Development of Functional Beverage Using Yam (Dioscorea opposita Thunb.) (둥근마를 이용한 기능성 건강음료 개발에 관한 연구)

  • 본 연구에서는 둥근마와 장마의 일반성분을 분석하여 둥근마의 우수한 성질을 밝히며, 에탄올 농도를 달리(0~95%, v/v)한 용매로 둥근마를 추출한 후 항산화활성을 측정함으로써 둥근마의 항산화성분을 최대한 함유할 수 있는 최적의 에탄올농도를 찾아, 이 추출물을 활용한 다양한 기능성 함유 음료의 제조방법을 개발하고자 하였다. 일반 성분 분석결과 둥근마의 경우 탄수화물, 열량, 단백질 및 철 함량이 장마와 비교하여 월등히 높은 값을 나타내었고, 식이섬유 및 칼륨 함량 또한 비교적 높았다. 47.5~95% (v/v) 에탄올 함유 용매로 추출할 경우 순수한 물로 추출한 경우보다 더 높은 항산화 활성을 나타내었다. 전자공여능의 경우 추출용매의 에탄올 농도가 높을수록 높은 값을 나타내었으며, 반면에 총 폴리페놀성 화합물함량의 경우 71.25% 농도의 에탄올로 추출한 추출액에서 가장 높은 값을 나타내었다. 따라서 에탄올농도 약 70~95% 정도의 용매로 추출한 둥근마 추출액 함유 음료를 제조함으로써 항산화 성분을 다량함유 한 음료를 제공할 수 있을 것이며, 또한 둥근마 추출액에 첨가물 및 기타 기능성 성분을 혼합하여 음료를 제조함으로써 기호성이 증가되고 기능성이 향상된 다양한 음료를 제공할 수 있을 것으로 사료된다.

Tuber Enlargement and Chemical Components of Yams (Dioscorea opposita Thunb.) (둥근마(Dioscorea opposita Thunb.)의 괴경비대 및 성분특성)

  • Tuber yield and content of general component and diosgenin which is a main bioactive property were investigated in order to determine the growth characteristics of round typed yam(Dioscorea opposita L.) and the potential of artificial culture at Suwon, Korea. Tubers of round yam were initiated to form at 60 days after planting and then enlargement of tubers lasted by 160 days after planting. Compared to short typed yam(108g), tuber weight of round yam was higher(127g) on the basis of dry weight at 200 days after planting. In comparison of general component between round yam and short yam, protein of round yam$(3.62\%)$ was higher than short yam$(2.10\%)$. Water content in round yam$(64.5\%)$ was lower in short yam$(79.4\%)$, indicating a higher dry weight ratio of round yam. Hardness of round yam was 2787.6 while short yam showed about two times higher hardness(4946.9). Lightness was higher in round yam(77.4). In tuber extracts analysis, diosgenin content was respectively $3.32\%$ in round yam and $2.61\%$ in short yam.

  • Root-knot nematode damage was found on yam, Dioscorea bulbifera in Andong Korea. From the root-knots, female nematodes were isolated and subjected to DNA sequence analysis. Sequence of cytochrome oxidase subunit II (COII) was analyzed from the genomic DNA of the isolate. COII locus size and sequence of the nematode isolate were similar to those of Meloidogyne javanica or M. incognita. However, an analysis of HinfI restriction site, a species-specific character between these two species, showed that the isolate did not match to either M. javanica or M. incognita.

  • This study was carried out to investigate the characteristics of fermented chinese yam and rice (Dioscorea japonica, Dioscorea batatas, Dioscorea opposita, Rice, FCYR) using Monascus sp. MK805. The extracts from FCYR were measured to examine pigments, antioxidant activities were investigated through DPPH radical scavenging activity, total polyphenol and flavonoid contents, reducing power. Also it was investigated monacolin K productivity by FCYR. Pigments productivity (yellow, orange and red) were 26.2, 13.9, 17.3 at Dioscorea japonica, 41.9, 22.6, 53.2 at Dioscorea batatas, 12.5, 7.5, 9.7 at Dioscorea opposita and 10.1, 7.7, 10.2 at rice, respectively. DPPH radical scavenging activity of FCYR was about 69.7, 79.6, 57.8, and 42.3%, total polyphenol contents of FCYR was about 480.6, 658.7, 379.3, and 212.9 mg/kg, total flavonoid contents of FCYR was about 342.5, 448.4, 235.2, and 168.7 mg/kg, reducing power of FCYR was about 1.57, 2.14, 1.14, and 0.35 (OD at 700 nm), respectively. And then monacolin K productivity of FCYR was about 453.8, 509.5, 332.2, and 263.2 mg/kg, respectively.

