We evaluated the microbiological quality of a facility in which freshly cut onions were prepared. The total plate counts on walls, equipment, and raw materials were ND (not detected) to $10^1$ CFU/100 $cm^2$, $10^0{\sim}10^3$ CFU/100 $cm^2$, and $10^3{\sim}10^4$ CFU/g, respectively. No coliforms were detected on walls however, coliforms were detected at concentrations of ND to $10^3$ CFU/100 $cm^2$ and $10^3{\sim}10^4$ CFU/g on equipment and raw materials, respectively. The total plate counts for falling and floating bacteria in the processing plant were ND to $10^0$CFU/plate and $10^1{\sim}10^2$$CFU/m^3$, respectively. Pathogenic microorganisms such as Escherichia coli, Salmonella spp, Staphylococcus aureus, and Listeria monocytogenes were not detected on walls, equipment, or raw materials. Overall, the results of the study indicate that hygiene control at the fresh-cut processing plant should be improved.

We conducted a survey of actual using conditions of farm-made liquid fertilizers by investigating their formulation types, materials, making processes, using methods and various beneficial effects on 29 farms certified by National Agricultural Products Quality Management Service to produce environment-friendly agricultural products in 2009. Most of the materials used to make liquid fertilizers are those that can be easily obtained around the farms. Molasses or black sugar are added as an energy source of microorganism. And leaf mold, bacterial cultures supplied by agricultural extension centers of local governments, and cultures of native microorganisms were used as microbial sources for fermenting effective microorganisms. Types of the farm-made liquid fertilizers were fermented liquid fertilizers, fermented plant juices, amino acid liquid fertilizers, calcium-liquid fertilizers, and phosphoric acid liquid fertilizers. Effects of liquid fertilizers used by the farms were found to promote plant growth by supplying nutrition, to accelerate blooming and flower bud formation, to enhance the quality of agricultural products such as increase of sugar contents and improvement of storing conditions, to induce resistance against diseases and insect pests, and to cause endurance to high temperature stress. Chemical properties of the liquid fertilizers collected were analyzed. As a result, pH and EC range showed differences according to kinds of the liquid fertilizers. Amount of macro-nutrients, such as nitrogen and phosphoric acid, in most of the collected liquid fertilizers, was found to be low. Even though the liquid fertilizers were made from same materials, their contents was found to be different depending on the making process.
Removal rates of residual organic phosphorous pesticides (chlorpyrifos-methyl and fenitrothion) in Perilla leaves by various washing methods were determined. The removal rates using stagnant tap water were 20.05 and 17.70% for chlorpyrifos-methyl and fenitrothion, whereas 44.28 and 39.10% using flowing tap water, and 19.14 and 15.43% using activated carbon-added stagnant tap water, respectively. Activated carbon-added flowing stagnant tap water removed 25.29 and 15.43% of chlorpyrifos-methyl and fenitrothion, and removal rates were 53.51 and 50.62% with alkaline solution and 30.25 and 28.09% with acidic solution, respectively. With neutral detergent solution, removal rates were 81.52 and 76.56% for chlorpyrifos-methyl and fenitrothion, respectively. Results revealed washing method using neutral detergent solution was most effective for removing residual pesticides.
