압출조리를 이용한 쌀 이유식 제조에서 아밀라제 첨가가 물성변화에 미치는 효과

  • 압출조리 공법에 의한 한국형 쌀 이유식 제조에서 아밀라제 첨가가 압출미분의 물성 변화에 미치는 영향을 알아보았다. 압출조리기의 스크류 회전수는 200rpm, 원료의 사입속도는 180g/min로 고정하여 작동하였다. 원료 쌀가루의 수분함량은 18, 23, 28%로 가수하였고 첨가된 아밀라제는 Bacillus licheniformis로부터 분리한 Termamyl 120LS(NOVO사), Bacillus amylolichuefaciens로부터 분리한 BAN 240L(NOVO사) 및 맥아분말이다. 아밀라제 첨가에 의해 압출미분의 수용성지수는 3배까지 증가했고, 환원당 생성량은 원료의 수분함량에 크게 영향을 받아 28% 수분함량에서 급격히 증가하여 수용성지수와는 다른 경향을 나타내었다. 겔 투과크로마토그래피에 의한 분자량적 구조 변화 측정 결과 아밀라제 첨가에 의해 고분자 획분이 상당히 감소했으며 상대적으로 저분자 획분이 증감함을 알 수 있었다. 아밀라제의 잔존환성은 아밀라제 종류에 따라 다르며 가장 내열성인 Termamyl 120LS의 경우 용융부위 온도 14$0^{\circ}C$에서 27%까지 감소하였다. 침전법에 의한 분산특성은 아밀라제 작용에 의해 수용성 물질이 증가함에 따라 침전층의 감소를 나타내었으나 처리온도가 14$0^{\circ}C$로 증가하면 침전층의 높이는 증가하였다. 겉보기 점도는 아밀라제 첨가에 의해 무처리 압출미분의 1/4~1/200로 감소하였다. 시판 이유식의 권장농도에서의 점도와 같은 점도 수준에 도달하기 위해서는 원료의 수분함량(18, 23, 28%), 아밀라제 종류 및 첨가량, 계량부위 온도에 따른 각 작동조건의 압출미분을 최고 1.8배의 양을 사용할 수 있었다. 이상에서 살펴본 바와 같이 원료 쌀가루에 첨가된 아밀라제가 압출조리기내를 통과하면서 쌀가루의 가수분해를 일으켜 환원당 등 수용성 물질이 증가하고 분산특성이 좋아지며 점도가 낮아지고 결국 이유식의 열량밀도를 증가시킬 수 있음을 확인할 수 있었다.

  • Characteristics diffusion time of viscoelastic fluids are determined experimental results of terminal velocity by using the falling ball viscometer. The characteristics diffusion time of viscoelastic fluids are determined with help of the sphere device which is installed to return the dropped sphere from the bottom of the test cylinder without disturbing the working fluids. Terminal velocity of th sphere the reason why experimental of characteristics diffusion time that it is have an effect on the time interval of the measuring. Viscous of the fluid the temperature changed in order to have an effect on temperature and terminal velocity of the ball it becomes larger the possibility of knowing. A result of visualization for flow phenomena of around the sphere uses the PIV and the density of the polymer solution which it appears 2000wppm is to a case which is the right and left becomes symmetry to be it will be able to confirm and according to the time interval, to observed velocity vector of same at first drop the sphere.

  • MR Fluid, one of functional fluids, is developed for the application to automobile products. MR CDC damper using MR fluid has following principles. When ar electric current is applied to the solenoid, apparent viscosity of MR fluid passing through the annular gap which acts as magnetic circuits varies directly as the intensity of the current. These devices have a simple structure and excellent lime response characteristics, emerging as the alternatives of the conventional semi-active suspension systems. In this study, a design procedure of the magnetic circuit through the solenoid fore and the flux ring functioning as a magnetic path is investigated so as to optimize the design and performance of MR CDC dampers for the vehicles. In addition, an operating point on the B-H curve, the magnetization according to the variation in the annular gap, the pole piece width and the density of MR fluid are studied to design the optimal piston head within the restrained dimension range.

Study on Angular Momentum Transfer in Polymer Solutions (폴리머 용액에서의 각운동량 전달에 관한 연구)

  • This investigation deals with the spin-up flows in a circular container of aspect ratio, 2.0. Shear front is generated in the transient spin-up process and propagating from the side wall to the central axis in a rotating container. Propagation of the shear front to the axis in a rotating container means the region acquires an angular momentum transfer from the solid walls. Propagating speed of the shear front depends on the apparent viscosity of polymer solution. Two kinds of polymer solutions are considered as a working fluid: one is CMC and the other is CTAB solution. CMC solution has larger apparent viscosity than that of water, and CTAB shows varying apparent viscosities depending on the applied shear rates. Transient and spatial variations of the apparent viscosities of the present polymer solutions (CTAB and CMC) cause different speeds of the propagating shear front. In practice, CMC solution that has larger values of apparent viscosity than that of water always shows rapid approach to the steady state in comparison of the behavior of the flows with water. However, for the CTAB solution, the speed of the propagating of the shear front changes with the local magnitude of its apparent viscosity. Consequently, the prediction of Wedemeyer's model quantitatively agrees with the present experimental results.

