  • The objective of this study was to evaluate the effect of different ratios of horse meat and pork (horse meat: pork=0:100, 50:50, 100:0) on the quality and sensory characteristics of press hams. Press ham containing 100% horse meat had a higher moisture content (%) and lower fat content (%) than the other hams (p<0.05). The redness (hunter a value) and yellowness (hunter b value) were significantly higher in press ham containing 100% horse meat, whereas the lightness (hunter L value) was significantly lower than other hams (p<0.05). With regard to textural properties, press ham containing 100% horse meat had significantly higher springiness, but there were no significant differences among the ham products in regard to hardness, cohesiveness, gumminess and chewiness (p>0.05). The results of sensory tests showed that press ham containing 100% horse meat had significantly lower color and acceptability scores compared to other hams (p<0.05). With regard to mineral contents, Na, Fe, Mn, and Zn were significantly higher in press ham containing 100% horse meat (p<0.05).

  • In this study, the effect of microwave treatment on physico-chemical properties and microbial changes of beef and pork loin was investigated. Beef and pork were heated in microwave with an adjusted electric output at 500 W and operating frequency 2,450 MHz. The beef and pork samples were treated with microwave for 10 s or 20 s at 50% duty cycle. Drip losses and TBA values of beef and pork samples increased due to the microwave treatment. The samples became darker and more yellowish through microwaves, whereas their redness was unchanged. Microbial content of beef and pork samples declined as the treatment time increased. When pork samples were heated in a microwave oven, organisms were reduced by 2 log cycles in 20 s. It was concluded that a 20 second-long microwave treatment can great1y enhance the microbial safety of the pork sample.

  • This study was focused on the pork market analysis of the Philippines and the export prospect of Korean pork to the Philippines. The main results are as follows; first, the Philippines have relied on import some quantity of pork consumption every year because climate condition is unfavorable for pig raising and production technologies are undeveloped. Major exporting countries to the Philippines are Germany, Canada, Belgium, Denmark, France, Holland. Second, Korea exported pork of 2,885 tons to the Philippines from Jan. 2004 to Oct. 2004. It was 5.7% of total import pork Third, pork of skinning was 20% higher than the pork of scalding in the consumer price of pork in the Philippines. The consumer price of pork in Korean pork market was 281% in belly, 118% in loin, 106% in leg, 117% in tenderloin higher than the Philippines pork market. Fourth, the export of Korean pork to the Philippines depends on the price of Korean pork market entirely for future, but low grade part of pork and byproducts can be exported to the philippines because consumer price of pork in the Philippines is low compared to Korean pork market.
