  • This research was carried out to determine the effect of Cudrania tricuspidata fruit (CTF) on the performance of laying hens, egg quality, yolk fatty acid composition, Immunoglobulin G (IgG) and blood composition. A total 288 Brown Nick laying hens of 48 weeks old replaced into 4 groups with 4 replicates of 18 birds in each. Treatments were added with 0, 0.25, 0.5, 1.0% CTF containing dried seed and pulp. Metabolizable energy (ME) and crude protein (CP) were 2,800 kcal/kg and 16.0% in basal diets, respectively. Egg production and daily eggmass were significantly increased in 1.0% CTF addition treatment compared to those of other treatments (P<0.05). Egg weight and feed intake were not different among treatments. Feed conversion ratio showed the lower result in 1.0% CTF treatment than other treatments (P<0.05). Eggshell color was not influenced by the addition of CTF. Albumin height, Haugh unit and eggshell breaking strength was not statistically different, but seemed to be higher as dietary CTF addition increased. Yolk color was increased as dietary CTF increased and was the highest in 1.0% CTF group (P<0.05). Fatty acids were not shown the consistency in yolk. Blood cholesterol and triglyceride (TG) of birds fed CTF were significantly low compared to those of control. IgG was also statistically higher in CTF treatments than control (P<0.05). As the results of this experiment, the addition of 1% CTF would be the most effective on performance and egg quality, whereas the 0.25% CTF addition in basal diets seemed to be optimum to improve the blood cholesterol, TG,high density lipoprotein cholesterol (HDL-CHOL), IgG in laying hens.

  • This study was conducted to investigate the effects of feeding germanium colloid(GC) on the egg quality and immune response in 1aying hens. One hundred forty four layers, 32-wk-old ISA Brown, were used in a 40-d experimental assay with a 7-d adjustment Period. Dietary treatments included 1) control (basal diet; CON), 2) 0.5ppm GC (basal diet + 0.Sppm germanium), 3) 1.0ppm GC (basal diet + 1.0 ppm germanium) . For overall Period, hen-day e99 Production tended to be increased as the concentration of GC in the diets was increased with significant difference (linear effect, p<0.01) . Laying hens fed 0.5ppm GC diet were significantly (P<0.01) lower in egg shell breaking strength than laying hens fed CON or 1.0 ppm GC diets. Egg shell thickness and yolk color were not influenced by GC supplementation. Laying hens fed 1.0ppm GC diet were h19her in egg yolk Index than laying hens fed CON and 0.5ppm GC diets with significant difference (quadratic effect, p<0.02) . As adding level of germanium colloid increased in the diets, the total serum cholesterol and triglyceride tended to be decreased. However, the effect of GC supplementation did not show significant in the levers of total serum cholesterol and triglyceride. Also, HDL- and LDL+VLDL-cholesterol in serum were not statistically different among the treatments. Red blood cell and white blood cell count in blood tended to be increased as the concentration of GC in the diets was increased with significant difference (P<0.01) . Hematocrit concentration in blood was successfully Increased by supplementation of GC (P<0.01) . In conclusion, although egg quality was not influenced by GC supplementation, supplementing GC Improved Immune status in laying hens.

  • This study was performed to investigate the effects of Undaria pinnatifida on the hysicochemical properties in egg from laying hens fed with $5\%,\;10\%$and $15\%$ supplementation, respectively. The increased amount of Undaria pinnatifida resulted in the decreased weight of egg, expecially in white ones. Darkness, greenness, and blueness of egg yolk and white were increased with the addition of Undanria pinnatifida, and such color changes were predominantly observed in egg york. Among the analyzed minerals, the contents of Ca, Fe and K were increased to $286.6\;mg\%$, $72\;mg\%$ and $430.6\;mg\%$, respectively. But amount of p was reduced to $134.2\;mg\%$. Total cholesterol contents were not significantly changed. Major fatty acids were palmitic, oleic and linoleic acid The contents of omega-3, omega-6 and essential fatty acids were increased to $2.5\%,\;17.6\%$, and $18.4\%$, respectively.

