Studies on the Processings of Sterilized Salt-Fermented Anchovy Sauces (멸치액젓의 레토르트 식품화에 관한 연구)

  • The salt-fermented anchovy sauce (AS) was packed in round No. 307-1 can, and thermally processed at $121.1^{\circ}C$ to obtain Fo values of 3, 5 and 10. The changes of food components and qualifies by thermal processing of sterilized AS (RAS) were examined. The compositions of AS were as followed; pH 6.81, VBN 394.7 mg/100g, total nitrogen 2,195.5 mg%, amino-nitrogen 1,010.5 mg%, and acidity 10.5 ml. Viable cell counts of AS on 0%, 5%, 20% NaCl-medium were $2.9{\times}10^3,\;9.1{\times}10^3$ and not detected, respectively. And viable cell counts of RAS were not detected. Acidity, total nitrogen and amino nitrogen contents of AS decreased slightly with the severeness of heat treatments, whereas pH and VBN content were increased. Total free amino acid contents of raw AS and RAS were 12,802.5 mg% and $11,212.6{\sim}12,105.4\;mg%$, and major amino acids were alanine, glutamic acid, leucine, isoleucine, valine and lysine. Also contents of IMP, hypoxanthine, TMAO and TMA in AS and RAS were 42.1 mg% and $35.5{\sim}40.9\;mg%$, 103.7 mg% and $103.1{\sim}105.5\;mg%$, 78.8 mg% and $58.2{\sim}71.6\;mg%$, 55.8 mg% and $58.9{\sim}68.5\;mg%$ respectively. And a little changes were observed in whole volatile components of AS with severeness of heat treatments by GC chromatogram patterns. Judging from the chemical and sensory evaluations, the Fo 3 heat treatment sample was not inferior to raw AS, and maintained good quality for 1 year storage.

  • This study was aimed to evaluate the effectiveness of hydrophilic, lipophilic antioxidants and emulsifiers by HLB (hydrophilic lipophilic balance) in different oil systems. Lipophilic antioxidant (${\delta}-tocopherol$), hydrophilic antioxidant (gallic acid) and emulsifier(lecithin, tween 20, span 60) were evaluated in relation to oil stability in bulk oil system (soybean oil) and emulsified with Tween 80 at $60^{\circ}C$. In the storage test ($60^{\circ}C$), gallic acid was more effective on the stability of oil oxidation than ${\delta}-tocopherol$ in bulk and emulsion system. Lecithin as a hydrophilic emulsifier was more effective than tween 20 on the stability of oil oxidation in bulk and emulsion system. Also span 60, a lipophilic emulsifier, was more effective than tween 20, a hydrophilic emulsifier, in bulk and emulsion systems.

Physicochemical Property and Antioxidative Activity of Hot-Water Extracts from Enzyme Hydrolysate of Astragalus membranaceus (황기 효소분해물 열수추출액의 이화학적 특성 및 항산화 활성)

  • To enhance the yield and bioactivity of hot-water extract from herbal medicine, Astragalus membranaceus was hydrolyzed with carbohydrases, such as ClariSEB and Fungamyl. After hot-water extracts were prepared from each hydrolysate (HW-C/F), physicochemical property, antioxidant activity and sensory property were evaluated. The solid content ($^{\circ}Brix$) of HW-C/F was higher than hot-water extract from A. membranaceus no treated enzyme (control). Although pH of HW-C/F was lower than that of the control, the acidity was higher. Lightness of Hunter's color values was increased in HW-C/F whereas redness and yellowness were decreased. The contents of reducing sugar, flavonoid and polyphenol of HW-C/F were higher than the control but the content of ascorbic acid was not different from control. The inhibitory activity of HW-C/F against lipid peroxidation was slightly higher than control, but DPPH radical scavenging, ABTS reducing, metal chelating activities were significantly increased by HW-C/F. The sensory evaluation also revealed that the sensory panelists preferred HW-C/F to that of control. Therefore, hydrolysis by carbohydrases for preparation of hot-water extract from A. membranaceus is one of the good methods to improve antioxidative activity and sensory property of hot-water extract.

