Effect of Feeding Periods of Dietary Rhus verniciflua Stokes on the Quality Characteristics of Hanwoo Beef during Refrigerated Storage (옻나무 급여기간이 한우육의 냉장저장 중 품질특성에 미치는 영향)

  • This study was carried out to investigate the effect of feeding periods of dietary Rhus verniciflua Stokes (RVS) on the quality characteristics of Hanwoo beef during refrigerated storage. Hanwoo steers were fed a 4% RVS-contained diet for 0 (control), 3, 4, 5, or 6 mon prior to slaughter (28 mon of age). The M. semitendino년 from carcasses were stored at $3{\pm}0.2^{\circ}C$ for 7 d. The crude fat content was lower in the 4 and 5 mon groups than in the other groups (p<0.05), however the crude protein content and water-holding capacity (WHC) were higher in the 4 and 5 mon groups than in the other groups (p<0.05). The monounsaturated fatty acid (MUFA) content was higher in the 3, 4, and 5 mon groups than in the other groups (p<0.05). During storage. the TBARS content was reduced in the RVS groups, and the MetMb content showed slower accumulation in the 3, 4, and 5 mon groups than in the other groups. With regard to meat color, the 3, 4, and 5 mon groups had higher L, a, and C values than the other groups until 7 d, and in particular, the a value at 7 d was the highest in the 4 mon group (p<0.05). Consequently, the beef from 4% RVS-fed Hanwoo for 4-5 mon was effective at improving the WHC, MUFA content, and color stability relative to the other beef.

Influence of Dietary Rancid Rice Bran on the Oxidative and Color Stability of Ground Chicken and Pork during Frozen Storage (산패된 미강급여가 계육과 돈육의 냉동저장중 색택 및 지방산화에 미치는 영향)

  • 산패된 미강을 닭과 돼지에게 급여하여 사육시킨후 도축한 고기에서 저장중 색깔과 지방산화 변화를 구명하기 위하여 실시하였다. 사료배합 조성에서 탈지강을 첨가한 것을 대조구로 하여 신선한 미강(유리지방산함량 8.2%)과 산패괸 미강(유리지방산함량 15.6%)을 돼지(삼원교잡종, Landrace $\times$Yorkshire$\times$Duroc)사료에 각각 20% 첨가하여 평균 종료체중 92kg이 될 때까지 56일간 사육하였으며, 닭(Avi-an 종) 사료에 각각 10%를 첨가하여 3주령부터 급여를 시작하명서 3주간 사육하였다.도축후 1$^{\circ}C$에서 24시간 후에 발골 및 세절하여 함기포장을 한 다음-2$0^{\circ}C$에서 3개월간 저장하였다. 산패된 미강급여구는 신선한 미강급여구에 비해 저장중 명도(L*)가 낮았고 적색도/황색도(a*/b*)는 높았다. 모든 급여구는 저장기간 동안 황색도(b*)는 증가하였고 적색도는 감소하였다. 저장 0일에 비해 3개월에 있어서 계육과 돈육의 적색강도 감소율을 보면 산패된 미강급여구가 66%와 67%로 미강급여구의 84%와 78%나 비급여구의 84%와 77%에 비해 유의적으로 낮게 나타나 가장 많이 변색되었다. 세절육의 냉동중 지방산화는 계육에서 더 많이 진행되었고 저장 1개월만에 급증하였다. 미강을 급여구가 신선한 미강급여구에 비해 산화억제력이 약했다. 따라서 닭과 돼지에 미강을 급여하면 탈지강 급여구에 비해 식육에서 지방산화를 더 많이 억제시키지만, 미강의 산패 정도가 식육의 산화에도 직접적으로 영향을 끼치는 것으로 나타났다.

육계에서 스테비아 부산물의 사료적 가치

  • 스테비오사이드를 추출하고 폐기되는 스테비아 부산물의 사료적 가치를 구명하기 위하여 육계사료에 수준별로 급여하여 육계의 생산성, 혈중 콜레스테롤, 장내 미생물 및 계육의 지방산에 미치는 영향을 고찰하였다 사료내 영양소 함량은 사육 전기와 후기에 각각 CP 21.5 %, ME 3,100 kca1/kg와 CP 19 %, ME 3,100 kcal/kg 수준으로 급여하였다. 처리구는 스테비아 부산물 0, 2, 4, 8 % 수준으로 하였고, 처리구당 4반복, 반복당 16수로 총 256수를 공시하였다. 본 시험의 결과, 사육 전기 3주간의 증체량은 스테비아 부산물 8 % 급여구가 대조구에 비하여 유의적으로 감소하였으나 후기 2주간에는 차이가 없었다. 또한 전체 사육기간의 증체량에서도 스테비아 8 % 급여구는 대조구와 차이가 없었다. 총 사료섭취량과 사료요구율은 스테비아 부산물 급여구와 대조구 사이에서 차이가 없는 것으로 나타났다. 스테비아 부산물의 급여가 장내 미생물의 변화에 미치는 영향은 대조구와 유의적인 차이가 없었으나 맹장의 Salmonella, E coli는 감소하고 Lactobacillus 및 Yeast는 증가하는 경향을 보였다. 혈중 총 콜레스테롤, HDL 콜레스테롤, LDL 콜레스테롤 및 중성지방에서도 대조구와 차이가 없었다. 또한 스테비아 부산물을 급여하여 생산된 가슴육의 지방산 함량에서도 차이가 없었다.

