Nutritional Analyses and Antioxidant Activity of Apple Pomace (사과 부산물의 영양성분 분석 및 항산화 효과)

  • To enhance the applications of apple pomace, which is a by-product of apple, this study analyzed the nutritional components, ursolic acid content, and antioxidant activity of different solvent (distilled water, fermented alcohol, and methanol) extracts. The samples included hot air-dried and freeze-dried apple pomace. The moisture, protein, fat, ash, and total dietary fiber contents of hot air-dried apple pomace were 3.2%, 3.9%, 2.4%, 2.0%, and 28.5%, respectively, and those of freeze-dried apple pomace were 8.2%, 3.4%, 2.4%, 1.8%, and 33.0%, respectively. Ursolic acid was not detected in the distilled water extract of either sample. However, in hot air-dried apple pomace, the methanol extract was 1,753.32 ㎍/ml, and the fermented alcohol extract was 1,532.94 ㎍/ml. In freeze-dried apple pomace, the methanol extract was 1,407.04 ㎍/ml, and the fermented alcohol extract was 1,221.81 ㎍/ml. The total polyphenol and flavonoid contents were 306.7 ㎍/ml and 950.1 ㎍/ml, respectively in methanol extracts of hot air-dried apple pomace and 277.6 ㎍/ml and 925.0 ㎍/ml, respectively in methanol extracts of freeze-dried apple pomace. 2, 2'-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activities of hot air-dried apple pomace were 73.3% in methanol extract and 59.4% in fermented alcohol extract, and those of freeze-dried apple pomace were 76.1% in methanol extract and 66.0% in fermented alcohol extract. Both samples had the lowest antioxidant activity in distilled water extracts. Similar to DPPH radical scavenging activity, both samples showed increasing 2,2'-azino-bis(3-ethylbenzothiazoline-6- sulfonic acid) (ABTS) radical scavenging activity in the order of methanol, fermented alcohol, and distilled water. All samples had stronger reducing power than ascorbic acid (311.5 ㎍/ ml) as a positive control.

Effects of Freeze Drying Protectant Added to Lactic Acid Bacteria Fermented Food Prepared from Milk or Egg White Powder on Growth and Organoleptic Properties (우유 또는 난백분말로 만든 젖산균발효식품에 첨가된 동결건조 보호제가 젖산균의 생육과 기호성에 미치는 영향)

  • Lactic acid bacteria (LAB) fermented food was prepared from milk or egg white powder (EWP) and added with five kinds of freeze drying protectant (FDP). Effects of FDP on growth and acid production of LAB were investigated. Effects of FDP on organoleptic properties of LAB fermented food were also studied. (1) Some of FDPs showed protective effect against damage to Lactobacillus acidophilus in LAB fermented food during freeze drying, while FDP did not show any protective effect against damage to L. acidophilus during freezing. This protective effect differed with substrate and concentration of FDP (2) Optimum concentration of Tween 80 and ascorbate added to milk sample was 0.2 % (W/V) and 1 %(W/V), respectively. Optimum concentration of raffinose and ascorbate added to EWP sample was 3 %(W/V) and 1 %(W/V), respectively (3) Among FDPs added to L. casei fermented food, raffinose and ascorbate added to EWP sample showed FDP effect. Among FDPs added to L. delbrueckii fermented food, raffinose added to EWP sample showed FDP effect. (4) Samples added with MSG showed MSG taste. Milk sample added with ascorbate showed slightly more acid taste than reference sample, while taste of EWP sample added with ascobate did not differ with reference sample. Tween 80 added to milk sample or EWP sample improved texture of LAB fermented food.

Effect of Freezing, Thawing and Blanching on the Pigment of Purple Sweet Potato (동결, 해동 및 Blanching이 자색고구마 색소에 미치는 영향)

  • The effect of freezing, thawing and blanching on the change of extractable pigment content of purple sweet potato (PSP) was investigated. Freezing at $-5^{\circ}C$ was more effective than freezing at $-20^{\circ}C\;or\;-40^{\circ}C$, and rapid thawing methods such as microwave heating or hat air blast heating were effective than slow thawing methods such as thawing at $4^{\circ}C\;or\;20^{\circ}C$. Inactivation of enzymes, which cause pigment destruction during thawing, by blanching before freezing was necessary to obtain the highest possible amount of extractable pigment from PSP. Microwave blanching for $3{\sim}4$ min or hot air blanching for $10{\sim}15$ min were effective in extracting pigment from PSP.

