Physicochemical Properties of Korean Ginseng Dried with Lower Power and Pulse Microwave (저출력 및 Pulse 마이크로파 건조 후 인삼의 품질 특성)

  • Quality changes of Korean ginseng on microwave drying were determined in terms of water activity, crude protein, crude lipid, crude ash, dielectric properties, content of sugar, ginsenoside composion, microstructure. Korean fresh ginseng were subjected to four different processing : 3 min microwave drying and 2 min holding-24 hrs drying (MWI), 5 min microwave drying and 2.5 min holding-24 hrs drying (MW2), 3 min microwave drying and 2 min holding-12 hrs after hot air drying for 12 hrs drying at $45^{\circ}C$ (MWH1), 5 min microwave drying and 2.5 min holding-12 hrs drying after hot air drying for 12 hrs at $45^{\circ}C$ (MWH2), Water content was decreased 14.33% without shrinkage and water activity was 0.57 after microwave drying. Permittivity was increased as water content increased. As temperature increased, permittivity was increased until $40^{\circ}C$ and fast decreased over $40^{\circ}C$. Content of ginsenoside for MW1 and MW2 was higher than that of MWH1 and MWH2. Data of free sugar showed that there was no significant difference in each treatment. The MW2 dried ginseng showed a more compact structure than the MWH2 ginseng.

Optimization of Vacuum Drying Conditions for a Steamed (Pumpkin-) Sweet Potato Slab by Response Surface Methodology (반응표면분석법을 이용한 증절간 (호박)고구마의 최적 진공건조조건 설정)

  • Vacuum drying was conducted for a steamed pumpkin-sweet potato slab to improve its quality, convenience and preference as snack. Steamed sweet potato was dried from 30 to $60^{\circ}C$ for 12 hr, after which moisture contents, colors, and taste were evaluated. The lowest moisture content was 0.22% upon vacuum drying at $60^{\circ}C$ for 12 hr. Lightness decreased while other color values (a, b and ${\Delta}E$) increased with increasing drying temperature and drying time. Reducing sugar and soluble solid contents ranged from 98.7~268.11 mg/g and $19{\sim}72^{\circ}Brix$, respectively. Sensory score of the sample was the highest when dried at $50^{\circ}C$ for 6 hr. The optimum drying conditions were predicted to be $48.5{\sim}62^{\circ}C$ and 5.1~7.1 hr by response surface methodology.

Moisture Content Change of Korean Red Pine Logs During Air Drying: I. Effective Air Drying Days in Major Regions in Korea (소나무 원목의 천연건조 중 함수율 변화: I. 국내 주요지역의 유효천연건조일수 조사)

  • Air drying depends on species, density, dimension of wood, the geographical location of the air drying yard, and the meteorological factors of air drying site. If there are four seasons with large difference in temperature and humidity like in Korea, the research of the meteorological factors is required in air drying site. In this study, effective air drying days (EADD) of 24 regions in Korea were calculated by using the average monthly temperature, relative humidity, and wind speed. The EADD in 24 regions in Korea was ranged from 239 days to 291 days, with an average 265 days. This result is 5 days increased compared to the average of EADD calculated using the meteorological factors from 1955 to 1984. The results of multiple regression analysis on the EADD and meteorological factors showed that EADD affected in the order of temperature, relative humidity, and wind speed. As a result of dividing Korea into 4 zones of EADD, the zones of EADD were moved northward compared to previous study due to global warming. As basic data for predicting the moisture content (MC) distribution of Korean red pine logs during air drying conducted in Seoul, the average monthly temperature, relative humidity and wind speed for three years from 2016 to 2018 were presented, and the corresponding changes of the equilibrium MC were analyzed.

  • To extend shelf life of mulberry fruits, usually expensive freeze drying of freezing process is required. In this study an economic to multipurpose agricultural products dryers with mulberry dryer and technique was developed to reduce postharvest processing cost. Fuel and electricity consumption for drying were lowest when drying temperature was $60^{\circ}C$. And various drying conditions (fuel 3 hrs, heat 1 hr, room temperature air velocity 51 hrs) of the developed dryer were analyzed to improve drying performance. Dried mulberry fruits had dark brown color and marketable high quality explain the semi-dried characteristics.

