A Study on High-acidity Rubus coreanus Concentrated Vinegar Production Using Freeze Concentration Method (동결농축법을 이용한 고산도 복분자 농축식초 제조에 관한 연구)

  • Until recently, various studies for the production of high-acidity vinegar have been conducted, but there have been few studies on the concentration process of vinegar. In this study, the possibility of introducing freeze-concentration method was investigated for the production of high-quality, high-acidity vinegar. Acidity, pH, specific gravity, and glucose concentration were measured for frozen concentrated vinegar fractions obtained by freezing and thawing three types of Rubus coreanus vinegar with different acidy (7.53, 5.43, and 3.72). Acidity, specific gravity, and glucose concentration were all highest when 15% of the original vinegar was thawed. pH was the lowest when 15% of the original vinegar was melted. As a result of the measurement of cumulative acidity, when 20% of the original vinegar was melted, it was the highest at 9.32, which was 3.89 higher than that of the original vinegar. In this study, it was confirmed that vinegar can be effectively concentrated using the freeze concentration method and at the same time, the thawing ratio can be controlled to effectively obtain vinegar with the desired acidity. However, it is considered that studies such as organic acid and amino acid analysis are needed to determine whether the freeze-concentration method is introduced into the high-acidity concentrated vinegar manufacturing process.

Thickening of Activated Sludge Using Low Pressure Flotation Pilot System (파일롯 규모의 저압형 부상장치를 이용한 하수슬러지 농축에 관한 연구)

  • Low pressure air flotation (LAF) pilot plant for sludge thickening was installed in Chung Nam N.S. municipal waste water treatment plant to verify its application possibility. Effects of operating conditions such as coagulant dosages and microbubble water ratio on thickening of the mixed sludge were examined. Microbubbles which were generated in the chamber of $1.5kgf/cm^2$ by high speed collision method with foaming agent were used to float sludge. Solid loading of $30kg/m^2/hr$, solid contents in thickened sludge of 60,300 mg/L and SS removal efficiency of 99% were obtained through long period operating LAF in conditions of mixed sludge concentration of 14,400 mg/L, coagulant dosage of 27.6 mg/L, foaming agent addition of 4.0 mg/L and microbubble water injection ratio of 9.7%.

The Quality Characteristic of Ginseng Cultured in Bioreactor System (생물반응기에서 배양된 인삼의 품질 특성)

  • In the present study, we investigated the quality characteristic of ginseng cultured in bioreactor system and the optimum recipe condition of the liquid tea using cultured ginseng. The contents of soluble solid and crude saponin in cultured ginseng were 31.8% and 1.94%, respectively, which were lower than commercial ginseng. In the concentrated extract, crude saponin content was 4.77% and the contents of ginsenoside Rc, Re and Rg$_1$were 7.36, 4.40 and 1.75 mg/g, respectively. The ginsenoside Rb$_1$and Rb$_2$, main contents of commercial ginseng, were not detected. The optimum ranges of recipe on organoleptic properties of ginseng liquid tea were estimated on 9.0~10.4% of the extract, 6.8~8.1% of apple vinegar and 40% of fructose. The liquid tea using commercial ginseng showed higher scores of sensory lest than the liquid tea using cultured ginseng in bioreactor system at the given condition, 10% of the extract, 7% ofapple vinegar and 40% of fructose, with the same recipe condition ranges.

Change of Physicochemical Characteristics of Persimmon Vinegar by Vacuum Concentration (진공농축에 따른 감식초의 이화학적 특성 변화)

  • This study was performed to offer fundamental data for concentration of persimmon vinegar. The $5.4^{\circ}Bx$ raw persimmon vinegar was concentrated to $20^{\circ}Bx$, $30^{\circ}Bx$, $40^{\circ}Bx$, $50^{\circ}Bx$, $60^{\circ}Bx$ and $70^{\circ}Bx$ concentration by vacuum concentration at $55^{\circ}C$ and diluted to $5.4^{\circ}Bx$ solution with distilled water. The physicochemical properties such as color, viscosity, pH, acidity, organic acid content and free sugar content of various persimmon vinegar concentrates were examined. The recovery yield of water soluble solid to concentrates was 55.5% on $20^{\circ}Bx$ vacuum concentration. Color of $5.4^{\circ}Bx$ persimmon vinegar diluents from concentrates became more dark brown by vacuum concentration. Flow behavior of persimmon vinegar concentrates was pseudoplastic. As the concentration of persimmon vinegar concentrates increased, pH of $5.4^{\circ}Bx$ diluents increased and acidity as acetic acid decreased compared to original raw vinegar. Acetic acid, lactic acid and citric acid were detected, malic acid and oxalic acid were not detected in persimmon vinegar concentrate. Fructose and sucrose only were detected in persimmon vinegar concentrate.

Manufacturing Method of Red Ginseng Extract Pills by Centrifugal Coating Granulating System (원심분리 코팅방식을 이용한 홍삼농축액 환의 제조방법)

  • The centrifugal coating granulating system, a new method of preparing red ginseng extract pills, has been developed. The red ginseng extract was first powdered with 85.5% of edible ethanol and dried for 3 to 4 hours at 50$^{\circ}C$. The powders were fed in chamber of centrifugal coating granulating system and then granulated, sequentially. The centrifugal system operated at 20 to 50$^{\circ}C$ of inlet temperature, 1 to 1,000 g/min of feeding speed, 60 to 70$^{\circ}C$ of atmosphere temperature of intake, 3.0 to 4.0 bar of spray atmosphere pressure, 1,000 to 1,500 rpm of centrifugal plate speed and 25 to 40$^{\circ}C$ of outlet temperature. The product yield was about 85% and preparation time was 7 to 8 hours. Especially, major ginsenoside components of red ginseng were not decomposed after processing of red ginseng extract pill.

