Effects of Postharvest Treatment of Plastic Film, Ethylene Scrubber, and Prolong on the Market Quality in 'Niitaka' Pears during Storage and Simulated Marketing (동양(東洋) 배 '신고(新高)'의 저장전(貯藏前) Plastic Film, Ethylene 제거제(除去劑) 및 Prolong처리(處理)가 저장(貯藏)과 유통조건(流通條件)에서 상품성(商品性)에 미치는 영향(影響))

  • This experiment was planned to find a proper postharvest handling technique of 'Niitaka' pears for storage. The effect of polyethylene film wrapping, ethylene scrubber, and Prolong application on maintanence of freshness were compared in prestored fruit.(60 days at $0^{\circ}C$). Weight loss was confirmed to be a major factor responsible for freshness loss during storage. Polyethylene film wrapping greatly reduced weight loss during storage but increased light skin browning. Also, in long-term storage, polyethylene film wrapping appeared not to be appropriate due to the severe occurrence of tissue senescence and/or senescence breakdown. Prolong application was found not to be effective on reducing weight loss as well as keeping freshness. Ethylene scrubber in polyethylene film wrapping effectively reduced the occurrence of light skin browning.

  • The study attempted to find out any effect to prevent photo aging of epoxy resin used for conservation by way of adding UV stabilizer, one of plastic additives. Specimens were made by adding HALS and UVA UV stabilizer as each concentration to 3 kinds of epoxy resin, which are most frequently used for artifacts joining and restoration process, and aging effects were investigated through Color change, SEM, contact angle, FTIR analysis during UV aging experiments. Last, usage suitability was checked when UV stabilizer was added through Universal Tensile strength tester. In result, it is impossible to prevent decomposition of chemical structure in spite of adding UV stabilizer but in the case of epoxy A and R, it is believed that photo aging such as yellowing or crack can be minimized without giving a big influence to adhesive strength of epoxy resin through adding less than 0.1% of UVA. It is expected that above will solve photo aging problem of epoxy resin used for joining and restoration of artifacts and will extend its life as joining and restoration materials.

  • To evaluate the effects of sucrose-fatty acid ester (SE) on bread-making characteristics, the dough mixing, gelatinization, baking properties with the addition of SE alone and together with other surfactants were investigated. SE increased the peak time and the peak height in mixogram, indicating that it contributed the elasticity of dough. In farinogram, SE increased the peak time and mechanical tolerance index, but reduced the dough stability. SE increased the peak viscosity and reduced the gelatinization temperature and maximum consistency temperature in amylogram. SE increased the specific volume of bread loaf and retarded the increase in hardness of bread during storage, showing its anti-staling effects. The maximum anti-staling effect of SE was observed at 0.5% level. The addition of SE (0.2%), SSL (0.15%) and ES-95 (0.15%) blend showed the maximum specific loaf volume, and that of SE (0.25%) and SSL (0.25%) did the maximum anti-staling effect.

  • The study has been performed on the improvement of bonding process and bond strength of HTPB propellant and liner using a polymeric curative. In case of liner using polymeric curative prepared from reaction of HTPB and TDI, migration of curative was decreased at bond interface. So EPDM insulation sanding and Desmodur RE coating process could be omitted in motor case preparation and bond strengths between the HTPB propellant and liner were increased. Also deterioration phenomena of bond strength could not be observed in accelerated aging test.

  • One of the critical problems to preserve books and documents in libraries and archives is the deterioration. Some of previous results showed that the major cause of paper deterioration was the acid-catalyzed hydrolysis of the cellulose in paper fibres and aging rate of acidic paper was faster than that of alkaline paper. Therefore, It is necessary to remove the acid in the paper for reducing the rate of paper deterioration. It has been reported to extend the useful life of acidic paper by three to five times. Recently, It has been recognized the need for an effective method of deacidifying large quantities of books and document. However, in the previous many reports little attention was paid to the effect of paper additives. In this paper, We carried out experiment about the effect of additives on paper aging and the effect of deacidification by the gaseous ethanolamines (monoehtanolamine, diethanolamine, triehtanolamine). In result, it was found that the strength of aging was in the order of the alum+rosin>alum >AKD> control and the rate of deacidification was in the order of the monoethanolamine>diethanolamine>triethanolamine. The treatment with the gaseous ethanolamines caused decreasing of brightness and dropping of fold endurances. However, deacidification by combination treatment of the various gaseous ehtnaolamines prevented from decreasing of brightness and dropping of folding endurances.

