Determination of Maintenance Energy Requirements for Growing Hanwoo Steers (육성기 거세한우의 유지에너지 요구량 결정에 관한 연구)

  • Present experiment was carried out to determine maintenance energy requirements for growing Hanwoo steers. Six Hanwoo steers (BW = $180.6{\pm}3.1$ kg) were used in two 3 ${\times}$ 3 latin square design with three different energy intake levels; TDN 1.70 kg (Low), 2.05 kg (Medium), 2.80 kg (High), respectively, based on the Korean Feeding Standards. Each period lasted 18 days including a 14-day adaptation and a 4-day measuring period. The steers were in the head hood chamber system (one cattle per chamber) during each measuring time to measure heat and methane production for 1 day. Dry matter intake was 2,058, 3,256 and 3,881 g/day for Low, Medium and High TDN, respectively. Increase in energy intake did not affect digestibilities of dry matter, crude protein, crude fiber, crude fat, NDF, ADF and nitrogen-free extract. Gross energy intake averaged 180.21, 292.74 and 337.15 kcal/$BW^{0.75}$ for Low, Medium and High TDN, respectively. Energy loss was 28.7% in feces and 2.1% in urine of gross energy intake. Further, energy loss from methane produced during rumen fermentation was 6~8.3%, while body heat loss averaged 34~60%. Intercept of regression equation between ME intake and retained energy indicated that the energy requirement was 109.84 kcal ME/$BW^{0.75}$.

  • Muscular lesion was detected in a 23-month-old castrated bull encountered at Kyungsan slaughter house. The lesion appeared as fat intervening muscle fibers. The affected animal had no clinical signs. On microscopic examination, there was replacement of many muscle fibers by normal fat cells. Numerous fat cells were located between muscle fibers. Remaining skeletal muscle cells were in degenerative process, and thus abnormal skeletal muscle cells had loose fibers while normal had intact ones. The advent of inflammatory cells is not at the lesion, which is unique view in steatosis.

Studies on Selenium-fortified Functional Hanwoo-Beef by Utilizing Spent Mushroom Composts II. Effects of Spent Composts of Se-Enriched Mushrooms as the Dietary Se Source on Selenium Deposition in the Muscular Tissue and Plasma Glutathione Peroxidase Activity in the Finishing Hanwoo Steer (버섯폐배지를 이용한 셀레늄강화 기능성 한우고기 생산에 관한 연구 II. 셀레늄강화 버섯폐배지 첨가가 한우의 근육조직 내 셀레늄 축적과 혈중 glutathione peroxidase(GSH-Px)활성에 미치는 영향)

  • This study was conducted to investigate effects of spent composts of Se-enriched mushrooms as the dietary Se source on muscular Se deposition and plasma glutathione peroxidase (GSH-Px) activity in the finishing Hanwoo steer. Twenty Hanwoo steers were used in the experiment and they were divided into four groups in a randomized complete block design with five replicates. Treatments were four levels (0.1, 0.3, 0.6 and 0.9ppm as fed basis) of dietary Se from the combination with spent composts of Se-enriched mushrooms and/or Se non-enriched mushrooms, in which each treatment was formulated with corn and corn gluten meal and so forth. Treatment diets were fed to Hanwoo steers for 90 days until the slaughter. Dry matter intakes had no significant differences among treatments and there were no significant differences for performances such as total BW gain and ADG among treatments. The Se concentration in blood was linearly increased with increasing dietary selenium levels and reached a plateau level after 8 weeks (p<0.001). Plasma GSH-Px activities had the similar trends to blood Se concentrations by showing that the increased dietary Se level significantly increased plasma GSH-Px activities of both total and Se-dependent (p<0.001). Muscle Se contents of Se-supplemented groups were linearly increased by 1.35 ~ 1.68 folds compared with the control group (0.1ppm; 0.273㎍/dry g) and especially those of the hind legs for 0.9ppm treatment showed the highest Se content as shown 0.457㎍ per dry gram (p<0.01) corresponding to approximately 70% increase of the control group. Se retention rate in the muscle of dietary Se originated from spent composts of Se-enriched mushrooms was estimated of maximum approximately 30% and dietary Se content showed the significant correlation with plasma GSH-Px activities and muscle Se contents (p<0.01). Accordingly, Se present in spent composts of Se-enriched mushroom as the dietary Se source not only had great bioavailabilities showing higher blood Se concentration and plasma GSH-Px activities, but also increased Se deposition in the muscle for Hanwoo beef cattle.