Extraction Characteristics of Rubi Fructus in Relation to Drying Methods and Extraction Solutions (복분자의 포제방법에 따른 추출물 특성)

  • This study was observed the effects of drying methods on the extraction characteristics of Rubi fructus (fruits of Rubus coreanus). Extraction yields of soluble solids and total sugar were high in the Rubi fructus dried by freeze drying, followed by infrared drying and sun drying. Extraction yield of phenolic compounds and DPPH radical-scavenging activity of extracts were in the following order; the Rubi fructus dried by freeze drying, the Rubi fructus dried by infrared drying, the Rubi fructus dried by sun drying. L value was the highest in the Rubi fructus dried by freeze drying, and a and b value were lowest in the fruit dried by freeze drying. These results suggest that freeze drying has an beneficial effect to enhance the quality of Rubi fructus. Water and ethanol extractions was more effective in the extraction of soluble solids and the antioxidative components.

Changes of Physicochemical and Sensory Characteristics in the Codonopsis lanceolata Saengsik, Uncooked Food by Different Drying Methods (건조방법 달리하여 제조한 더덕 생식의 이화학적 및 관능적 특성 변화)

  • Changes in the physicochemical and sensory characteristics of the uncooked food, Codonopsis lanceolata saengsik, were investigated to determine an efficient drying method, one of the most important manufacturing processes in the preparation of C. lanceolata saengsik. No changes in the proximate compositions of all samples were observed during hot-air drying at 50 and $60^{\circ}C$ and freeze-drying. The L value in the freeze-dried sample was higher than that in the hot-air dried samples, whereas the b value in the freeze-dried sample was reduced. Dietary fiber content in the hotair dried samples were higher than that in the freeze-dried sample, whereas the total phenolic compounds and crude saponin contents were lower than those in the freeze-dried sample. The highest overall acceptability values in the sensory test for color, flavor, taste, and overall acceptability were 5.63, 5.45, 5.75, and 5.85, respectively. In conclusion, the freezedrying method was the most favorable of the tested method for the manufacture of C. lanceolata saengsik.

Studies on Physical Properties of Pork Frozen by Various High Pressure Freezing Process (초고압 동결 처리 방법에 따른 돈육의 물리적 특성에 관한 연구)

  • This study was carried out to investigate the effect of various high pressure freezing treatments on the physical properties of pork To compare the effect of freezing on meat quality, atmospheric freezing (AF), pressure and freezing (PF), pressure shift freezing (USF) and pressure assisted freezing (PAF) were conducted at pressure of 100 MPa. Water binding properties, shear force and colour were measured as physical properties of pork PAF showed shorter phase transition time than PSF. Although significant increase (p<0.05) in water binding properties was found only at PAF, meat frozen under hydrostatic pressure environment showed improved water binding properties. However, all high pressure freezing treatment caused significantly increased shear force (p<0.05), especially at PF treatment. In color, all high pressure freezing treatments showed significantly higher color parameters (p<0.05) than AF, whilst no significant differences among high pressure freezing treatments were found (p>0.05). Therefore the result indicated that applied hydrostatic pressure improved functional properties of pork with increasing freezing rate and PAF had more potential benefit than PSF at mild pressure range.

일본 LNG 냉열이용 동결냉장 또 냉동식품 사업현황 실태조사

  • LNG 냉열 이용은 일본초저온(주)의 냉장보관 사업의 에너지절감 (65%)형 초저온 (-55$^{\circ}C$) 대형냉장고로 일본 뿐만 아니라 세계적으로 최초의 냉장업체이다. 회사 건설시는 입지선정, 경제성검토, 기술성, 공해상의 검토 등을 거쳐 완성된 업체로써 시설규모는 냉장 20,000 M/T, 1일 LNG 공급량 90M/T으로 현재 가동중이며 대부분의 동결 및 냉장 품목은 참치(마구로)가 83%를 차지하고 기타가 17% 였다. 냉장고의 가동율은 75%로 매우 높은 편이였다, LNG식 냉동장치의 가장 큰 장점은 일반적인 냉동방식 전력비의 1/3 밖에 소요되지 않는다는 것이다. L$N_2$의 내열이용 업체는 근기냉열(주)은 오사카의 천북에 있으며, L$N_2$를 자가 생산하여 면류 생산공장으로 직송하고 동결제조 하여 품질의 고급화 및 위생식품을 제조 판매하고 있다. 규모는 년간 2,000만식을 생산하고 주 생산제품은 조리면 및 냉동우동 등이다. L$N_2$의 소비가격은 전기식 냉동기에 비하여 5~9배의 고액이 소요되는 것이 결점이라고 할 수 있다.