Quality changes in carrot during storage were studied to investigate the efficiency, cooling properties and the washing and storage effects of hydrocooling method. As a result of plotting the nondimensionalized carrot temperature versus cooling time, its cooling rate coefficient was shown $-0.0171min^{-1}{\sim}-0.0121min^{-1}\;(R^{2}=0.99{\sim}0.95)$, and $-0.141min^{-1}{\sim}-0.0038min^{-1}\;(R^{2}=0.98{\sim}0.92)$ in package condition7. Rate of weight loss and change in moisture content of carrot were not significantly different by treatment conditions during storage at $5^{\circ}C$. During storage at $15^{\circ}C$, however, weight loss of hydrocooled carrot was lower than that of non-treated carrot from the 30th to 40th day. Especially, PE was more effective than tray for packaging hydrocooled carrots. Carrot pretreated wish sterilizing agent, packed with PE vinyl film and with residual water removed after hydrocooling showed a lower decaying-rate than any other carrots. Changes in Hunter L and b values of hydrocooled carrot were slower than those of non-treated one. The carotenoids contents of stored carrot $(0.736{\sim}0.780mg%)$ decreased to $9{\sim}43%$ after 40 days of storage at $5^{\circ}C$ and before 20 days of storage at $15^{\circ}C$. It could be presumed that the addition of sterilizing agent reduced the initial level of overall microbial and coliform counts and their growth rate during storage.
Oxidant stress is a well-known pivotal parameter for the degenerative immune diseases including asthma, atopic dermatitis, and rhinitis. In order to screen for anti-asthma agents effectively, we first established the infrastructure of high throughput screening(HTS) for anti-oxidant agents from agricultural products and/or oriental medicine library extracted with water, methanol, dimethyl sulfoxide, ethyl acetate and juice, Using the screening system, we found that Chaenomelis langenariae, Rhus javanica L., Camellia sinensis, Helianthus annuus and Angelica utilis Makino had strong anti-oxidant activity. Moreover, Helianthus annuus, Rehmannia glutinosa Libo and Angelica utilis Makino have protection activities by treatment of an oxidant hydrogen peroxide. Together, these results suggest that screened agents could be potential agents against asthma, although the in vivo studies should be clearly tested.

피클(pickles)은 구미 각국에서 널리 애용되는 침채류이다. 수확한 농산물의 신선도를 유지하면서 장기보관 하기 위해 만들어진 것으로 여러 가지 방법이 시도되어 왔고, 동양에서는 높은 습도로 인한 곰팡이 증식을 억제하기 위하여 소금 절임 방법이 발달되었으며, 건조한 기후의 유럽에서는 세균번식을 억제하기 위하여 식초절임이 발달하였다. 피클이란 채소 또는 과실류를 소금, 식초 또는 여기에 향신료 등을 넣은 것에 절인 것을 총칭하는 것으로, 주로 오이, 컬리플라워, 양파, 미숙 토마토 등을 원료로 사용한다. 본 연구에서는 피클의 특징인 아삭아삭함을 유지하면서, 피클의 신맛과 한국 전통식장아찌를 혼용한 염장피클로, 기능적 특성을 가진 허브를 첨가하여 현대인에게 오는 성인병의 예방과 기능성 식품에 부가 가치를 높이고자 하며, 또한 피클 제조를 위한 고추의 품종 선정을 위한 기초 실험을 하고자 함에 있다. 풋고추, 청양고추, 꽈리고추 등 품종을 달리하여 제조한 고추피클의 숙성기간 중 품질특성을 실험하였다. 염도변화는 모든 품종에서 숙성기간이 길어질수록 염도가 낮아졌으며, 숙성이 완료되는 시점인 25일경에는 풋고추 2.95%, 청양고추 2.68%의 염도 변화를 보였다. pH변화는 세 품종간에 차이는 없는 것으로 보여졌으며, 숙성기간에 따른 차이도 거의 없는 것으로 나타났다. 고형분함량은 풋고추와 꽈리고추가 비슷한 경향을 보였고, 청양고추가 다소 높았다. 적정산도의 변화는 세 품종간에 차이는 없었지만, 숙성이 진행될수록 증가하는 경향을 보였다. 탁도변화는 꽈리고추가 가장 낮았고, 청양고추가 가장 높았으며, 숙성이 진행될수록 모두 탁해지는 경향을 보였다. 또한 피클의 경도변화는 풋고추는 0일에 45.12g 청양고추는 56.68g, 꽈리 고추 42.12g의 경도를 보였으며, 숙성최종단계인 25일에는 풋고추 20.33g, 청양고추 25.12g, 꽈리고추는 17.81g으로 꽈리고추의 경도가 가장 낮았고, 청양고추는 세 품종 중에서 가장 높은 것으로 나타났으며, 세 품종 모두 숙성이 진행될수록 경도가 현저히 낮아지는 것으로 나타났다.
