Changes of Volatile Odor Components in Kimchi by Freeze-drying (동결건조에 의한 김치의 휘발성냄새성분의 변화)

  • Volatile odor components of ripened and ripened/freeze-dried kimchi were analyzed by gas chromatograph. As ripening temperature of kimchi increased, pH of kimchi decreased, viable cell count of lactic acid bacteria of kimchi increased up to ripening temperature of $15^{\circ}C$, and sensory properties of kimchi gradually decreased. Allyl mercaptan, methyl allyl sulfide, dimethyl disulfide, diallyl sulfide, diallyl disulfide, and ethanol were detected in ripened kimchi and ripened/freeze-dried kimchi. The amounts of allyl mercaptan, methyl allyl sulfide, diallyl sulfide, and ethanol increased as the ripening temperature increased, while those of dimethyl disulfide and diallyl disulfide decreased. Freeze-drying for 24 hr removed most of the above-mentioned volatile odor components, which were further removed by freeze-drying for 48 hr.

Changes in Quality during Frozen Storage of Meat with Thermal Equalized Freezing (균온처리 동결에 의한 식육의 저장중 품질변화)

  • Changes in quality during frozen storage of meat with thermal equalized freezing and various freezing methods were investigated. When beef were frozen at freezing rate of $0.39{\sim}0.66\;cm/h$, average diameter of ice crystal were about $30{\sim}50\;{\mu}m$ and showed broken tissues or irregular cracks. At freezing velocity of $1.14{\sim}2.26\;cm/h$, ice crystals of about $10{\sim}30\;{\mu}m$ was formed mainly inside or between fiber and slight destruction of tissues was occurred. The average diameter (D) of the ice crystals were related to the characteristic freezing time $(t_c)$ by the equation: $D({\mu}m)=4.089+26.88logt_c\;(r^2=0.913)$. Beef with still-air freezing showed higher drip loss than methods of immersion and thermal equalized freezing. Also, drip loss of pork was relatively lower than beef and showed highest value to 7.39% during storage on 40 days at air-blast freezing method. No apparent change of pH during storage of frozen beef and pork by freezing methods were detected. However, least changes for sample with thermal equalized freezing was found compare to sample with still-air and air blast freezing in VBN and TBA value. The fluctuation of frozen storage temperature did not cause noticeable changes on pH and water content. However, drip loss, VBN and TBA values were increased slowly as frequency of fluctuation increased.

  • The effect of freezing, thawing and blanching on the change of extractable pigment content of purple sweet potato (PSP) was investigated. Freezing at $-5^{\circ}C$ was more effective than freezing at $-20^{\circ}C\;or\;-40^{\circ}C$, and rapid thawing methods such as microwave heating or hat air blast heating were effective than slow thawing methods such as thawing at $4^{\circ}C\;or\;20^{\circ}C$. Inactivation of enzymes, which cause pigment destruction during thawing, by blanching before freezing was necessary to obtain the highest possible amount of extractable pigment from PSP. Microwave blanching for $3{\sim}4$ min or hot air blanching for $10{\sim}15$ min were effective in extracting pigment from PSP.

Assessing the Use of 5 ml Straws in the Cryopreservation of Boar Semen (돼지 정자 동결보존에 있어 5 ml straw의 한계성 극복)

  • The aim of this study was to overcome some of the limiting factors that the maxi cryopreservation straw of 5 ml presents in processing boar semen. Cryopreservation of semen samples was conducted in 0.5 ml and 5.0 ml straws at two freezing rates: -140℃ in 8 minutes and 30 seconds (FR-1) and -140℃ in 14 minutes (FR-2). The straws were then thawed and the semen parameters were compared by Computer Assisted Sperm Analysis, and sperm morphology and acrosome status were examined by Coomassie blue staining. The effects of different thawing temperatures and durations were also compared, namely 37℃ for 115 sec, 50℃ for 45 sec, or 70℃ for 25 sec. In general, the FR-1 group showed higher (p<0.05) sperm viability and motility than the FR-2 group in the 5.0 ml straws. Compared to other ranges, thawing at 50℃ for 45 sec showed the highest sperm viability and motility (68.4±3.6% and 69.5±2.2%, p<0.05), suggesting that thawing temperature should be adjusted concurrently with freezing rate. Sperm morphology and acrosome integrity did not significantly differ among the groups (p>0.05). The data obtained in this study suggest that improving the freezing-thawing protocol for one artificial insemination dose straws (5.0 ml) retains the sperm's parameters from 0.5 ml cryopreservation, and is more convenient to handle, which could result in enhanced reproductive performance.

