The disappearance of seaweed flora in some rocky areas, which is known as algal whitening, barren ground, coralline flats, or deforested areas, is associated with some species of coralline algae. To determine the biological characteristics of a representative species of crustose coralline alga, the 18S rDNA gene was sequenced to identify the genus Lithophyllum. According to its morphological and distributional characteristics, it was deduced to be L. yessoense. Viability was measured using triphenyl tetrazolium chloride and showed high viability from December to February. Culture conditions of $16^{\circ}C$, a 16 hr light, 8 hr dark cycle, and 30 ${\mu}E/m^2/s$ light intensity were optimal for maintaining the viability of the alga for up to five days. Included in the fatty acids was 9.7% ${\omega}$-3 eicosapentaenoic acid. An electron microscopy scan of the surface structure revealed round craters about 3.6 ${\mu}m$ in diameter, which were covered with rough, irregular, and angular polygon-shaped structures about 1.0 to 3.7 ${\mu}m$ in size. Based on the composition and structure found in our study, biomimetic coralline alga might become an environmentally friendly antifouling material against the attachment of soft foulants.
The study was carried out to develop the powdered smoked-dried anchovy products as a natural flavoring substance. The processing conditions, chemical and taste compounds of products were as follows: The raw anchovy were washed, and then boiled 5 minutes in $5{\sim}6%$ NaCl and 1.0% sodium erythorbate solution. Boiled anchovy were smoked in smoking house at $40^{\circ}C$ for 4 hours as the first stage, and then increased temperature up to $80^{\circ}C$ as the second stage, and finally smoked 8 hrs at $80^{\circ}C$ to maintain the moisture content between 9 and 10 percent. The smoked-dried anchovy were pulverized and screened to be 50 mesh of particle size, and finally packed in PET/Al/CPP film bag. The moisture, crude lipid content and salinity of powdered smoke-dried anchovy were 9.4%, 9.6% and 6.9%, respectively. Fatty acid composition of product was mainly consisted of polyenes (43.4%) such as 22 : 6 and 20 : 5, followed by saturates (36.9%), monoenes (19.7%). The principal taste compounds of product were IMP, 466.5 mg/100g; free amino acids such as His, Tau, Pro, Lys, Ala and Glu, 1179.2 mg/100g; non-volatile organic acids such as lactic acid and succinic acid, 617.9 mg/100g; total creatinine, 595.9 mg/100g; small amount of betaine and TMAO. To make a instant soup, it was desirable for taste of products that powdered smoked-dried anchovy were mixed with 20% salt, 4.0% sugar, 3.0% MSG, 1.0% onion powder, 1.0% garlic powder and 1.0% black pepper.

Lipid content and fatty acids composition of anchovy sauce were investigated during fermentation at $20^{\circ}C\;and\;37^{\circ}C$ for 120 days. Total lipid(TL) of raw anchovy was composed of $80.8\%$(1.98g/100g) of non-polar lipid(NL), $19.2\%$ (0.47g/100g) of phospholipid(PL) The contents of TL, NL and PL in the anchovy sauce decreased during fermentation, but the ratio of NL/TL increased from $81.1\%\;to\;90.0\%$ while that of PL/TL decreased from $18.9\%\;to\;10.0\%$. The major fatty acids in TL and NL fractions of fermented anchovy sauce were 16:0, 18:0, 18:1n-9, 16:1n-7, 18:1n-7, 20:5n-3 and 22:6n-3, 22:6n-3 was highest in the PL fraction regardless of temperature or fermentation time.
The composition of muscle lipids and their fatty acid composition of two groups of tilapia, cultured in fresh and seawaters, were investigated. The total lipid(TL) of seawater culture group is a little richer than that of freshwater culture. The neutral lipid(NL) is the most abundant in muscle lipids of two groups, followed by the phospholipid(PL) and glycolipid (GL). The increment of TL content seemed to depend upon triglyceride(TG) fraction, because large portions of lipids are consisted of TG. Phosphatidyl choline(PC), phosphatidyl ethanolamine and sphingomyelin were identified in PL, and the content of PC was the highest. The principal fatty acids of muscle lipids were 14 : 0, 16 : 0 and 18 : 0 as for saturated fatty acids, and 16 : 1, 18 : 1, 18 : 2 and 22 : 6 as for unsaturated fatty acids. In particular, high contents of 16 : 0 and 18 : 1 were observed in TL, NL and GL. However, low contents of 18 : 1 and 18 : 2 were observed in PL, while they were high in polyunsaturated fatty acids with 20 : 4, 20 : 5 and 22 : 6. In the meantime, no significant difference was observed in the composition of muscle lipids and their fatty acids between two groups cultured in seawater and freshwater.
In this study, the quality stability of a kind of natural seasoning material, the mixture of enzyme treated mackerel meat and Laminaria powder during the storage was investigated by measuring the TBA(thiobarbituric acid)value, extend of browning, changes in amino nitrogen and chlorophyll a, and fatty acid composition, and the results of sensory evaluation. Addition of sodium alginates (0.08%) and calcium carbonate (0.02%) seemed effective as a binder to yield clarity of the hot water extract of the product. In results, the mixture of Laminaria powder and the enzyme treated mackerel meat added with 0.08% sodium alginate and 0.02% calcium carbonate was more stable in overall quality than the other cases of preparation. And the taste of the mixture could favorably compete with that of dried anchovy extracts.