Effects of Different Levels of Crushed Bamboo Chip on Performance and Carcass Characteristics in Holstein Steers (파쇄 대나무 급여수준이 젖소 거세우의 성장과 도체특성에 미치는 영향)

  • Twenty eight Holstein steers 12 months old and weighing about 300kg were andomly allotted into one of four groups being fed ammoniated rice straw(ARS) and substituted 30%, 40% and 50% crushed bamboo chip for ARS to determine the effects of different levels of bamboo chip on performance, digestibility and carcass characteristics. Daily weight gain was reduced as the substitution levels of bamboo chip for ARS as a roughage source increased but there were no differences in daily weight gain between steers fed ARS alone and 30% bamboo chip for ARS. Concentrates intakes were not different between treatments by the substitution levels of bamboo chip for the whole fattening period. Roughage intake tended to increase as the substitution levels of bamboo chip increased. Total feed intake was not affected by the substitution levels of bamboo chip. However, feed efficiency got worse with increasing levels of bamboo chip. Animals fed the roughage substituting 30% bamboo chip for ARS were higher in profit by 13% than animals fed ARS alone as a roughage source. Digestibilities of Dry matter(DDM) and crude fiber(DCF) were highest in animals fed ARS alone as a roughage source. DDM's were lower in higher substitution levels of crushed bamboo chip but there were no differences in DCF among animals fed different levels of bamboo chip as a roughage source. Crude protein digestibility was not affected by ammoniated rice straw or by the different levels of bamboo chip. Dressing percentage and backfat thickness were not affected by ammoniated rice straw or by the levels of bamboo chip but ribeye area was narrowed as the levels of bamboo chip increased. Beef color, fat color, texture, maturity and marbling score were not affected by feeding of ammoniated rice straw or by the levels of bamboo chip. According to these results, it may be concluded that profit can increase when Holstein bulls are castrated and roughage containing ammoniated rice straw plus 30% bamboo chip is offered.

비타민 C와 비타민 E 급여시 일부 남자대학생들의 항산화 비타민 수준에 미치는 영향

  • 본 연구는 비타민 C와 비타민 E의 보충 급여가 항산화 비타민 수준 및 항산화 체계에 미치는 영향에 대하여 알아보고자 하였으며, 경기지역 남자대학생 60명을 대상으로 조사하였고 항산화 비타민 보충 급여의 효과를 관찰하기 위해서 비타민 C 보충군, 비타민 E 보충군, 비타민 C와 E 보충군으로 각 군별 당 10명씩 나누어 2주간 보충 급여하였다. 비타민 급여량은 비타민 C 500 mg, 비타민 E 400 IU이었다.(중략)

육용오리 사료급여관리

  • 오리 농가의 수익에 가장 큰 영향을 미치는 것은 사료비이다. 균형이 잘 이루어진 사료는 오리의 생산성을 최대로 하고, 오리의 건강을 유지하는데 필수적이다. 오리의유지, 생산, 성장 그리고 번식을 위해서는 오리의 에너지/단백비를 충족하는 사료를 급여하여야 한다. 사료비를 낮게 유지하는것은 오리농가의 수입과 직결된다. 이를 위해서는 농장에서 직접 생산하는 양질의 조사료를 최대한 급여하고, 가능한 최소 비용으로 최적의 육용오리을 위한 사료를 급여관리하여야 할 것이다.

Effects of Dietary Buffer Material for Chicken Meat Grades and PSE Incidence in Broilers under Transport Heat Stress (고온기 육계의 수송 스트레스에 대한 버퍼제 급여에 따른 닭고기 품질 및 PSE 발생에 미치는 영향)

  • The present study has been performed to suggest a method to decrease the adverse effects of transportation on chicken meat quality. The groups were prepared as follows; Control group and three groups of treatments (sodium phosphate, sodium bicarbonate and magnesium sulfate). The chicken fed magnesium sulfate showed higher chicken meat quality compared to control and other treatment groups. Also, minor and severe PSE incidence of chicken breast was found at 88% in sodium phosphate group, 24% in sodium bicarbonate group and 56% in magnesium sulfate group. Control group showed 92% higher minor and severe PSE incidence of chicken breast compared to other groups. In control group, the external bruise of chicken showed 32% but 22, 24 and 44% in other treatment groups, respectively. Lightness ($L^*$) of chicken containing sodium phosphate treatment, sodium bicarbonate treatment and magnesium sulfate were 67.05, 66.27 and 65.89, while Lightness ($L^*$) of chicken containing control group was decreased of 67.88. In conclusion, dietary buffer material (sodium phosphate, sodium bicarbonate, magnesium sulfate) under heat stress decreased adverse effects including death, wound or abnormality of chickens.

