건조과일 더욱 맛나게 쓰려면

  • 단단하게 마른 상태의 건조과일을 반죽에 넣으면 반죽의 수분을 흡수해 빵이 딱딱해질 수 있다. 뿐만 아니라 전처리 과정에서 설탕이 지나치게 많이 들어가면 고객은 과일의 맛과 향보다 단맛을 먼저 느끼게 된다. 이처럼 건조과일의 특성에 맞게 전처리를 하고 궁합이 맞는 리큐르를 배합해 과일 본래의 맛을 끌어올리는 것이 전처리의 관건이다.

The Analysis of Cordycepin and Alcohol Content in accordance with The Various Manufacturing Process of The Liqueur Containing The Cordyceps Extract (동충하초 추출물을 함유한 리큐르의 제조공정에 따른 Cordycepin 및 Alcohol 함량 분석)

  • We manufactured a liqueur containing Cordyceps extract. 21 kinds of the liqueur were manufactured and analyzed the cordycepin content, cordycepin stability and alcohol content. Cordycepin content was detected up to $58{\mu}g/mL$ in DL-3(adding Cordyceps militaris and leached for 3 months). Results of Alcohol content analysis, Methanol was not detected in all samples. Ethanol contents showed at 31.4% from the Leaching process for 3 months after distillation, and at 17.2% from the rice wine adding Cordyceps militaris 8 g. In the results of the Cordycepin content stability analysis, the Cordycepin content decreased during storage period little by little, so our considered opinion is that the cordycepin content should be increased slightly when producing as products.

Optimum Extraction Condition of Peach Liqueur Containing Chitosan (키토산을 첨가한 복숭아 리큐르의 침출조건 최적화)

  • This study was performed for obtaining optimal extraction conditions to produce peach liqueur containing chitosan. Alcohol content of unsliced fruits was the largest recording 30% after extracting for 8 weeks and those of fruits sliced into four pieces were high recording around 28% after extracting for $6{\sim}8$ weeks. Sugar content was $11{\sim}13^{\circ}Brix$, total acidity was around 0.2% and pH was about 4.8. While soluble solids content was around 2.8% in unsliced fruits with a little change of the content, those of fruits sliced into four pieces were ranged from 2.8% to 3.1% and showing a tendency that longer extraction time increased the content. Brownness of unsliced fruits and fruits sliced into four pieces were $0.33{\sim}0.54$ and $0.56{\sim}0.73$ respectively. Total phenol content showed a similar tendency with brownness and the total phenol content of sliced fruits was higher than that of unsliced fruits by only around 0.2 mg%. When peach liqueur was made by extracting unsliced fruits massively by following conditions set above, methanol content grew with longer extraction time but the difference was not significant and the content was detected to be extremely small recording about 50 ppb. Among organic acids, oxalic, malic and citric acids were found, and fructose, glucose, sucrose and maltose were detected as free sugars. In conclusion, extracting unsliced fruits for 8 weeks as extraction conditions showed an excellent quality in overall for peach liqueur containing chitosan.

Establishment of Optimum Extraction Condition for the Manufacture of Kiwi Liqueur (참다래 리큐르 제조를 위한 침출조건 설정)

  • Optimum extraction conditions were investigated for the manufacture of Kiwi liqueur. Eight-weeks of storage was found to be the optimal extraction time for unsliced fruit, but 4 week of storage was found to be optimal extinction time when the fruit was sliced into 4 pieces. There were no changes in the brix, pH and total acidity during extraction. However 24.92 ppm of methanol and acetaldehyde was detected after extracting the liqueur after 8 week extraction time when the fruit was sliced into 4 pieces. The sensory evaluation showed the highest over all acceptability. The Kiwi liqueur was contained 48.90 mg% of total phenolic compounds, 16.7 mg% of vitamin C, 1.77% of malic acid, 1.18% of fructose, 1.12% of glucose and 0.08% of maltose at the optimum extraction conditions. The sensory quality of the Kiwi liqueur was estimated to be best when 0.035% of stevioside, 0.0085% of citric acid and 0.005% of salts were added to the Kiwi liqueur.