Effects of Low-Dose Gamma Irradiation on Physicochemical Properties and Formation of Resistant Starch of Corn Starch (저선량 감마선 조사가 옥수수 녹말의 이화학 성질 및 저항전분 생성에 미치는 영향)

  • Intrinsic viscosity of starch irradiated with Co-60 (0.25-9.1 kGy) significantly decreased, and swelling power and solubility measured at $80^{\circ}C$ linearly increased with increasing irradiated dose. Radiation treatment up to 1 kGy increased amylose content of starch. Water-binding capacity increased rapidly up to 3 kGy. Peak viscosity of irradiated starches by Rapid visco Analyser and Visco/amylo/Graph indicated that the decrease in peak viscosity was dose-dependent. Gamma irradiation showed no effect on endothermic temperatures of irradiated starches, but decreased endothermic enthalpy with increasing dose level. Viscosity of starch autoclaved at $120^{\circ}C$ and air-dried significantly decreased with increasing irradiation dose. Resistant starch content slightly decreased upon irradiation.

  • The rheological properties of gelatinized arrowroot stach solution $(4{\sim}7%)$ followed the power law and showed a pseudoplastic behavior at the temperature range of $30{\sim}66^{\circ}C$. The flow behavior index was essentially remained constant at all temperatures, but decreased as starch concentration increased. The consistency index was exponentially increased with the increase of starch concentration. The activation energy of flow of gelatinized starch solution was $4.068{\sim}4.542\;kcal/mole$.

  • This study is a basic one for application of ER Fluid to fluid power systems. By mixing silicone oil with zeolite particles, four kinds of ER fluids were made, in which the weight ratio of zeolite particles are different. We examined how the Yield shear stress and Bingham characteristics of the ER fluids are effected by varying electric field intensity. We designed and constructed a disk type power transmission clutch in which ER fluid fills and this ER fluid transmits the power of drive shaft to the driven shaft. With this equipment, the revolution transmission ratio from the chive shaft to the driven shaft by varying electric field density of the ER fluid was examined.

  • Nd치환이 Ag의 용융점 이하인 94$0^{\circ}C$에서 소결한 $Bi_{1-x}$$Nd_{x}$N$bO_{4}$세라믹스의 소결거동과 마이크로파 유전특성에 미치는 영향을 연구하였다. Nd치환량(x)이 증가함에 따라 사방점에서 삼사정으로 변하는 양이 증가하였고 결정립의 크기, 겉보기밀도, 유전상수는 감소하였다. Q$xf_{0}$값은 Nd 치환량이 0.025mole 이하의 경우 큰 변화가 없으나, 그 이상에서는 증가하여 0.1mol일 때 최고값을 보이고 다시 급격히 감소하였다. TCF값은 Nd치환량이 증가할수록(+)방향으로 증가하였다. 가장 우수한 마이크로파 유전특성은 Nd 치환량이 0.025mole일 때 얻어졌으며, 이때 유전상수는 43.7, Qxf/ sub 0/값은 11,046GHz, TCF값은 -1.82ppm/$^{\circ}C$이었다.

Rheological Properties of Gelatinized Dilute Rice Starch Solutions (쌀전분 희석 호화액의 유동학적 특성)

  • Rheological properties of waxy and non-waxy rice starch solutions were evaluated with a narrow gap rotational and Cannon Fenske viscometers. The gelatinized rice starch solutions containing 0.2-1.0% starch displayed pseudoplastic flow behavior. At higher starch level, degree of pseudoplasticity of waxy rice starch solutions increased, while that of non-waxy rice did not changed apparently. The consistency coefficient (K) of non-waxy rice starch solutions increased with increasing gelatinization temperature, but waxy rice starch solutions remained constant, and in alkaline aqueous solutions both of them showed increasing K values. The value of K increased exponentially with an increase in concentration. The effect of the temperature on the viscosity of the solutions followed Arrhenius' type equation, and the activation energies were in the range of 3.675-3.775 kcal/g-mol that were near to that of pure water. The changes of reduced viscosity with concentration were followed Huggin's equation and the values of intrinsic viscosity and interaction coefficient were 0.78-1.59 dl/g and 0.67-2.75, respectively.

Rheological Characteristics and Molecular Weight of Ammonium-Sulfate Fractions of Tara Gum (염석법에 의한 타라검 분획들의 분자량 및 리올로지 특성)

  • This study aimed at characterizing the rheological properties and molecular weight of tara gum fractionated with ammonium sulfate. Tara gum was separated into six fractions (F1-F6) at different concentrations of ammonium sulfate, ranging from 12.21 to 28.67% (w/w). The yield of the tara gum fractions ranged between 4.98 and 17.47%, and their intrinsic viscosity ranged from 9.38 to 12.44 dL/g. The highest values of Huggins coefficient (k') and viscosity-molecular mass were observed in fraction F3. The shear viscosity of the tara gum fractions was measured by a cone-plate viscometer, clearly showing shear thinning behavior. Size-exclusion chromatography results showed that the molecular weight ranged between 635.42 and 776.71 kg/mol, and the F3 fraction exhibited higher values of molecular weight.
