Use and Assessment of Home-Delivered Meal Service for Children from Low-Income Families (가정배달도시락 수혜 아동의 도시락 서비스 이용 실태와 평가)

  • The purposes of this study were to investigate consumption of home-delivered meals among children from low-income families and to assess their perception of the home-delivered meal service. A survey was conducted on 392 children who had received home-delivered meals, and 208 questionnaires (response rate: 53.1%) were analyzed using SPSS (ver 18.0). The respondents consisted of elementary school students (36.1%), middle school students (33.7%), and high school students (30.2%). Approximately half of children received home-delivered meals during their semester and vacation periods, and 52.2% of respondents shared the delivered meals with their brothers or sisters. Eighty-six point one percent of respondents consumed delivered meals within 4 hours after the meals were received at home, and approximately a fifth of respondents left the delivered meal boxes on a sink counter or table until eating. Leftover foods were kept in the refrigerator (52.2%) or on the sink counter/table (2.5%). The quality of the home-delivered meal service was assessed as 3.3 points based on a 5-point scale. 'Food safety is good' received the highest score (3.62) and 'Food taste is good' received the lowest score (3.07). The results showed that children receiving the home-delivered meal service should be provided information on proper handling and consumption of the delivered meals at home.

The Effect of Label Design Images on the Intention of Purchase in Convenience Store Lunch Box (편의점 도시락의 라벨 디자인 이미지가 구매의도에 미치는 영향)

  • The purpose of this study is to analyze the effect of the visual element of the label design image of premium lunch boxes and general lunch boxes on purchasing intention. As a method of research, the label design images and purchase intentions of premium lunch boxes and general lunch boxes from the nation's leading convenience store brands, Seven Eleven, GS25, and CU, were investigated through a survey, T-verification was conducted based on the measured average value and standard deviation was completed after analysis with SPSS 21. The results of the study showed that the label design of premium lunch boxes was recognized by consumers as a premium image that was a point of differentiation from general lunch boxes, and that the proportion of "quality" and "menu composition" was high, This indicates that convenience store premium lunch boxes could also offer consumers a competitive edge in value that is considered premium other than "price."

A Study on the Utilization and Satisfaction of Convenience Store Lunchbox by Food-Related Lifestyle: On the Adults in their 20s and older in Seoul, Gyeonggi and Chungcheong Provinces (식생활 라이프 스타일에 따른 편의점도시락 이용 현황과 만족도에 관한 연구: 서울, 경기 및 충청지역 성인을 대상으로)

  • This study investigated the utilization and satisfaction of lunchboxes according to food-related lifestyle. A sample of 819 adults who regularly purchased lunchboxes were studied. This study can provide basic data for effective menu development. The participants of the study were classified into 4 groups: a 'taste-seeking group', an 'economy-seeking group', 'a convenience-seeking group', and a 'health-seeking group'. The purchase price of lunchboxes was in the range of 3,500 to 4,000 won. The 'health-seeking group' was shown to spend the highest amount on lunchboxes, over 5,100 won. Information about lunchboxes was obtained primarily through convenience stores followed by Internet SNS (p<0.05). Most participants considered nutritional value when purchasing a lunchbox (p<0.001), of which protein, caloric, and sodium content were perceived as important. Moreover, lunchboxes with clean and hygienic aesthetics were preferred amongst the 'health-seeking group' (p<0.01). The 'economy-seeking group' had a higher satisfaction linked with taste (3.66) and quantity (3.60, p<0.001). Furthermore, in terms of the satisfaction with a menu variety the 'health-seeking group' showed the highest satisfaction with a score of 3.76, while the 'convenience-seeking group' ranked the lowest satisfaction with a score of 3.46 (p<0.05). All groups were satisfied with the convenience for purchasing lunchbox (p<0.001). Additionally, most participants preferred white rice (p<0.001) and meat (p<0.01) with cooked by fried and grilled. Lastly, in the content of the lunchbox use in the future, most participants indicated the intent for continuous use (p<0.01) and recommendation to others with the reason for the low price (19.2%) in the 'economy-seeking group', fresh ingredients (16.2%) in the 'convenience-seeking group', and nutritive (17.3%) in the 'health-seeking group', as well as for the convenience of purchase in the overall groups. Taken together, 'taste' and 'convenience' were the most important factors for all groups, while 'nutrition of food' and 'addition of condiments' scored relatively low on the satisfaction in all groups. Therefore, we recommend for the growth of the convenience store lunchbox market, that it is necessary to improve the quality of the lunchbox by developing various menus based on lifestyle group and fortifying nutrition.

  • The 1-serving lunchbox app is designed and developed for enabling consumers to order their lunch box by choosing their own lunch side dishes. In modern society, one-person households are growing in larger areas. It is too burdensome to handle alone because it is cumbersome to cook alone and you should order from two people in a restaurant shop. To resolve such inconveniences, it is an app to choose various detailed menus and order personalized lunches. In the process of selecting a detailed menu, information provided by big data is used. You can use the existing order through the bookmark function, or you can use the recommended lunch menu using big data.

