북한의 화산지형 소고

  • 한반도는 지질적으로 안정된 지괴를 유지하고 있기 때문에 활화산이 없고 화산지형도 극히 제한된 지역에 분포하고 있다. 지질사적으로 중생대 이전의 화산활동을 제외하면, 주로 현지 표면상에 나타나는 화산활동의 흔적에 의한 지형들은 대게 신생대 제3기의 주요 화산활동으로써 백두산(2744m), 무두봉(1930m), 대연시봉(2360m), 북포태산(2289m), 남포태산(2435m), 소연지봉(2123m), 관모봉(1387m), 소배산(2174m), 두류산(2309m), 칠보산(906m) 등이 백두산 화산대(그림 1)의 열하를 따라 남동쪽 설령(2442m), 만탑산(2205m) 과 거의 일직선상의 수많은 분출공에서 유동성이 큰 현무암의 분출이 있었다.(중략)

Analysis of Nonstarch-polysaccharides in Some Korean Foods (일부(一部) 한국산식품(韓國産食品)의 비전분다당류(非澱粉多糖類) 분석(分析))

  • Determination of dietary fiber contents in some Korean foods was attempted by Englyst's gas chromatographic and colorimetric methods which measure the nonstarch polysaccharide (NSP) contents NSP values, except seaweeds, by gas chromatography (x) and colorimetry (y) were very closely correlated (y=1.01x-0.52, r=0.997, n=9), NSP values by gas chromatography were lower than total dietary fiber (TDF) Haloes by AOAC method. By adding lignin to NSP values, relation between the two methods was improved. But, TDF values (y) by adding lignin to NSP values and TDF values (x) by AOAC method were related as y=0.68x-0.64 and F=0.903(n= 12), which was not closely related.

Effects of Soaking , Germination , Incubation and Autoclaving on Phytic Acid in Seeds (처리방법에 따른 종자중 Phytic acid 의 함량변화)

  • Changes in phosphorus compounds and phytic acid of mung bean, soybean, sesame and perilla were investigated during soaking in water, germination, incubation at $60^{\circ}C$ and autoclaving at $120^{\circ}C$. The results showed that total P in all the seeds was decreased slightly by soaking and incubation, but increased in mung bean, soybean during germination. Inorganic P was increased for all the seeds after soaking for 24 hrs, while its content in mung bean, soybean and sesame was significantly increased during germination. Phytic acid content in mung bean, soybean and sesame was significantly seduced by 92 %, 76 % and 78 %, respectively, after 5-6 days of germination. Soaking the seeds for 24 hrs resulted in the reduction of phytic acid by the range of 8-25 %. It was also found that incubation at $60^{\circ}C$ for 10 hrs or autoclaving at $120^{\circ}C$ for 4 hrs affected significantly for removal of phytic acid from the legume seeds.

Effect of Indian Millet Koji and Legumes on the Quality and Angiotensin I-Converting Enzyme Inhibitory Activity of Korean Traditional Rice Wine (수수 입국과 두류 첨가가 전통주의 품질과 엔지오텐신전환효소 저해활성에 미치는 영향)

  • To develop a high-valuable Korean traditional rice wine having antihypertension, effects of some cereal kojis and legumes on alcohol fermentation and angiotensin I-converting enzyme (ACE) inhibitory activity of Korean traditional rice wine were investigated. Korean traditional rice wine brewed by addition of 10% Indian-millet koji into the mash showed the greatest ACE inhibitory activity of 43.0% and good ethanol productivity. The ACE inhibitory activity increased up to 69.2% by addition of 50% of mungbean powder and 1% of dandelion petal into the mash.

  • Spectral reflectance data of upland crops at OSMI bands were collected and evaluated for the feasibility of crop discrimination knowledge-based on crop calendar. Effective bands and their ratio values for discriminating corn from two other legumes were defined with OSMI equivalent bands and their ratio values. For corn discrimination from two other legumes, peanut and soybean, June 22 among measurements dates was the best since all OSMI equivalent bands and their ratio values in June 22 were highly significant for corn separability. Phenological growth stage of a silage corn (rs510) could be estimated as a function of spectral reflectance in vegetative stage. Five growth stage prediction models were generated by the SAS procedures REG and STEPWISE with OSMI equivalent bands and their ratio values in vegetative stage.