Effects of Growth Performance and Carcass Characteristics by Fermented Barley Grain Feeding in Post-fattening Hanwoo Steers (거세한우 비육후기 보리곡실 발효사료 급여에 따른 성장과 도체특성에 미치는 효과)

  • The purpose of this study was to investigate the proper feeding level and duration of fermented barley grain feed before harvesting to improve the availability of barley for feed. Trial 1 was to investigate the proper feeding amount of fermented barley grain fermented feed, and we prepared 32 heads (603.4 ± 42.7kg) of 22-month-old Hanwoo steer (603.4 ± 42.7kg) for 8 heads in 4 treatment groups. 48 heads (625.8 ± 13.1kg) for Trial 2 were used for 12heads per 4 treatments, and were reared for about 9 months until 30 months of age. Trial 1 is treated a Control group that feed 10㎏ of concentrate, replaces 10% fermented barley grain feed(FBGF) of the control by (TRT 1) and 20% (TRT 2) and 30%(TRT 3). Concentrate and FBGF fed 9, 2.1 kg, 8, 4.2 kg, 7 and 7, 6.3 kg on each treatments respectively and 1.5 kg of rice straw for forage. In Trial 2, 10% of alternative diets were judged to be appropriate, and the control of 9kg of diets and barley grain fermented feeds were used to determine the appropriate feeding period. The treatments were 3 months before shipment (TRT 1), 6 months (TRT 2) and 9 months (TRT32). Each treatment group had 8 and 2.1 kg of concentrate and barley grain fermentation, respectively. As a feed, rice straw was fed to 1.5 kg. The daily gains per treatment were higher in TRT 1 and TRT 3 was similar to the Control. Body weight and daily gain during the test period were higher in TRT 1 fed 10% barley grain fermented feed. TRT 2 was the highest at 6.13, and TRT 3 was 6.0, which was higher than 5.63 of TRT 1 and 5.5 of Control.

Effects of Dietary Supplementation of Mulberry Leaves and Dandelion Extracts on Storage of Chicken Meat (뽕잎과 민들레 추출물을 급여한 계육의 저장성에 미치는 영향)

  • This study was conducted to investigate the effects of dietary supplementation of mulberry leaves and dandelion extracts on pH, meat color, TBARS (thiobarbituric acid reactive substance), and VBN (volatile basic nitrogen). Two hundred broiler chickens were fed diets for five weeks containing 1% mulberry leaves extracts (T1), 2% mulberry leaves extracts (T2), 1% dandelion extracts (T3), and 2% dandelion extracts (T4). At the end of five weeks feeding experiment, broilers were slaughtered, and stored at $4^{\circ}C$ for five weeks. As storage time increased, the presence of mulberry leaves and dandelion extracts resulted in decreased pH, and $L^*$ and increased TBARS, VBN, and $a^*$ value in all treatment groups (P<0.05). The pH value, TBARS, and VBN were significantly decreased by the supplementation of mulberry leaves and dandelion extracts relative to the control (P<0.05). Therefore, mulberry leaves and dandelion extracts had the possibility to improve shelf life of chicken meat. Especially, T4 was significantly more effective in delay lipid oxidation compared to the control group. However, no significantly difference was found in pH, TBARS, and VBN among mulberry leaves and dandelion extracts treatment groups. In conclusion, this study demonstrates that compared to control group, supplementation of mulberry leaves and dandelion extracts were effective in decreasing pH, TBARS, and VBN and increasing $a^*$ value.

Effects of Dietary Supplementation of Yacon By-products and Mugwort Powder on Carcass Characteristics and Meat Quality of Chicken Thigh Meat (야콘 부산물과 쑥 분말을 사료에 첨가 급여한 육계의 도체 특성 및 품질에 미치는 영향)

  • This study were investigated the effects of dietary supplementation of yacon by-products and mugwort powder on performance, carcass characteristics, pH, TBARS (thiobarbituric acid reactive substance), WHC (water holding capacity), shear force and meat color of broiler thigh meat. Broiler chicks were fed diets for five weeks containing 0% yacon by-products and mugwort powder (Control), 0.5% yacon by-products powder (T1), 1.0% yacon by-products powder (T2), 0.5% mugwort powder (T3), and 1.0% mugwort powder (T4). There were no significant difference in performance among treatments, but mortality was decreased in diets by the supplementation of yacon by-products and mugwort powder than that of control. The total cholesterol, LDL-cholesterol and triglyceride of control were higher than treatment groups and HDL-cholesterol of control was lower than treatment. The TBARS was significantly decreased by the supplementation of yacon by-products and mugwort powder compared to the control (P<0.05), especially, mugwort powder treatment group was significantly (P<0.05) more effective in improving freshness compared to other treatment groups. The WHC and shear force were not significantly different. CIE $L^*$ and $a^*$ value of treatment groups showed significantly higher value compared to the control, however, no difference in the CIE $b^*$ values was observed among treatment groups. In conclusion, a supplementation of yacon by-products and mugwort powder were effective in decreasing TBARS, total cholesterol and LDL-cholesterol and increasing HDL-cholesterol concentration. Mugwort powder supplementation was most effective.