Effects of high energy diet on growth performance, carcass characteristics, and blood constituents of final fattening Hanwoo steers (고에너지 사양이 비육후기 거세한우의 성장, 도체, 및 혈액성상에 미치는 영향)

  • The aim of this study was to examine the effects of high energy diet on growth 26mon, 28mon, and 30mon in Hanwoo at different ages. High energy diet required not only an amount of concentrate on days of fattening periods but also induced cost for the management. We hypothesized that high energy diet was able to reduce a fattening period to reach a certain quality grade. A $2{\times}3$ factorial arrangement (High energy, control vs 26, 28, 30month endpoints) in a completely random design was used to feed 48 Hanwoo steers. Four steers were fed in same pen and 12 pens were used for treatment. Blood was drawn from each steers on every other months during early, middle, and final fattening periods. Over all ADG and feed efficiency were not different between high energy and control diet (P > 0.05). Dry matter intake was induced 30 mo-old early and final fattening periods at high energy diet. Serum glucose concentration were increased (P < 0.05) at 30 and 26month old steers. Marbling scores were greater at 30 month old than 26 and 28 month old Hanwoo steers. Carcass weight of Hanwoo steers were greater at 30 mon-old groups than other groups. These result indicated that high energy diet (+3% TDN) and slaughter endpoint collectively contribute to the observed quality grade compositional differences among three final fattening periods of Hanwoo steers.

Meat Quality and Nutritional Properties of Hanwoo and Imported Australian Beef (한우고기와 호주산 냉장수입육의 육질 및 영양성분 비교)

  • This study was conducted to investigate the proximate composition, meat color, Warner-Bratzler shear force (WBS), total collagen content (%), cooking loss (CL), fatty acid composition, amino acid composition, and mineral content of loin, strip loin, top round, and chuck tender Hanwoo beef and imported Australian beef. Protein content was significantly lower for strip loin and loin of Hanwoo QG $1^+$ and 1 beef when compared to that of Australian black Angus or cross beef (p < 0.05), whereas it was not significantly different for top round and chuck tender. Intramuscular fat content was higher for QG $1^+$ Hanwoo beef strip loin (15.48%) than that in Australian cross beef (8.83%) and it was also higher in loin for QG $1^+$ (17%) and 1 (15.52%) Hanwoo beef than that in Australian Angus beef (10.59%) and cross beef (9.21%) (p < 0.05). The CIE $L^*$ value was significantly higher for Australian cross beef strip loin than that of Hanwoo beef but the CIE $a^*$ value was not significantly different between the same cuts from different origins. However, CIE $b^*$ values were significantly higher for the Australian cross beef than those for four cuts of Hanwoo beef and Australian Angus beef (p < 0.05). No significant difference in WBS of loin, top round, or chuck tender was observed among the different beef sample origins except that strip loin had significant higher WBS for Australian cross beef (3.02 kg) but lower for Australian Angus beef (2.13 kg). Australian cross beef contained significantly higher palmitic acid, stearic acid, linolenic acid, but lower palmitoleic acid, oleic acid, eicosenoic acid content in strip loin, loin, and top round than those of QG $1^+$ and 1 Hanwoo beef (p < 0.05). QG $1^+$ Hanwoo beef had significant lower saturated fatty acid and higher monounsaturated fatty acid content than those in Australian cross beef (p < 0.05). Hanwoo $1^+$ beef had more glycine in top round and chuck tender, whereas Hanwoo QG 1 beef and Australian Angus beef had higher cysteine, methione, and glycine levels in strip loin and loin and valine and leucine in top round and chuck tender than the same cuts of Hanwoo $1^+$ beef (p < 0.05). No significant differences were observed for Ca, Fe, or Zn content among the different beef samples.

A survey study of farmers' recognition on reality of Hanwoo raising and improving quality : Focused on Gyeongsangbuk-Do (한우 사육실태 및 육종개량에 대한 농가인식도 조사 분석 - 경북지역 중심으로 -)

  • Farmers' perception on actual raising conditions and breeding improvement for Hanwoo were surveyed and analyzed in order to utilize such data as basic resources for further development of courses of Hanwoo improvement and instructions on raising techniques. The survey was held based on Hanwoo farmers in Gyeongbuk region and the results for the analysis were as follow. Candidate cattle for breeding was selected in consideration of 'appearance, body shape, and pedigree-registration' (39.0%) and 'artificial insemination' (38.6%) was the most frequently used breeding method for the breeding cattle. 'Body length' was revealed to be the most considered factor while purchasing fattening calves and the castration for the fattening calves were mostly performed when '6~7 months after the birth'. The farmers also responded that they 'try to comply with over 80% of items specified in program for production of high quality beef' in order to produce high quality beef. However, the farmers believed that '12 months after the birth' was the most economic market month. Although the results differed by each items surveyed, majority of those results showed statistically significant differences with significance level of 0.05 upon the surveyees' general characteristics and demographic factors including level of education, age, occupation, and family man power. Most surveyees responded 'around 30% of shipping heads' (22.1%) for the prevalence of beef graded better than 1++ grade when shipping, however, no significant differences in between general characteristics of surveyees were observed.