  • Seawater desalination plants generally have two inherent problems which stem from energy inefficiency and desalination concentrate management. The former has been somewhat resolved thanks to the innovative methods in utilizing new and renewable energy resources whereas the latter still has much issues to be dealt with. This paper introduces the application of a desalting process for the disposal of desalination concentrate (especially, Mg) and to improve its cost effectiveness of a MVR seawater desalination plant built in Jeju. Principal component analysis on the desalination concentrate has revealed a steady reduction of Mg with the application of the desalting process verifying its functional reliability. Also, it was found that our MVR seawater desalination plant is not only energy efficient but also could be effectively applied for the dual purpose of fresh water production and concentrate management.

Octimization of Conditions of Filtration and Concentration of Methanol Extract for Recovery of Paclitaxel from Plant Cell Culture (식물세포배양으로부터 Paclitaxel 회수를 위한 메탄올 추출액의 여과 및 농축 조건 최적화)

  • This study examined the conditions of filtration and concentration of methanol extract from biomass. Filtration efficiency was improved by adding diatomaceous earth as a filter aid. The optimal amount of diatomaceous earth was 6% (w/w) to reduce the filtration time. The filtration time was reduced by 4.2% in first extraction, 30.0% in second extraction, 22.8% in third extraction, and 19.0% in fourth extraction, respectively. The optimal temperature of water bath was below 50$^{\circ}C$ for preventing paclitaxel degradation during concentration of methanol extract using a rotary evaporator. The temperature of concentrated solution in rotary evaporator was relatively low compared to bath temperature because of latent heat of evaporation. The stopping point of concentration in rotary evaporator for the following step was at a specific gravity of 0.96 of the concentrated solution in terms of the purity and yield of paclitaxel. This information is very useful for mass extraction of biomass for the recovery of paclitaxel from plant cell culture.

Quality Characteristics of Sansapyun Prepared with Various Amounts of Sansa Concentrate Gelatinized with Chinese Water Chestnut Starch (산사농축액 첨가량에 따른 올방개 전분 산사편의 품질특성)

  • The purpose of this study is to investigate the characteristics of Sansapyun prepared with various amounts of Sansa concentrate(0%, 5%, 10% 20%, 30%) gelatinized with Chinese water chestnut starch. The Moisture contents and pH values decreased with Sansa concentrate increased. The Hunter L value of Sansapyun significantly decreased(p<0.001), but a, b values increased with Sansa concentrate increased. The hardness, springiness, chewiness, gumminess, cohesiveness were the highest in the control sample(0%) and the adhesiveness was the highest in Sansapyun with 30% sansa concentrate. In the sensory evaluation, red color, sour flavor, fruity flavor, Chinese medicine flavor, Sour taste, Chinese medicine taste, brittleness, stickiness increased with Sansa concentrate increased. Sleekness, hardness, springiness, gumminess decreased with Sansa concentrate increased. Sansapyun prepared with 10% Sansa concentrate showed the highest acceptance score(p<0.001). In addition, this study showed the possibility of Chinese water chestnut starch which is less expensive and easily available as a good replacement starch for traditional mung bean starch to prepare Kwapyun.

Selective Enrichment of EPA end DHA by Adduct Formation of Folly Acids of Fish Oil and Urea (어유 지방산과 요소의 부가화합물 형성을 이용한 EPA와 DHA의 선택적 농축방법)

  • A modified method of urea adduct formation, in which water and organic solvent were used as the wetting agent and the reaction medium. respectively, is suggested to obviate methanolysis and to ease recovery in the separation of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) from fish oil. With the new method the fraction in which the total content of EPA. DHA and their precursors is more than 80% could be obtained. Although the total content of precursors in the concentrate was hardly affected by the kind of the wetting agent or the organic solvent, the content of EPA and DHA varied significantly depending on the organic solvent. This finding made it possible to selectively enrich the desired components. After DHA-enriched fraction (I)HA is 50%) was obtained by using pentane, EPA-enriched fraction ( EPA is 53%)) could be obtained from the residue of DHA-enriched fraction by using heptane.

Physicochemical and Sensory Characteristics of Makgeolli with Pomegranate (Punica granatum L.) Juice Concentrate Added (석류즙 농축액을 첨가하여 제조한 막걸리의 이화학적 및 관능적 특성)

  • The optimum conditions for manufacturing pomegranate makgeolli, cloudy Korean rice wine, treated with different levels of pomegranate (Punica granatum L.) juice concentrate were investigated. The pH, titratable acidity, amino acid content, soluble solid content, and alcohol content were measured, and the sensory properties of the makgeolli were evaluated. The pH, titratable acidity, soluble solid content and alcohol content of pomegranate makgeolli increased as the addition level of pomegranate juice concentrate increased. The amino acid content of makgeolli significantly decreased with increasing addition level of pomegranate juice concentrate. In the sensory evaluation, makgeolli with 3% pomegranate juice concentrate added during one-step-brewing had the most preferable flavor, sweetness, bitterness and overall acceptance among all samples. In conclusion, the addition of 3% pomegranate juice concentrate during one-step-brewing for makgeolli would be the best conditions for manufacturing pomegranate makgeolli.