For the use of salmon frame in zero emission, the snack using residues of salmon Gomtang was prepared and investigated on the food component characterization. According to the results of volatile basic nitrogen, water activity and sensory evaluation, the optimal substitution ratio of residues was 15% based on the mix. Total amino acid content was higher in the snack (14.8 g/100 g) with 15% residues than in snack (9.8 g/100 g) without residues. The major amino acids of the residues-added snack were aspartic acid (9.9%), glutamic acid (14.7%) and proline (9.5%). The snack with 15% residues were enriched in the mineral (calcium and phosphorus) and polyunsaturated fatty acid (20:5n-3 and 22:6n-3) compared to those of snack without residues.
Fatty acid fraction rich in ${\omega}-3$ polyunsaturated fatty acids (${\omega}-3$, PUFA), especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) could be obtained by saponification of fish oil in ethanol containing alkali hydroxide followed by cooling and filtration of the resultant solution. Fatty acid compositions of fish oil and the concentrates suggest that the ratio of number of double bonds to carbon number in a fatty acid molecule is a more important factor than the degree of unsaturation or the chain length in determining the solubility of fatty acid salts in ethanol. Water content in ethano1 affected significantly the efficiency of the separation with respect to yield and content of EPA and DHA in the concentrates; the lower the water content, the higher the efficiency. It was, however, influenced little by cooling procedure and temperature which the saponified solution experienced during the crystallization. Under an optimal condition, the contents of EPA and DHA in the concentrate increased by 2.4 and 2.5 times, respectively, as compared with those in sardine oil.
The seasonal variation in lipid contents and fatty acid composition in the muscle of sardine, Sardinops melanosticta, caught between April, 1985 and March, 1986 was studied. The lipid contents in the muscle varied remarkably from 5.2 to 17.2% for the whole muscle, from 1.6 to 8.4% for the white muscle and from 8.8 to 20.8% for the dark muscle through the sampling periods. The lipid contents in the sardine muscle showed the lowest value in January, and the highest value in July, and the major fatty acids in the muscle were 16:0, 18:1, 20:5 and 22:6. The seasonal variation in fatty acids of sardine showed a tendency of high levels of polyenes such as 20:5 and 22:6 and low levels of saturates and monoenes such as 16:0 and 18:1 during the season of low lipid, while that showed the high levels of saturates and monoenes, and the low levels of polyenes during the season of high lipid.

The antibacterial activity of ethanol (99.9%) extracts from marine micro-algae, namely, Mixed A (Pavlova sp., Thalassiosira weissflogii, Tetraselmis suecica and Isochrysis galbana were mixed with 1:1:1:1 ratio), Chlorella vulgaris, Nannochloropsis oculata and Chaetoceros calcitrans were estimated against food-borne bacteria, namely, Escherichia coli, Salmonella Typhimurium, Staphylococcus aureus and Bacillus cereus. The extracts from these marine micro-algae showed potent antibacterial activity against all tested bacteria by the paper disk method. The extracts from C. vulgaris showed the strongest antibacterial activity against E. coli with minimum inhibitory concentration (MIC) of 0.62 mg/mL, and minimum bactericidal concentration (MBC) of 2.50 mg/mL. The extract from C. vulgaris contained 2 active compounds, 38.8% linoelaidic acid and 30.0% phytol. These results indicated that the ethanol extract from C. vulgaris may be a putative natural antibacterial agent against food-borne bacteria.
Total lipids from the roe, muscle and viscus of L. carinata were analyzed for lipid composition by column chromatography, thin-layer chromatography and gas-liquid chromatography. The roe lipids were characterized by a high level of wax esters (63.1%) and a low proportion of trigiycerides (9.9%). The viscus lipids also contained wax esters (32.8%) as its main component, followed by free fatty alcohols and acids (23.5%). On the other hand, the muscle lipids were found to contain a large amount of triglycerides (66.1%) with a trace of wax esters. The main fatty alcohol component of roe and viscus wax esters was C16:0 alcohol (53.0%; 61.7%), accompanied by C18:1 alcohol (10.2%) in the former and by C15:0 alcohol (8.8%) in the latter. Considerable amounts of odd-numbered fatty alcohols were found in both wax esters. On the other hand, the fatty acids of the roe and viscus wax esters contained a high percentage of monounsaturated (49.7%-56.6%) consisting of C16:1, C18:1 and C17:1 acid, and a significant amount of polyunsaturated (41.2%-32.9%), particularly C20:5${\omega}$3. The fatty acid components of triglycerides and phospholipids were different among the tissues tested, especially between roe and muscle or viscus. The fatty acid compositions of free fatty acids from the muscle and viscus were characterized by a higher level of polyunsaturated fatty acids (46.0-34.3%) compared to those of triglycerides 'in the roe, muscle and viscus (28.4%, 19.4% and 19.2%).