Desorption experiments were carried out on soybean (Taegwang) at 5, 15, 25, 35, $45^{\circ}C$ for moisture contents between 6.74 and 28.87%(db). The method employed was to measure the equilibrium relative humidity (ERH) of air in contact with the grain under static conditions, using an electronic hygrometer. The effects of temperature and moisture contents were investigated, and the measured values were fitted to the modified Henderson, the modified Chung-Pfost, the modified Halsey, the modified Oswin and the modified GAB model. The ERHs of soybean under the moiture content of 16.67%(db) decreased with an decrease in moisture content and temperature, but the ERH of the moisture content of 28.87%(db) material decreased with an increase of temperature. The modified GAB model was the best in describing the EMC/ERH of soybean.
Pesticide contaminants content was determined about both general vegetables marketed at Garak-dong market and organic vegetables cultivated at Hongchun, Kangwon-do. The vegetables were kale, Angelica Keiskei Koidz, celery, lettuce and Allium fistulosum. Pesticide contaminants content of 5 kinds general vegetables were 93.5, 57.7, 112.4, 76.5, 65.2 ppm, respectively. This residual levels were showed 75.35, 70.68, 78.49, 70.49% about standard level, respectively. Angelica Keiskei Koidz was not able to calculate the residual level because the standard level was not established in Korea. In contrast, the residual levels of organic vegetables were determined 36.4, 21.0, 42.9, 29.1, 25.1ppm, respectively. This level was about 30% of standard level, 38.93, 36.40, 38.17, 38.04, 38.50% of general vegetables. At the result, pesticide contaminants content of organic vegetables was less than 40% of general vegetables.
This experiment was conducted to elucidate the effects of fruit bagging on the amounts of pesticide residues on/in pears with two pesticides, chlorpyrifos 25% WP, and penconazole 5% WP, and two pear cultivars, Niitaka and Hwangeum-bae. Residues of chlorpyrifos and penconazole in bagged pears were only $0.4{\sim}27%$ of those in non-bagged one. Residues of both pesticides in bagged and non-bagged pears were steeply reduced in the field but slowly reduced during storage. Residues of chlorpyrifos were more in the peel than in the flesh, while penconazole in bagged pear was evenly distributed in the peel and flesh. Chlorpyrifos was evenly distributed in outer bag and inner bag irrespective of bag materials, while most of penconazole was found in outer bag rather than in inner bag. To produce safer pear from pesticide residues, removal of bag before storage is recommended.
This study was conducted to investigate the quality and organoleptic properties of dehydrated onions with steaming and heating. Sliced onions were treated as follows: steaming time ($X_1$, 5~25 min); drying temperature ($X_2$, $55{\sim}70^{\circ}C$) and drying time ($X_3$, 4~20 hr). All the variables were modelled and analyzed using a central composite design and response surface methodology (RSM). The coefficients ($R^2$) of the water content and water activity model induced from RSM were 0.9514 (p<0.01) and 0.9455 (p<0.01), respectively. The water content and water activity were affected by the drying temperature and time. The $R^2$ on the models of Hunter's L, a, b values were 0.9419 (p<0.05), 0.8818 (p<0.01) and 0.9360 (p<0.01), respectively. Hunter's L, a, b values were affected by the drying temperature and time, but Hunter's b value was not affected by the steaming time. In addition, the $R^2$ on the models of overall palatability was 0.8867 (p<0.05). The maximum palatability response was 5.92 when the steaming time was 13.14 min, the drying temperature was $63.11^{\circ}C$ and the drying time was 14.49 hr.
