Quality characteristics of frozen surichwi rice cake made using transglutaminase treated-rice flour (Transglutaminase 처리 쌀가루를 이용한 수리취 첨가 냉동 송편의 품질특성)

  • Transglutaminase (TGase), which forms linkages among proteins, has been used to improve food quality. In the current study, quality characteristics such as color values, texture profile parameters, and sensory profiles of the frozen surichwi (Synurus deltoids) rice cake made using transglutaminase (TGase) treated-rice flour were investigated, with a view to producing high-value rice products. The results indicate that Hunter color values (L and b) and TPA parameter values (hardness, gumminess and chewiness) of frozen surichwi rice cake made with TGase-treated rice flour were significantly changed, and that these properties may be applied to improve the sensory qualities of final products. Also, the sensory acceptability scores related to color, appearance, taste and texture, as well as overall acceptability of the TGase-treated frozen surichwi rice cake, were found to be significantly higher compared to controls. In conclusion, the results clearly indicate that TGase-treated rice flour carries the potential to improve the overall quality of frozen rice cake, and that surichwi is an effective ingredient for sensory profiles.

Quality Characteristics of functional Cookies with Added Potato Peel (감자껍질을 첨가한 기능성 쿠키의 품질 특성)

  • The purpose of this study was to investigate the quality characteristics of functional cookies made with potato peels (cortex layer) containing high amounts of glycoalkaloid. Cookies were processed by mixing ratios of 10, 15 and $20\%$ potato peel relatively to flour. The spread ratio of the cookies was increased with increasing potato peel addition. Texture measurement for the cookies on substituting $10\%$ of flour for potato peel showed a decreased hardness, but the cohesiveness and springiness were increased compared to the control and other ratios. The glycoalkaloid contents of the cookies on substituting 10, 15 and $20\%$ of the flour forpotato peel were 6.27, 9.40 and 12.54mg, respectively, which according to the USAD guidelines are safe amounts for the human body, and also enough for making functional cookies. In the sensory evaluations, the cookies with $10\%$ of the flour substituted for potato peel had the highest scores in flavor, taste, appearance and texture.

Characteriatics of Single Cell Suspension of Garlic, Red Pepper and Cucumber Prepared by Protopectin Hydrolytic Enzymes (펙틴분해효소를 이용한 마늘, 고추와 오이의 단세포화물의 제조)

  • Protopectinase (PPase) from Bacillus subtilis was used to investigate enzymatic maceration of vegetable tissues. Optimum concentration and pH of PPase were 0.75, 0.75, and 0.5%, and 5.0, 8.0, 7.0 for red pepper, garlic, and cucumber, respectively. Optimum shaking-rate, reaction time, and temperature of PPase were 250 rpm, 150 min, and $37^{\circ}C$, respectively. Yields of mechanically macerated red pepper, garlic, and cucumber were 45.8, 47.5, and 82.1%, whereas those treated with PPase were 81.8, 84, and 98%. Over 40% Vitamin C, the most unstable component during mechanical maceration, remained intact for 12 days after enzymatic treatment. Color differences $({\Delta}E)$ of mechanically macerated red pepper, garlic, and cucumber were 1.16, 2.86, and 3.27, whereas those of PPase-treated ones were 2.87, 7.68, and 5.22 after heat treatment at $100^{\circ}C$ for 20 min. Capsaicin content of mechanically macerated red pepper was 0.4 mg/100 g, whereas that treated with PPase was 1.32 mg/100 g. Viscosity of PPase-treated vegetable decreased slowly with increasing storage period, whereas that of mechanically macerated vegetable sharply decreased. These results indicate PPase treatment of vegetable could be better choice for preparation of high-values and functionally processed food and for extending preservation period.