  • The purpose of this study is to analyze the economic feasibility of technology developed by the National Institute of Animal Science used to shorten the raising term of Hanwoo cattle. This technology can address the increasing proportion of feed cost to operating expenses in the industry. The technology maintains quality by high nutrition breeding during the growing period while shortening the fattening period compared to conventional methods for castrated cattle. Our analysis employs the partial budget method, and results are as follows. First, we found that the ratio of shipment in age of less than 29 months has been increasing. Second, the statistical test finds that both the reduction in age of the months for shipment and the increase in dressed weight annually are significant. Third, the benefit of introducing the technology with the self-manufactured TMR accounts for 467,990 won per head/time. This result is strong evidence for prioritizing and extending pilot projects. In order to further expand this technology in the future, problems, limitations, and obstacles to introduction should be additionally disclosed for participating and non-participating farms after conducting the pilot project.

Effects of Pine Silage Feeding on Ruminal Fermentation Characteristics, and Blood Concentrations of Stress-Related Hormones in HANWOO Steers (잣나무 생지엽(生枝葉) 사일리지 급여가 거세한우의 반추위 발효성상 및 스트레스 관련 Hormone의 혈 중 농도에 미치는 영향)

  • This study was conducted to utilize the wastes produced from thinning the forest as a roughage source for ruminants. Four ruminally cannulated Korean steers were used to investigate the ruminal fermentation characteristics and blood concentrations of stress-related hormones. Treatments were composed of the rice straw only (Control) and the 30% pine silage plus 70% rice straw(Pine silage) as roughages. The experiment was conducted with four replicates by a double tum over design. For sampling of blood under high temperature steers were accommodated in respiratory chamber. Concentrations of ruminal pH, volatile fatty acids and ammonia were not affected by substitution of pine silage. Mean concentration of blood thyroxine was significantly(P < 0.01) lower in the pine silage than the control. However, blood cortisol concentration was not affected by substitution of pine silage, even though it was significantly(P < 0.05) decreased after exposure for 6 hrs in high temperature. It was concluded that the pine silage using the wastes produced from thinning the forest could be use as a substitute roughage for reduction of heat stress in ruminant.

Effects of Organic Selenium Supplementation on Meat Quality of Hanwoo Steers (유기셀레늄강화버섯 폐배지의 급여수준에 따른 거세한우 채끝육의 육질특성)

  • The current study was conducted to investigate the effect of organic selenium in mushroom cultured media (MCM) on beef quality. Each five of 20 Hanwoo steers(20 - 24 month, approximately 613 kg) were assigned to four levels of the selenium content(O.l, 0.3, 0.6, 0.9 dry matter based ppm), and the feeding treatments were enforced for 12 weeks. The results showed that m. longissimus from the 0.1 ppm feeding supplementation had greatly higher intramuscular fat content than other treatments(13.1 %). In meat color, the 0.1 ppm treatment showed the lowest lightness(CIE $L^*$)(P< 0.05) and had a tendency to have lower redness(CIE $a^*$). The treatment had no noticeable effect on moisture, protein, and ash content, cooking loss, water-holding capacity and purge loss. The 0.3 ppm treatment resulted in the toughest meat(assessed by WB-shear force) with 4.54 kg / inch', while other groups showed a similar toughness ranging from 3.3 to 3.7 kg/ inchl . Sensory characteristics in juiciness and flavor intensity had a tendency of increasing as organic selenium concentration increased, but tenderness was not influenced by the contents. The result indicated that the organic selenium feeding affects meat qualities to different extent, and further study is required to examine anti-oxidant effect of selenium in vivo.

A study on the changes of carcass muscle distribution in the high quality meat production of Hanwoo steers in Kyungnam (경남지역 거세한우의 고급육 생산을 위한 도체 근육부위별 분포도 차이에 대한 연구)

  • A grading system is implemented to evaluate the meat quality of Hanwoo. In the grading system, grade 1++A is the highest grade. Livestock farms breed Hanwoo with good quality feed in order to obtain the highest grade. In this process, the content ratios of muscles in individual regions can be changed. To find out the muscle distribution ratios of Hanwoo steers, grade 1A, 1+A, and 1++A Hanwoo steers were compared with grade 1+A Hanwoo female. Grade 1A Hanwoo steers had higher ratios of shank (SK), brisket and flank (BF), neck chain (NC), and inside skirt (IS) meats and a lower ratio of striploin (SL) meat compared to grade 1+A Hanwoo feamle. Grade 1++A Hanwoo steers had higher ratios of neck (NK) and loin (LN) meats and lower ratios of inside skirt (IS), tenderloin (TL), top round (TR), eye round (ER), bottom round (BR), bottom sirloin triangle (BST), and knuckle (K) meats compared to grade 1+A Hanwoo steers. In comparison between grade 1A and 1++A Hanwoo steers, the ratio of shank (SK) was significantly lower in higher quality meats. If the changes are continuously studied to improve the process so that the ratios of partial meats of the regions highly preferred by consumers can increase, it will contribute to increases in the incomes of livestock farms and enable Hanwoo to grow into a global brand.