  • 국내 콩의 소비량은 계속적으로 증가하고 있다. 재배 면적은 1995년 10,000ha에서 2013년 8,000ha까지 계속적으로 감소하였으며, 수입은 2009년 644.9백만 달러에서 2013년 883.3백만 달러까지 계속적인 증가 추세에 있다. 건조는 품질 손상을 최소화 및 수분을 제거하는 공정이다. 모든 곡물에는 건조 조건에 따라서 품질이 크게 변화하며, 건조 과정을 해석하여 해당 곡물의 적정 건조 조건을 구명하여 품질을 유지하는 위해서는 중요하다(Keum, 등 1977). 얇은 두께의 곡물층을 단층으로 하여 건조속도 및 건조공기의 조건을 나타내는 것을 박층(Thin layer)건조모델이라 한다. 박층건조모델을 계속적으로 쌓은 모델을 후층(Deep layer)모델이라 하며, 건조기 개발 및 건조조건 구명에 가장 기본이 된다(Basunia and Abe, 1998). 그러나 해외에서 만들어진 콩 박층건조 모델은 국내의 검은콩과 물성이 상이하여 건조조건이 다르게 설정 되어야 한다. 따라서, 본 연구목적은 건조온도 2수준, 상대습도 3수준에 대하여 검은 콩의 건조속도 측정하고, 곡물건조방정식으로 많이 이용되고 있는 4개의 건조방정식에 대하여 모델 적합성을 검정하여 검은콩 건조에 적합한 박층건조모델 결정하는데 있다. 공시재료는 2015년 강원도지역에서 생산된 검은콩을 실험에 사용하였으며, 초기 함수율은 14.7%,w.b.였다. 박층 건조공기 조성은 공기조화장치(MTH4100, SANYO, UK)를 사용하여 조성하였으며, 송풍기에 의해 공기충만실을 통과하여 건조 층을 통과하도록 구성하였다. 목표 평형함수율에 도달하면 실험을 종료하였다. 건조 층의 초기중량 및 경시적 변화는 전자저울(GF-4000, AND, Japan)을 이용하여 10분 간격 측정하여 저장하였다. 적정 박층건조모델을 결정하기 위하여 기존의 곡물건조방정식 중 널리 사용되고 있는 4개(Lewis, 1921; Page, 1949; Thompson, 1967; Moisture diffusion, 1975)의 건조모델을 이용하여 비교 검증하였다. 건조 초기 2시간 까지는 급격히 감소하다가 건조속도에 영향을 미치는 반건조시간(MR=0.5) 이후에는 완만하게 건조되는 것으로 나타났고 건조조건으로 건조온도 및 상대습도 모두의 영향이 미치는 것으로 나타났다. 4가지 건조 모델과 비교한 결과 Thompson 모델이 전체 건조 영역에서 비교적 잘 일치하였다.

Heat Treatment and Drying Methods of Small-Notched Bamboo for Vertical Flute (단소용 대나무재의 열처리 및 건조)

  • This study was carried out to investigate a heat treatment condition and suitable drying schedule of bamboo material(Phyllostachys nigra var. henonis) for a vertical flute with small-notched bamboo. It is very important to prevent drying defects during its drying process. We investigated the effort of heat treatment the most suitable drying schedule for small-notched bamboo vertical flute without drying defects in this research. A direct heat treatment method and drying conditions of 3($20^{\circ}C$ 65%, $40^{\circ}C$ 40%, and dry at air condition) were applied to the Bamboo specimen that felled in several areas for a month. The result suggested that the most suitable drying schedule with the less split and the shortest time was to dry at $40^{\circ}C$, 40% condition and it was useful to direct heat-treatment because of reducing the number and size of split during drying bamboo.

