The Effects of different food-wastes of household on the feeding rate and growth rate of Eisenia fetida(Annelida: Oligochaeta) population (가정에서 발생한 서로 다른 종류의 음식물 쓰레기가 줄지렁이(Eisenia fetida)개체군의 섭식 및 생장에 미치는 영향)

  • The amount of salted food waste and non-salted food waste from household consisted of 4 family members was surveyed. And the feeding rate and growth rate of Eisenia fetida population upon the different food wastes such as vegetables, grains, fruits and salted food waste were investigated. Total amount of food waste from a household was 3,200g/week. i.e. 0.114kg/day/capita and non-salted food waste was 53.9% of food waste. Salt contents of vegetables, grains, fruits were 0.60, 0.36 and 0.33%, respectively, if they were assumed to have 70% water content. Salt content of salted food waste was 0.78%. Upon the non-salted vegetables and fruits, feeding rate of earthworm was high but growth rate was low. Upon the non-salted grains, feeding rate of earthworm was low but growth rate was high. Upon the food with 70% water content, earthworm could not feed and grow when salt content of food was over 0.6%, and earthworm could feed normally but showed low growth rate when salt content of food was 0.3%. These results indicated that earthworm could stabilize the non-salted food wastes with ease but could hardly stabilize the salted food wastes.

Choline Contents of Korean Common Foods (한국인 상용 식품의 콜린 함량)

  • Choline is important for normal membrane function, acetylcholine synthesis and methyl group metabolism. In this study, 185 food items customarily eaten by Koreans were selected from the data of the 2001 Korean National Health and Nutrition Survey and analyzed on the total choline content of the foods using enzymatic method of choline oxidase. Foods with high choline concentration (mg/100 g) were listed in sequence of quail egg (476.04 mg), dried squid (452.42 mg), beef liver (427.16 mg), pork liver (424.92 mg), tuna canned in oil (414.44 mg), boiled and dried anchovy (381.30 mg), dried Alaskan pollack (378.88 mg), chicken egg (309.88 mg), chicken liver (259.38 mg), soybean (238.62 mg), French bread with garlic (193.18 mg) and barley (183.73 mg). From this result, it is shown that dried fishes, prepared fishes, livers, eggs, pulses and cereals might be categorized as high choline food. Citron tea and green tea showed low choline content below 1 mg. Vegetables and fruits were also categorized into low choline food. No choline was detected in red pepper powder, beer, soju, soybean oil and corn oil out of foods analyzed in this study. Further study is required for analytic procedure of the foods of which results are inconsistent with USDA's data such as rice and wheat flour.

Analysis of Dietary Fiber Intake in the Korean Adult Population Using 2001 Korean National Health and Nutrition Survey Data and Newly Established Dietary Fiber Database (식이섬유 D/B 구축과 2001 국민건강 영양조사 식이섬유 섭취량 재평가 -20세 이상 성인을 대상으로-)

  • The present study estimates intake levels of dietary fiber (DF) in Korean adults aged 20 and over, using a newly established dietary fiber database for 3,149 food items, as well as 24-hour recall method data from the 2001 Korean National Health and Nutrition Survey. Dietary fiber intake and food groups are analyzed by gender, age, and region. The average dietary fiber intake, per capita of Korea was estimated to be 12.24g/1,000kcal or 23.58g/day. Calorie-based dietary fiber intake for 20-49 year-old-Korean males, 20-29 year-old females, and the adults who resided in metropolitan areas was under the Adequate Intake for DF, 12 g/1,000 kcal. Further, the dietary fiber intake after adjusting energy intake in people over 75 year-old was estimated to be 75% of AI. Vegetables, cereals and fruits were three major sources of DF for Korean, making up approximately 75% of DF. Regarding the subjects of this study, major sources of dietary fiber were Kimchi and well-polished rice, which supplied 13.98% and 9.16% of total dietary fiber intake, respectively. The result of this study could contribute to the establishment of DRIs for dietary fiber, after adjusting energy intake for Korean aged 75 years and over. The beneficial health effects of DF and the necessity of nutritional education in this area should be continuously emphasized concerning 20-29 year-old people and metropolitan adults.

