Effects of Dietary Protein Level and Supplementation of Conjugated Linoleic Acid on Growth Performance and Meat Quality Parameters in Finishing Pigs (사료 중 단백질 수준 및 CLA(Conjugated Linoleic Acid) 첨가가 비육돈의 생산성 및 육질특성에 미치는 영향)

  • This study was conducted to investigate effects of dietary crude protein(CP) level and supplementation of conjugated linoleic acid(CLA) on growth performances and meat quality parameters in finishing pigs. The experiment was designed using protein levels(11.3%, 16.0%) and CLA levels(0%, 2.5%) according to 2×2 factorial design. A total of forty-eight pigs [(Landrace×Yorkshire)×Duroc] with an average initial weight of 79±1kg were allotted to one of four dietary treatments. Each treatment had four replications of three pigs per replicate. Final body weight(P<0.05) and average daily gain(P<0.01) were lower in 11.3% CP treatments than in 16.0% CP treatments, while feed/gain was high(P<0.01) in 11.3% CP treatments compared with 16.0% CP treatments. Carcass weight was lighter in 11.3% CP treatments(P<0.001) and CLA 2.5% treatments(P<0.01) than in 16.0% CP and CLA 0% treatments, respectively. A significant interaction between CP and CLA on carcass weight was observed(P<0.01), where supplementation of 2.5% CLA to finishing diets decreased carcass weight in 16.0% CP treatments, while no difference was found in 11.3% CP treatments. Backfat thickness was thinner in 11.3% CP treatments and CLA 2.5% treatments than in 16.0% CP and CLA 0% treatments, respectively(P<0.05). A significant interaction between CP and CLA on backfat thickness was observed(P<0.001), where supplementation of 2.5% CLA to finishing diets decreased backfat thickness in 16.0% CP treatments, while no difference was found in 11.3% CP treatments. Marbling score and intramuscular fat contents were higher in 11.3% CP treatments than in 16.0% CP treatments(P<0.01). In conclusion, feeding of protein-deficient diets in finishing pigs could produce favorable pork with high marbling score and thinner backfat. On the other hand, supplementation of CLA was considered to decrease backfat thickness when diets with optimal level of crude protein were fed to finishing pigs.

후보 종빈돈의 품종, 출생계절 및 등지방두께가 첫발정일령과 첫수정일령에 미치는 영향

  • 번식효율이 높은 우수한 후보종빈돈의 조기선발기술을 개발하기 위해 후보종빈돈의 첫발정일령과 첫수정일령에 미치는 요인을 분석한 결과는 다음과 같다. 본 시험에 공시된 후보종빈돈은 충남 천안시에 위치하고 있는 양돈장에서 자돈을 생산ㆍ육성하여 체중 80~90kg에서 선발하였고, 체중이 약 110kg 도달하였을 때 최종 선발하여 이용하였으며, 사양관리는 양돈장의 관행에 따라 실시하였다. 첫발정조사는 생후 22주령때 부터 매일 아침, 저녁으로 2회씩 외음부의 충혈과 부종상태를 관찰하고 승가허용 자세유지 등을 통하여 발정여부를 조사하였다. 교배는 첫발정발견 후 2차 발정이 발현되었을 때 실시하는 것을 원칙으로 하였다. 첫발정 및 첫수정시에 등지방측정기(Lean-meater; Renco, U.S.A.)를 이용하여 제 10늑골의 정중선으로부터 좌측 또는 우측으로 약 5cm 이격된 지점을 2회 측정하여 평균치로 하였다. 후보종빈돈의 품종별 첫발정일령과 첫수정일령은 랜드레이스종이 171.91일과 202.18일, 요크셔종은 178.56일과 208.39일, 랜드레이스종과 요크셔종의 F$_1$은 190.20일과 213.60일로 랜드레이스종이 첫발정일령과 첫수정일령이 가장 빨랐으나 품종간 첫수정일령에 대한 유의적인 차이는 없었다. 출생계절별 첫발정일령 및 첫수정일령은 봄에 출생한 후보종빈돈은 194.14일 및 222.05일, 여름에 출생한 후보종빈돈은 163.25일 및 193.00일, 가을에 출생한 후보종빈돈은 160.25일 및 199.20일, 겨울에 출생한 후보종빈돈은 159.72일 및 190.11일로 봄에 출생한 후보종빈돈의 첫발정일령 및 첫수정일령이 겨울, 가을, 여름에 출생한 후보종빈돈보다 유의적으로 늦게 나타났다(P〈0.01). 등지방두께가 13~16mm인 후보종빈돈의 첫발정일령 및 첫수정일령은 180.32일 및 211.12일, 17~20mm인 후보종빈돈은 172.24일 및 202.43일, 21~23mm인 후보종빈돈은 162.20일 및 195.43일로 등지방두께가 얇을수록 첫발정일령 및 첫수정일령이 지연되었으나 유의적인 차이는 인정되지 않았다.