The Effect of Celosia cristata L. ethanol Extract on Anti-oxidant & Anti-aging Activity (맨드라미 (Celosia cristata L.) 에탄올 추출물이 항산화 및 항노화 작용에 미치는 효과)

  • For the experiment, to develop new materials for cosmetics, the Celosia cristata L. plant ethanol extract were used for physiological effect and cosmetics application research. The Celosia cristata L. is a Korean traditional variety grown. To investigate the effect of Ethanol extract of Celosia cristata L. on skin care, we measured anti-oxidant activity and anti-aging activity. Celosia cristata L. ethanol extract itself had anti-oxidant activity in a dose-dependent manner in 1-diphenyl-2-picryl-hydrazyl(DPPH) radical scavenging. Ethanol extract had anti-oxidant activity in a dose-dependent manner. Silica dose-dependently increased the intracellular ROS generation in RAW 264.7 cells. Celosia cristata L. ethanol extract inhibited silica-induced intracellular superoxide anion generation and $H_2O_2$ generation and hydro-peroxide generation in RAW 264.7 cells. For anti-aging effects, the hyaluronidase inhibition effects, were relatively strong and they also showed elastase activity inhibition effects, which suggesting the Celosia cristata L. ethanol extract might be used as hydration and anti-wrinkle agents. From the above results, it is referred that Celosia cristata L. ethanol extract appears to have potent anti-oxidant activity and anti-aging activity.

새로운 식품소재로서의 의곡류 amarans, quinoa의 제빵 특성에 관하여

  • 개발도상국의 급격한 인구 증가에 의해 세계 60억 이라는 인구도 2050년을 맞아 약 100억에 도달할 것이라고 일컬어진다. 이로 인한 장래의 식량 위기에 대비하여 벼, 밀, 옥수수 등의 증산, 품종 개발도 물론 필요하지만 선진국을 중심으로 시장성 높은 작물의 소비가 우선되어지는 상황에 맞추어 세계적으로 주식이 될 수 있는 새로운 곡류의 확보와 생산체제도 중요한 문제이다. 한편으로 생활의 향상에 따른 식물의 다양화와 건강지향의 관점으로 본 다 품목 소량형의 식생활을 하는 것이 식물성 allergy의 방지 측면으로서의 곡류 특히 잡곡류의 유효 이용이 부각되어진다. 이들 중 amarans, quinoa는 벼과 식물에 비교해서 광합성능이 좋은 C4식물로서 생장이 빠르고 동시에 비타민, 무기질, 지질이 풍부하고 구성 단백질 중에 필수 아미노산을 많이 함유하여 아미노산 등급도 높고 특히 영양 발란스도 우수하다. 또 cholesterol 저하작용, 식물섬유에 의한 대장암의 억제 작용 등이 잘 알려져 있다. 그리l고 quinoa에 대해서는 아메리카 항공우주국(NASA)에서 CELSS(Controlled Ecological Life Support System; 장기간 우주특무비행의 승선원을 위한 공기중의 이산화탄소를 제거하고 식량·산소·물을 만들어 내기 위해 식물을 이용하는 방법)에 적합한 작물 후보로써 선택되어 신규 식품소재로써 주목받고 있다. 이상과 같은 견지로부터 amarans, quinoa를 일상식화되고 있는 빵에 이용하기 위해 제빵성 및 혼합중의 반죽의 모든 성질에 대해서 검토했다. amarans는 초과의 Amaranthus에 속하고 주요 생산국은 아메리카, 멕시코, 페루등이지만 일본에서는 주로 A.hypochondriacus가 수입되어 이용 되어지고 있다.amarans의 가루는 단독으로는 점탄성 있는 반죽을 형성하지 않기 때문에 밀가루에 일부를 대용한 wheat flour dough를 사용하고 가정용 제빵기로 구워 최종 단계에까지의 제빵성 결과를 산출했다. amarans folur 5%의 대체에는 빵의 비용적이 비교적 증대했지만 그 이상 amarans flour을 대처하면 확연히 비용적은 감소했다. amarans flour 10% 대체에 hemicellulase 1250U 이상을 첨가하면 비용적은 눈에 띄게 증대했다. farinograph에 있어서 반죽의 안정성은 amarans flour 10% 대용에 현저히 감소했다. 반죽의 점탄성(아축응력, 탄성률, 점성계수)는 amarans flour 10%를 대용한 것이 무첨가한 것보다 많이 단단해졌음을 알 수 있었다. 혼합중의 반죽의 조사형 전자현미경 관찰로 amarans flour로 대체한 gluten이 단단해졌음을 알수 있었다. 유화제 stearly 칼슘, 혹은 hemicellulase를 amarans 10% 대체한 밀가루에 첨가하면 확연히 비용적을 증대시킬 수 있다는 사실을 알 수 있었다. quinoa는 명아주과 Chenopodium에 속하고 페루, 볼리비아 등의 고산지에서 재배 되어지는 것을 시료로 사용하였다. quinoa 분말은 중량의 5-20%을 quinoa를 대체하고 더욱이 분말중량에 대하여 0-200ppm의 lipase를 lipid(밀가루의 2-3배)에 대하여 품질개량제로서 이용했다. 그 결과 quinoa 대량 7.5%에서 비용적, gas cell이 가장 긍정적 결과를 산출했고 반죽의 조직구조가 강화되었다. 또 quinoa 대체에 의해 전분-지질 복합제의 흡열량이 증대된 것으로부터 전분-지질복합제의 형성 촉진이 시사되었다.이것으로 인하여 호화억제에 의한 노화 방지효과가 기대되었지만 실제로 빵의 노화는 현저히 진행되었다. 이것은 quinua 대체량 증가에 따른 반죽의 안정성이 저하되어 버린 것으로 생각되어진다. 더욱이 lipase를 첨가하면 반죽이 분화하는 경향이 보여졌지만 첨가량 75ppm에 있어서 상당히 비용적의 증대가 보였다. 이것은 lipase의 가수분해에 의해 생긴 monogliceride에 의한 유화각 일어나서 보존성이 개선되어진 것으로 quinoa를 보다 많이 빨에 이용하기 위해서는 lipaserk 품질개량제로서 유효하다는 것을 알 수 있었다. 또 lipase는 quinoa의 대체량이 비교적 많은 10-20%의 섭취가 곧 allergy 질환 문제의 개선책이 되는 것은 물론 amarans, quinoa에는 lysine, 함황아미노산이 많고 지질중의 지방산조성도 좋고 무기질도 많이 함유되어 있다. 이와같이 우리들 개인의 건강에 대한 배려도 있고 amarans, quinoa등의 식품재료를 적극적으로 사용할 수 있도록 유념해 두었으면 하는 바램이다.