Quality Characteristics of Sulgidduk Containing Different Levels of Dandelion (Taraxacum officinale) Leaves and Roots Powder (민들레 잎과 뿌리 분말을 첨가한 설기떡의 품질 특성)

  • In order to develop a dandelion (Taraxacum officinale) with natural food applications, the effects of dandelion leaves and roots powder content on the physical, textural and sensory properties of sulggidduk were examined. Dandelion powders of leaves and roots at 0, 1, 2 and $3\%$ were added to the dandelion sulgidduk. In the dandelion roots powder in sulgidduk, the color intensity of L values and the values and moisture content decreased however, the sensory color intensity, dandelion flavor and overall acceptability increased with increasing the dandelion powder content. The sensory overall acceptability indicated the dandelion roots powder content at 3% had the highest overall and flavor scores. As the dandelion leaves content was increased, the moisture contents, lightness, adhesiveness and cohesiveness of sulggidduk decreased, while the sensory color intensity, sensory hardness, hardness of texture properties and dandelion flavor increased. The addition at $1\%$ of the dandelion leaves powder content with the dandelion sulggidduk and the addition at $3\%$ of the dandelion roots powder content with the dandelion sulggidduk showed the highest overall acceptability.

Quality Characteristics of Muffins with Added Acorn Jelly Powder and Acorn Ethanol Extract Powder (도토리묵가루 및 추출물을 첨가한 머핀의 품질특성)

  • In this study, muffins were made with the addition of 50% acorn jelly powder and 0, 0.1, and 0.5% acorn ethanol extract powder. The moisture content of muffins decreased with an increase in the acorn ethanol extract powder concentration. Baking loss rate decreased with an increase in powder concentration. The lightness and yellowness of muffins decreased as the concentration of powder increased. Redness increased as the concentration of powder increased. The hardness of muffins increased, and cohesiveness decreased with an increase in powder concentration. Gumminess, and chewiness decreased by the addition of powder. The results of a sensory test showed that the texture quality of the muffin increased as the amount of added acorn increased. The taste of muffins increased with an increase in the powder concentration, but 1.0% acorn ethanol extract powder decreased. In terms of the overall acceptability, 0.1% acorn ethanol extract powder had the highest preference level.

Quality Characteristics of Topokki dduk With Respect to Added Whole Soybean Curd (Chun-Tofu) by Different Storage Time (전두부를 첨가하여 제조한 떡볶이용 떡의 저장시간에 따른 품질특성)

  • The purpose of this study was to investigate the quality characteristics of Garaedduk with regard to the amount of added whole soybean curd (Chun-Tofu). Whole soybean curd was added in amounts of 0, 3, 6 and 9%. Whole soybean curd Topokki dduk was stored at room temperature for 48 hours. The moisture contents had no significant difference for increases in the amount of whole soybean curd. The L value and b values of Garaedduk increased significantly with increases in the amount of whole soybean curd. Texture characteristics of Garaedduk measured with a texture analyzer revealed that hardness and cohesiveness decreased significantly for different amounts of whole soybean curd, and hardness increased significantly and cohesiveness and chewiness decreased with increase of storage time. As for sensory characteristics, samples with 9% added whole soybean curd rated higher in overall acceptability compared with other samples. In regard to cooking properties, water absorption increased and solid contents decreased with increases in the amount of whole soybean curd. Therefore, Garaedduk containing 9% whole soybean curd was most preferable.

Pasting and Sensory Properties of Commercial Rice Products (유통중인 쌀의 호화 및 관능적 특성)

  • This study was conducted to investigate the pasting and sensory properties of different commercial rice cultivars. All samples had adequate moisture content, and Gyeonggi Kosihikari had the lowest protein content (6.75%). Apparent quality of head rice ranged from 85.63 to 98.70% and amylose content was 21.51-26.54%. In a rapid visco analyzer examination, pasting temperature of Gyeonggi Kosihikari was the lowest (84.87). Breakdown of Gangwon Oade (43.64 RVU) was lower that of others, indicating the highest pasting stability. The setback of Jeonam Hitomebore was the lowest (81.56 RVU), suggesting slow deterioration. A texture analysis test showed that Gyeonggi Koshihikari had the lowest hardness and Chungnam Samgwang had the highest adhesiveness. Gyeonggi Koshihikari had the highest sensory scores for appearance, flavor, taste, texture and overall acceptability. These results indicate that Gyeonggi Koshihikari is the most adequate rice product among cultivars.