  • Dietary effects of Agaricus bisporus powder (ABP) on the quality characteristic of eggs from hens (Hy-Line) were investigated. Experimental groups (100 hens/group) were divided into normal control group (Control), 0.3% ABP supplemented diet group (M-0.3) and 0.6% ABP supplemented diet group (M-0.6), then fed for 12 weeks. There were no significant differences in shell thickness, while Haugh unit in M-0.3 and M-0.6 groups were 18.3$\sim$27.6% higher than that of control groups. Color $L^*$ and $b^*$ values of egg albumen and yolk in the M-03 and M-0.6 groups were lower whereas $a^*$ values were higher than those of NC group. In the yolk of M-03 and M-0.6 groups compared with control groups, the levels of total phospholipids and HDL-cholesterol were 4.5$\sim$13.9% and 86.1$\sim$87.0% higher, respectively, while the levels of total cholesterol, triglyceride and LDL-cholesterol were 29.4$\sim$31.9%, 51.9$\sim$52.4% and 49.1$\sim$53.5% lower than those of control groups, respectively. There were no significant differences in fatty acids. In the result of sensory evaluation, gory odor of raw eggs in the M-03 and M-0.6 groups was slightly lower compared with control groups. These results suggest that the feed containing mushroom of Agaricus bisporus can be used to reduce the egg yolk cholesterol content and gory odor from raw egg, and also to increase the phospholipids as a functional feed. Further studies on the mechanism are required.

  • In this study, the effects of feeding citrus byproducts on nutritional properties of Korean native chicken eggs were investigated. Two samples of Korean native chicken eggs were used for this study: T0 (Eggs of chickens that were not fed with citrus byproducts until they became 30 weeks old) and T1 (Eggs of chickens that were fed with 4% citrus byproducts when they were between 17 and 30 weeks old). There was nostatistically meaningful difference between T0 and T1 in terms of various properties, such as general components of egg albumen and yolk, total structural amino acid, and total free amino acid. Also, no significant difference was noticed between T0 and T1 in terms of various components of egg yolk, such as amount of mineral, vitamin, and xanthophyll, which showed that those components are not affected by citrus byproducts. However, the amount of cholesterol of egg yolk for T1 was 1,168 mg/100 g, which was significantly lower than that for T0 which was 1,207 mg/100 g (p<0.05). The amount of L-glutamic acid, one of the free amino acids, of the egg albumen was 39.22 and 58.54 ppm for T0 and T1, respectively. The results of this study show that citrus byproducts can be used for the feed for Korean native chicken by adding them to general feed.

  • The method used to remove cholesterol from egg by using $beta$-cyclodextrin was relatively stable and efficient. The aim of this study was to cost down by recycling $\beta$-cyclodextrin used to remove cholesterol from egg yolk because $\beta$-cyclodextrin was expensive. The solvents used to separate $\beta$-cyclodextrin from $\beta$-cyclodextrin complex containing egg yolk cholesterol were butanol, chloroform, ether, hexane, methanol, 2-propanol and their mixture. The ratio of solvent and complex varied from 2 : 1 to 10 : 1. The condition of mixing time and temperature varied from 30 to 60$^{\circ}C$ and from 10 minutes to 3 hours to remove cholesterol from $\beta$-cyclodextrin complex. When the ratio of choloroform and methanol was 1 : 1, the removal efficiency of cholesterol was 98.8%. The efficiency of cholesterol removal was improved when the ratio of solvent : complex increased to 4 : 1. When mixing time and temperature was up to for 1hr, at 50$^{\circ}C$ respectively, the efficiency of cholesterol removal improved to 99%. It concluded that the efficiency of cholesterol removal of 50% renewed one contained $\beta$-cyclodextrin were 81.1% while the cholesterol removal efficiency of 100% renewed $\beta$-cyclodextrin was 24% if cholesterol removal efficiency of new $\beta$-cyclodextrin were 100%.

