Enhancement of Skin Color by Postharvest UV Irradiation in 'Fuyu' Persimmon Fruits (수확 후 자외선 조사에 의한 '부유' 단감의 과피 착색 증진)

  • The effects of UV irradiation, as a hormetic stimulus, on the postharvest persimmon fruits (Diospyros kaki cv. Fuyu) were investigated in regards to the change of carotenoid contents and flesh softening, when the UV irradiation was combined with or without the pretreatment of 1-methylcyclopropene (1-MCP) as an ethylene action inhibitor. The major carotenoid pigments in persimmon fruits were ${\beta}$-carotene, lycopene and ${\beta}$-cryptoxanthin. Of them, the lycopene was a pigment, which increased markedly after harvest. UV irradiation increased the contents of ${\beta}$-carotene and lycopene, enhancing the skin color to scarlet. The treatment accelerated however also the softening of fruit flesh. But the softening of UV irradiated fruits could be delayed significantly by pretreatment with 1-MCP without reducing the advantageous effect of UV irradiation on the carotenoid increase.

저장을 통한 곶감제조시기 조절

  • 본 시험은 곶감건조초기의 높은 습도로 인한 불량환경을 극복하고 고품질의 우수한 곶감을 생산하기 위하여 현재 국내에서 가장 많이 재배되고 있는 상주둥시와 갑주백목 품종을 사용하여 수행하였고, 저장을 통하여 곶감의 건조시기를 달리한 다음 곶감을 제조하여 상품성을 비교하였다. 저장에 따른 품종별 과중변화는 저장 30일에 품종별로 0.32~0.38%의 무게감소를 나타내었다. 과실의 경도는 저장 30일에 두품종 공히 2.3kg/$\Phi$5mm로 나타나 저장기간이 증가할수록 감소하였지만 이러한 경도의 감소는 곶감을 제조하기 위한 박피작업에는 무리가 없었다. 저장중에 발생한 비상품과는 저장 30일에 품종별로 3.2~4.2% 발생되었고 과실의 당도는 수확시와 비교하여 약간 감소하는 경향이었으며, 과실표면의 색도 역시 적색도는 약간 증가하였으나 유의성은 없었다. 곶감 건조중 무게변화는 박피 2주경에 대부분 박피시 중량보다 30~40%감소되었고 그 후는 완만하게 감소되어 처리 6주후에는 박피중량의 30% 이내로 되었다. 품종별로는 대과종인 갑주백목의 중량감소가 다소 늦었다. 박피시기가 늦을수록 감의 건조속도도 완만하여 30일 저장한 처리구는 박피후 8~9주에 건조가 완료되었다. 곶감 제조중 품종별 경도의 변화는 건조 1주후에 품종별로 0.38~0.42kg/$\Phi$5mm로 급격히 감소하였다가 건조 후기로 갈수록 다시 증가하여 건조 6주후에는 1.52~1.85kg/$\Phi$5mm나타났다. 곶감 제조후 상품성에 있어서 곶감의 당 함량은 수확직후 제조한 곶감이 저장한 후 제조한 곶감과 비교하여 약간 높은 경향이었으나 큰 차이는 없었다. 가용성 탄닌의 함량은 곶감 제조후 품종별로 0.7~0.9mg/g으로 나타나 떫은맛이 완전히 제거되었고 저장기간별로는 차이를 보이지 않았다. 곶감의 외관상 상품성을 나타낼 수 있는 색도는 박피시기가 늦어질수록 두 품종 공히 증가되었다. 특히 갑주백목 품종의 경우 수화직후 8.4인 적색도가 저장 30일후 13.2로 증가되었고 황색도도 13.5에서 33.1로 증가되어 곶감표면의 색도가 박피시기를 연장함으로써 크게 향상된 것으로 나타났다.

Effects of Fruit Surface Spray of Lime Fertilizer on the Mineral Content of Fruit Skin and Quality in 'Campbell Early' Grapes (석회비료 과면살포에 따른 포도 '캠벨얼리' 과피의 무기성분 함량 및 과실 품질에 미치는 영향)

  • The experiment was conducted to evaluate the effect of fruit skin spray of the lime fertilizer in 'Campbell Early' grapes. The T-N, P, K, Ca and Mg of fruit skin and cluster weight, berry weight, cluster length showed no difference between control and lime fertilizer. But soluble solids in fruit was reduced by fruit skin spray of liquid calcium fertilizer extracted from oyster shell after bagging(LCaB). The anthocyanin content of fruit skin was decreased by air-slaked lime(HCa) and LCaB treatment. Also, occurrence of fruit skin bloom was significantly reduced by HCa and oyster shell powder(OS-CaP) treatment. The berry firmness was significantly increased through liquid calcium fertilizer extracted from oyster shell(LCa) and HCa treatment. Conspicuously, berry elasticity was rather decreased by OS-CaP treatment. However, there was no difference of weight loss of fruit among treatments during room temperature storage.