Analysis of freeze-thaw conditions of soil using surface state factor and synthetic aperture radar (지표상태인자와 영상레이더를 활용한 토양의 동결-융해 상태 분석)

  • 본 연구에서는 토양의 동결-융해 상태 구분을 위해 영상레이더(Synthetic Aperture Radar) 자료를 활용해 지표상태인자(Surface State Factor, SSF)를 산정하고, 관측 토양수분 자료 및 지표면 온도(Land Surface Temperature, LST) 자료와의 비교를 통해 SSF의 정확도를 분석하였다. SSF 산정은 용담댐 유역을 포함한 인근 40×50 km2의 영역(N35°35'~36°00', E127°20'~127°45')에 대한 9개의 토양수분 관측지점(계북, 천천, 상전, 안천, 부귀, 주천, 장수읍, 진안읍, 무주읍)을 대상으로 연구를 수행하였으며, 이를 위해 2015년부터 2019년까지의 해당 지점의 토양수분 관측자료와 Sentinel-1A Interferometric Wide swath (IW) 모드의 Ground Range Detected (GRD) product를 구축하여 활용하였다. SSF 자료의 정확도 분석을 위한 토양수분 관측지점에 대한 LST 자료는 인근 7개 기상관측소 지점(전주, 금산, 임실, 남원, 장수, 함양군, 거창)의 관측자료로부터 역거리가중법을 통해 산정하였다. Receiver Operating Characteristic (ROC) 분석을 통한 겨울철(12-2월)의 SSF 산정 정확도를 평가한 결과, 지표면 온도 자료와의 평균 정확도는 0.75(0.48-0.87)로 나타났다. 그러나, 지표면 온도가 0℃ 이상일 때 SSF가 동결 상태로 나타나는 오차가 관측되었으며, 이는 여름철 후방산란계수의 평균값과 겨울철 후방산란계수의 평균값을 통해 산정하는 SSF 산정 수식의 특성 때문으로 이 값의 조정을 통해 오차를 개선할 수 있음을 보였다.

A study on the design of tunnel lining insulation based on measurement of temperature in tunnel (터널 온도계측을 통한 라이닝 단열 설계에 관한 연구)

  • In case of tunnels in cold regions, a freeze of groundwater around tunnel may act as a barrier of tunnel drainage in winter, or may cause the inner extrusion of lining. In spite of that, a design of insulation for preventing the frost damage of tunnel lining has not been introduced in Korea, while foreign countries such as Norway and so on have a standard on insulation. In this study, a few freezing cases of road tunnels have been reviewed, and the results show that the freezing protection is necessary. In order to characterize the thermal distribution in the tunnel, following measurements have been performed at Hwa-ak tunnel; the temperature distribution by longitudinal lengths, the internal temperature of lining and the temperature distribution of the ground under pavement. From these measurements, the characteristics of the tunnel's internal temperature distribution due to temperature change in the air has been analyzed. Based on the measurement results on the temperature distribution at Hwa-ak tunnel, thermal flow tests on the rock specimen with and without insulation have been performed in the artificial climate chamber to investigate the performance of the insulation. Also, a number of 3D numerical analyses have been performed to propose appropriate insulation and insulation thicknesses for different conditions, which could prevent the frost damage of tunnel lining. As a result of the numerical analysis, air freezing index of 291$^{\circ}C{\cdot}$ Hr has been suggested as the threshold value for freezing criteria of groundwater behind the tunnel lining.

  • The influence of calcination temperature on the pore structure of freeze dried silica gel derived from tetraethyl orthosilicate (TEOS) was investigated using $N_2$adsorption and mercury intrusion techniques. Freeze dried material contained not only 4-6 nm sized mesopores and 6-10 $\mu\textrm{m}$ sized macropores, but minor micropores. The change of pore structure due to the increase of calcination temperature was dependant upon the degree of densification.

Anti-freeze agency kinds were intended for nitrous acid. Anti-freeze agency with water dilution ratio was showed range of $-4.9{\sim}-6.3^{\circ}C$ in case of 1:3, $-3.3{\sim}-4.2^{\circ}C$ in case of 1:5, $-2.1{\sim}-3.3^{\circ}C$ in case of 1:7.

Dynamic Soil Properties of Frozen and Unfrozen Soils from Terra Nova Bay in Eastern Antarctica (동남극 테라노바만 흙 시료의 동결 및 비동결 상태에서의 동적특성 평가)

  • The geotechnical characteristics of frozen ground is one of the key design issues for the construction of infrastructure in cold region. In this study, the dynamic properties (shear modulus and damping ratio) of frozen and unfrozen soils sampled from Terra Nova Bay located in eastern Antarctica, where Jang Bogo station was built, were investigated using Stokoe-type resonant column test (RC). In order to freeze the reconstituted soil specimen, the RC testing equipment was modified by adding a cooling system. A series of resonant column tests were performed in frozen and unfrozen soils with various soil densities and temperatures. The shear modulus (G) and damping ratio (D) of soil frozen at $-7^{\circ}C$ were compared with those of unfrozen soil. In addition, the effect of temperature rise on the maximum shear modulus ($G_{max}$) and damping ratio was experimentally investigated. This study has significance in that the difference of dynamic soil properties between frozen and unfrozen soils and the effect of temperature rise on frozen soil were identified.

  • The mechanical behavior of frozen soils is different from that of unfrozen soils due to the phase change between water and ice. The strength characteristics of frozen soils are governed by the intrinsic material properties such as grain size, ice and water content, air bubbles, and by externally imposed testing conditions such as temperature, freezing time, and strain rate. Especially, the strength of the frozen soils is generally higher than that of unfrozen soils due to ice binding capacity with soil particles, and is strongly affected by a highly complex interaction between the solid soil skeleton and the pore matrix, composed of ice and unfrozen water. In this study, the direct shear test and unconfined compression test are carried out inside of a large-scaled freezing chamber, and the relationships between cohesion and unconfined compression strength under various freezing temperature conditions are discussed.
