Microbial Hygienic Status of Poultry Meats and Eggs Collected at the Public Markets in Seoul and Kyung-gi Regions in 1996 (1996년도 서울${\cdot}$경기지역에서의 시판계육과 계란에 대한 미생물학적 위생실태)

  • To determine the actual hygienic status of domestic chicken meats sold in public markets (conventional markets and department stores), microbial contamination levels (Total cells, Coliforms and Staphylococcal cells) and zoonotic pathogens (Salmonella species, Campylobacter species, Listeria species, and Staphylococcus aureus) isolation tests were conducted. Chicken meats and eggs tested were collected from the conventional markets (Si-Jang) and department-stores located in Seoul and Kyung-gi regions in 1996. In total cells and coliforms contamination tests, chicken meats sold in department stores were much lesser contamination status than those of Si-Jang, but staphylococcal cells level was much more higher than that of conventional markets. Salmonella isolation frequency was investigated as $68.8\%$, but Campylobacter jejuni and Listeria monocytogenes isolation frequency were appeared both $64.0\%\;and\;63.3\%$. In case of eggs sold in public markets, one of S. gallinarum strain $(0.7\%)$ was isolated only on the egg-shell part among the four-hundred and fourty-six. In comparison with foreign imported chicken meats, there were no big differences in microbial contamination status. On the other hand, both Salmonella and L. monocytogenes were isolated only in the chicken wings from Korea and China, but not from U.S.A. This data suggest that more hygienic control system in order to produce the safe and hygienic chicken meats and eggs is need in our country as soon as possible.

Antioxidant and nitric oxide inhibition effect of domestic and foreign fermented black tea extracts (국내외 홍차 추출물의 항산화 효과 및 Nitric Oxide 생성 저해 효과)

  • This study investigated the antioxidant and nitric oxide (NO) inhibition effects of three domestic and seven foreign fermented black tea 70% ethanol extracts. Bosung showed the highest total polyphenol and tannin contents. Jeju showed the highest total flavonoid contents. The theanine content was higher in Hadong (651.50 mg%) than in foreign fermented black tea. At 25 ㎍/mL, the domestic fermented black tea extract showed the highest DPPH and ABTS racial-scavenging activities, reducing power assays. Domestic fermented black tea showed higher NO inhibitor activity than foreign black tea at 50 ㎍/mL. Bosung black tea extract showed an increase in SOD-1 level (1.39-fold) compared to the LPS-only group. Bosung and Jeju decreased the GST protein by 1.52- and 1.46-folds, respectively, compared to the LPS-only group. Thus our results suggest that domestic fermented black tea (Bosung, Jeju, and Hadong) are effective antioxidants in RAW 264.7 cells.

한국ㆍ중국ㆍ유럽산 순무로 담근 동치미의 이화학적ㆍ관능적 특성 비교

  • 한국, 중국, 유럽산 순무를 국내에서 파종ㆍ수확한 후 동치미를 담그어 발효 특성을 비교해 보고 동치미 담금에 적당한 품종을 알아보고자 하였다. 신선한 순무의 특성으로 가용성 고형물 함량은 중국산이 7.8$^{\circ}$ Brix로 가장 높았고 유럽산은 6.8$^{\circ}$ Brix로 낮았다. 안토시아닌 함량은 한국산이 가장 많았고 중국산은 가장 낮았다.(중략)

  • Wood-rotting fungi of the Aphyllophorales were collected through field trips to mountain areas of the country from January to December of 1997. Through the observation and identification of specimens, two genera, Meruliopsis (type species=M. taxicola) and Pseudomerulius (type species=P. aureus), and four species, Phanerochaete calotricha, Phanerochaete chrysorhiza, Meruliopsis corium, and Pseudomerulius aureus were confirmed as new wood-rotting fungi to Korea and are registered here with descriptions.