  • This study was carried out to investigate the appropriate hydroponic system when cherry tomatoes were grown in summer. The base diameter of the trunk, leaf length, leaf width, and the length of cluster were good in deep flow culture(DFC), and not different between NFT and rockwool culture. The first time of flowering and the fruit coloring per cluster were not different among cultural systems, but the marketable yields were good in DFC. In DFC, % dry weight, firmness, the content of organic acid and sugar were low, and the ratio of sugar/organic acid and vitamin C were high. So DFC is recommended for the summer cultivation of cherry tomatoes.

Anatomical Structure and Fruit Quality According to the Fruit Developmental Stage as Affected by Gibberellins Treatments in Pyrus pyrifolia Nakai cv. Hanareum ('한아름'의 Gibberellin 처리에 따른 생육기별 해부학적 구조와 과실품질)

  • This study was carried out to understand the physiological characteristics of early-matured 'Hanareum' (Pyrus pyrifolia Nakai) pears through anatomical structure and fruit characteristics and also the changes according to gibberellin (GA) treatment. The pericarp at full bloom consists of outer epidermis, hypodermis, parenchyma cell, and inner epidermis from the exterior and five types of vascular bundle tissues. Cork cell layer was formed at 70 days after full bloom (DAFB) in non-treated fruits and formed at 60 DAFB in GA treated fruits. Cell division period was from full bloom (FB) to 40 DAFB and then fruit enlargement was accomplished by the cell growth. Comparison of the fruit enlargement and fruit structure development by GA treatment or non-treatment showed that cell division of 'Hanaerum' fruits did not affect the GA treatment but fruit enlargement was affected cell growth. Fruit stalk of GA treatment fruits was larger than non-treated fruits from 40 DAFB which correspond to the period of the stop of cell division and 'Hanareum' was regarded GA treatment expedite of vascular bundle tissue growth and relatively increased nutrient transport to fruit. In addition to, average fruit quality between the non-treatment and GA treatment showed that fruit weight was higher in fruits treated by GA but firmness was lower and probably was effected fruit storing in 'Hanareum' pear.

  • The experiment was conducted to investigate the relationship between $Ca^{2+}$ uptake and development of fermented fruit through the forced-air circulation of ambient fruit. Air circulation of ambient fruits were adjusted with 0.3m/sec wind velocity for three hours a day from 10:00 to 13:00. Treatments consisted of 0, 10 day, 20 day, 30 day of forced air circulation of ambient fruit. Although the results varied depend on the duration forced air circulation, in general, treated fruit increased fruit weight, flesh thickness, fruit hardness, soluble solids, and chromaticity, and decreased the number of fermented-fruit. $Ca^{2+}$ content in fruit.

Changes in the Fruit Quality of Organic and Low-level Agrochemical-grown Kiwifruit during Storage (유기농 및 저농약 재배한 참다래의 저장 중 품질변화)

  • Kiwifruits conventionally grown (CG), grown with low levels of chemicals (LCG), and organically grown (OG), were kept in cold storage for 24 weeks. Firmness gradually decreased with increasing storage time, regardless of cultivation mode, and the rate of softening was slightly higher in OG than in CG or LCG fruit. Neither dry matter level nor sensory values differed with varying types of cultivation. Soluble solid content increased with storage time, whereas acidity decreased in all fruit. Reducing sugar content increased notably until 12 weeks of storage, whereas starch content significantly decreased. The rate of OG fruit decay abruptly increased mid-storage and reached 35% 24 weeks after storage. Most fruit decayed due to infection with Botritis cinerea, regardless of cultivation type. Respiration and ethylene content peaked at mid-storage and were both slightly higher in OG fruit than in CG or LCG fruit. The shelf life of kiwifruit was reduced in OG fruit by increased fruit decay and softening during storage.

Transport Distance Affects the Quality of Both Mature and Ripe Tomato Fruits (수송거리에 따른 녹숙 및 적숙 토마토의 품질변화)

  • Tomato fruits(Lycopersicon esculentum $M_{ILL}$.) picked at mature (from mature green to breaker) and ripe (from pink to red) stage were packed into two layers in corrugated fiberbox and transported 200km and 400km from the harvested site. Loss (abrasion + cracking) in marketability was lowest (11.0%) from mature + 200km transport, followed by mature + 400km transport(13.5%), ripe + 200km transport(28.5%), and ripe + 400km transport (45.5%). When data were pooled by fruit maturity, firmness of mature fruit was 1.55 times higher than ripe fruit. However, vitamin C content was 1.25 times higher in ripe fruit than in mature fruit. Fruit transported longer distance and packed in bottom layer within a box exhibited lower firmness and vitamin C content in both maturity. It was concluded that it is desirable to transport relatively shorter distance for ripe tomato and longer distance for less ripe fruit.