A Study on the Improvement of Water Environment in Retention Pond by Seawater Flocculation and Fenton Oxidation (해수 응집과 펜턴 산화에 의한 유수지 수환경 개선에 관한 연구)

  • This study was performed to figure out what would be effective to improve water environment in a retention pond which was located in Incheon. Chemical coagulation, seawater flocculation and Fenton treatment were carried out to improve water and sediment quality for the retention pond. Experimental results showed that pH of 11 was optimum pH for seawater flocculation and the high removal rates in terms of SS and T-P can be obtained by seawater flocculation. To eliminate the pollutants from the sediments we applied Fenton oxidation process. We compared whether direct oxidizing the sediments would be more effective than oxidizing them after elution. By Fenton oxidation only, the COD removal rate was 0.55 grams per one $H_2O_2$ gram. Whereas the removed COD grams per one $H_2O_2$ gram were 0.69 by Fenton oxidation after elution. It showed that the oxidizing after elution was about 25% more effective than the oxidizing without elution. Both treatments could improve the water quality of a retention pond from a level 6(very bad) to a level 3(normal) of Lake Water Quality Standard.

Stability Assessment on Materials of Cultural Property by Fumigants Containing Ethylene Oxide (Ethylene oxide계 훈증 약제에 의한 문화재 재질의 안정성 연구)

  • This study was conducted focusing on the stability on materials of cultural property when the fumigant containing ethylene oxide was applied among some kinds of fumigant. Four kinds of specimens from paper, textile, metal and pigment were prepared to compare color difference, weight, surface condition before and after treatment and FT-IR analysis was carried out on specimens of paper and textile. In the case of fumigation treatment, it was conducted by two groups : one is made up of specimens with the non-fumigation as control groups, the other is made up of specimens treated with ethylene oxide + $HFC_{134a}$ and ethylene oxide + $CO_2$ as experimental groups. The result of color difference showed that there were color differences on the specimens of Hanji(Korean traditional paper), silver, cotton, ramie and yellow pigment. Especially, it was found out there was color change more than 6.0 on average from the silver specimen. However, in the silver specimen's case, color change in the non-fumigated specimen was relatively higher than those of fumigant-treated specimens, therefore, it is judged that fumigant doesn't have a decisive effect on color change in specimens, but required caution while fumigating. The result of weight measurement, there were totally 0~2% weight changes and the slightest change was found in the metal specimen, the biggest change in the papers. The result of microscopic observation on the surface of specimens showed color changes and especially, the biggest change on the silver specimen was observed. But no change in components was identified from FT-IR analysis of papers and textiles.

Effect of Etching Treatment of SAPO-34 Catalyst on Dimethyl Ether to Olefins Reaction (DTO 반응에 미치는 SAPO-34 촉매의 식각 처리 효과)

  • Effects of the etching treatment of SAPO-34 catalyst were investigated to improve the catalytic lifetime in DTO reaction. The aqueous NH3 solution was a more appropriate treatment agent which could control the degree of etching progress, compared to that of using a strong acid (HCl) or alkali (NaOH) solution. Therefore, the effect on characteristics and lifetime of SAPO-34 catalyst was observed using the treatment concentration and time of aqueous NH3 solution as variables. As the treatment concentration or time of aqueous NH3 solution increased, the growth of erosion was proceeded from the center of SAPO-34 crystal plane, and the acid site concentration and strength gradually decreased. Meanwhile, it was found that external surface area and mesopore volume of SAPO-34 catalyst increased at appropriate treatment conditions. When the treatment concentration and time were 0.05 M and 3 h, respectively, the lifetime of the treated SAPO-34 catalyst was the longest, and was significantly enhanced by ca. 36% (based on DME conversion of > 90%) compared to that of using the untreated catalyst. The model for the etching progress of SAPO-34 catalyst in a mild treatment process using aqueous NH3 solution was also proposed.

  • Marine deposite soil was studied to evaluate morohological changes of paddy rice under subdrainage control. The content of organic and inorganic mate rial were low at high temperature in the mid-summer. This soil lacked air and accumulated more H$_2$ S. Thus rice root was rotted with high infection of virus and insect and yield was relatively low.

