  • In this research, we examined the shifts in determinants influencing the frequency of eco-friendly food purchases pre- and post-COVID-19. Our analysis utilized filtered 2019-2021 Consumption Behavior Survey data from the Korea Rural Economic Institute Food, excluding any irrational responses. Given the nature of the dependent variable, a multinomial logistic regression model was employed with demographic factors, variables pertaining to food consumption behavior, and variables concerning food consumption awareness as predictors. Following the onset of the COVID-19 pandemic, an individual's level of education was observed to positively influence the frequency of eco-friendly food purchases. In contrast, income level and fluctuations in food consumption expenditure did not appear to have a discernible impact on the purchasing frequency of such eco-friendly products. Irrespective of the advent of COVID-19, variables such as the frequency of online food purchases, the utilization of early morning delivery services, dining out frequency, and the intake of health-functional foods consistently demonstrated a positive correlation with the propensity to purchase eco-friendly foods. Overall, consumers prioritizing safety, quality, and nutrition over price, taste, and convenience in their procurement decisions for rice, vegetables, meat, and processed foods exhibit an increased inclination toward the acquisition of eco-friendly food products.

  • We investigated consumer perceptions of and purchase intentions for health foods. Data were collected from 454 adults over the age of 20 years living in Seoul and Gyeonggi province, from May 10 to June 5, 2010. Those that "hardly ever drink" (41.4%) were most prevalent in terms of drinking activity, whereas 80.8% of respondents did not smoke. Also, those who responded "hardly ever exercise" ranked highest; although 43.8% in fact exercised frequently. Of all respondents, 44.5% admitted to suffering slightly from stress. A total of 59.5% of respondents opined "I am healthy but I do worry about health", and "exercise" topped the list of approved (37.2% of respondents) health care methods. We also found that 83.5% of respondents claimed to have tried health foods, whereas in the case of having no taking experience, 60% had not purchased such foods because, in their view, this was unnecessary. The extent of concerns about health foods scored 3.09, and the level of purchase intentions for health food was high, with a score of 3.40. Therefore, all of government, producers, distributors, and academic researchers must provide consumers with accurate and complete information, and need to collaborate in the development of consumer education programs on health foods. This will enhance consumer interest in such foods, and empower logical choices.

  • Association rule mining techniques enable us to acquire knowledge concerning sales patterns among individual items from voluminous transactional data. Certainly, one of the major purposes of association rule mining is utilizing the acquired knowledge to provide marketing strategies such as catalogue design, cross-selling and shop allocation. However, this requires too much time and high cost to only extract the actionable and profitable knowledge from tremendous numbers of discovered patterns. In currently available literature, a number of interest measures have been devised to accelerate and systematize the process of pattern evaluation. Unfortunately, most of such measures, including support and confidence, are prone to yielding impractical results because they are calculated only from the sales frequencies of items. For instance, traditional measures cannot differentiate between the purchases in a small basket and those in a large shopping cart. Therefore, some adjustment should be made to the size of market baskets because there is a strong possibility that mutually irrelevant items could appear together in a large shopping cart. Contrary to the previous approaches, we attempted to consider market basket's size in calculating interest measures. Because the devised measure assigns different weights to individual purchases according to their basket sizes, we expect that the measure can minimize distortion of results caused by accidental patterns. Additionally, we performed intensive computer simulations under various environments, and we performed real case analyses to analyze the correctness and consistency of the devised measure.

Survey questions were administered to 400 women around menopausal period, and data analysis was completed using the SPSS window program. Thirty-three percent of women recognized that they are healthy, and 47.1% of respondents are concerned with maintaining their health. However, respondents showed a low level of knowledge about the definition of menopause and health functional foods. Health concerns of respondents were significantly affected by marital status and level of education (P<0.05). Purchasing and intake of health functional foods was also significantly affected by health concerns and menopause symptoms (P<0.05). Twenty-nine percent of participants had taken health functional foods to prevent disease. However, most of them (85.9%) showed no knowledge of the main components of functional foods. In addition, knowledge associated with menopause and functional foods was affected by the level of education. The respondents' health concern, and thus purchase and intake frequencies of health functional foods, were affected by level of education. 'Effect of functional foods' was a top priority when respondents purchased health functional foods. The respondents answered black bean and pomegranate as foods that relieve menopause symptoms. However, they actually showed high intake frequency of black beans than pomegranate due to the high accessibility of black beans. The results of this study show that educational support for dietary guidelines is needed for middle-aged woman to be healthy after menopause.