A comparison study of hygiene status in meals for poorly-fed children through microbiological analysis (결식아동이 이용하는 도시락의 미생물 검사를 통한 위생 상태 비교.분석)

  • Purpose: The purpose of this study was to assess hygiene status of meals for poorly-fed children through microbiological quality. Methods: Meals were provided by two social enterprises, one franchise, and one convenience store. There were a total of six meal samples; two samples (social enterprise meal 1; SEM 1, social enterprise meal 2; SEM 2) from two social enterprises, respectively, two samples (franchise meal 1; FM 1, franchise meal 2; FM 2) from one franchise, and two samples (convenience store meal 1; CSM 1, convenience store meal 2; CSM 2) from one convenience store. Microbiological analysis and assessment were performed by Korean food standards codex (KFSC). Results: General bacteria and E. coli in SEM 1 were detected, but the levels were not over KFSC, and Coliform less than $9.2{\times}10$ CFU/g was also detected in seasoned bean sprouts of SEM 1. General bacteria was detected at $1.6{\times}10^6$ CFU/g in cabbage kimchi of SEM 2. Coliform was detected in cabbage kimchi, squid cutlet, stir-fried pork, and fried chicken of FM1 and 2, but the levels were not over KFSC. In addition, S. aureus was detected in cabbage kimchi and seasoned dried white radish of FM 1 and 2 ($9.8{\times}10^2$ CFU/g, $9.4{\times}10^3$ CFU/g respectively), thus was over KFSC. B. cereus was detected in stir-fried pork and fried chicken ($1.2{\times}10^3$ CFU/g, $1.5{\times}10^3$ CFU/g respectively) of FM 1 and 2, thus was over KFSC. Finally, S. aureus was detected in stir-fried dried squid, seasoned spicy chicken, and stir-fried kimchi of CSM 1 and 2, and was over KFSC too ($9.5{\times}10^4$ CFU/g, $2.4{\times}10^2$ CFU/g, $1.3{\times}10^3$ CFU/g respectively). Conclusion: Results of this study suggest that systemic management of hygiene is necessary to safely providing meals to poorly-fed children.

  • Microbiological quality of packaged meals (Dosirak) was assessed in three operations under the both conditions of actual food processing and simulated time-temperature. Time and temperature data indicated that all the phases after cooking were critical for microbiological quality control. Microbiological test results by simulated time-temperature conditions revealed that microbiological quality of packaged meals decreased as the storage time and temperature increase. Delivery practices without refrigeration in summer and hot-holding below $60^{\circ}C$ in supermarket were crucial in microbiological quality control.

A Study on the Importance of Information on Lunchbox Labels in Convenience Stores (편의점 도시락 레이블의 정보 중요성에 관한 연구)

  • This study is about convenience store lunchbox labels for efficient information transmission. Its purpose is to identify the importance of the information that buyers want and to establish labels that can help buyers when purchasing lunchbox. The literature research and survey identified the factors that buyers consider important when purchasing lunchbox, analyzed the information identified on the label and the order of importance of the information. The study found that label information that lunchbox buyers think is important was in order of price, expiration date, calories, lunchbox components, and date of manufacture. Also, buyers who do not check labels pointed the less readable labels. This study expects that the information that buyers think is important will be newly established on labels so that buyers can easily check and purchase information through labels.

A Study on the Lunch Box Promotion of Convenience Store by Commercial Areas (상권별 편의점 도시락 판매 전략에 관한 연구)

  • In order to establish a sales strategy for convenience store lunches, this study conducted analysis using association rules based on POS data obtained from convenience stores located in four commercial districts. For this purpose, the data used in the analysis were divided into the time zones from 6:00 am to 8:00 pm, 17:00 pm to 19:00 pm, and the convenience stores according to the commercial areas. As a result of the analysis, it was found that products that were sold together with a lunch box were mainly made of products that could be eaten together with lunch such as milk, beverage, and cotton. However, it was confirmed that there were differences in the types and numbers of the products that were sold together with the lunch boxes of the morning time and the afternoon hours for the other products. These results and approaches are expected to contribute to finding and responding to the needs for goods and services that change as well as convenience stores as well as sociocultural changes.

Changes in Temperature during Storage of Lunch-Box and Effects of the Heat Insulator Use on the Lunch-Box Freshness (도시락 보관중 온도변화와 신선도 유지를 위한 단열재 사용효과)

  • This study was executed to investigate proper storage conditions for freshness of lunch-box and prevention of lunch-box borne illness. When boiled rice was put into the empty lunch-box without cooling, temperature of the lunch-box was $70^{\circ}C$ to be able to destroy vegetative cell of microoganism in the lunch-box. Temperature of the side-dish canister that is placed on the hot lunch-box was increased from $15^{\circ}C$ to $53^{\circ}C$. The use of the insulator(one to two layer) between the lunch-box and side-dish canister was effective in insulation of the heat that is conducted from the hot lunch-box to the side-dish canister. The insulation layer(asbestos) was also effective to inhibit the decrease of pH value and growth of microoganisms in the toiled rice and side-dish during storage of the lunch-box. The number of microoganisms in the lunch-box covered without cooling was less than in the case of lunch-box covered after cooling; however, the amount of generation in condensed water that is responsible for swelling of boiled rice in the lunch-box occurred much more in the one than in the other, and was a little generated in the case of high temperature storage, insulator use, and when covering the lunch-box after cooling, and pre-evaporation by stirring boiled rice in the cooking pot before filling it. In addition, inserting the heat insulators on and bottom of the lunch-box the boiled rice can be eaten without coldness in winter season.