[초음파를 이용한 한우의 도체특성 추정에 관한 연구]

  • 한우산업의 국제경쟁력 향상과 소비자가 요구하는 고급육을 생산하기 위해서는 도축전에 살아있는 가축으로부터 육질과 육량을 판정할 수 있는 기술의 개발이 요구되고 있다. 생체상태에서 도체특성을 추정할 수 있는 기술로서는 초음파, X-선 및 핵자기공명 등이 있지만 실용화가 가능한 방법으로는 초음파 기술을 대표할 수 있다. 초음파 기술을 이용하여 살아있는 소의 등지방두께와 등심단면적을 추정하는데에 대해서는 높은 정확도를 갖고 있어 일부 국가의 종축선발 기관이나 비육장에서는 정육생산능력을 예측하는데 효과적으로 이용하고 있지만 근내지방도의 추정능력과 실용화는 아직 연구단계에 있다. 우리나라의 초음파 기술 이용실태는 아직 연구단계에 있다고 할 수 있지만 1990년대에 접어들면서 학계와 연구계 및 산업현장에서 기기의 정확도를 향상시키고 현실에 적합한 기기를 개발하고자 노력하고 있으므로 그 효과는 곧 가시화될 것으로 기대된다.

Relationship Between Ultrasonic and Carcass Measures for Meat Qualities in Hanwoo Steers (한우 거세우에 있어서 생체단층조사기법에 의한 육질판정과 도축 육질 측정치와의 관계)

  • Data from live animal real time ultrasound (RTU) measures from 127 Hanwoo steers were used to assess nutritional physiology and relationship between RTU measures and real carcass measures represented meat quality. Traits considered were longissimus muscle area, fat thickness, and marbling score imaged and scanned using RTU by month and those of carcass measures at about 24 month of age. On this study, increasing pattern for longissimus muscle area would be closely related to growth pattern (p<0.01) and it of fat thickness would be related to quadratic effect of ages. Marbling score would be related to aging, that is, individual deviates of scores were distinctly characterized after 17 mo. even though they were started at about 11 mo. Correlation estimates between RTU measures and corresponding carcass traits were over 0.6 after 17 month of age for all traits considered and these estimates were high as 0.90 after 22 month of age. From this study, Real-time ultrasound measurement would be valuable after 15-17 mo. and measures at about 22 mo. would be helpful to decide age for slaughtering. To utilize these techniques for beef cattle breeding via progeny testing program, 15 mo. RTU measures would be efficiency rather than 12 mo. of other beef breeds. Further study to find genetic variation of RTU measures was needed to utilize these technologies for beef breeding.

Association between IDH3B Genotypes and Economic Traits in a Crossbred F2 Population between Duroc and Jeju Native Black Pigs (제주재래흑돼지와 듀록 교배 세대에서 IDH3B 유전자형과 경제형질의 연관성)

  • This study examined the association between genotypes of the isocitrate dehydrogenase 3, beta subunit (IDH3B) gene and economic traits in an $F_2$ population of Duroc and Jeju (South Korea) native black pigs (JBPs). The genotypes was determined the presence/absence of a 304-bp insertion/deletion fragment in the promoter region of the IDH3B gene for JBP, Duroc, and their $F_1$ and $F_2$ progeny. Three genotypes (AA, AB and BB) were found in the $F_1$ and $F_2$ populations, but there was no AA genotype found in JBP and no BB in Duroc. Association analysis results showed the significant differences with carcass weights (CW), backfat thicknesses (BFT) and eye muscle area (EMA) (p<0.05), but not with growth traits including body weights and average daily gains at different stages, reproductive traits including teat numbers, and crude fat contents (CFAT) measured in longissimus dorsi (p>0.05). The $F_2$ pigs possessing the IDH3B BB homozygote had heavier CW ($72.92{\pm}11.133kg$), thicker BFT ($25.75{\pm}6.06mm$), and larger EMA ($23.82{\pm}4.825cm^2$) than those from the other genotypes (p<0.05). These results were estimated that there are biological roles related with IDH3B genotypes resulting development of EMA, BFT, and CW but not with intramuscular fat deposition during late period of pig production. Our findings suggest that the 304-bp insertion allele of porcine IDH3B may be a genetic marker for marker assistant selection for improving meat productivity of the Jeju Black pig and Duroc-related molecular breeding systems.

