돼지 탕박도체의 특성과 등급에 따른 부분육 생산량 변화

  • 현행 돼지도체 등급제는 육량과 육질을 종합하여 최종적으로 5개 등급으로 판정하고 있다. 이러한 등급판정체계 하에서는 육량이 우수한 도체라 할지라도 육질이 좋지 않을 경우 상위등급(A$\cdot$B등급)으로 판정 받는 것은 어렵고, 마찬가지로 육질이 우수한 도체라 할지라도 육량이 낮을 경우 상위등급으로 판정 받을 수 없다. 그러므로 상위등급은 육질과 육량이 모두 일정수준이상인 도체로 이해하는 것이 바람직하다. 이는 돼지도체의 등급판정 기준이 체중 및 등지방두께와도 밀접한 상관관계를 가지고 있기 때문이다. 일반적으로 돼지의 성장(체중의 증가)이라 함은 일정기간 동안 몸의 질량이 증가하는 현상으로 품종에 따라 고유한 성장률과 성장기 체중이 있고, 단계별로 생체의 각 조직이나 부위가 균형되게 발육하는 것을 말한다. 대개 체조직의 발육순서는 뇌, 골격, 근육, 지방의 순이며, 각 부위의 발육은 머리, 배, 허리의 순으로 이루어진다고 알려져 있다. 따라서 이번 연구조사에서는 돼지 탕박도체의 중량(성장) 증가에 따른 등지방두께와 등심단면적의 변화, 부위별 중량 및 수율의 변화 등을 알아보고, 또 부위별 수율이 등급판정결과와 성별에 따라 어떠한 영향을 받는지에 대해 알아보고자 실시하였다.

Carcass Characteristics and Primal Cut Yields of Hanwoo as Affected by Sex (한우의 성별에 따른 도체특성과 부분육 생산수율 조사)

  • The purpose of this study was to investigate the carcass characteristics and the primal cut yields from carcasses according to the sex of Hanwoo. Experimental animals comprised of 80 cows, 29 bulls, and 71 steers. After slaughtering, they were evaluated to estimate the productivity of carcass components by market weight, and to predict the beef carcass yield. The average of fasting weight of cow, bull and steer were 634.75 kg, 721.86 kg, and 754.10 kg respectively. Market weight of Hanwoo at cold carcass weight, primal lean cut weight, sub-primal lean cut weight, bone weight and fat weight were 381.01~467.60 kg, 240.79~310.36 kg, 208.27~276.47 kg, 57.23~76.28 kg and 89.19~138.97 kg respectively. Body measurement traits had side length, hindquarter length, cervical vertebrae length, lumbar vertebrae length, sacral vertebrae length, 6th lumbar vertebrae~heel length, 5~6th thoracic vertebrae breadth, 4~5th lumbar vertebrae breadth, 5th sacral vertebrae breadth, 7~8th thoracic vertebrae girth and 7~8th thoracic vertebrae thick were highest length in steer. Carcass weight (CW) were significantly (p<0.05) affected by sex and live weight. The lean meat percentage, fat percentage and bone percentage based on the weight of cold carcasses were significantly different (p<0.05) between sex groups. The primal cuts rate for deungsim, moksim, abdari, udun, suldo, yangjee and satae were higher in bulls than those of the caws and steers. The carcass by-product weight rate in steer had lower oxtail and rib cartilage than cow and bull, while cow showed lower beef leg bones and jappyeo than bull steer (p<0.05). Body measurement traits was always important for primal cut weight estimates.

Performance and Carcass Ratio of Large-type Female Broiler at Different Stocking Densities (다양한 사육밀도에서 대형 육계 수컷의 생산성과 도체수율)

  • This work was carried out to investigate performance and carcass yield of large-type broilers at different stocking densities. Treatments were T1 (9.1 birds/$m^2$), T2 (10.3 birds/$m^2$) and T3 (11.5 birds/$m^2$) by the stocking density. Four hundred eight 1-day-old Arbor Acre broiler chicks were used for six weeks (starter, 0~1 wks; earlier, 1~3 wks; finisher, 3~6 wks) and divided into 3 treatments (4 replications/treatment, 30, 34 or 38 birds/replication). Research indexes were rearing viability ratio, body weight, body weight gain, feed intake, feed conversion ratio, production efficiency factor and carcass ratio. Rearing viability ratio (%) was 89% or more for all treatments and there was no significant difference on weekly rearing viability ratio (%). Body weight of T2 was the greatest and that of T3 was the lowest at 1 weeks old (P<0.05). Body weight gain of T2 was the greatest and that of T3 was the lowest at 0~1 weeks old (P<0.05). However, body weight gain of T3 was the greatest and that of T1 was the lowest at 1~2 weeks old (P<0.05). Body weight gain of T2 was the greatest as 3,031 g among treatments at 0~6 weeks old (P<0.05). Feed intakes of T1, T2 and T3 were 1,417 g, 1,265 g and 1,355 g, respectively, and that of T1 was the greatest among treatments (P<0.05). There was no significant difference on body weight, body weight gain and feed intake. Feed conversion ratio of T1 was the greatest among treatments at 1~2 wks, 3~4 wks and 0~6 wks old (P<0.05). Production efficiency factors of T1, T2 and T3 were 363.5, 388.3 and 358.3, respectively, and there was no significant difference among treatments. Wing meat ratio of T1 was the higher compared to other treatments at the age of 4 wk (P<0.05). There was no significant difference on carcass ratio and partial meat ratio among treatments. Neck meat ratio of T2 was the lowest among treatments (P<0.05). This result may provide the standard data of different stocking densities for large-type broiler and the further research is needed.