  • The egg's interior quality is one of the most important criteria for commercial producers and consumers. Internal quality is complex, including aesthetic factors such as taste, freshness, nutritional and processing values, and the genetic influences upon these upon these factors ranges from none to considerable. The rate of cholesterol synthesis in the hen is very high compared to other animals and humans. Genetic selection, diet drugs and other chemicals can alter cholesterol concentration in the plasma of laying hen, but attempts to manipulate the cholesterol concentration in the egg yolk are generally unsuccessful since the cholesterol can only be changed to a small extent. Factors which may affect the degree of pigmentation of the yolk include the type of xanthophyll and its concentration in the feed, the feed composition, and the health of the hen. Several feed ingredients interact with carotenoid pigment to improve or reduce their deposition rates in yolks. Egg weight is determined by genetics, body size prior to first egg housing density, environmental temperature, lighting program, total feed consumption, calcium, phosphorus, niacin, water, methionine, total sulfur amino acids, energy, linoleic acid, fat and protein levels. Eggs need to be promote levels. Eggs need to be promoted a versatile commodity and new processed egg items need to be developed. Organic eggs are laid by hens which were raised in chemical and drug frdd environments. There are still difficulties in producing these eggs due to the availability of organic poultry feeds and cost of organic grains.

  • Two experiments were conducted to investigate the effect of feeding Monascus Purpures(MP) on the growth performance of broiler chicks and egg qualify in laying hens. In Expt 1, MP were supplemented with 0. 0.5, 1.0, 2.0, 4.0% in basal diets. Weight gain, feed intake, feed conversion were examined for five weeks and blood cholesterol, protein were measured at the end of experiment. In Expt 2, diets supplemented with 0, 0.5, 1.0, 2.0, 3.0% MP were fed for two weeks. Egg qualify and yolk cholesterol were weekly measured. In Expt 1, Basal diets containing CP 21.5, 19%, ME 3,100, 3,200 kcal/kg were fed ad libitum for starting and finsihing period, repectively. In Expt 2, hens diet contained CP 16%, ME 2,800 kca1/kg and fed for two weeks. In Expt 1, weight gain of birds fed 2.0% MP was maximized at five weeks of age. Feed efficiency was not statistically different, but tended to improve in 1.0, 2.0% MP supplemental groups compared with control. Total serum cholesterol tended to be lower in 2.0% MP supplemental group but was not statistically different. In Expt 2, albumen height and Haugh unit of birds fed 1.0 and 2.0% MP were higher than other treatments, but was not statistically different. Yolk cholesterol of hens fed MP diets showed no significance.

  • The study was conducted to investigate the effects of dietary supplementation of Macsumsuk and herb resources on the egg performance and quality in Korean native crossbred chickens. A total of three hundred sixty improved Korean native crossbred chickens in primary laying period were randomly allocated to four treatments (30 birds/treatment ${\times}$ 3 replications) for eight weeks. Dietary treatments included CON (basal diets), T1 (basal diets + 0.3% Macsumsuk), T2 (basal diets + 0.3% herb resources) and T3 (basal diets + 0.3% Macsumsuk + 0.3% herb resources). No significant differences were found for feed intake, egg weight and average egg production (P>0.05), however, cracked egg rate was higher in CON than in T1-T3, especially T3 was the lowest (P<0.05). The crude fat content of whole eggs, CON (11.20%) was higher (P<0.05) than the experimental treatments (9.67%-10.01%). Haugh unit, yolk color, eggshell thickness, and eggshell breaking strength tended to be higher in T1 and T2, but there were no significant differences (P>0.05). However, the experimental treatments were significantly higher than CON (P<0.05) for eggshell breaking strength, and T3 (14.91 mg/g) contained lower (P<0.05) cholesterol in egg yolk than other treatments. For fatty acid composition in egg yolk, CON group showed higher saturated fatty acid contents than the experimental treatments, but T1 (67.00%), T2 (66.78%) and T3 (66.82%) were higher than CON for unsaturated fatty acids (P<0.05). In conclusion, supplementating Macsumsuk and herb resources together in diets of Korean native crossbred chickens could decrease egg yolk cholesterol and improve egg quality.
