The Effect of addition of kinds of sugar and drying method on Quality and Storage Characteristics of Beef jerky (첨가당과 건조방법이 육포의 품질과 저장성에 미치는 영향)

  • To investigate the effect of sugar and drying method on quality and storage characteristics of beef jerky, storage, textural and sensory characteristics were examined. Water activity was decreased as storage time was prolonged and the honey and rice syrup-added natural dried samples(N-H, N-R) were recorded the lowest value, 0.71 at five weeks of storage. During the storage period, pH values of all the samples were decreased and honey-added and heated air dried beef jerky(H-H) had the lowest pH value, 5.22. L, a, b values had a tendency to decrease, during the storage period. During the storage period, TBA values of all samples showed increasing tendency. Sugarsyrup-added samples(N-S, H-S, S-S$\^$*/) had the lowest TBA value, and those of honey-added samples(N-H, H-H, S-H$\^$**/) were highest, regardless of drying method. Total plate counts of bacteria and the number of lactic acid bacteria were increased as storage time was prolonged. Sugar syrup-added and heated air dried beef jerky(H-S) had the lowest in total plate counts of bacteria and the number of lactic acid bacteria, at five weeks of storage. Textural properties value of all samples were increased as storage time was longer. Honey-added samples showed the higest springness and cohesiveness value and sugarsyrup-added and natural dried sample showed the highest value in chewiness, gummness and hardness. In the almost sensory score of natural dried beef jerky was decreased asstorage time was prolonged, regardless of packaging method. Effect of Extract or Crude Enzyme Extracted from the Fruit of Paper Mulberry (Broussonetia kazinoki Siebold) on Tenderness and Palatability of Jangchorim (닥나무 열매(緖寶子)의 농축액과 조효소가 장조림의 맛과 연화에 미치는 영향)

  • The purpose of this study was to investigate the effect of the addition of the extract (0, 2, 4, 6, 8%) and crude enzyme (0, 0.05, 0.1, 0.5, 1%) extracted from the fruits of paper mulberry (Broussonetia kazinoki Siebold) on the tenderness and palatability of Jangchorim. Addition of up to 8% of the extract diminished the shear force by 4.8∼27%, while the addition of up to 1% of the crude enzyme begot 7.8∼34.2% decrease. Also, as the addition of the fruits of paper mulberry increased, the cooking loss was somewhat decreased, an the redness of cooked beef surface and free amino acid content in the liquid part of Jangchorim were generally increased. The contents of the mineral were in the order of Na, K, P, Ca, and Mg when crude enzyme was added. In sensory evaluation, the 4% crude extract from the fruit of paper mulberry and 0.1% addition in its crude enzyme showed the most favorable response.

Effect of Feeding Broiler Litter and Bakery By-product Ration on Production, Economy and Meat Quality of Growing Hanwoo Steers (육계분-제과부산물 혼합사료 급여가 육성 거세 한우의 생산성, 경제성 및 육 특성에 미치는 영향)

  • This study was conducted to determine the effect of feeding a mixture of broiler litter and bakery by-product on production, economy and meat characteristics of growing ‘Hanwoo’ steers. A control diet (conventional formulated feed and rice straw) and a treatment diet(90% mixture of broiler litter 64% and bakery by-product 36% and 10% rice straw on DM basis) were prepared on an isoenergetic basis and fed to 20 steers for 12 weeks. Palatability of TMR by ‘Hanwoo’ was fair. Compared with feeding a control diet, feeding a treatment diet resulted in increased(P〈0.05) DM intake, similar OM intake, similar daily weight gain(0.75 vs 0.64 kg/d) and feed efficiency of DM(10.1 vs 12.5) and OM(9.0 vs 10.6), considerably(45%) reduced(P〈0.05) feed cost/gain, and similar meat characteristics. These results show that a mixed ration manufactured with broiler litter and bakery by-product may be potentially used for growing ‘Hanwoo’ steers.

Effect of Salicylic Acid on the Root Growth and the Eleutheroside Accumulation in the Adventitious Root Culture of Eleutherococcus senticosus (가시오갈피나무 불정근(不定根) 배양(培養)에서 불정근(不定根)의 생장(生長)과 Eleutheroside류(類)의 생산(生産)에 미치는 Salicylic Acid 처리(處理)의 영향)

  • This study was carried out to investigate the dose-dependent effect of salicylic acid on both the adventitious root growth and the accumulation of various eleutherosides in the bioreactor culture of Eleutherococcus senticosus. The highest biomass production (5.4 g DW/L) was observed in the absence of salicylic acid, while the root growth was significantly decreased by increasing the concentration of salicylic acid. Salicylic acid stimulated the production of both eleutheroside B, E and $E_1$. The highest levels of eleutheroside B ($179.5{\mu}g/g$ DW), E ($1169.9{\mu}g/g$ DW) and $E_1$ ($45.4{\mu}g/g$ DW) were obtained by the addition of $80{\mu}M$ of salicylic acid. The maximum eleutheroside production was $4975.8{\mu}g/L$ when salicylic acid was not added. In addition, when the adventitious roots were cultured in the basal medium supplemented with $80{\mu}M$ of salicylic acid, the highest levels of eleutheroside B was observed at the 9th day, while eleutheroside E and $E_1$ were observed at the 6th day, respectively.