  • 'This study aims to make a choice of 'the new ten beauty spots in Daegu city' based on the analysis of survey of 390 persons selected randomly. The main results are as follows. First, there is no distinctive regional character in making a choice of 'the new ten beauty spots in Daegu city'. Second, 'Gong-Ryeong-jeok-Seol(公嶺積雪) and Buk-Byeok-Hyang-Rim(北壁香林)' among 'Daegusibyeong(大丘十詠)' written by geo-jeong Seo in the Chosun(朝鮮) dynasty are included into 'The new ten beauty spots in Daegu city'. Third, The most picturesque place is Mt. Palgong in Daegu city. Fourth, most people estimate a historical nature as the most important factor in making a choice of 'The new ten beauty spots in Daegu city', but it has not been found such tendency in the selected places as 'The new ten beauty spots in Daegu city'. Fifth, both male and female have chosen Mt. Biseul, Duryu tower, Mt. Palgong and Daegu stadium as 'The new ten beauty spots in Daegu city'. Sixth, natives of Daegu as well as non-natives of Daegu tend to highly prefer Duryu tower, Mt. Biseul and Mt. Palgong.

Comparison of Irradiated Food with Electron Beam and Gamma-ray by PSL and TL Methods (광자극발광법과 열발광법 분석을 통한 전자선과 감마선 조사식품의 비교 연구)

  • This study was conducted to determine the PSL and TL properties of foods irradiated with electron beam and gamma-ray. 5 kinds of food including cereal, pulse, fish powder, dried vegetable and tea were irradiated at 0 to 10 kGy by electron beam accelerator or $^{60}Co$ gamma-ray irradiator. The PSL analysis showed negative results for most of the non-irradiated samples. Non-irradiated shrimp powder showed intermediate result. Irradiated samples gave negative or intermediate or positive value which presented the limitation of PSL technique. In TL analysis, there were TL glow curves at around $300^{\circ}C$ with low intensity on non-irradiated samples. Maximum peak in the range of $150-250^{\circ}C$ was appeared on irradiated samples. TL ratio obtained by re-irradiation with 1 kGy was less than 0.1 on non-irradiated samples and higher than 0.1 on irradiated samples. Therefore, in PSL measurement, electron-beam irradiated samples could obtain more clear results. TL analysis showed obvious difference between non-irradiated and irradiated samples. But the identification was impossible for the sample of rice and lemon tea. Because of it's low contents of mineral.

Edible Culture Media from Cereals and Soybeans for Pre-cultivation of Lactic Acid Bacteria (곡류 및 두류를 이용한 젖산균 전배양용 식용 배지의 제조)

  • This study was conducted to develop an edible culture media with various types of cereals and soybeans for the pre-cultivation of lactic acid bacteria (LAB). To manufacture the edible culture media, LAB enrichment media were prepared using cereals such as brown rice (including germinated brown rice, glutinous brown rice, and germinated glutinous brown rice), yellow soybeans (including yellow soybeans, hulled yellow soybeans, germinated yellow soybeans, hulled and germinated yellow soybeans), and black soybeans (black soybeans, hulled black soybeans, germinated black soybeans, hulled and germinated black soybeans). Seven species of LAB were used in the experiment: Lactobacillus (Lb.) farciminis, Lb. homohiochii, Lb. pentosus, Lb. plantarum, Leuconostoc (Leu.) paramesenteroides, Leu. citreum, and Leu. lactis. For edible culture media from cereals, the average viable cell count of the seven starter cultures was 7.6~8.0 log CFU/mL, while that of the MRS culture medium, a synthetic medium, was 9.2 log CFU/mL; thus proliferation was lower by about 1~2 log CFU/mL in starter cultures from cereals compared to the synthetic medium. In the case of the edible culture media from soybeans, most bacteria showed higher proliferation in the hulled and germinated soybean media. In particular, Lb. plantarum showed the highest cell count at 10.08 log CFU/mL. In the case of edible culture media from black soybeans, the proliferation rate was higher in the hulled and germinated black soybean medium. Lb. homohiochii showed the highest proliferation in the hulled and germinated black soybean medium at 9.90 log CFU/mL. All results show that edible culture media using cereals and soybeans are generally good for LAB. Especially, hulled and germinated black soybeans are optimal for the pre-cultivation of LAB medium.