Growth Performance and Carcass Yield of Heavy Female Broiler at Different Stocking Densities (다양한 사육 밀도에서 대형 육계 암컷의 생산성과 도체 수율)

  • This work was carried out to investigate performance and carcass yield of large-type broiler females at different stocking densities. Chicks (n = 492; 1-day-old; female; Arbor Acre broiler) were reared for six weeks (starter, 0~1 wk; earlier, 1~3 wk; finisher, 3~6 wk) and randomly divided into 3 treatments (4 replications/treatment, 36, 41 or 46 birds/replication). Treatments were T1 (10.9 birds/$m^2$), T2 (12.4 birds/$m^2$) and T3 (13.9 birds/$m^2$) by the stocking densities. Research indexes were livability, body weight, body weight gain, feed intake, feed conversion ratio, production efficiency factor, carcass yield and primal cuts ratio (wing, leg, back, breast and neck). Livability (%) was 90% or more for all treatments, but there was no significant difference on weekly livability (%). Body weight of T3 treatment were the lowest at 3 wk and body weight gain, feed intake, and feed conversion ratio were the lowest at 2~3 wk (P<0.05). Production efficiency factors of T1, T2 and T3 were 331.0, 340.8 and 336.0, respectively, and there was no significant difference among treatments. Leg meat ratio of T2 treatment was higher compared to other treatments at the age of 4 wk (P<0.05). Carcass yield of T1 treatment was the highest as 76.2% at the age of 5 wk (P<0.05). However, there was no significant difference on carcass ratio and partial meat ratio among treatments at the age of 6 wk. This result may provide the standard data of different stocking densities for heavy female broilers.

The Study on Growth Performance and Carcass Yield of Meat-type Korean Native Ducks (토종오리 육용종의 생산성과 도체수율)

  • This study was carried out to investigate the growth performance and the carcass ratio of meat-type Korean Native Ducks. Four hundred twenty Korean Native Ducks' chicks were selected and divided into four treatments (7 replications/ treatment, 15 birds/replication) by strains (A and B) and gender(male and female) with $2{\times}2$ fractal factors. There was no significant difference between A and B on the body weight at 2, 4, 6, and 8 weeks old (P>0.05). However, body weight of female was higher at 2 weeks old than male while that of male was higher at the 8 weeks old (P<0.01). Daily feed intake of male was higher compared to female during 6~8 weeks (P<0.05). On weekly body weight gain, there was no significant difference between strains, but gained body weight of male was higher until 2 weeks old while that of female was higher during 6~8 weeks (P<0.01). On the live body weight and carcass weight by strains and genders, B strain was higher than A strains at the 8 weeks of age (P<0.01). Carcass yield was the highest at 8 weeks of age in both strains (P<0.05). These results may provided the basic data on growth performance and carcass ratio of meat-type Korean Native Ducks.

Effects of Light Sources in Poultry House on Growth Performance, Carcass Yield, Meat Quality and Blood Components of Finishing Broilers (계사 내 광원이 육계 후기의 생산성, 도체수율, 육질 특성 및 혈액성분에 미치는 영향)

  • This study investigated the effect of different light sources in the poultry house on performance, meat quality, and blood composition of finishing broilers. Two hundred and forty male broilers (1-day-old, 42.2±0.1 g) were divided into three groups and subjected to different light source treatments (incandescent, LED, and fluorescent lamps) from 3 weeks of age (four replications/treatment, 20 birds/replication). After breeding for 6 weeks, the carcass yield and meat quality of broilers with similar body weight (BW; 3.4±0.07 kg) were investigated, and blood components were analyzed. Corn-soybean meal-based feed was provided as starter (CP 22.5%, ME 3,020 kcal/kg), early (CP 18.5%, ME 3,050 kcal/kg), and finishing (CP 18%, ME 3,100 kcal/kg). Performance, carcass yield, meat quality, and blood components were evaluated. BW, BW gain, feed intake, and feed conversion ratio did not show any significant differences among treatments. There was no significant difference on live weight and carcass yield among treatments. There was no significant difference on meat color, shear force, and water holding capacity; however, cooking loss at 17.2% was the highest in the LED treatment (P<0.05). There was no significant difference on blood components except for glucose (blood biochemistry component) among treatments. Glucose was 234.5 mg/dL, 256.9 mg/dL, and 250.1 mg/dL in the three treatments, respectively, with a significant difference between incandescent and LED treatments (P<0.05). These results are used useful as basic data for investigating the effect of lighting in broilers production.

Effects of Regulate in Feed Intakes on Performance and Meat Quality in Old Laying Hens (산란성계에서 사료 급이량 조절이 생산성과 계육품질에 미치는 영향)

  • This study aimed to investigate the effects of reducing feed intake on performance and meat quality in old laying hens. A total of 200 Hy-Line Brown laying hens (100 weeks old) were randomly allotted to five dietary treatments: control (100% daily feed intake), 90%, 60%, 50%, and 20% daily feed intake. Each treatment was replicated four times with 10 birds per replication and two birds per cage. Ten-bird units were arranged according to a randomized block design. The feeding trial lasted for 4 weeks under a 16L:8D lighting regimen. The results indicated that the daily feed intake correlated with hen-day egg production and feed conversion ratios (P<0.05). The carcass yields and partial ratios were also correlated with daily feed intake (P<0.05). The levels of leukocytes (without basophils) were higher in the 50% and 20% daily feed intake groups than in the other groups. The concentrations of dry matter, crude ash, crude fat, and crude protein, water holding capacity, cooking loss, and fatty acids in the breast meat did not decrease as the daily feed intake decreased. In conclusion, reducing daily feed intake decreased laying performance and carcass yield but had no effect on breast meat quality.