A Multidisciplinary Case Study of Food and Nutrition Intakes of Different Rural Socioeconomic Classes;The Current Status and Its Problem (한국농촌의 영양섭취 및 식품소비의 실태와 그 문제점-경남지역 6개 사회계층의 사례연구를 중심으로-)

  • This report was the result of Food and Nutrition Intake Survey of 210 adults of 43 rural households in 7 villages located on Kyung Nam, Korea. It was intended to provide baseline information on the nutrintional status and inequality, the change of food consumption pattern of different rural socioeconomic classes. The survey results were as follows; 1. All the nutrient intakes(except Ca) were above RDA in landlord classes, but those were extremely poor in tenancy and rural laborer classes. Ca was the most deficient nutrient in all classes. 'Vitamin A' was deficient in most of the classes. 2. In per capita food consumption expenditure, the highest was in landlord class, next capitalist farmer and middle class farmer, the lowest were rural laborer and tenancy. There were highest consumption of vegetables and fish in landlord class, and milks and oils in capitalist farmer. The consumption of rice fruits, meats, eggs, and seasoning were relatively proportionated to the income. 3. In the change of food consumption, the most increased items were beverages and meats in capitalist farmer, fish and fruits in landlord, rice in the other classes. 4. In the correlation with food consumption, education level showed the highest correlation with meats, oils, and in contrast, land sire showed the highest correlation with cereals. Engel's coefficient was positively correlated to cereals, but negatively correlated to fish and meats.

Analysis of Nitrate Contents of Korean Common Foods (상용식품 중의 질산염 함량 분석)

  • Nitrate a common component of man's chemical environment, is present in foods either naturally or in an additive introduced during processing of foods. Nitrate level of foods have been found depending on nitrosation of soils and other various environmental factors. Therefore data on nitrate contents of foods reported in other countries can not be adapted to Korean foods. Also data on nitrate levels of Korean foods available were reported 10 years ago, which would be assumed to differ from those of foods currently consuming by Koreans. The present study was attempted to determine nitrate contEnts of common foods. Based on National Nutrition Survey Report 143 food items out of 14 food groups were selected for this study Nitrate levels of common foods used in the study were from N.D (not detected) to 6733.33 mg/kg foods. Mean nitrate levels of food groups 27.2 mg/kg of cereal and grain products, 78.1 mg/kg in potatoes and potato products, 8.3 mg/kg in legumes and their products N.D of seeds and nuts, 1012.1 mg/kg of vegetables and their products,76.3 mg/kg fungi and mushrooms 42.2 mg/kg fruits,34.5 mg/kg of meat, poultry and their products,0 mg/kg in eggs, 23.9 mg/kg in fish, shellfishes and their products,23.0 mg/kg in seaweeds, 7.7 mg/kg milk and dairy products, 26.3 mg/kg in seasonings, 68.0 mg/kg in others.