Drying Characteristics and Preferences for Steamed Chestnut-Sweet Potato Slab after Cold Air Drying (냉풍 건조 조건에 따른 증절간 밤고구마의 건조 특성과 기호도)

  • Cold air drying was conducted on steamed chestnut-sweet potato to improve its quality, convenience, and preference as snack. Steamed sweet potato was dried from 10 to $25^{\circ}C$ for 48 hours, and moisture contents, colors, texture, and taste were evaluated. The lowest moisture content was 4.53% at $25^{\circ}C$. Lightness decreased while other color values (a, b, and ${\Delta}$E) increased with increasing drying temperature and drying time. Reducing sugar and soluble solid contents ranged from 93.22~190.35 mg/g and 17~60 $^{\circ}Brix$, respectively. The highest hardness of chestnut-sweet potato was 25.13 kgf/$cm^2$, and springiness and cohesiveness were 88.60, and 94.87%, respectively, when dried at $25^{\circ}C$ for 48 hours. Sensory evaluation score was highest at $20^{\circ}C$ for 24 hours. The optimum drying conditions were determined to be $19^{\circ}C$ and 39.5 hours by RSM(response surface methodology).

  • The Chunma (Gastrodia elata Blume) requires a simple pre-treatment, due to inconvenience or preservation, toxicities, and pungencies in intact state. Various drying conditions were examined to establish the physicochemical properties of Chunma by the response surface methodology (RSM). Weter activity and total phenolic acid contents of Chunma dried extracts were optimal at $79.56^{\circ}C$ and $79.64^{\circ}C$ for 7.17 hr and 8.74 hr, respectively, for their characteristics. Electron-donating ability and nitrite-scavenging activity were optimal at 79.79 and $7.99^{\circ}C$ for 8.57 and 8.07 hr. We generated a regression equation for each variable and then superimposed the optimal condition in acquiring values for each frying process factor, physicochemical properties, resulting in that the optimal drying condition was at $75{\sim}80^{\circ}C$ for $8{\sim}9 hr$.

  • Dehydration phenomena has been studied for the shiitake mushroom Lentinus edodes sanryun No.1, through which examine the effect of temperature and air velocity and derivation of its kinetics. Temperature effect for the dehydration rate constant were examined under the constant air velocity (1.5m/sec) with the variation of temperature from $40^{\circ}C$ to $55^{\circ}C$. Water content were reduced exponentially with the course of time and calculated dehydration rate constant values varies with temperature with an Arrhenius-type relationship, which had been expected in the chemical reaction kinetics. Influence of air velocity for the dehydration rate constant under the constant temperature $(45^{\circ}C)$ showed interesting results. For the range 1.0m/sec to 2.0m/sec, dehydration rate constant values are increased with the air velocity, but for the 2.0 to 3.1m/sec, dehydration rate constant values are decreased which were caused by case hardening. One of the selected conditions in the optimal dehydration range, temperature $50^{\circ}C$, air velocity 2m/see, and its measured humidity 38-41%, mathematical model of dehydration curve and dehydration rate equations were developed and the resulting kinetic models were X=6.94 $e^{-0.345t}$ and dx/dt = -2.39 $e^{-0.345t}$

Dry Weight Singularity Analysis of Rock Specimen Depending on Temperature (온도에 따른 암석시편의 건조무게 특이점 분석)

  • The Korean Industrial Standards (KS F) have a various regulations for measuring the weight of dried soil and rock. However, if the dried weight is measured in air after drying at 110±5℃ or 105±5℃, a weight singularity occurs, in which the weight decreases and then increases as the measurement time continues. In this study, basaltic rock from Ulleung Island was oven dried at 40 to 110℃. The weight was measured on an electronic scale with a sensitivity of 0.0001g (0.1mg) to find weight singularities. A method to easily determine the dry weight using the weight singularities was presented. As a result of analyses of the singularity of rock specimen according to temperature, the singularities were appeared in the temperature range of 40 to 110℃, and the weight of the singularity was smaller as the heating temperature increased. In particular, the weight singularity duration appeared, and the duration of the singularity was shorter as the heating temperature increased. The results of the convection measurement experiment showed that the cause of the singularity is the convection phenomenon caused by the contact of the heated rock with the air. The weight decrease of oven dried rock occurs when the effect of convection is dominant over the effect of air moisture absorption. Conversely, the weight increase of rock occurs when the effect of air moisture absorption is dominant over the effect of convection.
