해동과 완해동 사이에 유의차가 나타났다(P<0.05). 수분, 지방, 단백질, 조회분의 함량은 냉동 처리구와 대조구 사이에서 유의차가 없었으나, 수분함량은 급해동 처리구에서 완해동 처리구에 비해 유의적으로 높게 나타났으며(P<0.05), 단백질 함량은 완해동 처리구에서 대조구에 비해 높게 나타났으나(P<0.05) 해동 처리구간에는 유의적인 차이가 없었다. 지방과 단백질 함량은 해동 처리구 사이에서 유의적인 차이를 보이지 않았다. 결론적으로, 본 시험에서는 냉동과 해동 방식에 따른 오리고기의 특징을 보여주고 있으며, 이런 결과들은 토종오리 산업과 오리육 생산 산업에 큰 도움이 될 것이라 사료된다.

Effect of roasting conditions on aromatic compounds and physicochemical characteristics of germinated aromatic rice (Oryza sativa L.-Miryang 302) tea (볶음 공정에 따른 발아 향미차의 향기성분 및 이화학적 특성)

  • This study was performed to verify the possibility of manufacturing a germinated aromatic rice tea, which was roasted at 200, 250, and $300^{\circ}C$ each for 10, 20, and 30 min. The roasted aromatic rice was analysed physicochemical properties, sensory characteristics and aromatic compounds. The total polyphenol content and DPPH radical scavenging activities of the germinated aromatic rice increased as the roasting temperature and time increased. Total soluble solid contents, turbidity and browning index of the germinated aromatic rice tea also increased was the roasting temperature and roasting time increased. The pH did not change by roasting. The main aromatic components in roasted germinated aromatic rice tea were 2-methyl butanal, 3-methyl butanal, benzaldehyde and nonanal, which increased according to increasing temperature and time. However, those favorable aroma components were decreased at more than $300^{\circ}C$ of roasting temperature. In addition, methyl benzene, pentanol were increased which affect odor aroma. The sensory score of germinated aromatic rice tea also increased with high roasting temperature and time. However, aromatic rice roasted at a higher temperature ($300^{\circ}C$) showed lower sensory score. Therefore roasting temperature and time must be controlled for manufactureing high quality of germinated aromatic rice tea, and the optimun roasting conditions were $250^{\circ}C$ and 30 min, which provide best physicochemical characteristics of aromatic rice tea.

Change in amygdalin contents of maesil (Prunus mume) wine according to preparation steps and its characteristics (매실 와인의 제조공정에 따른 아미그달린(amygdalin) 함량의 변화와 품질 특성)

  • The purpose of this study was to compare the amygdalin content, alcohol content, pH, titratable acidity, and color of maesil wine prepared with two different manufacturing processes. Maesil wine was made from maesil chung, and maesil was preserved (MW1) or removed (MW2) before fermentation. During aging, amygdalin content in all the wines was gradually reduced, and the content of MW2 was less than that of the other. The alcohol content, pH, and titratable acidity ranged from around 9.87-10.94, 3.57-3.80, and 8.89-10.68%, respectively. The difference between the samples was not significant. For color, MW1 had lower L and higher a and b values than MW2. In this study, the difference in physicochemical properties according to the presence of maesil was not significant, indicating no degradation of the quality according to the manufacturing processes. However, the MW2 showed a reduction in amygdalin contents.

Quality characteristics of frozen cookie dough using rice flour of super yield Korean rice varieties (초다수성 쌀가루를 이용한 쿠키용 냉동반죽의 품질 특성)