한약재의 안전성 평가연구II

  • 중금속의 경우 몇가지 약재에 있어서 중국산과 경북산의 뚜렷한 차이는 없었으나 산약과 작약의 경우는 중국산이 중금속 함량이 높았으며 시호와 천궁의 경우는 경북산이 중금속 함량이 높았다. 그러나 이들 약재로 인한 결과를 전체 중국산과 국내산의 비교 값으로 대표 할 수는 없다. 한약재에 함유된 무기질과 중금속 함량간의 유의성을 검정하여 상관관계를 확인하려 했으나 약재간의 특이성과 무기질 및 중금속간 흡수능의 차이로 인한 뚜렷한 상관관계를 검정하기가 어려웠다. 한약재에서 생체내에서 중요한 필수 무기질에 대한 분석은 안전성과 규격화를 위한 필요한 기초연구이며, 이에 관한 데이터뱅크가 마련된다면 한약재에 함유된 무기질의 영양학적 가치를 통해 질병의 예방과 치료에 중요한 정보원으로 유용성을 확보할 수 있으므로 좀더 많은 연구가 광범위하고 지속적으로 수행되어져야 할 과제라고 사료된다.

Lipid Composition and Palatability of Beef Meats Consumed in Korea (국내소비(國內消費) 쇠고기의 지방질(脂肪質) 성분과 기호성(嗜好性))

  • The lipid composition of domestic and imported beef samples was analyzed and the lipid rancidity and flavor changes during their cooking and storage for 48 hours at $4^{\circ}C$ were investigated. The contents of total lipids and neutral lipids of raw, cooked and cooked-stored samples were higher in domestic beef than in imported beef. During cooking by simmering or roasting and storage for 48 hours at $4^{\circ}C$, the contents of total lipids and phospholipids showed a decreasing tendency in all samples. The results of sensory test for domestic and imported beef samples with two different cooking methods revealed significant differences between domestic and imported in both simmering and roasting. In a palatability test by hedonic scale, no significant difference was observed among roasted samples while a significant difference was observed among simmered samples between cooked domestic and cooked-stored imported beef. The increaase of TBA values in all cooked samples was mild right after cooking whereas it was rapid in cooked-stored samples. As TBA values increased, sensory scores decreased in all samples.

Growth Performance of Betula platyphylla var. japonica Hara Introduced from Japan (일본산(日本産) 자작나무의 생장(生長)에 관한 연구(硏究))

  • Three half-sib families of Betula platyphylla var. japonica had been introduced from Japan and tested for their growth potentiality by comparing with control trees originating from previously introduced and cultivated stands of unknown seed origin. Two of the three introduced family groups from Japan showed superior tree growth in both diameter and height to control one up to the age of four. But only one family group remained superior to the control trees at age six. It appeared from the results that Betula platyphylla var. japonica families, introduced from Japan, can be directly used for the production of planting stocks for commercial planting and/or as parental trees for the production of intra- and interspecific hybrids.

Analysis of the Free Amino Acids and Volatile-Flavor Compounds in the Commercial Brown-Rice Vinegar Prepared via Static Acetic-Acid Fermentation (시판 정치배양 현미식초의 유리아미노산 및 휘발성 향기성분 특성 분석)

  • This study was performed to evaluate the quality of the commercial brown-rice vinegars of South Korean and Japanese origins, which were prepared via static acetic-acid fermentation. The major free amino acids of Korean brown-rice vinegars were proline, glutamic acid and phenylalanine, while those of the Japanese were proline, valine, phenylalanine, lysine, ${\gamma}$-aminobutyric acid, alanine and isoleucine. The ${\gamma}$-aminobutyric acid (GABA) and total amino acids (3686.37~4212.27 mg%) contents were found to be significantly higher in the Japanese than in the Korean brown-rice vinegars. The key volatile compounds of the Korean brown-rice vinegars, analyzed with GC-MS, were acetic acid, benzaldehyde, phenethyl alcohol and phenethyl acetate while those of the Japanese brown-rice vinegars were acetic acid, ethyl acetate, ethyl alcohol, isoamyl acetate, phenethyl acetate and benzaldehyde. The volatile patterns of the Korean and Japanese commercial brown-rice vinegars were effectively distinguished from each other using an electronic nose, through which it was also elucidated that the volatiles profiles were similar among the Japanese vinegars but were different among the Korean vinegars.

  • Research on the method of calculating and estimating evapotranspiration has been steadily conducted. Various models have been developed according to different backgrounds, and each of these models has different characteristics such as required input data. Therefore, this study introduces the theoretical background and characteristics of evapotranspiration models and the development process of domestic research on evapotranspiration by era. First, the origin and theoretical background of the potential evapotranspiration models are summarized in addition to classifying them by input data. Then, the characteristics of the actual evapotranspiration estimation methods are summarized. Additionally, methods based on observation and methods using the rainfall-runoff models are summarized.