Antibacterial Activity of Fresh Prunus mume and Prunus mume Liqueur Byproduct (매실과 리큐르 부산물인 매실박의 항균활성 비교)

  • Antimicrobial activity of both fresh Prunus mume and Prunus mume liqueur byproduct (PLB), generated after producing Prunus mume liqueur were examined against various pathogeinc bacteria such as Listeria monocytogenes Scott A, Listeria monocytogenes ATCC 19115, Bacillus cereus KCCM 11341, Staphylococcus aureus KCCM 12255, Pseudomonas fluorescens ATCC 21541, Escherichia coli O157:H7, Salmonella Typhimurium ATCC 14028, and Shigella sonnei. PLB showed strong antibacterial effects against tested pathogenic bacteria.L. monocytogenes ATCC 19115, B. cereus KCCM 11341, S. sonnei, and E. coli O157:H7 were not detected in trytpic soy broth containing 1% of prunus mume or PLB after 24-hour incubation at $37^{\circ}C$, respectively. Prunus mume showed higher antimicrobial activities than that of PLB against tested pathogens.

Changes in Major Constituents by Soaking of Acanthopanax koreanum with Spirit Solution (탐라오갈피의 침출 중 유용성분의 변화)

  • In order to prepare liqueur of Acanthopanax koreanum, changes in major constituents by soaking below 0.5 cm size dried sample 700 g in 10 l of $15{\sim}95%$ spirit solution for 70 days were investigated. Color b was increased according to lower ethanol concentration and longer soaking periods. Extract was increased gradually with soaking periods, and the content was $0.6{\sim}0.7%$ (w/v) with stem, $1.0{\sim}1.5%$ (w/v) with root. Eleutheroside B and E were extracted rapidly within 20 days of soaking, moreover were increased according to ethanol concentration within 15% to 70%. Acantoic acid was extracted rapidly $2.8{\sim}22.6\;{\mu}g/ml$ with stem, and $560{\sim}1,700\;{\mu}g/ml$ with root within 5 to 10 days. For preparation of liqueur of Acanthopanax koreanum, it is necessary to soak more portion of dried root with $60{\sim}80%$ ethanol concentration for $30{\sim}50$ days, and then to blend after aging for 13 weeks.

Effect of Prunus mume Byproduct Obtained from Liqueur Manufacture on Quality Characteristics of Noodles (국수의 품질에 미치는 매실 리큐르 제조 부산물인 매실과육의 첨가효과)

  • The objective of this research was to investigate the potential use of Prunus mume liqueur byproduct (PLB) as an ingredient in noddle processing. After boiling, the weight and volume of PLB added noodles and turbidity of the noodle soup decreased significantly, compared with those of the control. In sensory evaluation, appearance and color scores of the noodle with PLB were lower than those of the control. However, scores for texture, flavor, taste and overall acceptability were higher in the noodle with PLB than in the control. The pH value of the noodle decreased with increase of PLB concentration and did not change during storage for 30 days at $10^{\circ}C$. Changes of titratable acidity in the noodle with PLB showed the same trend as pH. The surface of the noddle was covered with mold in the control and 10% PLB added noodle after 15 days storage at $10^{\circ}C$. However, the noodle with 20% and 30% PLB did not how significant increase in total bacteria up to 30 days at $10^{\circ}C$.

Effect of Ratio of Maesil(Prunus mume) and Alcohol on Quality Changes of Maesil Liqueur during Leaching and Ripening (매실과 알코올의 담금비가 매실 리큐르 숙성중의 품질 변화에 미치는 효과)

  • The effects of the ratio of 45% alcohol and Maesil(Prumus mume) (1:1, 1:2, 1:3, w/v) on quality changes of Maesil liqueur during leaching and ripening for 5 months were examined. Total acidity increased with an increase ratio of Maesil and leaching and ripening periods. The pH increased as increase ratio of alcohol. The color of liqueur became dark as an increase ratio of Maesil and leaching and ripening periods. The contents of alcohol after leaching and ripening for 2 months were 24.3%(1:1), 32.2%(1:2), and 36.0%(1:3), respectively and decreased as an increase the ratio of Maesil. The contents of reducing sugar and polyphenol in the liqueur increased with an increase ratio of Maesil and leaching and ripening periods. The major components of free sugar in the liqueur were fructose, glucose, sucrose and maltose but sucrose and maltose did not detect regardless the ratio of Maesil after leaching and ripening for 2 months. The major components of organic acid in the liqueur were citric, lactic, malic, and acetic acids. The total amount of organic acid increased as an increase the ratio of Maesil but the changes of individual organic acid in the liqueur contained different ratio of Maesil showed the different tendency each other.