The Influence of Feeding Dietary Differences on Growth Performance and Carcass Quality in Finishing Pigs (사료조성 차이가 돼지 생산 및 도체형질에 미치는 영향)

  • All diets were based on feeds of fattening period pigs(LY x D, ca. 90 kg) with six treatments, which were the control, containing 5% beef tallow(C), 3% beef tallows and 2% perilla seeds oil(T1), 250 ppm vit. E(${\alpha}$-tocopheryl acetate) in T1(T2), 3% beef tallow and 2% squid viscera oil(T3), 250 ppm vit. E in T3(T4), and 3% beef tallow and 2% CLA(T5), respectively. Produced porks and their carcass characteristics were as follows. The daily gain of pigs was higher in T2 and 73 than any other treatments(p<0.05). Its T2 and T3 was 3.71 and 3.80 respectively, however, there was no significance in feed intake. The highest back fat thickness was shown in control group on market weight, while there was no significant difference on their initial weight. Loin-eye muscle area did not show any significant difference on initial weight and on market weight, however, its T5 was about twice as large as T2's. Content of triglyceride in blood was high in control group as compared to others; especially, the values for T3, T4 and T5 were significantly low(p <0.05). There was no significant difference in total cholesterol contents, and the ratio of HDL cholesterol/total cholesterol was higher in vit. E treated samples than untreated sample. Atherogenic index was high in sample with T3 and low in sample with T2. The perilla seed oil, squid fish oil, and vit. E decreased atherogenic index. Dressing percentage, back fat thickness, and grade did not show any significant difference(p >0.05); however, T2, C and T3, T1 and T5 showed 4.67, 4.29, 4.00 respectively, in grades.

Effects of Supplemented PROSOL® as an Emulsifier on Growth Performance and Carcass Characteristics in Hanwoo Steers of Final Fattening Period (수용성 지방유화제 첨가가 비육후기 한우거세우의 발육과 도체성적에 미치는 영향)

  • Fifty four Hanwoo steers in final fattening period were assigned to 3 groups control, top dressed $PROSOL^{(R)}$ as an emulsifier (TP) and DSP group (experimental diet made to down spec of nutrients with $PROSOL^{(R)}$, which is sodium stearoyl-2-lactylate), based on the body weight (647.96${\pm}$41.31 kg) and months of age (27.3${\pm}$0.8 mo), and the experiment was conducted to establish the reasonable fattening method of Hanwoo steers for 91 days. Average daily body gains during trial were 0.94, 0.84 and 0.98 kg in control, TP and DSP, respectively (P=0.011). DDMI/ADG of TP group tend to lightly improving compared to control and DSP group (P=0.692). There was no effect of supplementation of the $PROSOL^{(R)}$ in concentrates on growth rate, feed efficiency and shrinkage in Hanwoo steers during the short final fattening period. MQI from TP and DSP was not different based on the rib-eye area and carcass weight in carcass than that from control. Back fat thickness tended to be thicker than control (P>0.05). Marbling score, texture and maturity for TP and DSP was abundantly to increase compared to control (P<0.003). There was significantly increment in supplemented $PROSOL^{(R)}$ (P<0.0001). The meat quality grade of control, TP and DSP were 2.94, 3.78 and 4.50, respectively. Related to this result, the auction price (carcass/kg) were gained significantly (P<0.003) from control (17,560), TP (18,586) and DSP (19,266 won) so which the monetary return was the highest in DSP and the differences was recognized between TP and DSP. Percentage over 1st grade appeared in control, TP and DSP were 55.4, 88.9 and 100.0%, respectively. These results supported the hypothesis that supplementation of emulsifier improve the marbling score and the carcass quality grade by increased digestibilities of the feed fat in Hanwoo steers in fattening period.

Effect of the Fatty Acid Synthase and Acetyl CoA Carboxylase Genes on Carcass Quality in Commercial Hanwoo Population (한우의 Fatty Acid Synthase (FASN)와 Acetyl CoA Carboxylase-α (ACACA) 유전자내의 단일염기변이가 한우집단내의 도체형질에 미치는 영향)

  • This study was conducted to investigate the combined effect of fatty acid synthase (FASN) and Acetyl CoA Carboxylase-${\alpha}$ (ACACA) genes on carcass traits of Korean cattle (Hanwoo). A total of 1,057 commercial Hanwoo cattle provided by the NongHyup Livestock Research Center (NLRC) and Hanwoo Performance Competition (HPC) were used to analyze the effect of four single nucleotide polymorphisms (SNPs) within FASN (g.11280A>G, g.16024A>G, g.16039T>C, and g.17924A>G) and one SNP within ACACA (g.2274G>A) genes. In addition, the effect of genotypic combinations between FASN (g.17924A>G) and ACACA (g.2274G>A) SNPs has been studied with carcass traits. Significant associations were identified between g.17924A>G of FASN and carcass weight and back fat, and between the ACACA gene SNP g.2274G>A and longissimus muscle area with HPC samples. It was also found that both effects of FASN g.17924A>G and ACACA g.2274G>A polymorphisms were consistent in NLRC samples. Combined analyses of both NLRC and HPC samples also revealed the significant associations between the FASN g.17924A>G and carcass weight and back fat and between the ACACA g.2274G>A and back fat, respectively. The effect of the genotypic combination of g.17924A>G within FASN and g.2274G>A within ACACA genes showed that the combination of both GG genotypes of FASN and ACACA SNPs causes higher carcass weight and marbling score. The results of this study indicate that the two SNP markers within the FASN and ACACA genes can be utilized to select superior Hanwoo cows and calves in commercial Hanwoo farms.