  • The highly producible rice cultivars, hanareum and dasan 2, were prepared and investigated for their physicochemical properties, and the quality characteristics of frozen cookie dough with rice flour according to the thawing time were measured. The water, ash, crude protein, amylose, and damaged starch contents of rice flour, as well as its water holding capacity, particle size, and Hunter color value, were measured. The water, ash, and crude protein contents of the hanareum and dasan 2 rice flours were shown to range from 7.28 to 13.14%, from 0.35 to 0.39, and from 6.05 and 8.68%, respectively. The protein content of the control group was higher than that of hanareum and dasan 2 rice flours. The amylose contents of the hanareum and dasan 2 rice flour were 19.05 and 23.04%, respectively. The damaged starch content and water holding capacity of the control group were lower than those of the hanareum and dasan 2 rice flours. The particle sizes of the samples were $48.54{\sim}50.05{\mu}m$. The lightness values of the hanareum, and dasan 2 rice flour, and of the control were 93.72, 93.51 and 92.63, respectively. The quality characteristics of the gluten-free frozen cookie dough were investigated. The lightness of the cookie made with frozen cookie dough decreased according to the by thawing time, but the diameter of the cookie did not differ significantly. The hardness of the cookie made with rice frozen dasan 2 rice dough was lower than that of the cookie made with frozen hanareum rice dough.

Effect of Maturity Scores and Number of Extractions on the Chemical Properties of Water Extract from Hanwoo Shank Bones (한우 성숙도와 추출횟수가 사골용출액의 화학적 특성에 미치는 영향)

  • This study was conducted to investigate the effect of maturity scores [2 (bull), 2 (steer), 3-9 (cow)] and the number of extractions (up to 4 times) on the chemical properties of water extract from Hanwoo shank bones (arm, fore shank, round and hind shank). The turbidity, meat color (CIE L value), collagen, protein, caloric and chondroitin sulfate contents of samples were observed. The turbidity and lightness were higher for water extract of Hanwoo shank bones with a maturity score of 2 (bull and steer) than maturity scores of 3-9 (cow) (p<0.05). The turbidity and lightness of water extract from shank bones of all Hanwoo maturity scores significantly increased with the 1st and 2nd extractions, but significantly decreased with 3rd and 4th extractions (p<0.05). The collagen and protein contents were highest for water extract from Hanwoo shank bones of maturity score 2 (bull and steer) (p<0.05). The caloric and chondroitin sulfate contents were higher for water extract from Hanwoo shank bones of maturity score 2 (bull and steer) than maturity scores of 3-9 (cow) (p<0.05). As the number of extractions increased, the chondroitin sulfate content significantly decreased (p<0.05). Based on these results, differences correlating with maturity scores were found only with collagen and protein contents. Therefore, further studies should be considered to address whether different maturity scores affect the price of shank bones in the meat industry.

포장재료에 따른 검은비늘버섯의 선도유지효과

  • 충청북도 청원군 농가에서 재배한 검은비늘버섯((CBPM-6호)의 저장온도(1, 3, 6$^{\circ}C$) 및 포장 재료 (Wrap, PE, PP, AF)에 따른 선도유지 효과를 알아보기 위하여 중량감모율, 색도, 경도 및 신선도를 측정하였다. 그 결과, 저장온도와 포장재에 따른 선도유지효과에 대한 유의성 검정을 실시한 결과 고도의 유의차가 인정되었다(P<0.01). 중량감모율은 저장 18일 후 1$^{\circ}C$에서, AF필름은 1.08%, 랩포장에서는 3.17%를 나타내었고 6$^{\circ}C$에서는 AF 필름은 1.43%, 랩포장에서는 21.94%를 나타내었다. 포장재별 저장기간 중 색도는 저장기간이 연장될수록 명도와 황색도는 약간 증가하는 반면 랩 포장에서는 감소하는 경향을 나타내었다. 버섯 저장 전 색깔은 랩포장에서는 3일, PE, PP, AF포장에서는 18일까지 유지되는 것으로 나타났다. 경도는 저장온도가 높을수록 감소하는 경향을 나타내었으며 1$^{\circ}C$에서 AF 밀봉 저장시 경도의 변화가 가장 적은 것으로 나타났다. 저장중 신선도는 1$^{\circ}C$ 저장시 신선도 8을 기준으로 랩포장은 3일, PE 밀봉은 6일, PP 밀봉은 9일, AF 밀봉으로 15일간 상품성을 유지할 수 있었다.