Quality Properties of Korean Yam by Various Drying Methods (건조방법에 따른 마의 품질특성)

  • To establish optimum drying methods for Korean yam, freeze drying, cool air drying and hot air drying methods were compared by determining some quality criteria. The native color, odor, taste and viscosity of raw yam were preserved by only freeze drying at less than $40^{\circ}C$. The native white color of yam changed to brown and odor and taste of yam decreased largely by cool air drying and hot air drying. Especially cooked and roasted flavor was developed in hot air dried yam. The viscosity of cool and hot air dried yam was about half than that of freeze dried yam. Conclusively freeze drying method was shown optimum to preserve quality properties of yam such as viscosity, color, odor and taste. The physical properties of yam powder such as dispersiveness and solubility was the best in $40{\sim}60{\;}mesh$ particle size.

Changes in Internal Pressure of Frozen Fruits by Freezing Methods (동결방법에 따른 냉동 과일의 내부압력 변화)

  • This study was carried out to investigate the changes in internal pressure according to various freezing methods, as basic research to protect the destruction of tissues when fruits and vegetables are frozen. The rate of weight loss, caused by the freezing of fruits and vegetables, was found to be the least (0.44∼1.38%) when the immersion freezing method was applied. The difference in the rate of weight loss was the highest when freezing methods were applied to watermelon, and the freezing rate of watermelon whose moisture contents were greater have relatively greater influence on the weight loss. The difference in internal pressures was the least and caused by the volume increase and decrease, when pear, apple, and melon were frozen using the immersion freezing method, while the diffeyence the greatest when the air-blast freezing method was used. As the freezing rate was greater, the internal pressure was less. However, the internal pressure of strawberry and watermelon was the greatest when the immersion freezing method was applied. Frozen without using the thermal equalizing method, the change in internal pressure of fruits was about 2 psig. In contrast, the internal pressure of watermelon applied with the thermal equalizing method was changed in a way similar to that of watermelon not applied with the method, but the former generated a certain level of internal pressure and maintained a significantly low level of internal pressure (about 1.3 psig). When thawed, the internal pressure of samples to which the thermal equalizing method was applied was less than that of what the thermal equalizing method was not applied to. In comparison with the application of multi-step thermal equalizing method, 3∼4 times of application of the thermal equalizing method to the freezing resulted in the decrease of fluctuation range of internal pressure.

Effects of Freezing and Thawing Methods on the Quality of Dongchimi (동결 및 해동 방법이 동치미의 품질에 미치는 영향)

  • Dongchimi (Korean-style fermented radish with juice) products were frozen to prevent further acidification and softening of texture by restraining microbial growth and enzyme activity during storage. Dongchimi juice and radish were separated prior to freezing process. Dongchimi radish was frozen at $-20^{\circ}C,\;-70^{\circ}C$ and immersed in liquid nitrogen and dongchimi juice was frozen at $-20^{\circ}C\;and\;-70^{\circ}C$. Frozen dongchimi samples were thawed with ambient temperatures of $4^{\circ}C\;and\;27^{\circ}C$ and with 915 MHz-microwave, respectively. Dongchimi radish immersed in liquid nitrogen and thawed with 915 MHz-microwave showed the highest pectinesterase activity and hardness, and the lowest polygalacturonase activity and color change, indicating that this quick freezing-quick thawing method can be used for the long-term storage of dongchimi products. Dongchimi juice frozen at $-70^{\circ}C$ and thawed with 915 MHz-microwave retained its pH and titrable acidity, and showed a largest reduction in total aerobic count and lactic acid bacteria.