Effects of Raising Farm on Genetic Evaluation for Carcass Traits in Hanwoo Cows (사육농가의 효과가 한우 암소의 도체형질 유전 평가에 미치는 영향)

  • This research was conducted to analyze the effects of raising farm on the heritability and breeding values of Hanwoo cows for their carcass traits, including cold carcass weight (CWT), back-fat thickness (BFT), eye-muscle area (EMA) and marbling score (MAR). The carcass data and pedigree data were collected from steers raised on Hanwoo farms in Pyeongchang-gun, Gangwon-do, South Korea. Three analytical models were applied for the estimation of heritabilities and breeding values. The first model (model 1) included slaughter house-year-month combination as fixed effects and age at slaughter was fitted as linear and quadratic covariates. The second model (model 2) was similar to model 1, but raising farm was additionally included as random effect. The third model (model 3) was similar to model 1 but farm effects were additionally included as fixed effect. The comparisons between the model 1 and the models including farm effect (model 2 and model 3) revealed that heritability estimates from model 2 or model 3 were smaller to those from model 1 for all carcass traits. Especially, obvious decrease of heritability was observed in CWT where heritability was 0.23 from model 1, 0.15 from model 2 and 0.18 from model 3. The maximum log likelihood of the model 2 and 3 were higher than those of model 1 for all traits. In model 2 that raising farm was included as a random effect, the ratio of farm variance to the total phenotypic variance were ranged from 4% (EMA) to 18% (CWT). Top 10% and bottom 10% of female cows were selected based on the breeding values from model 1, and the Spearman's rank correlation coefficients among models were estimated for each trait within selected group. The correlation coefficients were ranged from 0.57 to 0.95 in top 10% group and from 0.68 to 0.95 in bottom 10% group. These results show that the discrepancies in the rankings of breeding values can be based on the models applied. In conclusion, the results obtained in this study suggest that the herd effect or farm effect should be included in the analytical model when breeding values are estimated with the purpose of improvement of carcass traits of Hanwoo breeding cows.

Association between Numerical Variations of Vertebrae and Carcass Traits in Jeju Native Black Pigs, Landrace Pigs, and Crossbred F2 Population (제주재래흑돼지와 Landrace, 교배집단 F2에서 척추의 수적 변이와 도체형질의 상관관계)

  • The number of thoracic and lumbar vertebrae is known to be an unfixed trait among mammals. This study focused on the relationship between numerical variations of cervical (CER), thoracic (THO), and lumbar (LUM) vertebrae and the total number of vertebrae (TNV) and carcass traits in Jejunative black pigs (JBPs), Landrace pigs, and their intercrossed $F_2$ population. There were no numerical variations in CER vertebrae. On the other hand, the numbers of THO and LUM vertebrae and the TNV varied in all three populations. Of the traits investigated in the three populations, only the means${\pm}$SE of the LUM vertebrae did not show statistical significance (p>0.05). The carcass weights (CW), meat color (MC), marbling score (MS), backfat thickness (BFT), carcass length (CLE), THO vertebrae, and TNV all showed statistical significance (p<0.05). The JBP had 14-16 THO vertebrae, 5-6 LUM vertebrae, and 27-29 TNV. The Landrace pigs had 15-16 THO vertebrae, 5-7 LUM vertebrae, and 28-29 TNV. The $F_2$ population had 14-17 THO vertebrae, 5-7 LUM vertebrae, and 27-30 TNV. In the F2 population, increased numbers of THO vertebrae and TNV were associated with a significant increase in the CW, CLE, and BFT (p<0.05). In particular, the increase in the TNV was caused by an increase in the number of THO rather than LUM vertebrae. Although the animals with a greater number of THO and TNV had thicker backfat, they had a longer CLE and a heavier CW. Both these traits are economically more important than the level of backfat when determining the productivity level. These results suggest that genetic selection to increase the number of vertebrae, especially in Landrace pigs, JBPs, and their related populations, may be an excellent strategy for improving productivity.