Quality Characteristics of Low-Fat Plant Oil Emulsion Pork Patties (식물성유 유화물로 대체한 저지방 돈육 패티의 품질 특성)

  • This study investigated the effect of plant oil emulsion as a replacement for animal fat on the quality characteristics of low-fat pork patties. Pork patties were manufactured using a pork fat control (CON) and olive (OPP), soybean (SPP), and canola (CPP) oil emulsions. Replacing animal fat with the plant oil emulsions increased the moisture content and decreased the fat content of the patties as compared to those with pork fat. The water holding capacity and cooking yield, and the moisture and fat retention of the patties were significantly increased, and the diameter reduction and shrinkage ratio decreased with the plant oil replacements. The color parameters of the samples were affected by the addition of the plant oil emulsions, and higher L* and a* values were observed in CON. The b* value of the raw pork patty was highest in OPP, and palmitic acid was the most abundant saturated fatty acid. In terms of unsaturated fatty acids, oleic acid was highest in CON, OPP, and CPP, and linoleic acid was highest in SPP. Hardness, cohesion, and chewiness were no different among the samples, although higher springiness was observed in the pork patties with added plant oil emulsions. The taste, flavor, and palatability of the OPP and CPP patties were higher than in the CON and SPP groups. Fat replacement with plant oil emulsion therefore had a positive effect on the quality characteristics of the pork patties, and due to reduced saturated fatty acids, the end-product provides the healthy low-fat option desired by consumers.

Roughage Value of Deepstacked Rice Hulls-bedded Broiler Litter in Sheep (퇴적발효 육계분의 면양에서의 조사료적 가치 평가)

  • This study, in which sheep were used as models for beef cattle, was conducted to determine the effect of replacing 100% of rice straw with deepstacked broiler Iitter(BL) as a roughage source on total tract apparent digestibility, digestible nutrient intake, ruminal and blood parameters, and N balance of sheep. Under the conventional formulated mix-rice straw(60: 40) feeding system(control), replacement of rice straw with BL resulted in similar(P> 0.05) total tract apparent digestibilities of fiber and organic matter, similar(P> 0.05) intake of digestible NDF, ADF and organic matter, and higher(P <0.05) intake of digestible crude protein. Feeding BL instead of rice straw resulted in 10wer(P <0.05) ruminal pH, higher(P <0.05) $NH^3-N$ concentration and similar(P> 0.05) rominal volatile fatty acid percentage and blood urea concentration. In a N balance study, increased(P<0.05) N intake for the BIAed group induced higher(P <0.05) quantities(g/d) of fecal and urinary N excretion, bodily N absorption, and N retention. It was concluded that deepstacked BL fiber was comparable to rice straw fiber as a roughage source and BL protein was also favorably utilized within the body of ruminant.

Studies on the characteristics of concentrated soy protein (농축 콩단백질 분리 및 추출에 관한 연구)

  • The purpose of this study was to investigate the nutritional characteristics of selected soybeans grown in Korea to isolate concentrated proteins. Examination of the general characteristics revealed that the pH and apparent density of Phaseolus radiatus L. protein and concentrated Vigna angularis protein were significantly higher than those of other concentrated soy proteins. The water absorption capacity was high for concentrated Pisum sativum L. protein, whereas the oil absorption capacity was high for concentrated Glycine max (L.) Merr. protein. The emulsifying activity and emulsifying stability were higher and significantly higher, respectively, for enriched P. radiatus protein. Considering the functional characteristics of concentrated soy protein, its application as a food material in the meat product industry in Korea may be of potential value.

Development of Giant Squid (Ommastrephes bartrami) Surimi-based Products with Gel Texture Enhancers and the Effects of Setting on Gel Quality (겔 강화제를 첨가한 대왕오징어 어묵 개발 및 이의 품질에 대한 Setting의 영향)

  • Setting is an important process for the control of surimi quality in industry because it can improve the gel texture and water-holding capacity of surimi-based products. Therefore, the effect of setting on giant squid surimi-based product was analyzed via a mixture model. Konjac flour and microbial transglutaminase were used as texture enhancers. Both texture enhancers improved the texture and water retention ability (WRA) of giant squid surimi-based products, while decreasing the whiteness. Setting also improved the gel texture and WRA, while having no effect on the whiteness. Based on the sensory evaluation, the product with gel texture enhancers was better than the control and similar to commercial surimi products. Therefore, the applications of gel texture enhancers and setting are very important for the manufacture of giant squid surimi-based products.

  • Effects of Monascus koji on color, peroxide value, textural properties, microbial stability, and sensory characteristics of bologna-type sausage during storage at $4^{\circ}C$ for 22 days were studied. Addition of 2% Monascus koji resulted in attractive color and distinctly improved color retention. Lipid oxidation was effectively inhibited by lowering the level of peroxide value. Textural properties and microbial stability of the samples were not affected, whereas color was improved by the addition of Monascus koji. Utilization of Monascus koji in meat product could reduce the use of nitrite and inhibit lipid peroxidation during storage.