Antioxidant and Tyrosinase Inhibitory Effects of Brassica oleracea L. Fractions (적채 분획물의 항산화 및 Tyrosinase 억제 효과)

  • This research was designed to investigate the antioxidant activity of red cabbage (Brassica oleracea L., BO) fractions on the liposomes consisted of L-$\alpha$-dilinoleoylphosphatidylcholine (DLPC-liposome) and the tyrosinase activity of BO fractions. The methanol extract of BO (BOM) was fractionated into five different partition layers: hexane (BOMH), ethylether (BOMEE), ethylacetate (BOMEA), butanol (BOMB) and aqueous (BOMA) layers. The antioxidant activities of BOM fractions toward oxidized DLPC-liposome were examined by spectrophotometry measuring oxidized conjugated dines. The antioxidant activities of BOMEE and BOMEA fractions toward oxidized DLPC-liposomes were similar to the antioxidant activities of $\alpha$-tocopherol and weaker than that of BHT. The synergy effects of antioxidation of BOMEE and BOMEA fractions added with vitamin C and $\alpha$-tocopherol had even stronger antioxidant activities than the fractions without vitamin C and $\alpha$-tocopherol. These results showed that the fractions of BOMEE and BOMEA could be developed as a potent antioxidant. Out of five different partition layers of BOM fractions, BOMEA exhibited the strongest tyrosinase activity of 94% at a concentration of 40 $\mu\textrm{g}$/mL. This result suggests BOMEA fractions inhibit the foramation of melanin and therefore can be used as the inhibitor of melanin synthesis. Results of antioxidant activity and tyrosinase inhibition indicate that useful bioactive substances exist in BOMEE and BOMEA fractions. Both fractions from BO (red cabbage) have the potential of being developed into health related products.

The Effect of Oxygen Absorbent on Aged Characteristics of Hanji during Biological Artificial Aging by Aspergillus versicolor and Penicillium polonicum (산소흡수제 처리가 Aspergillus versicolor와 Penicillium polonicum에 의한 한지의 생물열화 특성에 미치는 효과)

  • Paper cultural heritages in museums and libraries are deteriorated by many biological factors like as fungi, insects, bacteria and rodents and get irreversibly damaged. Especially, paper components like as cellulose, hemicellulose, lignin, pectins, tannins, proteins and mineral additives are good nourishment for microorganism. Through some studies on fungi causing the aging of paper materials, Aspergilli (about 30%) and Penicilli (more than 30%) are the most common among 300 different kinds of microorganism that caused the biological aging of paper cultural heritages in museums and libraries. At present, various treatments are attempted to control the biodeterioration by these fungi. Especially, it is focused on the control of environmental factors such as humidity, temperature and oxygen. In this study, the oxygen absorbent was used to control oxygen, one of the these favorable conditions during the biological aging of Hanji by Aspergillus versicolor and Penicillium polonicum and then the effect on prevention in aging by this treatment was investigated. In result, the oxygen absorbent treatment had the good effect on prevention in aging during the biological aging by two species of fungi.