소그룹단위의 단기간 영양교육프로그램이 당뇨병환자의 식사요법 실천에 미치는 영향

  • 당뇨병은 발병한 후에는 혈당조절을 위한 식사요법 실천이 평생에 걸쳐 지속적으로 이루어져야하는 질환이므로 식사요법에 대한 영양교육이 매우 중요하다. 본 연구에서는 지속적인 실습을 포함하는 소그룹 단위의 영양교육프로그램을 실시함으로써 식사요법 실천에 미치는 영향에 대해 알아보고자 하였다. 2003년 4월부터 7월까지 보건소에서 여성 당뇨병 환자 13명을 대상으로 혈당에 가장 영향을 미치는 당질식품의 적정섭취와 균형있고 규칙적인 식사를 강조한 쉬운 식사요법 교실의 형태로 연속 4주간, 2시간의 교육형태로 그룹인원을 5명 이하로 하여 실시하였다. 설문조사를 통하여 식사요법 장애 인자를 파악하였으며 교육 전후에 식사 섭취량, 혈당 허리둘레를 측정하여 비교하였다. 대상자의 평균 연령은 57.85 $\pm$ 9.55세, 유병 기간 6.38 $\pm$ 2.9년이었다 식사요법 교육을 받은 경험이 있는 환자는 15.4%이며 당뇨병 가족력을 가지고 있는 환자는 53.8%이었다. 당뇨병 발견 동기는 증상 .있었던 경우가 23.1%, 종합 진단시 발견된 경우 15.4%, 타 질환 치료시 알게된 경우 61.5%이었다. 저혈당 증세 및 대처방법을 알고 있는 환자는 53.8%이었다. 식사요법시 장애인자를 항목별로 질문하였을 때 가장 큰 장애는 주위에서 더 먹으라고 권유하는 것, 식사요법은 나에게 큰짐이 된다는 생각, 식사요법보다 일상생활에서 더 중요한 것이 많음이 53.8%로 답하였다. 교육 전후의 식사 섭취 량을 비교하였을 때 교육 전 에너지 섭취량은 1579.6 $\pm$ 355.8㎉ 교육 후 1505 $\pm$ 425.3㎉로서 70㎉정도 감소하였다. 교육 시 처방한 열량의 98.3%를 섭취하고 있었다. 당질섭취는 교육 전 257$\pm$60.6g 교육 후 214.8$\pm$56.1g로 감소하였고 단백질, 지질의 섭취는 교육전후에 큰 차이가 없었다. 총열량에 대한 3대 영양소의 섭취비율은 교육 전 57:23:20에서 교육 후 51:28:21로 당질비율은 감소하고 지질이나 단백질 섭취비율이 증가하였다. 교육전 후 식품군 별 섭취 량을 식품교환단위 수로 비교하였을 때 곡류군 섭취는 교육 전 5.87 $\pm$ 2.51에서 교육 후 5.38 $\pm$ 1.71로 교육후 당질 식품 섭취량이 감소하였으나 통계적으로 유의성은 나타나지 않았다. 교육 후 식품선택에서의 큰 변화는 과일류 중 토마토 섭취 비율 증가로 교육 전에는 총 과일 섭취량의 19.87%에서 교육 후에는 56.32%로 증가했다. 혈당은 교육후 42.8mg/㎗ 감소한 것으로 나타났으며 허리둘레는 교육 전 평균 83.8 $\pm$ 5.75에서 교육 후 82.33 $\pm$ 5.89cm로 약 1.5cm가량 감소하였다. 따라서 당질 식품 적정 섭취에 대한 실습 위주의 단기간 영양교육은 당뇨병 관리에 유익한 것으로 평가되었다.

A study on the eating behaviors and food intake of diabetic patients in Daegu·Gyeongbuk area (대구·경북지역 당뇨 환자의 식행동 및 식품 섭취에 관한 조사 연구)

  • Rapid economic development has changed the dietary habits and patterns. Especially, western style diet has increased the risk of type 2 diabetes (T2DM) in Korea. To provide more specific and appropriate diet guideline for the prevention and for the treatment of T2DM, the investigation on the characteristics of diebetic patients related to the diet needs to be done. In this study, we therefore analyzed eating behaviors, dietary attitudes, and intake of food and nutrients of normal subjects (control, n=26) and diabetic patients (case, n=18) diagnosed T2DM within one year in Daegu Gyeongbuk area. Body mass index of the patients were significantly higher than the control (p<0.05). Overeating, high fried food and low whole grain intake were revealed as risk factors for T2DM. From the food frequency questionnaire analysis, salty foods such as fermented soybean paste (Doenjang) and watery Kimch intake were associated with T2DM. Intake of vegetable lipid, ${\beta}$-carotene, calcium, copper, and vitamin K were also shown to be associated with T2DM. Taken together, these findings suggest that maintaining ideal body weight and intake the foods with low salt, fat, and refined grain in appropriate amount may help to prevent and to manage T2DM.