The Quality Characteristics of Jelly Added with Bokbunja (Rubus coreanus Miquel) (복분자를 첨가한 젤리의 품질특성)

  • The purpose of this study was to investigate the effects of adding various amounts of ingredients on the physicochemical and sensory characteristics of Bokbunja-jelly. The proximate composition of Bokbunja-jelly was 19.0% for the moisture and 0.8% for the crude protein. The Hunter L-values of Bokbunja-jelly prepared by adding 10 g RME or 120 g sucrose were higher than that of Bokbunja-jelly prepared by adding 20 g RME or 100 g sucrose. The Hunter b-values of Bokbunja-jelly prepared by adding 20 g RME or 120 g sucrose was higher than that of Bokbunja-jelly prepared by adding 10 g RME or 120 g sucrose. The hardness and chewiness were increased with decreasing Rubus coreanus Miquel extracts. According to the results of the sensory evaluation, no significant differences in flavor, sweetness, hardness, elasticity and overall qualities were found. According to the results of physicochemical properties and sensory evaluation, the optimal recipe for preparation of Bokbunja-jelly was determined to be 240 g water, 120 g sugar, 110 g glucose syrup, 4 g agar, 20 g Rubus coreanus Miquel extracts and 0.3 g Rubus coreanus Miquel flavor.

Effect of the ice pack treatment in the corrugated box for improving the storage quality of the oriental melon (Cucumis melo var. makuwa) at high temperature conditions during summer (여름철 고온 환경 조건에서 참외(Cucumis melo var. makuwa)의 저장 중 선도유지를 위한 아이스 팩 처리 포장 박스 적용 연구)

  • The effects of the ice pack and aluminum coated board in the corrugated boxes for maintaining the quality of fresh oriental melons (Cucumis melo var. makuwa) were investigated. The harvested oriental melons were stored at a temperature of $30^{\circ}C$ for 21 days after placing them in the corrugated boxes treated with control, including ice pack and aluminum coated board. The treatment with the ice pack and aluminum coated board was identified to have maintained the relative low temperature in the corrugated box against the high temperature from the environment. For the storage study of the oriental melon, the treatments with the ice pack and aluminum coated board reduced the respiration rate, the development of external color, and total weight loss. All treatments were also effective in maintaining the firmness and decreasing the decay ratio of the oriental melon as compared to those that were controlled. However, the value of total soluble solids regarding the fruit was insignificantly affected by the ice pack treatment. The results indicated that the application of the ice pack and aluminum coated board in the corrugated box played an important role in maintaining the quality of oriental melons during storage. The combination with the ice pack and aluminum coated board had more effective values on the storage qualities for oriental melons than that with the ice pack only. Based on the results of this study, the ice pack and aluminum coated board were the useful treatments for reducing the loss of quality of the fresh oriental melons in high temperature storage conditions.

Microbial and Physico-chemical Characteristics of a Maesil(Prunus mume) Treated with Low Levels of Gamma Rays (저선량 감마선 조사에 의한 매실의 미생물학적 및 이화학적 특성 평가)

  • In this study we assessed the effects of gamma irradiation ($0.5{\sim}3\;kGy$) on the microbial and physico-chemical characteristics of maesil (Prunus mume) stored for 9 days at $20^{\circ}C$. Total aerobic bacteria, yeasts and molds were significantly decreased with increases in the irradiation dosage. In terms of the Hunter's color value, irradiated samples evidenced a higher b-value, but a lower a-value than the non-irradiated samples. Hardness was reduced with increment in the irradiation dose level. The contents of total sugar, hydrogen donating activity and organic acids were not affected by irradiation. The reducing sugar contents of the irradiated samples were superior to those of the non-irradiated samples. Vitamin C contents were reduced with the progression of storage periods and increases in the dosage level. These results demonstrated that gamma irradiation of 0.5 to 3 kGy affected the microbiological safety of maesil, but did not affect the physico-chemical characteristics(total sugar, hydrogen donating activity and organic acid) but the Hunter's color value, hardness, and vitamin C contents of the maesil deteriorated with gamma irradiation.