Quality characteristics of fresh-cut Dioscorea bulbifera treated under various blanching conditions prior to vacuum-packaging during storage (블랜칭 처리에 의한 신선편이 둥근마의 저장 중 품질 특성)

  • This study was carried out to investigate shelf-life and quality of fresh-cut Dungkunma (Dioscorea bulbifera) in order to elevate utilization of Dungkunma a fresh food. Before vacuum-packaging (in polyethylene/polypropylene film ($100{\mu}m$, $15{\times}20cm$, $75{\pm}2cmHg$) and storaging at $2^{\circ}C$, Dungkunma was peeled out and cut to dice type ($2.0{\pm}0.5cm^3$), and then washed and blanched using hot water (at $90{\pm}2^{\circ}C$ with 2% NaCl solution for 30 sec). Blanched Dungkunma was pre-dried at room temperature, $40^{\circ}C$ and $50^{\circ}C$ for removing surface water. Each peeled dice Dungkunma was packed 50 g in polyethylene/polypropylene film ($100{\mu}m$, $15{\times}20cm$) with vacuum treatment ($75{\pm}2cmHg$) and stored at $2^{\circ}C$ for 90 days. Hardness and adhesiveness of Dungkunma blanched by 2% NaCl and pre-dried at $50^{\circ}C$ (SB50) were the highest, but changes were the least during storage. Lightness and yellowness of stored Dungkunma in all treatments decreased slightly while redness increased during storage. Changes of color of SB50 was the least. Total concentration of aerobic bacteria in SB50 was $1.88{\pm}0.18log\;CFU/g$ during 90 days and E. coli was detected in all treatments during whole storage periods. Dioscin and allantoin contents of SB50 were virtually unchanged during the storage. Consequently, the results of this study suggest that vacuum packaged Dungkunma after blanching using 2% NaCl solution could be effective to prolong the quality of fresh-cut Dungkunma.

Study on Quantitative Growth Analysis in Yam(Dioscorea spp.) (마의 생장해석(生長解析)에 관(關)한 연구(硏究))

  • This study was conducted to obtain the basic information on the production of high yield and qualitied yam in Andong, major yam-producing district, in Kyongbuk province, using three major Yam cultivars, such as Danma, Jangma and Alata (round type). Alata showed the longest tuber width while Jangma showed the longest tube length. Danma showed the highest tube yield at 2,123 kg/10a. Tubes of Alata had higher dry ratio than those of other cultivars, suggesting that Alata could be used as good processing materials. Characteristics of top parts, such as vine length, leaf number, and lateral vine number showed typical sigmoid curves. Tuber characteristics such as length, width and fresh weight of tuber were linearly increased as the growth period was progressed. Relative growth rate (RGR) for new tuber and stem reached the highest value at 86 DAT (days after transplanting). There were similar tendencies among the cultivars in net assimilation rate (NAR). The highest crop growth rate (CGR) was appeared at 156 DAT regardless of cultivars. In the changes of leaf area ratio (LAR), there were significant differences among three cultivars. LAR were decreased at 86, 106 and 136 DAT for Alata, Danma and Jangma, respectively. However, specific leaf weight (SLW) was greatly increased at 176 DAT, and leaf area index (LAI) was decreased at 156 DAT in all cultivars.

Reginal Adaptability and Yield of Dungunma(Dioscorea opposita) in Korea (둥근마(Dioscorea opposita)의 지역적 적응성 및 수량성)

  • This study was done to determine the regional adaptability of Dioscorea opposita in Korea. Suwon, Chunchon, Kangneung, Yonchon and Taean had soil pH of 6.62, 5.65, 5.9, 5.9 and 5.82, respectively, being at more unfavorable conditions than a standard soil condition for yam with pH 6.2. The amounts of organic matter in Suwon, Chunchon, Taean, and Yonchon were 1.96%, 4.51%, 3.76%, 1.89% and 1.12%, respectively, being at more favorable conditions than a standard organic matter in soil for yam with 2.0~3.0%. As the results from cultivating of large plantings in different regions, Suwon showed the largest the tuber dry weight of 135g. In comparison of general component between round yam and short yam in the area of Kangneung, protein of round yam(3.30%) was higher than that of short yam(1.40%). Dryness in round yam(36.5%) was lower than that of short yam(28.9%), indicating a higher dry weight ratio of round yam. In tuber extracts analysis, saponins content was respectively 23.7mg/g in round yam and 10.4mg/g in short yam.

Physicochemical Composition and Antioxidant Activities of Korean Dioscorea Species (국내산 마 품종별 이화학적 성분 및 항산화 활성)

  • The objective of this study was to determine the proximate composition and antioxidant activities of Dioscorea spp. Samples were divided into Dunggeunma (D. bulbifra L), Danma (D. polystachya Turcz), Jangma (D. batatas Decaisne) and Danpungma (D. quinqueloba Thunb). The samples were extracted with 70% ethanol and analyzed for total flavonoid contents, polyphenol contents, DPPH radical scavenging activity, and ABTS radical scavenging activity. The moisture contents ranged from 11.96% to 15.01%. The crude protein contents were in the range of 7.86% to 11.55% (Dunggeunma 11.55%, Danpungma 10.48%, Danma 9.43%, Jangma 7.86%). The crude fat contents were between 0.37% and 0.43% (Danpungma 0.43%, Jangma 0.37%, Dunggeunma 0.37%, Danma 0.37%). In the antioxidant activities assay, total polyphenol content of Danma was significantly higher than those of other species at 115.47 mg/100 g gallic acid equivalent (GAE) (p<0.05), whereas it was significantly lowest in Jangma at 66.31 mg/100 g gallic acid equivalent (GAE) (p<0.05). ABTS and DPPH radical scavenging activities of Danma were significantly highest at 104.43 and 56.72 mg trolox eq/100 g (p<0.05). Therefore, antioxidant activities of Dioscorea spp. provide a possible scientific basis for assessing the performance of functional material of Dioscorea spp.