Amino Acid Composition and Nutritional Value of Silkworm Larvae Protein (번데기 단백질(蛋白質)의 아미노산조성과 영양가(營養價)에 관한 연구)

  • This study was designed to determine amino acid composition of silkworm larvae protein and to evaluate its nutritional value by rat experiment. Diets were divided into 5 groups; casein ($D_1$), soybean protein ($D_2$), soybean protein+20% silkworm larvae ($D_3$), soybean protein+40% silkworm larvae protein ($D_4$), and silkworm larvae protein ($D_5$). The growth rate, protein efficiency ratio, weight of organs, hematology, and the content of total serum protein and albumin were studied. The amino acid composition of silkworm larvae protein was comparable to the FAO provisional scoring pattern. The protein was especially high in the amount of lysine and methionine indicating that it could be a good supplemental effect for cereals and beans. Growth rate and protein efficiency ratio of silkworm larvae protein were better than soybean protein and these were increased by the addition of silkworm larvae protein. The weight of liver and spleen from silkworm larvae protein group were also higher than soybean protein group and RBC, WBC, Hct and Hb content of 5 groups tested were within the normal ranges. The contents of total serum protein and albumin from soybean protein group were increased by addition of silkworm larvae protein. From the results obtained, it could be stated that the quality of soybean protein might be improved by silkworm larvae protein.

Seasonal Food Intake Status of the Long-lived Elderly People in Kyungpook Sung-Ju (경북 성주지역 장수노인의 계절별 식품섭취 상태)

  • The purpose of this study was to estimate food intakes of the long-lived elderly and to obtain the data for establishing dietary guidelines that may be recommended for the general population for the sake of longvity. The subjects of the study were 224 elderly people of age over 85 years living in Kyungpook Sung-Ju area who have no problem in daily living. The food consumption survey was carried out seasonally by the repeated 24-hr recall method for one year. The subject group for this study was composed of 58 males and 166 females, the average age being 87 years old. Food intakes of the winter were more than any other seasons. The mean daily total food intake per capita was 594.4g, 513.5 g (86.4%) from plant foods and 79.3 g(13.3%) from animal foods. The sequence of high intakes of food groups were cereals, vegetables, fruits, fishes, legumes and meats. Boiled white rice, beef soup, soybean paste soup, soybean paste stew, broiled yellow croaker, kimchi, ra myon and broiled noodles were consumed most frequently. In conclusion, the subjects consumed much more plants foods than animal foods and consumed more natural and seasonal foods than processed foods and also showed food habits of eating small meals. Dietary habits of eating small meals containing abundant amount of fresh plant foods might partially contribute to the longevity of the subjects.

Health and nutritional status of Korean underweight women in their twenties: Based on the 2010~2012 Korea National Health and Nutrition Examination Survey (20대 저체중 한국여성의 건강 및 영양 상태: 2010~2012년 국민건강영양조사 자료를 이용하여)

  • Purpose: The current study was conducted in order to identify health and nutritional status of Korean underweight women in their twenties by comparing with normal, overweight, and obese women. Methods: Data from the 2010~2012 Korea National Health and Nutrition Examination Survey were used in this study. Subjects were 897 women aged 20~29 years. Subjects were classified according to underweight, normal weight, overweight, and obese groups based on body mass index. Health status was assessed using data from the health questionnaire and examination. Nutritional status was assessed using data from 24-hour dietary recall and a food frequency questionnaire. Results: The underweight group had higher education and exercised less than the obese group. Means of blood chemistry and blood pressure of the underweight group did not differ from those of the normal weight group. Means of fasting glucose, insulin, lipid profiles, blood cell counts, and blood pressure in the underweight group were different from those of the overweight or obese group. Proportions of delivery, breast feeding, and irregular menstruation in the underweight group were lower compared with the other groups. Except retinol intake, means of nutrient intake did not differ among four groups. There were significant differences among four groups in the intakes of cereals and eggs and frequency of consumption of dairy products. Conclusion: The current findings showed that health and nutritional status of underweight women in their twenties did not differ from those of normal weight women. In particular, health status of underweight women in their twenties was better than that of obese women of the same ages. Further study on health and nutritional status of extremely underweight women is necessary.