Chemical Control of the Pine Gall Midges (Thecodiplosis japonensis Uchida et Inouye) ( I ) -Low-volume Foliar Spray of the Insecticides- (솔잎혹파리의 약제방제에 관한 연구 -고농도미량엽면살포-)

  • The experiments were carried out to evaluate the effectiveness of some insecticides in the control of the pine gall midges (Thecodiplosis japonensis Uchida et Inouye) when the low-volume of the insecticides were applied by the mist foliar sprayer. The insecticides, Salithion $(24\%\;Ec)$, Omethoate $(Folimat^{(R)}\;50\%\;Ec)$, Monocrotopos $(Azodrin^{(R)}24\%\;Ec)$, Acephate $(Ortran^{(R)}\;50\%\;Wp)$, Metalkamate $(Bux^{(R)}24\%\;Ec)$. BPMC $(Bassae^{(R)}50\%\;Ec)$ and MIPC $(Mipcin\;50\%\;Wp)$ were tested with 100, 200 and 400 times of water solution on the basis of single application at the six different intervals. Salithion was the most effective for the pressure of the gall formation by the pine gall midges and Omethoate, Monocrotophos and Metalkamate were relativey effective and others no effective. The most reliable concentration of the insecticides was 100 times of water solution, and the feasible timing of insecticide application on the basis of single application would be from May 9 to July 1 with Salithion, June 6 with Metalkamate and June 20 with Omethoate and Monocrotophos. The number of pine needles with the larval injured signs (no larvae in the needles) excluded the gall-formed needles were relatively higher in the treatments of Omethoate, Salithion and Monocrotophos than other insecticides. The treatments of Omethoate, Salithion and Monocrotophos caused the lower larval population in the gall than other insecticides.

A Role of Indole-3-acetic Acid on the Growth and the Accumulation of Tannin in Callus Induced from Gallas of the Sumac (붉나무충영의 배양조직에서 생육 및 tannin 축적에 미치는 indole-3-acetic acid의 역할)

  • These studies were carried out to examine the developmental process of galls caused by aphids in Rhus gavanica and the effects of indole-3-acetic acid (IAA) and ${\alpha}$-naphthalene acetic acid (NAA) on the tannin accumulation in the callus induced from that galls. The results are follows. The development of fist-shaped galls has begun at the beginning of June earlier than the case of finger-shaped galls, and also, the growth of fist-shaped galls has last to September longer than the period of finger-shaped galls. These results indicate that the life cycle and feeding activity of the aphids inhabited in fist-shaped galls were longer and mire active than the case of the aphids inhabited in finger-shaped galls. Tannin contents of fist-shaped galls revealed about 60${\sim}70%$ of total dry weights during the whole growth periods, however, the contents in finger-shaped galls were under 10% at the maximum value. These facts mean that finger-shaped galls seem to be as a habitat of aphids rather than as a major source of tannin such as fist-shaped galls. The growth of callus induced from fist-shaped galls was the most effective in the plot of $10^{-5}$ mole IAA, but the tannin accumulation in callus growth was not even caused in any plots of IAA treatments as wells as in any NAA plots. These results considered that the tannin accumulation in fist-shaped galls may be caused only in specific relation between host plant and life cycle of aphids.

Effect of Stuffing of TiN on the Diffusion Barrier Property (II) : Cu/TiN/Si Structure (TiN의 충진처리가 확산방지막 특성에 미치는 영향(II) : Cu/TiN/Si 구조)

  • The diffusion barrier property of 100-nm-thick titanium nitride (TiN) film between Cu and Si was investigated using sheet resistance measurements, etch-pit observation, x-ray diffractometry, Auger electron spectroscopy, and transmission electron microscopy. The TiN barrier fails due to the formation of crystalline defects (dislocations) and precipitates (presumably Cu-silicides) in the Si substrate which result from the predominant in-diffusion of Cu through the TiN layer. In contrast with the case of Al, it is identified that the TiN barrier fails only the in-diffusion of Cu because there is no indication of Si pits in the Si substrate. In addition, it appears that the stuffing of TiN does not improve the diffusion barrier property in the Cu/TiN/Si structure. This indicates that in the case of Al, the chemical effect that impedes the diffusion of Al by the reaction of Al with $TiO_{2}$ which is present in the grain boundaries of TIN is very improtant. On the while, in the case of Cu, there is no chemical effect because Cu oxides, such as $Cu_{2}O$ or CuO, is thermodynamically unstable in comparison with $TiO_{2}$. For this reason, it is considered that the effect of stuffing of TiN on the diffusion barrier property is not significant in the Cu/ TiN/Si structure.
